t’s summer, and there’s no turning back! I’m catching hold of the sun and holding tight until at least October. This issue is going to tantalize your sweet tooth, relax you, motivate you to escape to the waterfront, and encourage you to explore festivities within Simcoe County and beyond.

I’m really excited to share this issue with you because it has a special place in my heart. I’ve dedicated two articles about ice cream to my late grandfather who shared a fondness for this tasty cold summer treat that’s arguably been around since 3000 BC. We planned to go on an “Ice Cream Road Trip” before he died. Regrettably, we didn’t have the chance. I’m giving you the opportunity to take a trip down Ice Cream Lane and create some fond memories with your family. I’ve provided a list of ice cream parlours that’ll cool your taste buds. And how do you make really great ice cream? It’s more than just adding whip cream, and a cherry on top. I can’t reveal all the secret recipes. Well, maybe. Take a look inside and see. I’m sure you’ve already tapped into relaxing in your backyard, but are you falling short on that backyard oasis you desire this summer? There are a few ideas in this issue to help you with that. Put your feet up, and read about how to make your green space a Zen space. ne of my favourite things to do in the summer is lounge in my backyard with my feet up, and a good book – okay, and maybe a glass of wine.

If your backyard looks weed overgrown, has broken tree branches all over the grass, and allows every neighbour to see you in your pyjamas while having your morning java, then I suggest investing in some landscaping, and designing your own private oasis. “Naturally there are many options for people when it comes to landscaping. Most of us are living in "cookie cutter" subdivision housing, so fencing is a must. Most times it's your typical wood privacy fence. It’s very important to have plants to help hide the fencing. Nice plants will always enhance a landscape, whether it’s pure aesthetics, functional, food production (fruit and veggie garden), or a combination. We live in a world of hard surfaces, so having plants is very calming, healthy, and therapeutic,” says Andrew Beattie, Owner/ Contractor for Ideal Landscape Services in Barrie. Perhaps it’s just the perception of your yard from a certain angle that requires an aesthetic design to block neighbours, yet it creates a stunning visual for you. “One of the difficulties homeowners encounter when designing a landscape for the backyard in a strip subdivision, is trying to get a sense of privacy when their neighbours are so close. Plant an attractive specimen plant or tree, or put in a putting green. Outside speakers allow you to enjoy your backyard with friends without disturbing the neighbours. here’s something therapeutic about enjoying the waterfront on Lake Simcoe with your best furry pal. This summer you have a chance to embark on a tour with your pooch from Centennial Beach in Barrie, around Big Bay Point to Leonard’s Beach in support of COPE Service Dogs. On Saturday, July 27, paddlers are invited to join a 25, 10, 5 and 2 km stand-up paddle board tour along Lake Simcoe. Kayaks and canoes are also welcome, or you can show your support from shore along the route, says Jane Boake, Founder of COPE Service Dogs and Canines in the Classroom. “COPE Service Dogs not only train dogs for facilities and people with disabilities, it also helps keep kids engaged in school by involving them in the training process of the dogs. It’s this aspect of the charity that inspired Buddy Paddles Simcoe,” says Boake. Last year Boake, and her dog Buddy paddled the shores of Lake Simcoe to celebrate Buddy’s retirement after 13 years of service. He helped to improve student mental health, and taught job skills in Canines in the Classroom, shares Boake. “It’s in this spirit that paddlers are invited to join this one-day event to raise money to help COPE dogs benefit more youth. After they’re trained, the COPE dogs impact our community in so many ways. Not only are they partnered with people who have disabilities, they provide therapy and comfort in places looklocalmagazine.com

At the end of the tour, everyone is invited to a free after-party from 1 – 4 p.m. at Leonard’s Beach in Innisfil where there’ll be food, balloon twisting, COPE dogs, and agility demonstrations. Boake says your dog is welcome to attend and can learn how to ride a paddle board like Buddy.

There are other opportunities to support COPE Service Dogs such as hosting an event or being a volunteer. People are needed to be Puppy Fosters, while the dogs are in training, says Boake. COPE Service Dogs currently have brand new puppies that need fosters. They also require drivers of the COPE van, so they can get the dogs to school and training as well as to events. “COPE dogs are bred through our breeding program, which is part of an accredited North American service dog breeding co-operative. They’re trained by the students in Canines in the Classroom, and by COPE trainers. Some of the Canines in the Classroom students go on to work with dogs as a career or train their own dogs,” explains Boake. If you don't want to paddle board, but you’d like to support COPE, you can fundraise on behalf of Buddy. “For every $50 raised, your name is entered into a draw for an Infinity Paddleboard,” enlightens Boake. Also, both Centennial Beach in Barrie and Leonard’s Beach in Innisfil have Mobi-Mats installed, a lightweight non-slip roll out mat that allows easy accessibility for everyone. LL

his summer venture a little further north of Barrie for a day trip or overnight stay, and attend Nuit Blanche North in Huntsville, Ontario. It’s incredibly magical, and fun for your whole family. The little quaint downtown of Huntsville comes alive with artistic creativity that appeals to all your senses.

From fire eaters, poetry slams, street performers, live window displays, and illuminated sculptures floating on the pristine waters of the Narrows between Vernon and Fairy Lake, you’ll be enraptured by visual arts, music, literature, and acting. “You won't see anything else like it anywhere. It's a fun free experience good for all ages and full of music, performances, installations, and hands-on art making activities. And it happens in downtown Huntsville surrounded by nature,” says Dan Watson, Executive Director of the Huntsville Festival of the Arts. The Main Street of downtown Huntsville gets closed off during the festivities, and vendors, store merchants as well as café and restaurant owners, decorate the sidewalks and roadway with outdoor exhibits, merchandise, and tantalizing food choices. “This year's theme is "All Together Now.” The projects all explore ideas revolving around the collective, what connects and divides as well as the opportunities and challenges collectivity provokes,” informs Watson. Every year artists and organizers come together to create an environment that encourages people to challenge, explore, learn, and take part in contemporary art within the setting that surrounds them. Kids can take part in creating their own watercolour paintings, or try hula hooping with multi-coloured hoops of all sizes. They can do chalk drawings on the pavement, try their hand at sewing, experiment with unique brain teaser toys, and more.

The great thing about Nuit Blanche North is the intimacy of the festival compared to the larger scale Nuit Blanche held in Toronto during the fall. Many volunteers and organizations come together to assist the Huntsville Festival of the Arts and Edge of the Woods Theatre, so they can present an engaging and interactive evening of artistic expression that supports artists, and the local economy. This is the 8th year for Nuit Blanche North. It takes place Saturday, July 27th from 8 p.m. to 2 a.m., and attracts thousands of people each year. About 7,000 visitors attended last year’s celebrations, and Watson hopes to increase that number in 2019. It’s about the kind of milk or cream used, the amount of sugar added, or the dairyfree options available. “Kawartha Dairy has been around since 1937. It’s still owned by the family that started it, still located in the small town where the company was founded (Bobcaygeon), and still using 100% Canadian sourced dairy for all of our products,” says Tom Legere, Marketing Manager of Kawartha Dairy Limited. Nearly 90% of the milk Kawartha Dairy uses comes from farms located less than 100 kms from their Bobcaygeon location. üü1 ½ cup Salted Butter

OR Vegetable Oil üü2 cup Granulated Sugar üü4 Large Eggs üü1 tbsp. Vanilla Extract üü1 tsp. Lemon Juice OR Almond Extract üü3 cup All purpose flour üü6 tbsp. Cornstarch üü2 tsp. Baking powder üü1 cup Milk (2% is best) üü2 cup Fresh or frozen berries INGREDIENTS FOR GLAZE

üü2 ½ cups Powdered Sugar üü5 tbsp. Milk (2% is best) üü½ tsp. Vanilla Extract

METHOD

Grease a Bundt pan with cooking spray and dust with flour.

2 In a large bowl using a hand mixer (or a stand mixer) beat the butter, sugar, vanilla extract and eggs until light and fluffy.

3 In a large bowl whisk together flour, cornstarch, and baking powder. 4 Add dry ingredients to wet

1 Preheat oven to 350 degrees.

5 While mixing, add milk and

lemon juice until batter is smooth in consistency.

6 With a spatula fold in fresh (or frozen) berries.

7 Pour batter into the prepared

Bundt pan and smooth over with the spatula.

8 Bake until a toothpick comes out

clean. Roughly 55 minutes. Let cool for 10 minutes and invert to a cooling rack.

9 Make the glaze: whisk powdered

sugar, milk, and vanilla together. Pour over the cake. **You can also substitute honey instead of the glaze. A little drizzle will go a long way.
