From the Editor’s Desk... So we’ve almost made it through the year... The festive season is just about here, and I’m really feeling the need for a holiday! 2019 has been a year of many ups and downs and big changes, especially here at Mum’s Mail. But we’ve come through it in one piece, and I’m very proud of our team and what we’ve achieved! Personally, my family is also in for some big changes next year as our son enters ‘big school’. It’s a bittersweet moment, as he leaves behind some of his innocence in pre-school but also looks forward to learning new things and maturing in Grade 1. Oh, and he looks SO cute in his new uniform! But for now, I’m looking forward to the holidays and spending some quality time with my family.

This year we’ve decided to get a real Christmas tree for the first time (I won’t miss our mangy fake one that has seen better days)! And our son is eagerly awaiting the return of our Elf on the Shelf in December. I’m one of those eager Christmas decorators who would happily put up the tree in October, so I really have to restrain myself until December! I love getting into the Christmas spirit and having a 6-year-old makes it even more exciting! In this issue, you will find a yummy Christmas recipe, holiday activities, health advice, a craft idea and science experiment and much more! I hope you enjoy reading it! Tantalising Festive Recipe Layered Christmas Pasta Salad

• 2 green onions, thinly sliced

Creamy mustard dressing Add colour and spark to your Christmas feast with this layered • 1 cup sour cream • 1 cup traditional mayonnaise pasta salad recipe. • 1 cup flat-leaf parsley leaves, chopped Ingredients • 2 tablespoons lemon juice • 3 cups dried elbow pasta • 1 tablespoon wholegrain • 2 teaspoons extra virgin olive mustard oil • 4 middle bacon rashers, chopped • 1/2 small red cabbage, chopped • 420g can corn kernels, drained • 2 baby gem lettuces, shredded • 2 large tomatoes, diced • 1 continental cucumber, diced • 3/4 cup grated tasty cheese

To make the creamy mustard dressing: Combine sour cream, mayonnaise, parsley, lemon juice and mustard in a bowl. Season with salt and pepper. Place cabbage over the base of a 5-litre (20-cup-capacity) glass serving bowl. Top with corn, then half of the pasta. Spoon over 3/4 of the dressing. Arrange lettuce over dressing layer. Toss tomato, cucumber and remaining pasta together. Spoon over lettuce. Drizzle with remaining dressing. Sprinkle with bacon, cheese and green onion. Season with pepper. Serve.

Method Cook pasta in a large saucepan of boiling, salted water following packet directions. Drain. Refresh under cold water. Drain well. Meanwhile, heat oil in a large frying pan over medium-high heat. Cook bacon, stirring occasionally, for 5 minutes or until golden. Drain on paper towel. Source: www.taste.com.au

How to Make a Rainbow in a Glass

What You Need: • Sugar • Water • Tablespoon slowly over the back of the spoon.
