Welcome

to NOFA Vermont’s Organic Farm and Food Guide!

Vermont continues to lead the way as we develop a vibrant, diverse food system. We are fortunate, in Vermont, to be able to eat local and organic food—we don’t have to choose. This guide is your key to finding Vermont’s certified organic, locally grown bounty. Inside, you will find all of the certified organic producers in your community and the farmers markets, farm stands, and Community Supported Agriculture (CSA) farms closest to your home—you can find everything from maple syrup to raspberries, fresh peas to chicken. If you have followed the labeling law for foods containing genetically modified organisms (GMOs), you know that Vermont was the first state in the country to mandate the labeling of GMO foods. Did you also know that certified organic foods are always GMO-free? In addition, the organic seal means that your food is free from synthetic pesticides, that livestock have access to the outdoors, and that farmers are working to build the health of their soil, crops, and animals. The number of organic farms and processors continues to increase in Vermont, so there are many farms and businesses to explore—in 2014, there were 579 certified organic farms and processors producing organic food on 104,565 acres in Vermont, and over 20% of the dairy farms in Vermont are certified organic! Those certified organic producers are participating in local and regional markets, maintaining working landscapes, and contributing to the success of other local businesses. You can find certified organic products at farmstands, stores, restaurants, through mail order, or you can ‘pick your own’ at the farm—there are so many opportunities to support Vermont’s farmers and processors.

What is “Certified Organic”?

NOFA Vermont’s Organic Certification Program

Ten things you should know

Certified organic farmers & processors are committed to a food system that works with natural systems to improve soil, protect your health, and produce great-tasting food. Below are some

MICHAAEL SACCA/”ORGANIC MATTERS”

1

Vermont Organic Farmers (VOF), the certification program of NOFA Vermont, was created in 1985 to help producers and concerned consumers define what it meant to farm organically. These standards for organic production in Vermont were created by the farmers who were dedicated to practices that used a holistic approach to soil fertility, pest control, and plant and animal health. In 2002, with input from the organic community, the United States Department of Agriculture (USDA) implemented the National Organic Program (NOP), which created national standards for organic food.

4

2015–2016 VERMONT ORGANIC FARM & FOOD GUIDE

The role of VOF is to certify farmers and processors to the NOP standards, which ensures that producers are achieving the necessary requirements. Our purpose is to provide a highly credible program for independent third-party verification of organic food production, and to assist Vermont farmers and processors of all types to achieve the highest possible organic standards. To view the complete standards for crop, livestock, and food processing please visit the NOFA Vermont website: www.nofavt.org/organic. Look for the VOF logo the next time you are shopping to support local organic producers.

of the requirements they follow to become certified.

Prohibited pesticides, herbicides, and synthetic fertilizers cannot be used in crop production. Furthermore, producers must maintain buffers that prevent contamination drift from prohibited substances and neighboring GMO crops. Organic production prohibits GMOs, including seeds, livestock feeds, and ingredients used in processed products.

7

Livestock are fed 100% organic feed. They do not receive conventional, genetically modified corn and soybeans, hormones or antibiotics. They also must obtain a significant portion of their diet from certified organic pasture grasses during the grazing season.

8

Farmers maximize animal welfare by raising livestock in an environment where stress is minimized and where they are able to exhibit their natural behaviors such as grazing, rooting, and scratching. Animals are given daily access to the outdoors, year round. Farmers use land management practices that protect natural resources, conserve biodiversity, and improve the health of their soil. Meat from animals treated with hormones, antibiotics, or synthetic parasiticides cannot be sold as organic. Farmers use preventive healthcare practices and only approved treatments when necessary.

9 10

For maple syrup production, sap is collected using practices that ensure the long-term sustainable management of the sugarbush and promote forest ecosystem health. Maple syrup is tested for lead levels, and synthetic defoamers may not be used when boiling. Processed foods (such as cheese, bread, or jam) are produced with certified organic ingredients. Artificial colors and flavors, preservatives such as nitrates, and other synthetic additives are prohibited. Certified organic products are randomly subject to pesticide residue tests. The allowable limit of pesticide residue on organic food is just 5% of what the EPA allows on conventional produce. Organic certification is the only label backed by clear legal definitions and independent third-party verification. All certified operations participate in an annual inspection of their premises, purchases, and practices to ensure the integrity of the organic seal.

Federally Defined

Defined by the State of Vermont

Some food labels have standard definitions under the USDA. Producers can request a voluntary inspection to verify their practices—look for the “USDA Process Verified” shield logo to ensure that the standards have been met. However, producers can still use these labels without being inspected.

Local. The state of Vermont defines “local” products as those that originated within Vermont or 30 miles of the place where they are sold. However, the state does not conduct inspections or actively enforce this definition.

Free-range. Used for poultry, this label indicates that the flock was provided shelter in a building, room, or other area with some access to the outdoors during their production cycle. It does not limit the use of antibiotics, hormones, or pesticides. Grass-fed. Grass-fed animals receive a majority of their nutrients from grass throughout their life, while organic animals’ pasture diet may be supplemented with grain. The grass-fed label does not limit the use of antibiotics, hormones, or pesticides. Natural. Meat, poultry, and egg products labeled as natural must be minimally processed and contain no artificial ingredients within the final cut or end product. The natural label does not regulate farm practices and only applies to the processing of meat and egg products. There are no standards or regulations for the labeling of “natural” food products if they do not contain meat or eggs.

Not Legally Defined or Regulated Cage-free. Used for poultry, this label indicates that the flock was able to freely roam a building, room, or enclosed area with unlimited access to food and fresh water during their production cycle.

So how can you support the other 175 organic dairy farmers who sell their milk wholesale? In Vermont, farmers ship their milk to three milk buyers. Please look for the following brands at your local store or co-op:

To organic farmers everywhere for treating their animals and the earth with care and treating us with some of the finest organic ingredients around,

thanks.

Pasture-raised. Due to the number of variables involved in pasture raised agricultural systems, the USDA has not developed a labeling policy for pasture-raised products. Humane. Multiple labeling programs make claims that animals were treated humanely during the production cycle, but the verification of these claims varies widely. These labeling programs are not regulated by the USDA. Learn more about labels at www.greenerchoices.org/ eco-labels.

If your local store does not carry these brands, ask them to. You may find that these name-brand products from family farms share shelf space with store-brand organic milk from as far away as Colorado. By purchasing the products listed above you are ensuring that your dollars support family farmers in the Northeast and Vermont. 2015–2016 VERMONT ORGANIC FARM & FOOD GUIDE

Thank You for a Great Growing Season! VT Farmers donate 318,000 lbs of produce in 2014

5 GOOD REASONS TO CHOOSE

Certified Organic, Locally Grown Your choices make a difference! Nearly 600 Vermont farmers and processors who make up Vermont Organic Farmers (VOF) know that choosing local and organic matters. Here are 5 reasons why:

1 2 3

Healthier for You and Your Family Organic certification standards prohibit toxic persistent herbicides and pesticides, antibiotics, artificial hormones, and genetically modified organisms. Minimizing your exposure to these toxins can reduce your risk of cancer and other health problems. In addition, organic foods have been shown to have higher levels of beneficial nutrients such as antioxidants and Omega-3s.

Supports Your Community Supporting local organic farms keeps money in the local economy and preserves Vermont’s rural character. On average, organic farms create 21% more jobs than conventional farms,* helping to sustain vibrant communities.

4 5

Tastes Great Healthy plants and happy animals produce great-tasting food! The short distance from farm to table means that farmers can choose varieties for flavor rather than shelf life, and can harvest at the peak of ripeness.

www.vtfoodbank.org

Grown Without GMOs Buying certified organic is the best way to avoid exposure to genetically modified organisms (GMOs). Organic farmers do not use GMO seeds, plants, or animal feeds, and organic processed foods do not contain GMO ingredients.

short courses & extended programs

CHEESEMAKING

Better for the Land

WILD EDIBLE FOODS

Organic farmers protect soil, water, and air quality with practices like crop rotation, planting cover crops, and composting. By nourishing the soil, organic farmers sequester carbon, reduce harmful runoff, and help ensure that our farmland will continue to be fertile and productive into the future.

Farmers, Food Businesses & Service Providers:

Beef Bone Broth From The Heal Your Gut Cookbook by Hilary Boynton and Mary G. Brackett

It’s a good idea to prepare a large quantity of broth at a time; use it to make healthy soups, stews, and casseroles or simply to drink throughout the day as a beverage, complete with probiotic juice, good fat, and mineral-rich salt. What a wonder drug! Be sure to source your bones carefully. The best bones are from 100 percent grass-fed and -finished cows, pastured chickens, and wild-caught fish. Of course, you can make bone broth with lamb, turkey, bison, and venison bones, too. Just be sure that the livestock was raised to your standards. The best way to ensure excellent quality is to seek out a local, sustainable farmer, or to find a reputable resource online. It’s important to include both marrow and knuckle bones so you will reap the benefits of both gelatin and marrow. Broths can be cooked over time, so if you want to turn it off at night you can resume cooking in the morning. Just bring to a boil, skim the scum off the top, and discard.

3–4 pounds beef marrow and knuckle bones 2 pounds meaty bones, such as short ribs 1⁄2 cup raw apple cider vinegar
4 quarts filtered water 3 celery stalks, halved 3 carrots, halved
3 onions, quartered Handful of fresh parsley Sea salt Place the bones in a pot, add the apple cider vinegar and water, and let the mixture sit for 1 hour so the vinegar can leach the minerals out of the bones. (Add more water if needed to cover the bones.) Add the vegetables, bring to a boil, and skim the scum from the top and discard. Reduce to a low simmer, cover, and cook for 24 to 72 hours. During the last 10 minutes of cooking, throw in a handful of fresh parsley for added flavor and minerals. Let the broth cool and strain it, making sure all the marrow is knocked out of the marrow bones and into the broth. Add sea salt to taste and drink the broth as is or store it in the fridge (up to 5 to 7 days) or freezer (up to 6 months) for use in soups and stews.
