What an amazing idea! Just like tsukemen (dip-style ramen), you dip it in broth and then eat it!

The shio (salt-flavored) ramen is based off Chinese soba from long ago. Made with chicken base and pork bone base, the soup is simple yet refined. The shopkeeper, moved by the flavors in Japan, has recreated them in his Tan Tan Men (spicy Szechuan noodles). First, heated sesame seeds to the point of releasing their natural oils, then ground and used to ensure the best flavor. This is a place where the locals hang out, and it’s definitely a place for families! こちらの塩ラーメンは昔ながらの中華そばがイメージ。鶏ガラととんこつでだしを取り、シンプルな味を追求！店主が日本で感動した味を再現したのが担々麺。煎った後に油が出るまですりつぶした胡麻を使った、まさにこだわりの味。地元の人が集う”食堂”らしく、家族で食べられるラーメンが揃う。

How this ramen came to be was really simply the need for post-alcohol sustenance. Salt-flavored ramen was actually a request from a customer and later added. What makes it stand out is its light flavor that’s good enough for supper. The shopkeeper, being a Kyushu native, brought Nagasaki signature dish CHAMPON ramen onto the menu as well. Thick noodles full of body, lots of delicious ingredients mixed in, and a highly complex and flavorful broth create a holy trinity, replicating authentic Japanese flavors. 飲んだ後のシメとして出したのがラーメンを作ったきっかけ。塩ラーメンはお客さんのリクエストで追加された味で、夜食にふさわしいさっぱり味が特徴。店主が九州出身なので長崎名物のチャンポンも登場！コシのある太麺とたくさんの具、複雑な味わいのスープが三位一体となり、日本の味を再現。

This time, we talk about Nepal where is struggling with a mountain of problems even after democratizing. 民主化以降も問題が山積しているネパールでのお話です。

he focus of this month and the next is on Nepal, which I became deeply involved with as a volunteer. As a member of the international NGO, ADRA Japan, I traveled to Nepal many times to help conduct largescale support activities. On my own, after leaving ADRA, I’ve continued to visit, organizing small-scale volunteer tours. Suzuki-kun, who appears this month, is one of the youths who participated several years ago. Soon after birth he contracted an illness that left him hearing-impaired, and consequently he grew up making few friends and lacking assertiveness. Despite this, he joined a volunteer tour that gathered together people of different ages, professions, and personalities. Before conducting volunteer activities, we visited various locations in order to understand the current situation in Nepal. We interacted with middle and high school students who were able to attend school with educational support funds, asking them about the hardships they faced in their lives. We visited a village where methane gas emitted from the excrement of livestock was piped into kitchens and reused in gas ranges. We made a circuit of these, as well as other places where ADRA had conducted projects in the past. The last place we visited was a colony established by Hansen’s disease (aka leprosy) patients in order to live independently. Hansen’s disease sufferers with facial and limb deformities live here in large numbers. “I’ve experienced a life-changing shock by coming here,” Suzuki-kun remarked, upon witnessing these sights. “In spite of his deformed face, and having lost most of his fingers, an older man shook my hand with a face full of laughter. I couldn’t understand his words, but still he offered his hand to me, a foreigner he had never seen before. Some fear passed through my mind, but then I just took the old man’s hand without thinking. At that instant, I don’t understand why, but my tears just started pouring out. This man, who was many times more unfortunate than I, showed me kindness and offered a warm hand.” I think of this experience as having sparked within Suzuki’s heart the passion for wanting to help people in need.

回と次回は、私がボランティアを通して深く関わってきたネパールについてお話します。ネパールには国際 N G OであるA D R A J a p a n のメンバーとして何度も訪れ、大掛かりな支援活動を行いました。A D R A を離れてからは個人的に小規模のボランティアツアーを主催し、再訪しています。今回登場する鈴木くんは、数年前そのツアーに参加した若者の一人です。彼は生まれて間もなく患った病気が原因で言葉が少し聞き取りにくいという障害があり、小学校時代からなかなか友だちができなく、積極性が伸びなかったようでした。そんな彼が、世代も職業も異なる人々が集うこのツアーに参加してくれたのです。ボランティア活動を行う前に、ネパールの現状を知るため各所を見学しました。学資支援を受けて学校に通えるようになった中学生や高校生と交流し、彼らがどんな困難に直面してきたのかを直接聞いたり、家畜の排泄物から発生するメタンガスをパイプでキッチンに引き込み、ガスコンロにて再利用するプロジェクトを行なった集落を見たりなど、ADRA が以前携わったプロジェクトを紹介して回りました。最後に行ったのは、ハンセン病患者が自立して生活するためのコロニーです。ここには顔や手足が変形しまった患者さんたちが多数住んでいます。その様子を目の当たりにした鈴木くんから「僕はここに来て、人生が変わるような衝撃を体験しました」と言われました。「顔は変形して、指は5本ともほとんど失くしてしまったおじさんが、満面の笑みを見せながら僕に握手してくれたんです。言葉は理解できなかったけど、外国から訪れた見知らぬ人である僕にあの小さな手を出して握手してくれたんです。ちょっと恐いという思いが頭をよぎったけど、思わず手を出しておじさんの手を握りました。その瞬間、理由はわからないけど、涙がぼろぼろ出て来たんです。僕の何十倍も不幸せなあのおじさんが僕を気遣って暖かい手をだしてくれたんです」。この出会いが、彼が心の中に持っていた”困っている人のために何かしてあげたい”という気持ちに火をつけたように思えます。
