SWISS PINNACLE As the world’s hub of diplomacy and private banking, Geneva’s hotels have always had a reputation for excellence. Now Unique Luxury finds The InterContinental has risen the bar again.

w w w.u ni q ueest at es.c o m. a u

t is one piece of real estate that any hotelier would die for. Located in lush parkland, in the heart of Geneva’s diplomatic district, the InterContinental Genève has unrivalled views of Lake Geneva and Mont Blanc and when you walk out the door it seems that every world governing body’s headquarters are at your feet in this exquisite city. It’s only a three-minute walk from the United Nations and International Centre of Congress and within 5-minutes from Geneva’s luxury shopping district. Since 1963, the Intercontinental has been one hell of a place to stay. Its guests and the meetings of major significance that have happened within its doors, give this hotel a gravitas that few in the world can lay claim to. 20th Century figures including Martin Luther King, Ronald Reagan, Fidel Castro, Kofi Annan, Bill and Hillary Clinton and even Che Guevara set up camp here during crucial points in world history. It’s also been the favoured stay of Middle Eastern Sheikhs, always sticklers for luxury. Now the talk of the wealthy and powerful in this town is on the completion of the hotels US$100 million refurbishment. In December it unveiled The Residences, three palatial guest spaces that set the hotel apart from anything currently in the market, and with overnight prices ranging from US$11,000 to US$54,000 you can imagine how special they are.

It’s the creation of renowned New York interior designer Tony Chi. Chi’s story is a classic New York narrative: an immigrant child from the Lower East Side with a flair for creativity, his signature sense of cool, elegance and understated glamour is a major force in international hotel design today. Known for his attention to detail, orchestrating rich compositions of lacquers, mosaics, veneers and mirrors, his reputation has been founded on what he calls “invisible design”. “It’s the notion that, much like good service, a hospitality space should elicit a positive response without necessarily making you aware of why,” says Chi. “The objective was to provide the hotel with a completely new look - modern, but classical - and at one with the natural beauty and sophisticated international presence of the city on the Rhone”. Inspired by palaces of the past and dedicated to the leaders of tomorrow, the Diplomatic Residence, Presidential Residence and The Residence, each couples the privacy and innovation of a home with the exclusivity and services expected at a worldwide luxury hotel. “The overall design, the colours, the materials and the furniture were all chosen to give the InterContinental Genève a grand presence that is both welcoming to guests and symbolic of the city’s important role in Swiss life and global affairs,” explains Chi.

U nique Luxur y

The Diplomatic Residence consists of a master bedroom, living room and dining area, dressing chamber, marble bathroom, rain shower and tub room, powder room, study, two guest powder rooms, and pantry. It’s yours for US$11,268 a night. At US$22,536 a night, the Presidential Residence is made up of two master bedrooms, two connecting Diplomatic Residences holding dining rooms, living spaces, master dressing chamber, marble bathrooms, rain shower and tub room, powder room, study, two guest powder rooms, and pantry. Both have their own 24 hour, private Butler. But it is The Residence that crowns the lot. Sitting on the top floor of the hotel and with 360 degree views of Geneva, this iconic space has, in the past, been booked out for long periods by the Saudi Royal family and the ruling family of the UAE, including other scions of Middle Eastern royalties. Today it continues to host the wealthy, powerful guests that shape the future of the world.

Marble bathroom of The Residence

Greeted by doors that you would expect to find at the Palace of Versailles, it has an East & West Wing, two master bedrooms, and rooms including a grand salon, library, gallery, private lift, a kitchen fully equipped with John Pawson Demeyere cookware, a bar adorned with accessories by Ralph Lauren, a personal butler and your own chef. The menu comes as a blank page; it all comes down to whatever your heart desires. The East Wing encompasses a living and dining room, master bedroom, tub room, guest powder room, massage room, hamman, dressing chamber, vestibule chamber and pantry. The West Wing, includes an additional fitness room with sauna, and if you have unexpected guests, the hotel will open up nine extra rooms. Its furnishings of textiles in warm colours, soft bed linens by Frette, and subtle lighting by Light Contract, create an atmosphere of total comfort and indulgence. Its sumptuous bathrooms with white marble bathtubs and sinks are extravagance at its very finest, for which Chi calls upon the

expertise of the professionals: Waterworks, Promemoria, Lefroy Brooks, and Dornbracht. The rooms have been furnished with works of art from Georges Smith’s Ottoman collection, which sit at harmony with creations by Meridiani, Minotti, Baxter, Philippe Hurel, Moissonnier. Intimate spaces have been filled with mirror night stands by Interior Plus, horned delights by Arca Horn, leather accessories by Arte & Cuoio, while glimpses of Alexander Lamont, Bull & Stein, Asiatides, Gilles Caffier, Villiers, Pagoda, Aero, Creativ Light, Ins & Outs are present throughout. The dining table sparkles with Christofle silver flatware and a fusion of Riedel and LSA glassware, beautifully balanced by the sophisticated Bernardaud dinnerware. Chi has favoured Chelsom, Baker, Contardi, Porta Romana for The Residence’s loose lighting fixtures. It is one of the grandest hotel spaces that you could imagine, hence the price tag, a magnificent US$56,333 a night. But for those who can afford it, this is a place to find history meeting its future.

he InterContinental has hosted events including the Arab-Israeli conflict on 9th May 1977, which witnessed the coming together of President Hafez al-Assad of Syria and US President Jimmy Carter to tackle the deadlocked Israeli-Syrian peace talks. Mickhail Gorbachev and Ronald Reagan held a famous summit in 1985 and the IEEE International

Conference on Communications were here in 1993. More recently, it housed the Iran Nuclear Deal where an agreement was struck between the Iranian Foreign Minister, Mohammad Javad Zarif, and six other world leaders including, US Secretary of State John Kerry, Britain’s Foreign Secretary William Hague, and French Foreign Minister Laurent Fabius.

No Rum Do January saw the opening of what’s becoming one of the best-kept secrets in the diplomatic corp, the hotels new rum and cigar bar, Le Fumior. Designed to make you feel like you’ve stepped into a luxurious cigar box, its dark woods, warm leathers and commanding fireplace offer the perfect hideaway. Cigar aficionados will not be disappointed. Le Fumoir’s Cigar Menu boasts thirty prestigious cigars, each personally handpicked by the renowned cigar connoisseur Vahe Gerard, of the Geneva based cigar house Gerard Père et Fil and author of ‘Cigars’. It also boasts a rum menu from over 27 countries. Adorning the bar are five decadently flavoured rums held in stately Absinthe fountains and tailored to every guests’ tastes. Choose between the Smoky Rhum, a mix of pear, honey and Lapsang souchong tea for a sweet and smoky flavour; Nutty Rhum, a blend of Tonka beans and macadamia nuts; or Candied Rhum, a fusion of dates, figs and plums for a sugary oriental taste.

here was a time, a very long time in fact (143 years to be precise), when the house of Vuitton was solely a purveyor of leather goods. Fine and much coveted leather goods, admittedly, but nothing more. Then, in 1997, Marc Jacobs was appointed Creative Director to guide the French luxury house into the wild world of ready-to-wear fashion. So when it transpired that spring/summer 2014 would be his last season penning for Vuitton, Jacobs took the opportunity to present a ‘greatest hits’, of sorts, of the design legacy of the past 16 years. The staging was made up of

blackened motifs from previous shows and he dedicated the collection “to the showgirl” inside his muses—a list of over 30 women whose “style, imagination, creativity, talent, vision and voice have changed our landscape”, from Elsa Schiaparelli and Coco Chanel to Madonna and Kate Moss. The showgirl was apparent in the feathered headdresses and ornately embellished garments, where barely a surface was left untouched by beading, crystals or more feathers. But rendered in funereal black, they were a reminder that behind the celebration and sparkle, this was goodbye.

aving the responsibility of creating the seasonal aesthetic of an esteemed fashion house—an iconic French one, at that—is a job that would weigh heavily on any set of shoulders. But barely two years into his tenure at the helm of Christian Dior, Raf Simons seems wholly comfortable with the task at hand. Drawing on Dior’s many unforgettable design cues and infusing them with his own streetwise sensibilities, the Belgian brings subtle subversion to each collection. Even when his garments appeared to be utterly conventional, Simons always brings a surprising touch. Case in

point is the perennial classic Dior Bar jacket as a pants suit: from the front, chic black; from behind a ruffled bustle of boldly colourful print is revealed. A shirtdress benefits from similarly unexpected detailing as the placket dovetails across the ribcage and the neckline plunged into a deep V—at the back. Pretty pleats took an unpredictable turn, traversing diagonally across skirts. Drawing on the Bar silhouette, Simons played with proportion, introducing skirts and frocks dramatically flaring at the hips. Not what most women would welcome, but in Simons’ hands, it just works.

ell somebody’s in a chirpy mood this season. Perhaps his minions slipped a little whiskey into his morning coffee - whatever the cause, Karl Lagerfeld followed up his sombre autumn/winter collection with a vibrant celebration of art and colour. In all seriousness, Lagerfeld is never one to stand still and somewhere between designing for Chanel, Fendi and his own eponymous label, the prolific designer managed to conceive 75 pieces of art and sculpture to adorn his art-influenced spring runway show.

From the technicolour takes on Chanel’s signature tweed, to the multihued slashes of eyeshadow across the lids of models, it was a frenzy of painterly colour and creative texture relieved on occasion with pared-back pieces in ebony, ivory and stone. The restraint didn’t last: Lagerfeld couldn’t help but end with bold and beautiful prints covered in swatches of colour that would surely be the envy of any artist. And with 89 looks covering the entire colour spectrum, it’s fair to ask: does this man ever sleep?

n the endless pursuit of celebrating all things British, in keeping with Burberry’s boundless patriotism, Christopher Bailey turns this season to the nation’s craft heritage. Texture abounds in UK-woven, English lace (naturally), jacquard, brocade and velvet. Applied to sleek, sexy silhouettes, the designer cleverly made each textile feel modern: more downtown girl than Downton Abbey and drawing on every shade of autumn. Furthering the theme, there was a shirtdress emblazoned with a map of London—perhaps Bailey, not immune to displaying a little wit, was playing homage to the

opening title sequence of EastEnders? In any case, lest he be accused of being too anglo-centric, the designer also gave a nod to the label’s international fans with a series of graphic tees depicting architectural landmarks from around the world. Alongside St Paul’s Cathedral there was Notre Dame in Paris, New York’s Chrysler Building and Beijing’s Forbidden City all getting airtime illustrated through line-drawn prints. Meanwhile, this season’s vision for Burberry Prorsum’s signature piece—the trench—is slim, sleek and especially desirable in a deep violet hue.

aking to the Paris runway to present the label that plays the role of the sassy little sister to her mainline range, Miuccia Prada offered up a healthy dose of whimsy as she borrowed from disparate decades for her spring show. The sixties made their presence felt in two-toned coats and there were shades—literally—of the fifties in the pastel hues that offset the Italian designer’s more vibrant excursions into colour. Then, before you knew it, the eighties reared its over-the-top head in bright patent skirts and ruched prom dresses replete with spaghetti straps. Alongside it all,

exquisite fairytale prints of pussycats, pretty Mary Janes and patterned knit tights referenced at least one aspect of every woman’s childhood or formative years. It was an emotional pull that no doubt tugged at the “I-want-it-now” instinct even more than is customary with anything Mrs Prada puts forth; as desirable, crafty and subversive as always. And in the tan suede, fringing and beaded busts, she recalled everything from the cowgirl to the showgirl, leaving no dress up fantasy unturned.

ast season, a slightly rawer interpretation of the classic Calvin Klein Collection aesthetic was presented and it would appear that it was no mere flirtation on the part of Creative Director Francisco Costa. For his pre-fall collection, Costa takes the theme and runs with it. Many of the organic details introduced last time around return. But this season, the frayed hems and ‘unfinished’ details turn up on fabrics and silhouettes that are decidedly more relaxed; a loose and languid design language that retains the brand’s signature simplicity but takes it in a fresh direction.

w w w.uni quees t at es.c o m. a u

Slouchy knits with cosy, extra-long sleeves and pony skin slippers add to the impression of ease. And with the collection constructed in soothing shades of grey and pale pink, it seems that a laidback mood is taking hold at the house of Klein—and after a decade in the job, Costa’s comfort is well justified. The crafty spirit evoked by details such as oversized buttons and patch pockets help to broaden the label’s definition of luxury. Add ‘elegant slumming’ to the Calvin Klein woman’s to-do list.

After testing 80 botanicals, Victoria’s Four Pillars gin settled on juniper berries, coriander seeds, cardamom, Tasmanian Pepperberry leaf, cinnamon, lavender, angelica, star anise, oranges and lemon myrtle

Ginsider’s Guide

Gin is not only in, its revival is turning heads faster than the devil in a blue dress. Mike Butler reports. onsider this a public service announcement. If you like your Martinis and cocktails with vodka, and gin isn’t to your taste, it might be time to grow up and smell the roses, so to speak.

While vodka strives to be tasteless, the mysterious and often misunderstood gin is the polar opposite. Like whisky, it’s a drinker’s drink that’s made to be recognised instead of being anonymously downed in a shot glass. Think of it as a juniper berry and botanically infused vodka, because that is essentially what it is and the rise of the cocktail culture has seen it enter a new age. And the roses? Try Hendricks. Along with the juniper berry base, it has rose as a prime ingredient. Cucumber too. It’s delicious with tonic. “It’s a really exciting time to be drinking gin,” says brand ambassador at Pernod-Ricard and confessed gin-o-phile Ben Davidson, explaining that its

revival started in London’s bar scene in the late 1990s. British bartenders started exploring how gin’s flavours gave life and complexity to cocktails. That was followed by an explosion of boutique gins, particularly in the USA, as distillers began diminishing the juniper in preference for other exotics including peppers, citrus fruits, fennel, almond and even capsicum to create more ballsy and interesting flavours to be integrated into drinks. “It’s a style called New Western Gin. They’re really interesting and each one is different,” says Davidson, singling out Aviation gin from Oregon as a particularly fine example. “It has a definite lavender note,” he says. Most interestingly, Australia is now making its own rather excellent modern style gins led by Margaret River brand, West Winds. Created in 2011, it pole vaulted onto the international scene by taking the Double Gold and Gold medals at the 2011 San Francisco World Spirits Competition. “It

find out the brands you like and start considering it, whether it be for a Martini, Negroni or any other of the myriad cocktails that demand it. Because learning to appreciate it is quite simply one of life’s grown-up lessons.

West Winds and Four Pillars are typical of the new and impressive Modern Australian style of gin

was within a month of us launching so it was a pretty good start,” says Jeremy Spencer, one of the four mates who banded together to create their own mother’s ruin. West Winds makes two varieties and both are definitely worth looking out for. The Sabre presents a traditional London Dry style gin led by an undercurrent of citrus with a dominance of juniper, followed by coriander seed and the addition of wattle seed which adds a creamy texture to the tongue. It’s perfect as a classic G&T with a slice of lemon that will release the intricacies of this uniquely styled drop. Its Cutlass gin will put hairs on your chest for a variety of reasons, starting with a muscular 50% alcohol. This is a serious gin that takes its place amongst the newer styles and while juniper is still the base, the introduction of native bush tomato pairs up with beefed up coriander seeds to produce a headstrong and very drinkable drop. It’s definitely for the seasoned gin drinker; serve it with lots of ice, a splash of premium tonic and a slither of green capsicum. Tonic not to your taste? It’s probably because you’ve only ever tasted artificial quinine, which gives tonic its flavour. That’s because in WWII the Japanese takeover of Indonesia strangled the supply of quinine. That led scientists to create a synthetic equivalent that the world’s big tonic producers have run with ever since. Now, however, premium tonic waters are emerging which use real quinine root and the taste is an eye opener. It doesn’t have the initial chemically acrid belt that you may be used to.

w w w.uni quees t at es.c o m. a u

Instead, its softer bitterness runs down your whole tongue and is the perfect canvas for the complexities of any good gin to be painted on. Our pick is Capi tonic water. It’s made in Melbourne and you can get it in good bars and bottle shops. If you’re drinking a premium gin, you’re shooting yourself in the foot by scrimping on this mixer. Similarly, Martini drinkers should be paying close attention to the Vermouth that your bartender is mixing into it. It’s essentially a fortified wine, meaning it goes off, so if you ever see dust on a bar’s Vermouth bottle, order something else because you’ll probably be drinking something that turned before you walked in. If the bartender pulls the bottle out of the fridge, order two, because you’ve arrived at Martini heaven. On that note too, Cinzano isn’t the only brand available. Start experimenting and you’ll be delighted with the results. Another Australian gin that’s quickly winning fans is Four Pillars. Made in Victoria, it hit the market in late 2013 after “a solid eight months of toying around with up to 80 botanicals,” says creator and renowned winemaker, Cameron Mackenzie. What he settled with was a mixture of 10 ingredients including whole oranges, cinnamon, Tasmanian pepperberry, cardamom and even star anise. Established gin makers are also wading in. The very mainstream Beefeater gin, which hasn’t altered its London Dry style recipe since the late 1800s, now makes its premium Beefeater 24. It’s in keeping with the quality of Beefeater yet it has a twist with the addition of grapefruit and tea. It’s a

renovation of the classic London Dry style but it is not too far out of the box to destroy the Beefeater experience. Unique Luxury’s recommendation: the addition of tea makes it perfect for a punch. Another is Tanqueray. The brand in the classic green bottle became one of the leaders of the gin revival when it launched Tanqueray 10 in 2000. According to many of the world’s top bartenders, this is the gin that redefined the Martini with white grapefruits and limes along with juniper, coriander and a hint of chamomile to create a fresh full-bodied character and citrus tang. And finally a note on Plymouth Gin. Thanks to it being the military issue of officers of the Royal Navy, this was once the world’s most popular gin and its recipe has hardly changed since 1793 for the reason that it tastes so good. “As herbs, roots and berries came to English ports from around the world, distillers would incorporate them into the gins and each port would have their own style,” says Davidson. “Bristol had one, Norwich too but Plymouth is the only one that survives today and it still stands as an excellent gin.” Juniper, coriander, lemon peel, orange peel, angelica, orris, and cardamom are perfectly blended to make a spirit that’s exactly what it should be – tasty. If you’ve never tried it, figure out the brands you like and start considering it, whether it be for a Martini, Negroni or any other of the myriad cocktails that demand it. Because learning to appreciate it is quite simply one of life’s grown-up lessons. You’ll be richer for it.

The Stylish History Of Gin Descended from Dutch origins, this spirit infused with the aromatic bluegreen juniper berry was a staple of the British Empire and all who sailed in her for centuries as well as being the bedrock of the creation cocktail culture. Knowledge of the botanically steeped spirit was considered an essential skill of the British officer class whose training involved cocktail making. It made the highly bitter anti-malarial quinine bark delicious as

afternoon G&Ts on the verandah became what still stands as the most sociable medical treatment ever. Then bathtub gin became the drink that fuelled Prohibition America and every speakeasy in the country, after World War II, gin’s old-school exoticism slipped out of fashion as vodka’s modernist and undemanding flavours took hold of not only the Martini world but also the cocktail world.

Beauty and Mike Butler finds that Bentley’s new luxury saloon may be built for opulence but it’s got 616bhp under its bonnet. Yes, you read that right, 616.

The Flying Spur on the grounds of the Lake House, Daylesford

w w w.uni queest at es. c o m. a u

U nique Luxur y

Despite a new emphasis on every passenger, true to Bentley tradition, this is still a driver’s car

et’s get a little perspective on the 6-litre, 12-cylinder engine in Bentley’s new Flying Spur. The famed 1966 Dodge Charger 7-litre V8 Hemi, the benchmark of big car engines, mustered 435bhp and it would shake the chassis of any vehicle it was dropped into. Bentley’s, in comparison, is much more powerful as well as infinitely smoother. It goes from 0-100kmh in 4.3 seconds. That’s awfully fast and even quicker considering this lion of a car weighs 2.8 tonnes fully laden. It’s also the fastest four-door that the luxury carmaker has made, a blisteringly quick 322kmh. That’s impressive, but more interesting about this new Flying Spur is the fact that Bentley has drawn its focus away from the driver. It’s a subtle yet

Wood panelling and uncluttered instrumentation smack of luxury

It’s hand-held iPad-style tablet for rear passengers is unique in the Flying Spur

w w w.uni queest at es. c o m. a u

tectonic shift for a marquee that has always hung its hat on making cars too good for your chauffeur to drive. This Flying Spur has been tailored for the burgeoning demand for chauffeur-driven luxury cars in China, which already takes the lion’s share of Bentley’s produced. And the result: whether you’re sitting behind the wheel or being driven, you are made to feel like a king. There’s big legroom everywhere and even the back seats have a 14-way adjustment system (including reclining) as well as seat heating and, most importantly for Australian conditions, cooling. And while we’re on the seating, each one has a built in shiatsu massager.

Bentley’s magnificent coach-building skills continue with the new model

Sat nav and wifi internet access is built into the vehicle

The giant W12, 616hp engine

The back seat passengers also have their own mini-iPad style tablet that is used to access the car’s inbuilt internet, control the air conditioning, navigation and even the cruise control setting. You can also link your computer into the car’s Internet. Rear windows feature automatic blinds for privacy and, put together, it’s impeccably equipped for both business and relaxation. Regardless, it’s certainly impressing the market. When Unique Estates spoke to Adam Hannaford, brand manager at Bentley Sydney, in early February, he said, “The first ones started coming through at the very end of last year and the response has been very good. Of the three Flying Spurs that arrived in January, every one was sold the day it hit the showroom floor.” And why wouldn’t they? The Flying Spur has been completely re-engineered. The older 2005 version was essentially a GT with a bit more legroom thrown in; this one has clearly been designed with everyone in mind from the start. With competitors in this class including the Mercedes S500L, Rolls Royce Ghost and Aston Martin Rapide, we think the Flying Spur has got the best rear passenger comfort of the lot. On the outside, this is a car that makes more of a statement than an entrance. Without question, it’s better looking than the 2005 Flying Spur, it’s lower, slightly more muscular and has an instantly recognisable elegance and status that is throughout Bentley’s DNA strand. One of the most extraordinary aspects of the new Spur is it’s soundproofing. A decibel-eliminating cocoon around the cabin, including acoustic floor plates, glass windows, doors and double seals, means you hardly hear a thing of the outside world.

Subtle design cues across the exterior designate the Flying Spur’s top tier status

U nique Luxur y

Get behind the driver’s wheel and it’s so stately that you feel you’re almost above the law. Its beautifully crafted front dash of wood panelling, LCD touch screen interface (with built in television for when you’re stopped at the lights), leather steering wheel and built-in Breitling clock smacks of luxury. But while this is a performance vehicle, it is no sports car. With the air springs dialled back by 10 and 17% front and rear, antiroll bars softened by 13 and 15% respectively and suspension bushes 25% softer, it’s a far smoother ride than the Continental. The trade-off is that you really feel that you’re flinging 2.5 tonnes of metal into a corner when taking a turn. Without question though, you’d be hard pressed to come close to testing its stately 6.0-litre, twin turbo, W12 engine and eight-speed transmission. When we were testing its acceleration around

the back roads of Daylesford, we were still mustering consistent 4.6 seconds for 0-100kmh. On the other side of the speed ledger, its brakes are magnificent. At the front, 405mm carbide discs and 335mm discs at the back do a good job of bridling this luxury thoroughbred and it’s used brilliantly with Spur’s adaptive cruise control. What is it? Distance detection devices at the front of the car allow you to choose to be between two and five lengths away from the car in front. It’s a brilliant technology that sees the car’s computer system automatically break, accelerate and adjust to keep the car where you want it to be. For us, it’s the icing on the cake of this regal car that doesn’t shout out wealth but clearly projects that you have arrived.

Price: From $423,160. Most sell for around $500,000 with options. Engine: 6.0-litre, 12-cylinder, twin-turbo petrol. Transmission: 8-speed auto Power: 460kW @ 6000rpm Torque: 800Nm @ 2000rpm Weight: 2475kg empty Consumption: 14.7L/100km

The food, the location and the unique treatments make Daylesford’s Lake House something special.

You don’t just stay at Lake House; you immerse yourself in one of Victoria’s most enriching hospitality experiences. This getaway has been the favourite for savvy Melbournites for decades for the simple reason that the entire resort is enveloped in a tranquil, welcoming ambiance that enchants and recharges. Hydrotherapy in private treetop mineral water spas, advanced facials and seasonal signature body treatments provide for easy on-site indulgence, but its real drawcard is its restaurant. As the regional dining success story that the industry looks to, its produce is often hand picked for a morning delivery. Local lamb, heritage breed pork, grass fed

beef, fresh water fish, sheep and goat’s milk cheese, heirloom fruit from old orchards and windfalls from local gardens arrive at the kitchen which has become a pilgrimage point for not only diners but restaurateurs and chefs. The food is superb modern French/Australian and its wine list is 39 pages long. Stuck for choice? Sommelier Stacey Edwards’ near-encyclopaedic knowledge of the 800 wine list is excellent help. Salumi Australia Sarah Swan discovers the superior quality of Northern Rivers based Salami company, Salumi

ere, in the produce-rich Northern Rivers region of NSW, they are calling it the ‘new old flavour’. A young Australian of proud Sardinian heritage morphs with the archetypal hard working, fun loving yet business-focussed friend to create what is now considered one of Australia’s premier producers of cured meat products, ‘Salumi Australia’. ‘Salumi’. Italian cured meat products. We are all familiar with them – prosciutto, mortadella and salami. But dig a little deeper here and you will find bresaola, lardo, slinzega affumicata, guanciale and nduja. These words may sound like Italian babble to the average punter, but to the ears of educated food lovers and chefs around the country and world, this is poetry in motion. Let’s take a step back for a moment to where it all began. Take one chef, one restaurant manger. Add a gaggle of restaurants and a pure understanding of slow food, sustainability and provenance. Throw

them together. One sees passion…the other sees a business plan. This, readers, is a match made in heaven and just how Salumi Australia came to fruition in November 2010. Chef Massimo Scalas spent his youth travelling the world, cooking in 5 star establishments. Michael Dlask was the manager of a Gold Coast restaurant. Massimo was fresh back from Mauritius and keen to buy a restaurant of his own. He purchased, in Helensvale. Michael loved his food so much and in short time became Massimo’s best customer. The rest is history, as they say, as the pair went on to become firm friends and own 3 restaurants together over a period of 6 years including the iconic Great Northern in Byron Bay. As is often the case with hospitality industry professionals, years of hard graft led to a keen desire to step outside the box. Massimo was missing the wonderful salumi of his homeland and was finding it hard to ignore

U nique Luxur y

the passion that lay there dormant; there was a clear gap in the market; Michael saw a business opportunity and the duo embarked on the journey of building Salumi Australia. Salumi Australia’s ambitious idea was to produce a premium European style product that was 100% Australian made and Australian owned for the Australian consumer. 3 1/2 years on, it is fair to say the boys have produced and supplied above and beyond. Today they sit at the top of the Australian small producer food chain. Salumi Australia produces and sells more then 20 products to restaurants, delis, supermarkets and more across Australia. Massimo, Michael and their committed team, far from sitting back on their heels, tread the boards of food and wine shows across the continent, spruiking their wares, educating their customers and growing their fan base along the way. Massimo’s Sardinian heritage and the benefit of his family tradition is where the team lean for their recipe inspiration. Their signature u-shaped Salsiccia Sarda, a traditional dry Sardinian salami is coarsely ground. There are variations on this particular theme but I notice, fennel, nutmeg and chilli – perfectly matched to an aged pecorino (mental note taken). The recipe has been in Massimo’s family for generations. Overall, the recipes are traditional at their heart, yet created with the help and feedback of friends, customers, distributors and suppliers. There are no traditional blinkers on here though – traditional at heart, yes, but these products have an individual slant, a little something that makes each product essentially ‘Salumi Australia’ and undoubtedly the odd secret ingredient or two. Many a test and trial will be done before a recipe is signed off. The product list today includes a salsiccia fresca (a fresh pork sausage), chorizo, sopressa Milano (a red wine and pepper infused salami), pancetta, mustela (a pork fillet cured in spices and marinated in balsamic vinegar), speck, roosciutto (an indigenous spiced and aged kangaroo leg - what could be more Salumi Australia?) and perhaps my favourite of them all, the Nduja – a chilli infused spreadable salami. With inspiration for this coming from the South East of Calabria, this incredible product can be eaten fresh on bread, with cheese or cooked gently through a pasta sauce. With solid backgrounds in cookery and restaurant management, both Massimo and Michael are well versed in the many ways their products can be used, and which wine best to drink with them!

“The proof is in the pudding, or in this case the salsiccia”

1 28

w w w.uni queest at es. c o m. a u

The day I wandered the factory floor with the boys, I poked my head inside the curing room, the smoking room, saw cavernous, endless rooms filled with things ageing, strings of this and that infusing, covered in mould, sitting patiently waiting to become the best they can be. This is less romance than science of course. An hour spent with Michael and Massimo is pure, unadulterated education. Whole muscles of pork are being cured, massaged 2-3 times during the process, dried at high humidity and 24-25C heat. There’s a bunch of secret ingredients used too, no doubt about that. I know there’s beechwood and juniper used in smoking but getting the rest out of these guys is a case of blood from stones. In the end, I’m happy not knowing – all the more surprise for me. This particular day, the Salumi boys were curing a special whisky-cured pork fillet for The Roadhouse in Byron Bay, using a good glug of Ardberg 10 year old single malt. It smells absolutely phenomenal. Talents in business nous and food knowledge aside, the added beauty of this company lies in its commitment to local, provenance, an understanding of the history of salumi and knowing the source from which they buy. The Salumi Australia factory is in close proximity to the product they use with the Northern Rivers being considered one of the finest pork-producing regions in the world. They use 100% Australian pork from Bangalow Sweet Pork and Byron Bay Pork Co. The pigs are hormone and antibiotic-free, no nasty artificial flavourings are added. It is all hand made – a true artisan product. When it comes to the ‘making’, they use age old

techniques of airflow and circulation which ultimately affects the textures and flavours in the end product. And so where to now for Salumi Australia? The company is still young, very young. The climb these two young men have made in a meager 3 years to the top of their mountain is more than commendable and shows where a little clear and smart thinking, a good dash of business know how and an ability to work hard can get you. That, and a huge amount of desire and passion to work in an industry that you love with a product that you refuse to compromise on. Moving forward, the Salumi Australia focus is on the consumer, slow food, sustainability and local produce; educating Salumi customers in the importance of their purchasing decisions. Would the average punter know that 13,000 tonnes of pork is imported into Australia every week to keep up with demand? I certainly didn’t. Salumi Australia – fair to say, I believe, a true success story in every way – a place where traditional methods of salumi manufacturing meet cutting edge technology; where romance and passion meet science; and where a consistency of product and purity of provenance allow Australians to enjoy an outstanding eating experience. The proof is in the pudding, or in this case the salsiccia. U nique Luxur y

rom a bare cow paddock in 1983 to a beautiful rainforest botanical garden, this is potentially one of the best personal environmental projects in the Byron Shire: a totally unique property.

The first of some 20,000 rainforest plants were planted on Christmas Day 1983 and, as with all botanical gardens, this property will only improve in value as it matures. This will be a truly unique legacy to pass on through the generations or an amazing environmental investment property to on-sell in the future. The gardens have been established around the ideal central main house site, well away from the boundaries and protected from wind and the summer sun, yet benefitting from the warmth of the winter sun. High Alpine Living Luxury travel and ski writer Bronwen Gora finds that the popular ski destination of Whistler Blackcomb has matured like fine wine since hosting the 2010 Winter Olympics.

U nique Luxur y

Whistler’s Four Seasons luxury hotel

y opinion of Whistler ski resort in Canada changed last season – but it’s hard to pinpoint when. Maybe it was around the time a bow-tied waiter used liquid nitrogen to produce our instant ice cream tableside at five star restaurant the Bearfoot Bistro. Or maybe it was when I walked into my suite at Whistler’s Four Seasons to find it was as large as my apartment. Then again it could have been when we were able to order skewered 40-day-aged prime Canadian beef and oysters - as an après ski snack - that it dawned: Whistler Blackcomb has grown a cloak of gold. The resort now offers a level of luxury that gives the other most-favoured resorts for Australians in North America, Aspen and Vail, a good run for their money. While Whistler has always been big on affordability, from condominiums to burger joints, it really has not pushed its luxurious side. But since hosting the 2010 Winter Olympics, Whistler has honed its upscale offerings to world class levels. And aside from the exceptional restaurants and lodging, there is, as a legacy of the Olympics, a raft of incredible activities to complement them, such as bobsleigh rides, the biathlon range and being able to ski with an Olympian for a day. Deluxe Four Seasons Executive Suite - living room

w w w.uni queest at es. c o m. a u

Our entrée to an exceptional few days in the resort this season was arriving at the Four Seasons Hotel. This hotel has achieved Platinum Circle status with internationally esteemed Conde Nast Traveller magazine because, for five years in a row, it’s made its list of Best Hotels and Resorts of The Americas. This is most likely due to attention to detail: furnishings are rich and anything but spartan; staff are genuinely friendly; the complimentary hot chocolate comes in an ornate silver urn surrounded by decorative river stones and accompanied by bowls of shaved white and dark chocolate to sprinkle in your cup. Plush lounges are everywhere. The place is just divine. My one bedroom suite was so lovely that collapsing on the couch while watching the sun set over Whistler mountain scuttled plans to walk around the village. Before long it was time to prepare for dinner in the suite’s bathroom, a room larger than my kitchen, full of mirrors and marble and entered via a movie-star style walk-in wardrobe. That night we dined at the Bearfoot Bistro, a restaurant ranked among the country’s best, with one of its largest wine cellars, and undoubtedly one of the most wildly entertaining, elite dining experiences on the planet. Owner, Deluxe Four Seasons Executive Suite - dining room and kitchen

Andre Saint-Jacques, is himself a Whistler institution whose love of a party is boundless. His recently expanded wine cellar is open for perusal, as well as hilarious lessons in how to sabre a champagne bottle, (the technique of slicing the cork off by running a sharp edged knife or sword up the seam of the bottle’s neck in just the right fashion). Half way through dinner we are wrangled from the table by a waiter, don enormous coats and enter the Belvedere Ice Room, a vodka tasting area which, at minus 32 degrees, is the coldest of its type in the world. We down five – yes five – shots of vodka on skis fitted with shot glasses to much laughter and learning about which vodka is which and why. The food is a Tetsuya-style adventure: artistically displayed dishes such as seared foie gras, locally sourced squab breast and BC rabbit loin. The end was a lively display of nitro cuisine when the waiter poured steaming liquid nitrogen on Tahitian bean vanilla-infused cream, instantly turning it into irresistible ice cream. The mountain has its own five star experiences too. Here in Whistler it is possible to request your very own Olympian to show you around the slopes. We were given 33-year-old Britt Janyk who achieved sixth in the Skiing with your very own Olympian instructor

downhill in the 2010 Winter Olympics which were held in both Whistler and Vancouver. It’s not everyday that you get the opportunity to spend chairlift rides talking to an elite athlete, and Britt eagerly answered all our questions about how fast she’d ever skied (over 120km/hr) how she conquered fear (mindset) and her life now (happily married with a baby). She gave us skiing tips and showed us her favourite places on the hill before pointing us in the right direction for the best place on the mountain to eat – Steeps Grill – where we were offered an impressive range of dishes of locally sourced Canadian cuisine and local wine. Whistler also lays claim to being able to provide its visitors with one of the ultimate Olympic experiences: a real bobsleigh run on the actual 2010 Olympic bobsled course. Initially quite fearful, I was convinced simply by the numbers of people willing to do it. Safety is paramount, with sledders wearing helmets and in a higher-sided sled than those used for competition. Apart from the modified sled, we basically have the same sensation as those Olympians. We ride in groups of three with a driver and it is one of the most thrilling things I’ve ever done in my life. The sled felt completely safe. The sound of sliding over the ice was exhilarating as was The bobsled course at Whistler

accelerating into the crazy corners and turns. It was over all too fast. Down the road at the Whistler Olympic Park we tried our hand at firing real biathlon guns on the range used in the 2010 Winter Olympics. With the rifles weighing 7kg and most of us having to load and fire bullets for the first time it was, again, as exciting and exhilarating as the bobsleigh. All this activity made us thankful for the luxury spa Scandinave, a recent addition about five minutes from village. We padded bare foot among the complex of heated pools and thermal waterfalls surrounded by snowcovered pines while others in our group booked in for a range of massages. In Vancouver we sought out the best ways to make a few days in transit as enjoyable as possible. It is hard to go past booking a room in the waterfront The main outdoor heated pool at the Spa Scandinave

By day there are views of seaplanes coming and going, ships and downtown Vancouver. Fans of Japanese food absolutely must book a table at Miku, a few steps from the hotel and also overlooking the water. The next day we shopped in the chic streets of Gastown, ate at one of the newest cafés Rainier Provisions, and took a Vancouver Brewery Tour to sample some of the beer for which Canada is so famous. Granville Island was also a terrific experience, a former industrial area now spruced up with an excellent market, all sorts of galleries and shops, wonderful restaurants such as the bistro Edible Canada and of course the Granville Island Brewery.

Louis Vuitton I

n his nomadic tendencies, the Vuitton man is fond of plucking inspiration from the most exotic corners of the globe. This season, the French fashion house heads to America on a coast-to-coast road trip, a journey long romanticised through literature, film and music. This isn’t a tale of flat tires and rundown roadside diners, of course. Mens studio and style director Kim Jones is sure to find the glamour in every step of such an excursion. Passing by the preppy varsity captain on the bleachers in sixties L.A., we meet the broody rockers in their suede jackets, spot the plaid-

clad outdoorsy guy with monogrammed bandana and end up watching shiny suited youths dress up for the prom. Except, of course, in the spirit of Vuitton craftsmanship, the prom suit is made with hand woven, Japanese kimono silk, replete with a leather corsage. But to Jones it ultimately doesn’t matter where the journey begins or ends, it’s being there that counts. “The collection is really about the freedom of the road and that freedom itself being luxurious,” Jones says.

zegna sport I

t seems apparent by now, when even the likes of Gucci are embracing it, that the sports luxe trend of recent seasons is no mere flash in the pan fad. No, it has officially graduated to perennial style status, so it’s a timely moment to check in on Zegna Sport, the arm of the Italian fashion house that has long explored the performance side of fashion. Tech fabrics and functional detail are key to the kind of style and versatility that embodies the look, pieces that can move almost seamlessly from the airport lounge to the sailing club to the health retreat. On the technological side,

Zegna Sport drills right down into laser cut textiles bonded seamlessly, the durable construction demanded by active types. Even the classic leather biker jacket is triple layered to bolster its performance credentials. Functionality gets a modern day look in as jackets gain wireless connectivity—yes, Bluetooth outerwear with a weatherproof control panel on the sleeve keeps the Zegna Sport man online, wired for sound and whatever else he desires.

ternal style is the order of the day over at Hugo Boss. For the man who would rather leave the showy, attention-grabbing garb to others, the HUGO collection offers up confidence and classicism in equal measure— because this is the kind of man who demands that he look smart, but also unquestionably modern. So the tailoring is slim and simplified (think single button suits, cropped pea coats and minimalist coats with hidden fastenings) but with sharp detailing such as leather embossed lapels. The palette is mostly a classically masculine one—think khaki, navy and

charcoal—interspersed with moments of vibrant tomato red appearing on chinos and in a super suave velvet jacket with black contrast edging on lapels and pockets. Knitwear for the season is chunky and textured as ribbing and cable knit detail adds a level of interest beneath sleek outerwear. The artfully elegant roll neck comes in all sizes on skivvies, knits or snood—and simultaneously manages to be both on trend and timeless. Just what the HUGO man ordered.

gucci E

ver since Tom Ford made it one of the hottest fashion houses on the planet back in the nineties, Gucci has been all about being hyper-sexy, every look full of barely contained desire. It’s a philosophy that Ford’s successor Frida Giannini has mostly stuck with over the years, with her own particular stamp often referencing the glamorous hedonism of the seventies New York club scene when Studio 54 and, indeed, Gucci, ruled Manhattan. This season, the club relocates from the east coast of America to the north west of England, evoking the ‘Madchester’ ravers of the late

eighties—a scene no doubt equally decadent in intent, but more athletic in its aesthetic. Sexy gives way to sporty utilitarianism: harness-like backpacks fasten across raincoat-yellow hoodies, printed boiler suits and anoraks in high tech fabrics are worn with riding pants. Oftentimes the familiar slim Gucci line gave way to a much fuller silhouette, signaling a rather different mood for the brand. For evening, Giannini took a softer stance with floral suiting in pinky shades, tailored with an almost pyjama-like ease.

dior homme O

ver at the house of Dior, there was a creative mood in the air, with artistic director Kris Van Assche punctuating his signature minimalism with geometric patchwork inspired by the work of the late American sculptor John Chamberlain. Van Assche was intending to bring a level of playfulness and lightness that is normally absent from a Dior Homme show. The lightness didn’t come so much from the colour palette—which was toned down to sophisticated and muted territory of ox blood, air force blue, grey and, naturally, black—but from the casualisation of the tailoring.

Bringing a more laidback perspective for the season, Van Assche showed tees worn beneath suiting, short sleeved knits worked back with trousers and three button blazers rendered in buttery leather. Shorts and sleeveless blazers were liberally peppered throughout the collection. In a similar vein, the decorum of black lace up derbys was upset by exposed silver caps while utilitarian touches such as safari pockets made an entirely practical proposition for the Dior Homme man who may find himself caught between the formal and the not-so-much.

t may very well be the quintessential American fashion house, but with an Italian at the helm of the mens design studio, Calvin Klein Collection is always bound to indulge in the odd global flight of fancy. The focus of Italo Zucchelli’s international affections for the pre-fall 2014 collection is Tokyo. As one might expect, that is the cue for technologically focused textiles, in keeping with the spirit of the Japanese capital. In fact, Tokyo makes a literal appearance in a graphic print that reveals itself to be an aerial, bird’s

eye view of the city. But for all the flashiness in that print and the textured fabrics, Zucchelli keeps to the Calvin Klein remit of delivering modern, masculine minimalism, having a little fun with proportion in the process: long-line shirting falls below parka jackets, voluminous coats are teamed with slender trousers. He wraps it all up in a smart colour story of rich blues, tobacco, mushroom, charcoal and grey, which he applies in tonal layers, maintaining the sense of pared back cool.

his home takes its inspiration from a simpler time. It harks back to the ruggedness, practicality and ethos of hard work of those who pioneered this region. With the character of an historic stone farm building that has been converted into a house, it sits in a vineyard on the banks of the Shotover with commanding views north across the river valley to Coronet Peak.

Warmed through underfloor heating, a large open fireplace and the insulation of walls nearly 3 feet thick, the house gets all day sun, summer and winter, and is protected from the cold southerly by the hills directly behind.

Only traditional building materials have been used - stone, rough sawn timber, iron, concrete - to create a unique spacious luxury home that is at the same time unpretentious, easy and comfortable.

Easy to think you are miles from anywhere in this magical part of God’s own country. Yet you are only 5 minutes from Frankton and the Queenstown airport.
