From the Editor’s Desk... It has been quite a whirlwind month for us at Mum’s Mail! For those of you who don’t know, Victoria and Andrew Arthur have sold Mum’s Mail and we now have new owners – Novus Print! After working with Victoria and Andrew for three years, we are very sad to say goodbye, but we wish them all the best as they head back to the U.K. We will also miss their darling little dog, Nunu, as she was also part of the family at the Mum’s Mail HQ! I have now stepped into the editor’s role, and I look forward to taking Mum’s Mail into a bright future! I hope you enjoy reading my “first” edition as editor, although I have been at Mum’s Mail for

almost six years as sub-editor. Our team remains largely the same, but we have two new faces, and sadly had to say goodbye to our beloved Daniella Geldenhuys. We welcome Meghan Dewet as our new accounts/booking clerk and Mechelle Gindra as our admin manager. Our two sales reps, Bev and Anisha, and our designer, Wendy Offer, are still with us and it’s business as usual! So expect to see lots of fun and informative issues coming your way! Meet the Cover Star Our adorable little cover star this month is Jente Coetzer. Jente is six months old (she was three weeks old at the time of the photo). She lives in Pretoria with her mom and dad. Jente had a brother, Elihu, who sadly passed away one week after birth due to a heart defect. He would have been almost two years old now.

This is as much a learning experience for us as it is for her and sometimes you’re gonna feel like you’re failing. It’s normal! World Diabetes Day

World Diabetes Day is on 14 November, and diabetic Louise Molyneaux shares her experience and knowledge with us to bring awareness about this disease. was immediately admitted to hospital and placed under the care of the specialist physician. He said that I had what is called Adult Onset Diabetes, normally found in older people. The fact that I was overweight, did very little exercise and was very stressed, had culminated in the development of diabetes in my body. On a Tuesday morning twenty six years ago, at the age of 36, I woke up and clearly remember being overwhelmed with fear. All the physical symptoms that I had been feeling over the past few weeks suddenly fell into place, like the last piece of a jigsaw puzzle. The intense thirst, many visits to the loo, absolute exhaustion, cramps in the legs, night sweats all came together into one word. Diabetes! I only knew one diabetic and that was a work colleague. We shared an office for many years, and I had got used to her glucose being high and low and having to prick her finger to test the glucose level in her body, and also watching her inject herself with insulin. When I told my husband, the doctor’s receptionist and the doctor what I thought, they all laughed. No-one laughed when my glucose test showed a glucose level of 22 when it should have been about six! I

How does diabetes affect my life? While I was relying on diet and exercise, I would have to limit or exclude foods high in starch/sugar. Starch turns into sugar in the body so it is not just biscuits, sweets, cakes and cool drinks that give a diabetic high glucose, but also bread, pasta, rice, mealie mealie, fruit and some vegetables. A diabetic food plan is a good eating plan for everyone. On the news in October 2018, diabetes was declared the biggest non-communicable disease in South Africa. More people have diabetes in South Africa than HIV/Aids and Cancer combined. It is called the tsunami of the 21st century! It is not only a problem in South Africa but all over the world. In 2016 there were at the last count 1.3 million patients being treated in the public health system. Sadly, there is little or no diabetes education in the state system due to lack of funds and treatment is not reliable.

In 2016, it was calculated that there were 3 to 3.5 million diagnosed diabetics in South Africa. There were also 1.5 to 2 million pre-diabetics, people who have identified as being on the road to developing diabetes if they do not make changes to their life style. It has been said that the average diabetic has diabetes for anything from 6 to 12 years before a diagnosis. That was in 2016 and who knows the numbers now? But what is shocking is that 30% of the Indian Community in South Africa has diabetes. Why has this become such a problem all over the world? Because we eat too much! We eat too much of the wrong foods and we move less. Remember we have to balance what we put in our mouths with the energy we expend in our daily lives. So we need to eat less, chose foods wisely and move more. It is that simple. What I have learnt over the past 26 years is that we are each responsible for our own health. So have a medical check-up once a year and ask for a glucose test, especially if anyone in your family has diabetes. Chose what you eat carefully and move more. Healthy Dinner Recipes

Honey Garlic Glazed Salmon

In a large skillet over mediumhigh heat, heat two tablespoons oil. When oil is hot but not smoking, add salmon skin-side up and season with salt and pepper. Cook salmon until deeply golden, about 6 minutes, then flip over and add remaining tablespoon of oil. Add garlic to the skillet and cook until fragrant for 1 minute. Add the honey mixture and sliced lemons and cook until sauce is reduced by about 1/3. Baste salmon with the sauce. Garnish with sliced lemon and parsley to serve.

Ingredients • 1/3 cup honey • 1/4 cup soy sauce • 2 tbsp. lemon juice • 1 tsp. red pepper flakes • 3 tbsp. extra-virgin olive oil, divided • 4 x 6-oz. salmon fillets, patted dry with a paper towel • Kosher salt • Freshly ground black pepper • 3 cloves garlic, minced • 1 lemon, sliced into rounds • Freshly chopped parsley, for garnish Directions In a medium bowl, whisk together honey, soy sauce, lemon juice and red pepper flakes.

Garlicky Greek Chicken

• Juice of 1 lemon • 3 cloves garlic, minced • 1 tsp. dried oregano • 500g chicken thighs • kosher salt • Freshly ground black pepper • 250g asparagus, ends removed • 1 zucchini, sliced into half moons • 1 lemon, sliced Directions In a large bowl, combine 2 tablespoons olive oil, lemon juice, garlic, and oregano. Whisk until combined then add chicken thighs and toss to coat. Cover bowl with plastic wrap and let marinate in the refrigerator for at least 15 minutes and up to 2 hours. When you’re ready to cook the chicken, preheat oven to 220°C. In a large ovenproof skillet over medium-high heat, heat remaining tablespoon olive oil. Season both sides of marinated chicken with salt and pepper, then add chicken skin-side down and pour in the remaining marinade. Sear until the skin becomes golden and crispy, about 10 minutes. Flip chicken and add asparagus, zucchini and lemons to the skillet.

Ingredients • 3 tbsp. extra-virgin olive oil, divided 9

Here’s how to make it: Lay out newspapers over a table or surface where you’ll be working so you don’t get anything dirty. Put craft glue around the rim circumference of your plastic pot and stick the tape measure around the rim. Cut off excess tape. Next, stick a self-adhesive chalk board label in the middle of one side of the pot. Decorate the rest of the pot with your chosen craft embellishments. Glowing Magic Milk Science Experiment

Supplies: • Milk • Fluorescent paint or fluorescent watercolours • Squeezy bottles (eye droppers or pipettes may be substituted) • Dish soap • Cotton bud, toothpick or craft stick • Black light Directions: Fill a container/bowl with just enough milk to cover the bottom. Fill the squeezy bottles with fluorescent watercolours or with watered-down florescent paint. The traditional experiment is done with food colouring, so you want that consistency. www.mumsmail.com

Instruct kids to squirt paint around the perimeter of the container. Dab a cotton bud in dish soap and touch the centre of the container with the cotton bud. The colours immediately jump away from the cotton bud.

For a short while the colours almost disappear, then they slowly creep back to the centre of the container. It is so cool to watch! You can also do this with food colouring instead of fluorescent paint, and then you don’t need the black light. 12
