hat if plants could actually mimic the flavor and texture of meat? Many have attempted it with varying degrees of success, as most us who have tried a dry and uninspiring veggie burger can attest. At best, it tastes good, but does not taste remotely like meat. At worst, there’s the resignation that nothing will ever truly compare. Certainly, it’s difficult to convince meat-lovers that anything could fully resemble the sensory experience involved, from the sizzle of the patty on a hot grill to the charred, caramel aroma that permeates the air, to that first, juicy bite of a burger that’s still slightly pink in the center. Only in the fictional world of “Willy Wonka and the Chocolate Factory” could Oompa Loompas in white lab coats achieve the impossible by creating chewing gum that tasted like a scrumptious dinner. But this is Silicon Valley, where scientists in lab coats really do seek to achieve the impossible, albeit without the wonky blue wigs. Online at www.DeMartiniOrchard.com The Impossible Burger in its raw form reveals the blood-red color of the burger’s signature ingredient, heme, a protein that gives ground beef burgers their signature taste, yet also exists in plants. Impossible Foods extracts heme from fermented yeast.

Celeste Holz-Schietinger, Impossible Foods’ principal scientist, demonstrated assembling a burger, which the company chose as its flagship product. “We chose ground beef — the burger. It is central to American culture and so many other cultures as well. It’s also something that we thought we could do, even though very difficult,” she said. According to Holz-Schietinger, one of the first things the scientists noticed is that meat is made up of transitions: in color, from red to brown; in texture, from squishy to chewy; in flavor, from blandly sweet and metallic to roasted, caramelized notes. Based on this observation, they used science to tackle the “meat experience.” The burger Holz-Schietinger assembled started with water, wheat and potato protein. But the truly novel secret ingredient

was the heme protein, which makes blood red and allows for us to breathe and hold oxygen. It’s found in muscles and in most plants as well. “For us, what we identified and had never been discovered before was that to create meat flavor, all of those aromas that take place upon cooking, heme is what drives that and what creates that,” she said. In fact, when in the presence of heme, the nutrients, amino acids, proteins and sugars in beef react to create the aromas and the meat flavor, she explained. Smita Shankar, principal scientist at Impossible Foods, explained that in order to sustainably produce heme, they use a fermentation process similar to what is used in making certain types of beers. sequence of the heme molecule is expressed in the yeast, which is engineered to make heme. It is then extracted from the yeast cells and filtered so that there is no yeast in the final product. After adding the heme, HolzSchietinger added coconut oil, which has a similar melting prop-

erty as tallow from an animal, she explained. This “fat release� combined with a soy protein controls how the burger cooks as well as its melting profiles. It also contributes to what Holz-Schietinger described as the “mouth-coat� or “mouth-feel� of ground beef. Glycogen, a carbohydrate; konjac, also known as Japanese yam; and xanthan gum are

added to contribute to holding the ground beef together. Inside the lab, scientists use various instruments and machines to gather data on the molecules and components that make meat smell, taste, feel and behave the way that it does under various conditions and temperatures. Pavel Aronov, principal scientist at Impossible Foods, stands in front of a GCMS mass spec-

tronomy machine that is used to measure alcohol in blood samples or to detect races of flammable liquids at suspected arson sites. At Impossible Foods, this machine is used to identify the flavor molecules in food. “One of the discoveries that we made here at Impossible Foods is that there is no one molecule that smells like beef ‌ . When we take this complex flavor and separate it out into each of its individual components, none of these molecules smells like beef,â€? Aronov said. principal scientist, explains how various machines help to collect data about the texture of meat. One machine measures the force needed to puncture a piece of meat while another measures how beef firms up as it’s being cooked, and yet another collects data on how fat melts. All of this data characterizing animal meat and its components and behavior helps scientists find plant components that produce the same behavior. As of now, Impossible Foods is partnering with restaurants and top chefs, the first of which was Chef David Chang’s restaurant Momofuku Nishi in New York City. “We believe a great burger belongs in the hands of a great chef,â€? said David Lee, chief operating officer and chief financial officer of Impossible Foods. “Only the impossible burger has the same molecule that makes red meat look and taste and sizzle and smell ‌ like a burger ‌ .â€? Though it may be a while before the Impossible Burger’s ground beef is available at your local grocery store, the scientists continue to push the boundaries of the impossible as they look to re-create other meat, fish and dairy products in the most scalable, environmentally conscious and nutritious way. Zero-Sum Lame BEN AFFLECK PLAYS AUTISTIC ASSASSIN ‘THE ACCOUNTANT’ 0 (Century 16 and 20) Nothing says action-thriller like accounting. Of course, that’s half of the gag of “The Accountant,” in which a serious button-down number-cruncher — complete with pocket protector — mass murders bad guys when handling “black money” for shady customers. The other half of the gag is that the accountant has “a highfunctioning form of autism.” Screenwriter Bill Dubuque (“The Judge”) rations out the personal history of Christian Wolff (Seth Lee) as the troubled child of a tough-loving Army Psych Ops officer dad (Robert C. Treveiler) and a straying mom (Mary Kraft). In the present day, Christian is a beefy Ben Affleck, keeping up appearances as a mildmannered strip-mall accountant when not cooking books for big-time criminal players or knocking them off when “someone breaks his moral code.” Any of this sound appealing so far? So the U.S. Treasury is on to Wolff, with Director Raymond King (J.K. Simmons) taking a personal interest. King blackmails talented analyst Marybeth Medina (Cynthia Addai-Robinson) into cracking the case

(mostly, it seems, by Googling his aliases and gawking at the results). Meanwhile, Wolff nabs a gig as a forensic accountant for Living Robotics, where CEO Lamar Black (John Lithgow) has recently discovered millions embezzled; there, Wolff takes a shine to awkwardly perky accountant Dana Cummings (Anna Kendrick). Plus there’s another mystery man (Jon Bernthal) going around confronting fiscal crooks and on a collision course with Wolff. So “The Accountant” doesn’t lack for plot over the course of its 128 minutes. But director Gavin O’Connor (“Warrior”) doesn’t seem to know how to make this material compelling, and who can blame him? Sometimes “The Accountant” plays like “Batman Begins,” with young Christian suffering personal trauma and punishingly learning martial arts. At other times, Affleck seems to be auditioning for his old buddy Matt Damon’s “Bourne” franchise (by way of their “Good Will Hunting”) with his brutally efficient take downs by hand-to-hand combat or sniper artillery (when not covering walls with equations).

Strangest of all, much of the time “The Accountant” is just plain goofy, inviting laughs that sometimes backfire to be at, rather than with, the film. Kendrick has obviously been asked to give a more or less romanticcomic performance that’s at odds with the rest of the story, and Affleck doesn’t have the chops to overcome the script’s clichÈs and make his preposterous character credible (to be fair, I’m not sure anyone does). In playing autistic, Affleck is mostly limited to degrees of deadpan, which get played for menace and/or yuks. “The Accountant”’s biggest sin is simply not being interesting. O’Connor overestimates the intrigue of the “puzzle” plot, which has only predictable twists in store. The independence and goal-oriented success of the autistic anti-hero is meant to be inspiring, but winds up creepy. And so the running-gag emotional expression of another of the film’s autistic characters pretty much sums it up: “Heavy sigh.” Rated R for strong violence and language throughout.
