Firestone has been perfecting its tri-tip and fries for 22 years. That’s longer than most Cal Poly students have been alive. Darnell Harris, the manager of Firestone, wouldn’t share the specific ingredients behind the Firestone tri-tip sandwich, but he said “all of the tri-trip is cooked long and slow with simple, clean ingredients and of course, love.” As for the fries, the “secret is the seasoning,” according to owner Hal Billingsley. The seasoning is made only for the four Firestone restaurants in existence. Firestone fries “go hand in hand with a tri-tip sandwich or a burger.” Billingsley estimates that Firestone sells 600 sides of fries per day. 9 / Poly Picks 2017
Billingsley takes pride in Firestone’s “freshness, quality and price,” while Harris takes great pride in the fact that Firestone acts as a place of unity among Cal Poly students and San Luis Obispo residents. In recent times these two groups often are at odds with one another, so Harris enjoys seeing the two groups come together and feel at home all under one roof. Harris wants to thank “Cal Poly students for keeping Firestone going.”
