airing the punk and the funk with the terroir is the mission of extreme winemaker and co-owner of Cypher Winery, Christian Tietje, taking the pretension out of winemaking and drinking as only a rebel can do, inspired by the punk rockers of the 80s to boldly go where no winemaker has gone before. Born out of a backyard in Berkeley, Tietje and partner Susan (Sam) Mahler combined passions to open their first winery Four Wines; Mahler bringing her expertise in sciences to the table and Tietje the spirit of an artist, punk rocker and chef all in one. Since the first project, Tietje has branched out and opened Cypher Winery with Mahler, where they are known for their outrageous Rhone and Zinfandel blends. "I started off cooking and have been a professional chef for years working in Chicago, Boston and on the West Coast," Tietje said. "I actually came to wine through my love for food. I am an extreme personality and I tend to take things to extremes. So not only did I fall in love with wine, but I just had to make it. It is like being an addict. I just can't stop the discovery and am always finding the next best varietal to play with." After moving to the Paso Robles area over a decade ago, Tietje put in the time to learn from some of the best winemakers in the area and started working at the Vicente property in Zin Alley, now Turley Winery, and made his very first bottle of zinfandel with some of the stock there. He said he was enamored with those big bold zinfandel flavors and has become well known in the region for

only taking the best crop he can find. "This is why I am called the "Zin Bitch," I won't take anything but the best," Tietje said. "After opening Four Wines with Sam and selling it, we started a new project, Cypher Winery, and this is where I am today making wines with my extreme mentality, inspired by the music of punk rockers from the 80s as I mix it up and slap a label on it that provokes and promotes the extremity of the wine in the bottle." Tietje describes himself as "loud, like the bull in the china shop," when taking about his mentality for making wines that are outside the norm compared to other winemakers, saying no one has ever brought a rock 'n' roll element to wine, and he knew that was what he wanted to do with. Cypher wines are named with this mentality in mind, with Anarchy, Monarchy, Loco, Zinbitch, Gargoyle and The Biker, to name a few. An exhibition of Tietje's wine knowledge can be tasted in the 2013 TNT label. It features Tannat, a varietal almost unheard of in this winemaking region. Tannat is a red wine grape, historically grown in South West France in the Madiran AOC, and is now one of the most prominent grapes in Uruguay, where it is considered the "national grape." After opening the Cypher tasting room off of Highway 46 West in 2014, Tietje added his personal touch to wine and food pairing as well, serving up all kinds of tasty seasonal bites, wood-fired pizza made with his personal recipe and so much more. allows people to sit on the patio or in the tasting room and eat, drink and be merry with some classic punk-rockers playing in the background and wild times with Tietje, where the decanter comes out and wine is poured into the mouths of patrons — because who needs a bottle or a glass to taste something good? Two newer projects Tietje started include the 3-Ball label that is devoted to the creation of the ultimate Zinfandel blend, drawing from the top three growing areas — Paso Robles, Sonoma and Amador — and his most recent project, the creation of the Sea Monster label. The impetus being the creation of a white wine that actually pairs well with sea food. Every project Tietje has undertaken has wowed the wine world, not just for the taste, but for the method that has inspired others to take risks with blends and bend the rules. "What would be the fun of it if we didn't try something new," Tietje said. "I have never been afraid to try new things and hope to create an atmosphere where fellow punk-rocking risk takers can enjoy a great bottle of wine without pretension." or the Glunz brothers, Stephen and Matt, winemakers at Glunz Family Winery and Cellars, booze is in the blood. The Glunz family has been involved in the distribution and creation of wine, beer and spirits since the company was first formed by Stephen and Matt's great-grandfather Louis Glunz in 1888 in Chicago. Each generation of the Glunz family since then has forged their own unique niche within the family business. In the 1960s, Stephen and Matt's father Joe Glunz Jr. built the company's wholesale wine distribution business, importing and distributing fine wines from Europe and representing wines from the burgeoning California wine scene. Joe Glunz first got his start in the family business in 1944, when he was just 4 years old, and was assigned the task of washing wine bottles in the basement of the family business in downtown Chicago

to be reused during wartime rationing. Matt recalled his father telling him about looking at the art on the labels of the wine bottles and dreaming of one day owning his own winery and vineyard. Stephen and Matt have now helped to make their father's dream a reality with their east side Paso Robles winery and vineyards, purchased from Norman Vineyards in 2013. The winery, focused on zinfandel and cabernet, produced 1,400 cases that first year with the most current vintage up to 4,000 cases. The brothers recently invited the entire third generation of the Glunz family to Paso Robles to see what they have built and got a warm response. "It was the first time a lot of them had been here and they were just over the moon with how excited they were about what we're doing," Matt said. "Everybody is so proud of what we're doing. I think it's pretty cool. Every generation has kind of done it's own thing, and this is sort of our take on trying something new."

The Glunz Family winery and tasting room, located at 8331 Highway 46 East, is a virtual museum of Glunz family history — from the wall of family photos dating back more than a century and the clock that used to hang in the Glunz Tavern in Chicago to the antique corker used by four generations of the Glunz family and the cabinet full of antique bottles emblazoned with the Glunz logo. With more than a century of family history behind them, Stephen and Matt said that passing the legacy on to the next generation is their only real concern. "It was a little bit of weight, sort of a passing of the torch a little bit," Stephen said. "There's a little bit of weight on you there that you have to push it and get it to the next generation in one piece, and somewhat healthy — leave it better than you found it." Any member of the Glunz family wishing to work in the family businesses is required to work for three years outside of the family business, a tradition that Stephen and Matt said they plan to continue. "Go do something else," Matt said. "Don't come to the winery or the business because frankly you're not allowed. So it forces you to VINO Central Coast Edition

try something else, but also while you're doing it, learn as much as you can, be a sponge for three years. So that's what we did." Stephen and Matt both spent time working in a wine shop during their college years and both later went on to make wine for E & J Gallo Winery and later for Murphy-Goode Winery. Before opening the new winery in Paso Robles, Stephen went back to work for the family wholesale business in Chicago, but the wholesale business didn't hold as much appeal for Matt. "I just kind of realized that wholesale is not my deal, going out and selling wine," he said. "But making it and being able to sell it here (in the tasting room) and having that interaction — that's another thing we love about retail is having that interaction." The two brothers share winemaking duties, but Matt said that they don't actually do much to the wine and instead focus on finding the highest quality grapes. "That's the beauty of Paso Robles," he said. "We get these really warm days so you get ripeness and we get these really cold nights so you get incredible acidity at the same time. So if everything works out well, we really don't have to do too much. Literally, we

don't add anything to the wine, and the flavors are remarkable. We're blessed with this great area and these great grapes when they come in." With their varietals created in a hands-off fashion, the brothers then do a bit of blending to further refine the flavors of their wines, such as adding a bit of petit verdot to the syrah to add more fruitiness or adding a little cab franc to soften the cabernet. "We sort of base everything on flavor, and flavor is driving every major decision we make," Matt said. "We take all of the ingredients we're given, we try not to manipulate them, and then toward the end we just kind of take a look and it's sort of like cooking, we just try to build up a big spice rack and get as many flavors as we can by using a bunch of different cooperages, a bunch of different barrels, a bunch of different sites and then just kind of have fun and blend around together." The brothers rarely disagree about winemaking decisions and quickly work through the disagreement when they do, Matt said. "Generally, if one of us feels stronger in a particular direction, I feel like most of the time we don't even have to discuss it," he said. "It works out well that way." The brothers say they are meticulous about quality control and obsessed with finding the best fruit. "We see every grape three times on the day it's picked," Matt said. "We're out in the vineyards, especially this time of year, and we just try to be obsessed with picking the best grapes. From the grapes all the way to when it's bottled, we do everything. You might call us control freaks or whatever, but it's really nice that this building and these vineyards really allow us to be in charge of the whole process. So, if it's good, it's on us, and if it doesn't work out, it's on us as well. If it's got our name on it, we're going to make sure that it's the best thing we can possibly create."

Bruce Hansen works the barrels to produce top-notch Cabs

ruce Hansen is the Cab whisperer. All he produces on his east side Templeton vineyard and winery is high-quality, award-winning Cabernet Sauvignon. He's racked up several double-golds over the years at Hansen Vineyards and Winery. All of the estate wines are 100 percent Cabernet Sauvignon. Over the years, he has tried to grow other varietals but found his vineyard, which sits in the El Pomar District of the Paso Robles AVA, is suited best for Cabernet Sauvignon. "With concentrating on Cabs, it works well for me," he says. "I think what your microclimate does best for you and if it fits you and the way that you want to do it, I think that is the way it should be." Each Friday through Sunday tasters have the opportunity to taste anywhere from five to seven of the highly rated Cabs, and more times than not owner and winemaker Bruce will be pouring. It's important for Bruce, 74, to be there so he can guide them through the wines and give them a glimpse into what went into making the wine. "They will never forget the experience," he says. "They don't forget, and then I've succeeded." Educating people that walk into the rustic, quaint tasting room is key to the experience. "I think it is important the more knowledge the consumer has the easier it is for a boutique winery to sell his product," Bruce says. "I'd love it if every wine drinker could spend a week or two with different winemakers and watch what they go through in making the wine." Bruce, who spent the majority of his adult life as a contractor on the Central Coast, has been making wine on the property since 2001 and has been growing grapes since 1994. He oversaw many of the builds for wineries in the Paso Robles area during the initial explosion in the late-80s and early-90s. "Timing is everything and being lucky," he says.

"Timing was just perfect for a guy like me in the wine industry. There were no wineries around me — a dozen or two dozen and here I was." In 1996, he started selling grapes and learned his grapes were used in JUSTIN Winery's Isoceles and Cabernet Sauvignon and also sold grapes to B.V. Bruce didn't sell everything the vineyard produced. He kept some back and started making wine. In 1999, he started building his production facility and tasting room. His first vintage was in 2001. Making wine was something Bruce had learned from his dad, while living on the family farm on the west side of Lake Michigan. The family grew peaches, pears, plums and black sweet cherries and made wine out of them. "It gave me a good solid base and theory on how to do it," Bruce says. "He was a purist. If you can't make it right then don't bother. I hold true to that today." He credits Danny Panico of Dover Canyon for bringing his Cabs into focus. "When I got here and I started to get into this," Bruce says. "I had a guy who was my mentor so to speak, Danny Panico from Dover Canyon. I learned a lot from Danny. We made wine together for two to three years. He put the polish on it for me." Currently, on the bar at the tasting room Hansen there are Cabs from 2010, 2011, 2012 and 2013. Some years produce more than one wine, for instance Bruce has three from 2013, all bottled using different barrels. "I ordered a group of about 22 barrels and I ordered them from the Allier Forest, which is about 4000 feet elevation," Bruce says. "They have really tight grains so they let the wine age differently, Continued on page 19

but you watch I have an 2012 where the trees are from a different forest and this wine here is identical, picked fermented all the same there is no difference in them other than the barrels and they are completely different wines. "It's amazing what different barrels will do," he says. The barrel room is where the artistry is for Bruce. "I love the artistry in here, because I am forever moving wine from one barrel to another, just because the barrel is not giving the wine the respect that it should," he says. Another integral component in winemaking is doing everything by hand. Bruce believes in punch downs and does not believe in pump over during fermentation. He would rather let gravity do the work if possible. He says pumping can have a negative impact on the wine. "You can't keep beating something up and expect it to be good," he says. Nurturing the wine is the approach that Bruce takes.  "When they are young they are so tender and easy to destroy and hurt," he says. "You have to really carefully care for them the first VINO Central Coast Edition

year to two years." Currently, Hansen hosts what he calls the Cab Challenge throughout the year. He asks people to bring their favorite Cabs to his winery on a predetermined date and from a predetermined vintage to taste alongside his Cabs and others from the same year. On Nov. 19, at 7 p.m., 2007 Cabernet will be in challenge. Determining a winner and loser isn't important in the challenge. The chance to taste some great Cabs from anywhere in the world with like-minded enthusiasts is what it is all about. But Bruce still says his and many others being produced in the Paso AVA, will show well against any of the top regions in the state. "To see the way things have gone, you would be naive to think it was inevitable," Bruce says. "This area has a uniqueness about it that is as good as or better than any other." Coming into his own: Villa San-Juliette’s

E

verything about Villa San-Juliette Winery emanates a kind of classical charm. There are the statues and grand pillars, the well-manicured lawns and pictures of owners Ken Warwick and Nigel Lythgoe hanging out with big-time celebrities. (The Englishmen are the producers of “American Idol” and “So You Think You Can Dance,” respectively.) Yes, the wines are as elegant as you would expect, with an Old World emphasis on honoring varietal character — but there’s a fresh, modern element in the mix, too. That element is newly appointed head winemaker Dan Smith, a millennial who approaches the craft with an open mind and a hands-on approach. I caught up with him and his vineyard dog, Draco, at the San Miguel-based winery. Originally from Oregon, the 29-year-old never wondered what he would be when he grew up. “My aunt and uncle were really into collecting wine and they’d sneak me sips Photos by Hayley Thomas Villa San-Juliette Winemaker Dan Smith and his trusty vineyard dog, Draco, pose at the San during family dinners,” Smith said. “That Miguel based winery. Keep sipping! saying that I wanted to be a winemaker and he was saying, ‘Go for it.’” Smith’s uncle, Dr. Richard Crone, died recently, but Smith was glad that the man who got him into wine was able to see that winemaking dream come true. Growing up, the winemaker was always attracted to California, a land of bounty and stellar collegiate wine programs. All it took Continued on page 22

was one visit to Cal Poly for Smith to realize that SLO would be his new home. “That was 2005, the first year for the program, and it was cool to be part of small group,” he said. “Ten years later, a lot of people in my graduating class are now making their mark on the industry. It’s cool to see that, as well as to follow the ups and downs. Being a winemaker is not always the easiest road.” Case in point: Smith could not find a job immediately after graduating. In 2009, he held a bachelor’s degree in wine and viticulture with a focus on enology, but the economy had taken a nosedive and jobs were scarce. It seemed like a good time to do a harvest in New Zealand, and Smith did, learning oodles in the process. Luckily, a research internship stateside with commercial wine company Gallo turned into a full-time job. Smith admits that Fresno was not his first choice for living, but he reasoned that he would learn a lot of valuable techniques and real-world experience. He was right. Smith learned what it takes to make vast quantities of wine in a corporate environment, and the training was top notch. What he didn’t learn? How to get his hands dirty. “It just wasn’t the right fit for me; it was really hands-off,” Smith said. “It really threw me off that I was technically a winemaker but wasn’t allowed to touch the tanks.” That wouldn’t do. Smith followed his desire to get closer to the grape, eventually returning to his stomping grounds of Oregon to work cellar jobs and harvests at Archery Summit and Andrew Rich. There, the winemaker mainly worked with cool climate grapes like pinot noir — and despite the fact that he loves pinot noir — there was still something missing. The vibrant abundance of the Central Coast called out to him. “One of the reasons why I was so attracted to the Central Coast, as a growing region, is the fact that you can grow such a variety of grapes; even great pinot can get boring after a while,” Smith said, adding that he quickly returned to the Golden State. Back in Cali, he reconnected with a mentor he had interned under during college — then Villa San Juliette head winemaker Matt Ortman. Also known for his work with his own label, Ortman Family Wines, the seasoned winemaker helped Smith land a job

at Villa San Juliette as cellar master in 2013. The winery had just opened a year prior, so it was exciting to say the least. “There was no winemaking facility here at the time, so there was a lot of work to be done,” Smith said. “I helped Matt as he got the winery started and we built a small team together. I was really intrigued with the start-up aspect of the job; plus, Ken and Nigel are hilarious guys and very talented businessmen.” The winery now boasts its own state-of-the-art winemaking facility and grows a dozen kinds of wine grapes on site, including five Bordeaux varieties. With more than 20 acres of planted fruit to play with, it’s safe to say that Smith is as “hands on” as he wants to be. “It’s a unique property to Paso Robles, and I love that we’re diving into different areas of the vineyard that have different slopes and we’re micro-farming them differently,” Smith said. “We make 100 percent varietals of pretty much every grape we grow, but we also have blends that are quite unconventional, like a RhoneBordeaux blend.” Smith loves the fact that he gets to have fun with the single varietals, too: they’re almost always small lot, some getting special oak treatments or extra attention in the vineyard. The winemaker still has to pinch himself — Is this really his job? “Initially, it’s kind of amazing and a tad scary thinking that this is your role, overseeing the vineyard operations and production,” Smith said, adding that he owes a lot to his assistant winemaker Lauren Herrick. “I take a team approach to the winemaking and I’ve had so many mentors and professors who have taught me a multitude of ways to do things.” This herein lies why Smith is a winemaker to watch. He’s open to growing and learning; he’s coming into his own, one vintage at a time. Smith has gotten his wings, and now he’s beginning to soar (despite the pesky grey hairs that tend to pop up due to stress). You can already see the winemaker’s influence in the white wine offerings, which are showing more restraint, less alcohol. “I’m trying to stop and enjoy this moment,’” Smith said of his current place in life. “It’s a beautiful property. When I walk around the vines and look around at where I’m at, I have to admit, it’s pretty cool. I’m discovering my own artistry and my own style. That’s exciting.”

Over 140 ways to celebrate Harvest Wine weekend

T

he grapes are ripe for the picking, and that means it's time for Harvest Wine Weekend to begin, offering a once-in-a-lifetime experiences to taste the fruits of more than 140 wineries' labors, Oct. 14 through 16. Paso Robles Wine Country Alliance Communications Director Christopher Taranto said the highlight of the harvest is that all the wineries are celebrating the work that went into harvest and invite people to come experience a little bit of what harvest is about. "Many wineries center their individual events around harvest type activities," Taranto said. "So there may be barrel tasting, grape stomps, vineyard-type tours — all things that allow people to engage more with what goes into some of the farming and the winemaking. This is that unique time of the year when you can actually see what culminates after the many months-long growing season that basically comes to an end here during harvest." Many wineries in the area host events all weekend long, some hosting one event that has become a tradition to their brand over the years and some sprucing the experience up with a new event to fire the pallet and imaginations of their patrons. Some events are more engaging than others, but nearly all the wineries in the area offer something unique to them. Wineries that are in a state of growth tend to offer new events as they grow, Taranto explained, saying that the Paso Robles AVA is constantly changing and growing so each year offers a new experience. "For instance, Adelaide Cellars has their new hospitality area, so I would assume they are doing something new and different with their new space as will any number of other wineries that are expanding," he said. "Other wineries are only open by appointment that end up, for Harvest Weekend, having more of an open-house type of atmosphere. That is one of the things that makes

this weekend special because these wineries are not open regularly." On the PasoWine.com website, users can go to the Harvest Festival information page and search by winery name, day of the week or type of event to find something that "will fit their idea of the best harvest festival experience," Taranto explained. In Paso Robles, the harvest came a bit earlier than it generally does and has changed progressively in this time of sever drought. With any agriculture, there is a direct correlation between environmental impact and the progression from flower to mature fruit. This does not necessarily mean the quality of the end result is lesser, but different. Taranto said that some wine growers even prefer waterstarved fruit in its mature form to the fruit that would come out of a wet year. "With any science there are many variables to contend with," he said. "But the true art of winemaking is being able to take control of those variables in the fermentation process and turn out a good product regardless of those added variables. With any creative process, the end result is subjective. The best part is that if you don't enjoy one wine, there are at least 139 more to try." Please note, there is no marquee ticketed event for Harvest Wine Weekend. Costs to participate in winery events varies by winery and are often listed in their event descriptions. T

in City, the ultimate hipster destination for cutting-edge libations, has exploded onto the Paso Robles scene, featuring 17 locations to taste small-lot wines, distilled sprits and brewed creations. Each business that has made a home in the industrial center have transformed tin warehouse structures, infusing them with a rustic charm while staying true to their industrial bones. The locations complement one another while at the same time providing a unique experience, and signs made out of oxidized tin extenuate the Tin City identity. Tin City Cider House recently opened in the area and more growth is on the horizon, including plans for a new restaurant, a baker and a farmer's market. The 17 locations housed at the Tin City complex include Barrel House Brewing Co., Aaron Wines, Brian Benson Cellars, Clos Solene, Desparada Wines, Field Recordings Wines, Broadside Wines, Jacob Toft Wines, Levo Wines, Nicora Wines, ONX Wines, Powell Mountain Cellars, Torrin Wine, Wine Shine Artisen Spirits, Fableist Wine Co., Lefondusac Wine Bar and now Tin City Cider Co. The big attraction for many visitors is the one-stop opportunity to taste the diversity of the Paso Robles region on foot as opposed to driving from tasting room to tasting room. "We love Tin City and all the wineries in here," said Paso Robles resident Donna Stevenson. "We love that they are all locally made and that we can park and walk around and taste a great deal of diversity. It is very convenient and all of the locations are very nice

as are the owners. We are locals and we brought our friends from out of town to visit." Tin City patron Shelby Capello said that Desparada was the first stop in Tin City that she and her group of girl friends made and that they appreciated the atmosphere. "I love the way the lighting sets the tone of the experience you are going to have," Capello said. "As a group of women we really appreciate the art on the bottles in addition to how clean the wines taste. There is a real feminine touch to the place and it is very inviting." Another foursome that was touring the Tin City area were the Gillespies and the Burleys, married couples from the Bay Area and San Diego, respectively, that were visiting for a weekend of fun in Paso Robles. "Tin City is scrappy and we love it," Sara Gillespie said. "It is our first visit and we were told by our Air B&B host to stop by, and we are glad we did." Gillespies' friend Beatrix Burley also said that Tin City is a great concept. "Turing an industrial area, taking what was old and making it new again, is a fantastic concept and being able to walk around and taste a lot without having to drive from place to place is the topper," she said. "We like the exclusivity of this and that each location are not pushing club memberships on us. It is really hip and up-and-coming." The experience in Tin City has gone over well with the public

and for those who work there success is the icing on the cake. Camille Mori, tasting room employee at Desparada, said that the job is her first experience in the wine industry and that many of the businesses in Tin City were originally part of the Paso Robles Underground. The Underground is a winemaking cooperative made up of burgeoning winemakers who have combined forces to lower the expense of processing. "A lot of people that moved into Tin City came from groups like the Paso Underground," Mori said. "Tin City is a starting point for people to move on and have their own labels and their own tasting rooms all in the same area. It is really cool to see these small wineries making it happen. Honestly I don't think there is a bad wine out here. The area is becoming more and more popular. It is really amazing to see this growth. Patrick Brooks and his partners moved into their space about a year ago, joining the Tin City crew. Brooks said that Tin City is a prime example of young entrepreneurs coming into an area to divide and conquer. "We all came into the area with the mentality that we were going to make our businesses a success and we have divided and conquered," Brooks said. "There is a restaurant going in and the new cider house. It is the place to be." Clos Solene Wines assistant tasting room manager Julie Chang said that it is really an exciting time to be working in Tin City. She said that working with fourth-generation French winemaker Guillaume Fabre has been one of the highlights of her career in the wine industry. "We have so many innovative small, boutique producers that are doing some great things," Chang said. "An interesting aspect is that people are able to share production space and equipment so there is a lot of creativity going on here. Working

Owners of Lefondusac Winery Bar, Stewart McLennan and JP French, recently joined the Tin City family, serving up wines on tap, sharing single-vineyard lots by the glass. Their concept in Tin City as a whole is to take the pretension out of the tasting experience. At Lefondusac they take this to the next level by offering wine by the glass at beer bar prices. "Stewart and I were making wines at PWS and we thought 'let's get our own place here,'" French said. "We saw that this new location was being built and was located right next door to Barrel House and now we have larger space to work with and are still part of Tin City. What is really fun about this location is that no one that works out here has an

attitude or is pretentious about the experience they provide. We decided to take that idea a step further. We take wines straight from the barrel into the keg and give people a taste of something that is really fresh at beer tasting prices and even fill bottles with our signature blends if people want to take some home." Tin City is a one-stop libration excursion that visitors could easily spend an entire weekend exploring. There are avid corn hole players in competition regularly, food trucks make stops and partner with tasting rooms, live music abounds with outdoor stage areas at Barrel House and Lefondusac and others utilizing tasting room space to share their extensive record collections and feature solo artists. A

llowing the wine to shine in every bottle of artisan spirits is the goal of the Paso Robles-based distillery Wine Shine, which made its home in Tin City just a year ago. Owners Patrick Brooks, Don Burns and Mark Sahaydak have found fame in their short time in business for the diversity of flavors and exquisite concoctions, pairing flavors that wow, from ginger, black peppercorn and mango to a clear and clean fig-based brandy. "Because we are in the heart of Paso Robles we are a brandy house primarily," Brooks said. "We do make a lot of whisky from Barrel House Beer as well that is sold at markets locally, but not at the distillery. Historically what distillers have done is to distill down what is locally abundant and in our case it is definitely grapes. We take Saignée — this is the juice removed to improve wine quality before fermentation — and we refine it into top-shelf spirits. We take top-quality west side Paso Robles Grenache, Syrah, Mourvedre, Cabernet Sauvignon, and a little Pinot Noir and create some outstanding brandies." Brooks said that it is not so much the distiller that you have, it is really what goes into the still that makes the difference. They have a "Wine Shine Wine Shrine" that displays the locations that supply them with saignée. Primarily the saignée that Wine Shine uses is from Saxum Winery because of the connection between the two businesses: Burns is the assistant winemaker at Saxum. There are also a few contributions from their neighbors in Tin City. "We are so thankful that we have such great connections like Justin Smith, who helped us get up and distilling," Brooks said. "Our neighbors have also been very supportive and we could not be happier to be a part of Tin City. Since we opened we can't keep anything in stock. We are selling out so quickly we have our current still running 24-7 we just can't make enough booze. We do have a new still coming in that has been custom-designed for our needs. To my knowledge it is just us and Krobar that have American-made stills. We are all about organic, local produce every step of the way, and in the same way you had better have a still that represents who we are and so we went American-made the right way." Wine Shine neutral brandy is 100 percent Saxum Grenache cut back with spring water to make 90-proof spirits. Brooks said that Grenache is a favorite of the Wine Shine team to distill because it is so fruity, botanical and sexy. It is very clean, but is not a vodka even though it is distilled clear. fig newton cookie in flavor that goes down smooth even straight-up. Brooks said that the first release of the ginger, black peppercorn and mango brandy went so fast the next run completed in midAugust was the largest Wine Shine had produced to date. "This is hot off the distiller today, and as you can see we are still bottling it in the production facility," Brooks said, referring to the mango, back peppercorn, ginger brandy. "It takes a few months to make and it sold out in two days in our first run. It lends its self very well to mixed drinks and is perfect for a Moscow-Mule. I actually made some pork chops with it and made some mango chutney on the side, it was fantastic." There are many applications for the spirits made at Wine Shine. Brooks and the team have applied to be able to sell vermouth and bitters out of the distillery as well. Though Wine Shine is not a full bar by any means and only serves an ounce and a half of brandy for tasting, by law, the ambiance and the personality of the owners and patrons is enough to inspire an hour stay to taste it all. eggy Chase is nearing 80, but you won’t find her sitting on her front porch in a rocking chair anytime soon. On an average morning, she’s working outside in the fresh air alongside her husband Bud. Their life, and their livelihood, is inextricably intertwined with their 22-acre olive ranch in Cholame. “We still climb trees and dig ditches,” Peggy Chase says during a recent chat about the blood, sweat and tears that go into every bottle of their artisanal offering, Olive U Olive Oil Co. In many ways, the ranch operates the same as it did when the couple purchased and planted the trees back in the late 90s. The bulk of the work is done by the Chases with welcome help from their family and a harvest team. “We hand harvest, and that makes a big difference because a lot of mechanical harvesting causes bruising,” Peggy says. “It’s just like a bruised apple. Might not be not bad for you, but it doesn’t taste as good. We are very careful with our harvests.” When you’ve been married 58 years, you learn how to make the best of each other’s strengths. Bud performs the labor while Peggy takes a role in marketing as well as day-to-day farm tasks. “Learning to work together has been both frustrating and laughable as we are both leaders, but like all marriages, it is a giveand-take situation,” Peggy says. The couple met in high school in the Los Angeles area circa 1955. Peggie had grown up in Ohio with chickens and open spaces; Bud had grown up on a working farm in Fresno. “He picked cotton and I picked beans,” Peggy likes to say of their rural childhoods. “When we were dating, we both talked about moving to Fresno to start a farm, but we got rooted down south.” Peggy went on to become a supervisor at the phone company while her husband became a heavy hitter in the tire business. Still, the farming dream persisted.

“When we could afford it, we started looking for a farm. We drove up this way and found the ranch,” Peggy says, adding that the initial acreage totaled 3,500. “We later downsized because we were getting too old for all that,” she says. “We were wondering what we could do with the smaller parcel and thought olives might work. Turns out it was the perfect climate.” As it turns out, the dry climate and soil type proved to be perfect conditions for Mission and Manzanilla trees, as they do well in dry air and well-drained soil. While some people prefer ultra-peppery, grassy or pungent olive oils, Olive U Ranch Extra Virgin Olive Oil is more mild and versatile. “We went for the American palette. We felt they wanted a milder oil,” she says, “We went for an oil you can use for anything.” You can even stop by their ranch and tasting room, open by appointment only. Peggy says the pace of life is slower out in the country, just like it always has been. “The most impressive thing we encountered when we moved here was the neighbors. Everybody helped everybody,” she says. “When we moved here, all the farmers were willing to help us. We were green – we were city people.” Not so anymore. A

t TH Estate Wines, the worn patina of 150-year-old Iowa barn wood beams with warmth against cool modern steel. This striking, 3,000-square-foot tasting room isn’t just a lesson in old world meets new ideas, although you could say that the architecture — and minimalistic yet luxurious Rhone style wine offerings — reflect exactly that juxtaposition. The tasting room, and all that surrounds it, also offers up a vivid reflection of its owners, former NFL football player Terry Hoage and his accomplished wife and business partner, Jennifer. The son of a farmer, Terry grew up on a Midwestern farm before going on to football stardom. A talented creative, Jennifer has lived many lives, including studying the art of Mime in France and working in the interior design field. “We literally built the building ourselves,” Jennifer said during a recent tour. “One of the dents in the wall is from me learning to use the forklift. It truly is a reflection of us.” Together, the couple symbolizes a duality that shines in every aspect of their tasting room, constructed in 2004 by Terry with the 38

help of Jennifer, his parents and uncle. Last summer, the couple opened its doors to the public, ushering in a new chapter of their lives. The tasting room is a bit off the beaten path, nestled in the winding west side Paso Robles landscape. Still, the stop has already proven itself to be a hidden gem among the oaks. “A lot of our customers come from word-of-mouth recommendations,” said Tasting Room Supervisor Maty Tracey. “It’s all about spreading the love. That’s how we make it happen out here.” Speaking of love — that truly is what inspires the Hoages in all they endeavor. When the couple decided to throw their hats into the winery ring, they didn’t leave the creative work to other people. Instead, they rolled up their sleeves. Together, the couple put pen to paper designing everything from the vineyard and the winery to the tasting room and hospitality experience. “We want people to feel welcomed into the fold; the Hoages are very humble,” said Kim Sabella, who also works in the tasting

room. “Although they work really hard to make fantastic wine, people can still get an intimate experience.” This vibe is bolstered by the fact that the tasting room isn’t by appointment only; it’s open to the public six days a week. Authenticity serves as the through line of the business, as Terry and Jennifer craft all the wines themselves. The couple learned from local winemaker and mentor Justin Smith of SAXUM Vineyards, who produced their debut 2002 and 2003 vintages. It is from this mentor that the new winemakers learned the importance of both experimentation and allowing nature to shine without excess intervention. When you walk into the tasting room, this philosophy is clear as day. A mix of rustic warmth and angular lines beckon visitors to traverse the length of the metal-framed building. A private wine tasting room features even more barn wood (this time, in the form of a long community-style table). Sheer glass elements and a roll-up door allow the winemaking facility to be visible — part of the conversation. Polished concrete floors and LED lighting showcase an industrial feel that is very of-the-moment. The 2016 Central Coast Wine Competition, hosted by the California Mid-State Fair in Paso Robles, featured the best vintages the Central Coast has to offer in the largest evaluation of wines produced from grapes grown on the Central Coast.
