Take a Journey to Old-World Italy
Vulcano’s Italian Restaurant has been a staple in Tequesta for over 40 years, delighting both local and vacationing diners with delicious, highquality, and authentic Italian fare.

The restaurant’s original owner, Tony, is retired now, but he passed down his beloved recipes to the new Head Chef, José, who worked with and learned from Tony for many years. Additionally, the new owner of Vulcano’s, Sal, has lived and owned restaurants in Palm Beach County — including Gardens Pizza & Pasta and Il Pomodoro — for the past 15 years. Sal has kept Vulcano’s many regulars happy by maintaining most of the features that they so love about the restaurant, but he’s also added some of his own family’s recipes to the menu. As a result, Vulcano’s is a fantastic place to enjoy a meal because it honors the brilliance of simple, old-world Italian recipes that have been passed down through countless generations.
For an appetizer, Abby and I highly recommend the eggplant rollatini vulcano ($12.95). The vegetable is thinly-sliced, then lightly-battered and fried before it is rolled with creamy ricotta and rich parmesan cheese. Smothered in a bright, chunky pomodoro sauce, the delicate rolls of eggplant and cheese are full-bodied and avorful, with an ever-so-subtle hint of spice. Abby commented, “This is a spectacular sauce! It’s balanced well, and the fresh basil sprinkled on top really enhances the overall freshness of the dish.”
For an entrée, if you’re in the mood for traditional, cheesy Italian fare, then try Vulcano’s baked manicotti ($21.95). Perfectly-cooked tubes of pasta arrive over owing with rich ricotta cheese and covered in pomodoro sauce and shredded mozzarella. A de nitively crowd-pleasing dish, the manicotti’s robust avors kept us going back for more and more. If it weren’t for the fact that Abby had promised to bring leftovers home to her partner, she and

I most certainly would’ve nished off the entire baking dish… one bite and we were hooked! Vulcano’s baked manicotti is an authentic rendition of the beloved classic, so you really can’t go wrong by ordering it.
Looking for a lighter meal? Select Vulcano’s let of sole francese with pasta ($28.95)! The mild, all-white-meat sh is lightly-battered and pan-fried, then served with fresh artichokes in a zesty lemon-butter sauce. The sole is so tender that it falls apart as you insert your fork into it, aking enticingly into the slightly-creamy francese sauce. Then, as you take your rst bite of the sh, you immediately feel it melting divinely in your mouth. The sauce is bright in both appearance and avor, and refreshes your palate with its vibrancy. My favorite bites were ones with the artichoke, which deliciously soaked up the tart sauce.
Our entrées came with a choice of soup or salad, so I also had the opportunity to try the restaurant’s soup of the day. The cup of escarole and bean ($6.95) was brimming with beans, onions, escarole, tomatoes, and spices. Hearty and rustic, the soup not only fed my hunger, but also my soul. It was a great representation of Vulcano’s old-world recipes and style thanks to its straightforward spectactularity, and further enhanced my feeling of being entirely at home in the restaurant.
Of course, Vulcano’s also offers delicious classic and specialty pizzas, including gluten-free and cauli owercrust versions, so Abby and I had to try one of those as well! We chose the margarita pizza (10” for $16.95; 16” for $21.95), which is made with fresh mozzarella, tomatoes, and basil. The thin-crust pie had the perfect texture — not too crispy, but not chewy or gummy either — and featured plenty of creamy cheese. We especially loved the herbaceous basil, which was incredibly vibrant and fresh, because it added a charming, rustic quality to the overall avor.
