Toronto’s Hottest at MUZIK this Fall Take a glance into MUZIK’s social scene ... highlights include an appearance by Brody Jenner, backto-back Halloween madness, and toronto’s most eligible looking for love at matchmuzik<3!
For some, fall marks the start of new beginnings. At MUZIK, this meant back-to-back events each and every Saturday; celebrities and DJs like Brody Jenner, The Weeknd, and Sam Ronson all made special guest appearances. We also unveiled our new multi-million dollar lighting, sound and stage system just in time to dazzle our guests for our Day of the Dead Halloween event, headlined by Dimitri Vegas & Like Mike, Otto Knows, Wolf Pack and Joe Ghost. All November we hosted #MATCHMUZIK<3, where we set contestants out to find their match to win a grand prize! This fall also marked our 6th Annual Food Drive. Last year we collected over twenty-five tonnes of non-perishable food items to be donated to the Daily Bread Food Bank, the Missisauga Food Bank, and the Parkdale Food Bank, and we plan to top that this year! It’s been a jam-packed season, but we are just getting ramped up for winter festivities! Bring it on...

three to be just be love event THREE TO BE is a community of scientists, doctors, parents and donors with a mission to advocate and raise funds to support and advance the development of innovative research, education and therapies for children with neurological disorders. On October 4th, 2013, the 4th Annual Stems of Hope Gala, Just Be Love, took place at MUZIK. Hosted by Anne Mroczkowski & Leslie Roberts of Global Toronto, Just Be Love celebrated the essence of pure passion, connection, gratitude and joy. The Gala welcomed sophisticated customers, dignitaries, the cityâ&#x20AC;&#x2122;s elite business community and other event sponsors, and had live performers including acrobats and mimes, and culminated with a performance by celebrity hip-hop duo, Saltn-Pepa. Method: Combine garlic, ginger, oil, salt and Chef Susur’s jerk spice in a food processor or blender. Rub mixture inside and outside of chicken. Place into a large plastic bag and marinate in the fridge for 2 days. Preheat oven to 400F and roast chicken for 1 hour or until internal temperature reaches 165F. Serve with Susur’s Pear Preserves.

Pan Roasted Venison Loin with Pumpkin Puree and Vegetables

Method: For the pumpkin puree: Preheat oven to 375 degrees. In a small bowl, combine the spices and set aside. Place the pumpkin halves in a roasting pan cut side up, drizzle with honey, butter and stock and sprinkle with the spices. Season with salt and pepper, cover the pan with aluminum foil, and place in the oven. Roast until soft, remove from the oven and scoop the flesh out of the shells into a medium bowl. With a hand blender puree the mixture until smooth, adjust the flavor with additional salt and pepper if desired and keep warm. For the vegetables: In a medium saucepan combine the stock and butter and bring to a boil. Reduce the heat, add the carrots and Brussels sprouts, and cover, simmering until softened and glazed. Season and adjust the flavor and consistency with additional stock if desired, add kale and sauté until wilted. Strain the residual glazing liquid into a small saucepan to reserve and set aside the vegetables, keeping warm. For the venison: Preheat oven to 400 degrees. Using a coffee grinder or small food processor fitted with a metal blade, combine the peppercorns, coriander seeds and juniper berries; grind coarsely and incorporate the salt. In a medium sauté pan, heat the butter over medium high heat, season the medallions, and place in the pan. Sear both sides of each medallion, remove to the oven and roast to desired doneness. Remove from the oven, lift the medallions onto a plate to keep warm, and return the pan to medium high heat. Add the butter and shallots and sauté for one more minute. Incorporate the Calvados, wine and stock, stir to deglaze and continue to simmer until reduced to desired consistency. Whisk in more butter and thyme, season, and remove from the heat. Strain the sauce into a small saucepan to reserve. To serve: With a hand blender, whip the residual glazing liquid until frothy. Spoon some of the pumpkin puree onto the centre of the plate, place some of the glazed vegetables on top and around the puree. Thinly slice the venison medallion and arrange over vegetables. Surround with venison sauce and glazing liquid. Garnish with chives and thyme.

Quinoa Salad with Roasted Squash, Cashews & Gouda
Method: For the vinaigrette In a medium bowl, whisk together red wine vinegar, balsamic vinegar, honey, mustard, Worcestershire sauce, salt, and lemon juice until well-combined. Slowly whisk in oil until emulsified. Transfer vinaigrette to a container, cover, and refrigerate until ready to use.
Preheat oven to 375°F (190°C). On a parchment-lined baking sheet, toss squash with cashews and red pepper flakes. Spread in a single layer. Roast Brown Derby Vinaigrette until squash is golden brown and forkMakes about 2 cups (500 mL) tender, about 15 minutes. ½ cup (125 mL) red wine vinegar 2 tsp (10 mL) balsamic vinegar In a large bowl, gently toss together 2 tbsp (30 mL) honey squash, cashews, apple, and green on2 tbsp (30 mL) Dijon mustard ions. Add dressing and toss until salad is 1 tbsp (15 mL) Worcestershire sauce well-coated. Season to taste with salt and ½ tsp (1 mL) salt pepper. Mound quinoa onto a platter, Juice of 1 lemon spoon over squash mixture, and top with 1 1⁄3 cups (325 mL) canola oil beets and cheese. Serve immediately.

Braised Short Rib with a Cauliflower and Lemon Puree, Green Beans and Roasted Cremini Mushrooms Ingredients: Short Rib 4 Pieces of bone-in Short Rib 1 cup of oil 1/2 cup garlic cloves 1 Large carrot roughly chopped 1 Large red onion roughly chopped 1 celery stalk roughly chopped 1 leek roughly chopped 1 cup balsamic vinegar 1L red wine 2L of beef stock 2 cinnamon sticks 1 pinch of cloves 1 pinch whole peppercorns 1 cup tomato paste 1 cup brown sugar
Method: Ribs Coat all ribs in oil and season well with salt and pepper. On high heat in a cast iron pan sear all sides of the short ribs until dark brown and caramelized. Remove ribs from pan and place in a deep roasting/braising pan. Keep pan on the heat and deglaze with all your red wine then pour liquid over the ribs. Combine all remaining ingredients in the pan with ribs cover with parchment and then tin foil. Place pan in oven at 300 degrees for 6 hours. Remove ribs from pan and strain all the liquid into a pot. Reduce the liquid until it is thick and will coat the back of a spoon easily. Glaze ribs with liquid and reheat in the oven at 375 until caramelized and hot. Cauliflower Puree In a small sauce pot, saute the onions and garlic in the butter and oil until onions are soft. Pour in white wine and add the potatoes. Stir continuously. Once wine begins to simmer add the cauliflower and cream, continue to simmer until cauliflower is soft and the cream has started to thicken. Add lemon zest and juice. Season to taste. Blend in blender on high. Strain through fine strainer. Green Beans Bring water to boil in a small pot. Blanch beans for two minutes, then strain. Saute the beans in the butter and garlic until hot and garlic is caramelized. Season to taste. Cremini Toss mushrooms in all ingredients. Lay out on a baking sheet lined with parchment paper. Season, then roast for 20 minutes at 350 or until caramelized. Carrot Chips Heat oil in a large pot to 265 degrees F; carefully maintain this temperature. Peel carrots, then continue using peeler to peel strips of the carrot. Toss in flour, shake excess flour from strands of carrot, fry in oil until crispy. Lay out on a paper towel and season with salt.

Lobster Poutine Method: Perfect French Fries Serves 2 Trim one side from the potatoes so that they sit flat on the cutting board. Slice them into desired size and plunge them in ice cold water. Soak for a few hours at least, changing the water periodically. Meanwhile, heat the deep fryer to 325F. Dry the French fries well with a kitchen cloth and then blanch them in the hot oil until they wilt. Drain on paper towels. Raise the heat of the deep fryer to 400F. Fry the blanched French fires until bronzed and crisp. Drain, and toss with lashings of salt. Combine all ingredients, bring to a boil, then simmer gently to reduce by half. Strain and cool. Heat half the butter to 120°F (50°C). Place a stainless steel mixing bowl over a pot of simmering water, add egg yolks and gastrique, and whisk together until they the mixture thickens and turns pale yellow. Remove bowl from heat, and while whisking continuously slowly add the butter. Add lemon, Tabasco, Worcestershire, salt, pepper and tarragon and set aside in a warm place. Heat the remaining butter to 170°F (75°C). Cut the lobster meat into bite-size pieces and add to the butter. Finish cooking French fries, then drain and toss with salt. Scatter a warm plate lightly with some of the chives. Add half the fries, then half the butter-poached lobster and dab with béarnaise. Add another layer of fries, the remaining lobster, a generous smattering of béarnaise and finally the remaining chives.

INGREDIENTS 2 parts GREY GOOSE® Original ½ part MARTINI® Extra Dry Vermouth 1 dash Orange Bitters (optional) Fill a shaker with ice. Add MARTINI Extra Dry Vermouth. Stir to coat ice and strain out. Add GREY GOOSE Vodka and bitters, if desired, and stir well. Strain into a chilled martini glass (short martini glass). Present with olive or a lemon twist.

How do you spend your down time? I love yoga, running, photography, and planning my next ride.
Pre or post surf traditions? Pre surf tradition is always putting my hair back (bun, pony-tail, or braid). Post surf tradition is drinking tons of water!!
Worst and favorite experience when in competition? I always think losing is my worst and favorite experience at the same time, because I¹m really bummed that I lost but always gain knowledge for my next opportunity.
Being at the forefront in the progression of women’s surfing, where in the world would you like to see a new stop on the women’s tour? I am always dreaming of another competition in Hawaii. I really would love to see the girls back out at Sunset or Haleiwa.

WE DISCOVER THE REALM OF SANDBOARDING WITH WORLD CHAMPION PROFESSIONAL SANDBOARDER, GABRIEL CRUZ. You are the current World Champion in Sandboarding. What does that entail?
In extreme sports/X Games they do a point system depending on how big the trick was or how technical it was. You get a certain amount of points per trick, and however many competitions you go to throughout the year your points add up throughout each. Whoever has the most points throughout the year are pretty much how you win the titles/competitions. There are two DRI International competitions in Florence, Oregon every year.
How did you get into sand boarding? Did you transition from snowboarding or skating, or was it straight to sandboarding? I started skateboarding in 5th or 6th grade. I did that all through high school, about 7 years or so. I wasn’t having as much fun because my friends were ten times better than me, and of course it hurts a lot more to land on the concrete than it does in the sand. I started sandboarding sophomore year in high-school, and I’ve been doing it ever since. One of my first bosses I ever worked for had a bunch of sandboards and I took them out a couple times, and got right to it. I heard about the competitions up in Florence, and that first year my brother (Jackson Cruz) and I won our first competition.
Where are some of your favorite spots to go sandboarding? Honeyman State in Florence, South Jetty, of course Sand Master Park.
Besides the snow vs the sand, could you tell us the main differences between snowboarding and sand boarding? I’ve only been snowboarding once. I’ve wake-boarded a couple times. Sand boards have more of a rocker shape to them; that way you are able to stay more out of the sand. Snowboards are more concave.
What are some major concerns for a sandboarder when riding the dunes? Depending on where you are at there could be scorpions, snakes or spiders out there. Other than that I don’t like beat-track. It’s sharp and pointy and cuts up your legs if you walk through it or ride through it.
NAME some essential gear and necessities when sandboarding, besides the board and bindings. Of course you want water when you are in the dunes and are not next to the road or your car because you have an ATV. I like socks. I prefer to sandboard in socks, otherwise you board barefoot. Generally you don’t wear shoes because the bindings are too small to fit the shoes in. I use sandboard wax; I use Doctor Dune’s because not everything else works.
Who inspires you in the sand boarding world?
What are some brands that you sport when equipping yourself for this extreme sport?

Are there different types of sand that are preferred over others? What is the most ideal sand to board on? I prefer a more powdery light sand, it flows better and does not grab your board as much. A lot of sand on the beaches is more jaggedy/rough gritty.
To those who haven’t tried sandboarding, could you give some advice? Don’t expect to be able to do it the first try. Do have fun. It’s more of a mellow sport if you are not doing competitions so just have fun, have a good time. Sand is pretty forgiving. I don’t think I have actually ever broken any bones. Itâ&#x20AC;&#x2122;s hard to sum up this legend of electronic musicâ&#x20AC;&#x2122;s career in just two words. Having worked with everyone from Madonna and Cher to Michael Jackson and the Rolling Stones, for over three decades Paul Oakenfold has elevated and shaped an entire genre, and remains one of the leading forces in the global music scene today. MUZIK has a oneon-one with the man himself to talk about his new album and tour, Trance Mission, what inspires him, and his favorites in music, travel and nightlife.

Trance Mission IS the name of your new album and tour, How is this tour going to be different from the past ones? we know that you aren’t doing the traditional EDM huge production and lights for this North American run - do you have a specific goal, or is there a shift in energy following this album and going into this tour? We’re a community that is all about big, big, big - in terms of production, lights, sound and venues. This time it is stripped down, a crowd of music and minimal visuals. Bringing tracks that have been classics that I have not necessarily made, but played, and not the obvious tracks; I’m bringing them up to date in terms of production. Basically cover them, which I have never done before, and share them. So giving the current generation and the new generation an opportunity to hear stuff that maybe they haven’t heard before in a fresh new way. It’s a different approach; we’re adding lyrics to some of the original tracks that people may know, but giving them a completely different take and bringing them up to date. So, it’s exciting for me; I’m really enjoying this challenge. That’s really what the tour is all about in terms of the music end, and in terms of lights, sharing it with people. And the one show that we’ve done ‘cause the tour started on Saturday, and we’re back on the road tomorrow. The tour is going to be 3 months in total, but in America it’ll be like 21 shows. That’s the whole idea behind the tour.
Favorite track of 2013? Favorite track of 2013 - well, that’s Neelix’s Wherever You Are. You are a fully qualified French cuisine chef, educated at Le Cordon Bleu. Where or what are your top 3 favorite restaurants in the world? The Ivy London, definitely. Mozza, which is in Singapore, and then there’s one of the reso’s in Bangkok I love, a fish restaurant called the Seafood Market Restaurant. What I love about it is that it’s massive. Comfy seats, very commercial. You walk in there, you pick up a trolley, and you basically choose all of your fresh fish. Nothing has been cooked, it’s all live. And then they take them and cook it for you and you can watch them cook it. It’s fantastic. You’ve traveled the globe; where are some of your favorite cities in the world to play? Shanghai and Buenos Aires are my two favorites.

We were told when you were trying to make it in your early years in New York City, you snuck into the infamous Studio 54 with fake passes? (Laughs) I couldn’t get in, I wasn’t old enough. In America you need ID, but in England and Europe we don’t. So I went and got four false IDs made, saying that I was a journalist for a publication called NME. I managed to get into a bunch of clubs, and that’s kind of how I did it. I definitely recommend it.

You have obviously experienced a number of music festivals over the years, being A pioneer of this industry. Over the last year you visited Coachella, Burning Man; two very different experiences. What would you say your favorite music festival memory has been from 2013? I’d have to say Burning Man, because I was involved in putting the show together in a big way. From basically the beginning, we put together the sound system - I brought in people to do that - and we programmed the individual nights, we produced an overall show along with a friend of mine, and we called it White Ocean. It was a big show in general and a wonderful event; we received a lot of good reaction from a lot of people. You have toured with Madonna and worked with Cher, Michael Jackson, and the Rolling Stones, and now on your new record you work with AzeAlia Banks. Is there anyone left you would like to collaborate with in the future; are there any artists that are inspiring you right now? I’m really interested in focusing in on the new, young talent. I’ve been working with Allen Stone, ZZ Ward, Wallpaper, Miguel, LP. That’s kind of what really excites me, rather than the big established names, which were on the last two records. There were a couple of names that have become very popular, Cee-Lo, obviously, and OneRepublic. Ryan Tedder wrote a great song that’s going to be on my album. Best old-school trance DJ, and best up-and-comer that MUZIK should look out for? Best old-school trance DJ, I would say one of my favorites would be Armin van Buuren, and one of the new guys that I like is Brendan O’Neill.
You have had a long and very successful career; where is Paul Oakenfold’s head at the moment? what is inspiring you right now? Well there are two things that I’m focusing on and working on simultaneously, which is my artist record and the Trance Mission Album. So they’re the two projects that I’m working and enjoying. What are some of your favorite clubs in the world? Zouk in Singapore and Ministry of Sound in London.
What inspired Trance Mission? I think a few things. I love the sound, I’ve been playing that sound for many years. It’s more underground now and there’s a lot of new producers. The idea of taking tracks that were familiar for me 15 years ago and sharing them with the - Paul Oakenfold current/new generation, reproducing them, covering them. It’s never been done before. It’s such a big challenge, because what’s the point of doing a cover version unless you can improve on it or give it a different slant? So that’s a bigger challenge in itself. And some of these are big, big records.

I think currently you have to learn how to produce to make music. That’s where we’re at now. Times have changed. It used to be about the art or skill of the DJ and embracing new music. It’s not just about that now. Where the producers used to make records, to then give it to the DJs, the producers want to be the DJs now, and most of them are. That’s what you see with the current big DJs - they’re producers. My advice to anyone who’s getting into it: you have to learn, because the game’s stepped up, it’s tougher. There’s more people playing, more people on the pitch. You need to learn how to produce. You need to bring something new, fresh and different to the table. How do you keep your material fresh and exciting? By embracing change. I think that you don’t necessarily have to like it, but if you’re open and you go, “you know what, I don’t like that sound but yeah, I do like THAT. Let me see if I can make that work”.
