How do you balance your business side and creativity? On and off, I connect and disconnect. It’s hard but doable to be focused on the business and its daily management and be creative simultaneously. It’s like two sides of the same coin. It’s almost like mastering selfcontrol; it’s a daily effort, sometimes exhausting, but the results are super rewarding.

You have multiple businesses – are you driven by an entrepreneurial mindset, and what is your latest venture? I do; sometimes I wonder why!!! But this buzz inside me tests me and pushes me to do more and become more. I love to multitask; usually, my “ideas” come from my need to have something, and my last venture was just that. I hate to wear tampons or intimate pads during those monthly “hormonal” days, especially if I’m going to the beach... so after some lengthy research for the right technology I launched MaiSwim. This is not just another leak-proof swimwear because there are a few already, it’s sustainable, has cool, clean designs and we even support the cleaning of the oceans with every order. I’m super proud of the concept and the team. We launched only last month, and of course, it’s made in Portugal. How do you know when to push forward and when to give yourself space? I learned this very young as I’m an only child, so I had time alone. Now I adapt the learning to daily situations. I invest a lot in my sanity, from therapy to mindfulness, ice baths, and breathing techniques that help me build the emotional intelligence and insight I need. I love some “me time,” and being completely alone – it’s like food for the soul. This comes when my body talks to me and prepares me for the overwhelming emotions approaching; in those moments, I disconnect. Usually, I’m back on my feet within 24 hours feeling recharged.

What have been the biggest signs you’re on the right track, and how have you learned to follow your gut? It’s unbelievable how cliché this is, but the gut is always right. I have a very close group of people who trust, invest in, and listen to me. That alone is invaluable and is the biggest sign that I must be doing things right.

You’re able to think outside the box – have you always been able to do this, and how has it served you? Being able to think outside the box sometimes makes me “the odd on out,” I have to be honest, especially during my teenage years. I’m from a tiny city in Portugal, Coimbra. From a very young age, my closest friends told me: “You’re not a fish of this river” and that stuck with me. I’ve never let one opportunity go and I’m never

afraid of leaving my comfort zone; you grow and truly evolve when you do step outside our comfort zone. My creative self still thinks outside the box – I adapt the thinking to the business without getting too emotional. What does freedom mean to you, and how do you create it for yourself? What is freedom? The dictionary says it’s the power or right to act, speak or think as one wants. But when my freedom violates others’ freedom, then it’s not freedom anymore. It’s exercising power. Freedom is love; freedom is to breathe, to travel wherever you want with whomever you want. Freedom is to hug and be hugged; freedom is sun and light, moon and darkness. Freedom to me means everything and nothing. I fight daily to adapt my freedom to my familyʼs freedom. That’s one of my biggest challenges. Where has been the best place you’ve visited globally, and why? I’ve been to so many places; I’m pretty lucky... but I have to say, Tibet. Landing in Lhasa is out of this world. The smiles I’ve seen there still fill my heart today. I went with my husband, we decided to visit Everest base camp before my pregnancy, and we did it. Some crazy and intense days of no potable water or shower, but reaching base camp at 5500 altitude at 5 am was all worth it. The sky there is different... I love this type of experience that pushes you to your limit. Next one? Summit Kilimanjaro. Where has been the place that has given you or your business the most growth? Well, I would say my second home country: Angola. I lived and worked there for almost ten years before moving to Dubai, and I still have a lot of family there. I grew so much in that professional environment, which is extra demanding for a woman, that I can face any professional environment honestly. This is The Summer Escape Issue – where will you be escaping to this summer? From Portugal to Porto Cervo in Italy, from Mallorca in Spain to Montreal in Canada. I will enjoy a bit of the other side of the world, take inspiration and insight from these places and breathe in new cultures. I never stop working obviously... we don’t have holidays when we work for ourselves!

What is the DNA of the brand and the core values? The concept of the brand was to make modern sandals using traditional techniques that exist for centuries in Greece and the Mediterranean. We ensure that our sandals are created using good quality leather with a raw finish in order for the sandals to last with time and wear.

When did you now it was the right time to launch the brand and how many styles did you launch with? We started with around 30 styles, 15 of which were classics and the other 15 were original Ancient Greek inspired styles. I knew the time was right to launch the brand when I met Nikolas Minoglou, my co-founder and the business mind behind the brand. We shared the same idea and he had even thought about the name and bought the URL. We realised that our sandals fulfilled a gap in the market for handmade statement sandals. If we had been a season late, someone else would have done it!

Which style drives sales season after season?

Every season we have new favourites! Nevertheless, we have our ‘forever‘ best sellers such as the ‘barely there’ braided sandal Eleftheria

which can take you from the beach to the bar. In addition, the chic slide Desmos is always on the top 5 list. This season we are glad that another construction is first on the list. The Silia with super comfortable flatform with covered padded, memory foam, insole and a strapping upper is what women have been mostly buying. This sandal is perfect for the city, the office and going for dinner later. How important is it to use traditional techniques and how do you combine this with innovative design? Traditional techniques are part of our DNA and integral to our brand and they are very important to us. Every season we try to update our collection with new innovative design as well as carrying over our classic timeless pieces. This is The Summer Escape Issue – where will you be escaping to this summer? I always go for holidays in Greece! It is the perfect place for the summer because of its crystal clear water and the amount of beautiful islands to discover. This year I am visiting Lesvos, a big island, close to Turkey. There are many interesting places to explore, the beaches are magnificent, and the food is delicious.

What do the first 30 minutes of your day look like, your morning routine? I have three kids, so the first 30 minutes of my day are really for them. I get more me time in the evening and am completely obsessed with baths, they’re my absolute favourite way to relax at the end of a long day. I light a nice candle, add in some of my favourite bath oils and enjoy a good book.

How would you define the DNA of the brand and how has it evolved? Olivia von Halle is otherworldly, aspirational, and playful – as years go by, I remain true to these values which are always at the core of everything we do. You are London-based but in 2008, you moved to Shanghai, China. What lessons did you learn from each of these experiences and how did you take them into the business? The move to Shanghai was definitely a key moment and that’s when the idea of Olivia von Halle really started. I had a super talented local tailor who was making me some of the most beautiful silk pyjamas. I literally lived in them from morning to evening and had more and more people asking about them. I slowly realised there was a gap in the market and that luxury loungewear wasn’t really an existing category at the time, feeling there was space for me to create beautiful pyjamas and robes that felt as elevated and glamorous as whatever you’d just slipped out of. The biggest lesson that I’ve learnt, and I still apply to date is to always follow your gut instinct. Of course, you can sometimes make mistakes, but ultimately that’s how you grow and get better. You’ve had past experiences as a trend forecaster and a luxury brand consultant. What did you learn during those times that you apply to your business? My background as a trend forecaster and brand consultant has definitely helped since the very early days of the brand. I love researching and dreaming about the new collections, creating products that feel new and exciting. At Olivia von Halle, we don’t believe in following other brands or what the current trends dictate. Our creative process is altogether more organic and it’s about responding to what we’re feeling passionate about at that moment, about capturing a mood.

Eastern Oriental Express as it meanders through lush jungle landscapes and hazy mountainscapes, really capturing the lost art and romance of travel. It features a beautiful colour palette inspired by an oasis of tropical birds and rustling palms. The seasonal prints are all hand drawn and then translated into sequin and crystal embellishments. I especially love the Amaya Demoiselle robe, with embroideries depicting a tropical landscape twinkling by moonlight.

Tell us more about your efforts to drive sustainability within your brand. Our wardrobe is made to treasure, with a view to sustainability and integrity of materials. I want to make things that people treasure for a long time; as such, we don’t consider a product truly finished until every detail has been perfected. In my opinion, it’s this rigour that gives each product its integrity.

This summer, how would you wear your pieces from beach to dinner? I’m obsessed with our new fringed Amina robe, which looks great over a bikini for sundowners by the pool. It also looks amazing worn in the evening over a matching Zoya fringed slip dress — I wore them both in the Rose shade for my 40th birthday party in Ibiza and absolutely loved the look!

This is The Summer Issue – where will you be escaping to this summer and what OVH will you be packing? I spend a couple of weeks every summer in Ibiza. I go with my husband, three kids and then various friends come and join us with their kids. Other than of course all of my favourite fringed pieces, I will definitely be packing a few of our Emeli sets, both in gorgeous cotton and silk blends – they’re just perfect for pottering around the villa! My favourite this season is definitely the one in the playful pool-scene Pampelonne print!

Do you see buying patterns globally or within the Middle East, and which pieces drive sales season after season? I’m seeing more and more a trend of people wearing our pyjamas outside of the house, especially with such beautiful pieces like the ones in our latest Voyage Collection. They are heavily embellished and luxuriously hand embroidered. Some of them feature up to 75 hours of work from the world’s finest artisans and are designed with the utmost attention to detail, which makes them extremely special pieces to treasure forever. These kinds of products have proven to be very popular with our Middle Eastern customers, who are always looking for something extra special and empowering. The Wolfe Damaris is my absolute favourite this season! What is most important to you when building a new collection? One of the things that are distinctive about Olivia von Halle is our design process and the inspiration behind our beautiful prints. My Design Director and I are heavily influenced by old prints and would always start our design process in the library, poring over the archives and looking back at historical references of trailblazing women, whose styles inspire us. Our signature prints are really the key to every new collection — these are hand drawn in our London studio, then transcribed into screen prints and applied to our beautiful 19 momme silks. What was your inspiration for the prints we're seeing in your Voyage Collection? The Voyage Collection is inspired by the route of the

What does your travel beauty routine look like? I think when travelling to sunny destinations it is all about the sun creams! I particularly love the Institut Esthederm Adaptasun range, it adapts to the strength of the sun, and I’ve never burnt with it on. Definitely a must.

Founder of homegrown fashion label NOMAD, Nesa Rassouli, discusses creating pieces that deliver a vacation vibe all year round

What do the first 30 minutes of your day look like, your morning routine? Having a busy schedule means my days are quite fast paced, so I like to have a slow start to my mornings. I always make sure I have enough time in the first 30 minutes of my day to have a coffee, write in my journal, and make a list of what I need to get done throughout the day. This helps me frame my mind and get organised for the day, so I can stay on top of my to-do list.

What inspired you to launch NOMAD? Starting a clothing brand has been a dream of mine since I was nine years old. After five years of working in the fitness industry, I noticed a huge gap in the market for a locally-made sustainable clothing brand that provided stylish alternatives to fast fashion brands, which is what led me to take the leap into launching NOMAD.

Your timeless pieces are designed to last. Was it challenging to find the right production, and how have you had to adapt as the brand has scaled? Finding the right production partners for a locally manufactured brand had its challenges. It took a lot of trial and error, but by focusing on our core values, optimising processes, and investing in improvements, we have been able to scale the brand without compromising on quality, which has always been our priority. We are proud of our commitment to supporting local businesses and the positive impact it has on both our brand and the community. We also pride ourselves in repurposing materials that otherwise may be discarded, such as using coconut and mother of pearl shells as buttons on our garments as well as seed paper for our swing tags, so that our customers can plant them to grow sunflower seeds. What inspired the DNA of the brand? We sought inspiration from the beauty of nature and the simplicity of a relaxed, laid-back lifestyle. The

natural texture and subtle variations in linen fabric perfectly capture the essence of effortless elegance, which became a key element in our linen co-Ord sets’ design aesthetic to complement the beach culture and laid-back pool-side culture we have in Dubai. We found that too often women’s clothing compromises comfort for beauty and elegance, so we ensure that we consider every element from hand feel to the elasticity of a waist band on our products so that our customers feel comfort while wearing our clothing, because that is key to feeling empowered.

How has your love of travel influenced your designs and overall brand aesthetic? The sense of adventure and discovery that accompanies travel has played a huge role in shaping our brand aesthetic. We strive to capture the spirit of exploration and wanderlust in our designs, infusing them with a sense of freedom, curiosity, and a touch of the unexpected in each collection.

You champion a consumer conscious mindset. Was sustainability a key factor from the outset? From inception, our aim has been to solve a problem and demystify much of the dilemma of finding conscious brands that care both about people and the environment while coming second to none in quality and style. We also understand that it is a continuous journey. We are always exploring new innovations and advancements in sustainable practices, seeking ways to improve our operations and reduce our environmental footprint by finding ways to innovate by sourcing locally, extending producer responsibility, and shortening our supply chain through platforms such as The Surpluss, which allow us to adopt a more circular supply chain model. Do you enjoy both the creative and commercial sides of the business? I find enjoyment in both the creative and commercial sides of the business, although they come with their respective challenges. The creative aspect allows me to explore my imagination, think outside the box, and bring innovative ideas to life. With experience, I’ve learned that working with both of these aspects hand in hand has allowed us to better serve our customers. By being involved with the commercial aspect, it has allowed me to take all of that feedback into our design process and adapt each collection to respond to our customer’s needs.

This is The Summer Escape Issue – where will you be escaping to this summer? I would love to visit Togo or somewhere in West Africa. It has been my childhood dream to say I have visited all continents by the time I turn 30, and Africa is next up on the list.

The Summer Body

What do the first 30 minutes of your day look like, your morning routine and how does this differ on vacation? My alarm normally goes off around 4.45am so I can jump in the car and start my morning Ironman training by 5.30am which consists of either 2-3 hours of cycling or 3 hours of swimming and running and then a gym session. This is my morning ritual, and it ensures I start the day positively. I feel great when I do this as I train with amazing people, and I am then ready and energised to take on the day ahead. When I am on vacation I do enjoy not needing to roll out of bed before 5am but I will always start the day with physical or mental exercise but in a more relaxed and probably less demanding manner than when I am training for performance. We have eight weeks until we hit summer vacation – how can we shape up in terms of exercise now? Eight weeks is a good amount of time to make a very positive impact on your physique if you follow a high quality training and nutritional programme, but it will require a focused approach with little room for error. I personally prefer having these periods of really dialling in my training and nutrition, especially if I know I’m going on holiday at the end of the phase. In terms of how training would look – I think many

make the mistake of panicking, doing far too much cardio or HIIT classes and eating 500 cals a day in an attempt to radically drop weight. You may drop fat but you are also likely to drop muscle mass and you may feel worse as a result of such a dramatic short term approach. You are going to want to prioritise strength training, specifically compound strength exercises that recruit a lot of muscle mass. Exercises like bench press, cable rows and different forms of squats work all the major muscles in the body and yield a higher stimulus than smaller exercises like bicep curls etc. This will help to preserve lean muscle mass while in a calorie deficit and then by dropping body fat your overall body composition will improve much more and you will see a better physique in eight weeks time. In terms of results that are achievable that will vary depending on individual start points, however if you following the basic principles of a calorie defi-

cit along with at least three, well structured, strength training sessions you will see your body change on a weekly basis. At Embody Fitness many of our clients achieve very dramatic changes in as little as eight weeks by following our expert coaches and nutritionists with a high level of consistency. How important is diet and what should we be eating? At Embody we don’t just look at calories, although a healthy calorie deficit is paramount if we are looking to lean down. A healthy calorie deficit would be roughly a 10-20% deficit. So if your maintenance calories were 2000 kcal per day dropping down to 1600-1800 would be safe for the relatively short period of eight weeks. Depending on your start point, any fat loss of between 0.5-1kg per week is considered safe and sustainable. Also making sure you have at least 1.8g of protein per kilo of bodyweight is essential as this helps with muscle building and recovery. We would also go one step further at Embody – we are ascertaining what could be highly inflammatory foods for our clients from the start of their journey. We make sure you are eating not only for physique but a healthy gut as well, which is essential to optimal health.

One thing I have learned from our coaches at Embody Fitness, who are all qualified sports nutritionists, is the importance of the microbiome. The microbiome is responsible for our immune system, our ability to recover from training and just about every human function. Eating foods that promote good gut health is essential to good metabolic health. Foods like garlic, asparagus and artichokes for example are all prebiotics which will help feed good bacteria in the gut leading to less inflammation (think achy joints) which one could argue would lead to better training performance. At Embody Fitness we are very focused on delivering long term sustainable outcomes, so it’s important to put foods on your plate that not only make you look good but also help you feel great and allow you to perform at your best. Consistency is so important – how does your six-week summer ready programme support staying consistent across all key factors to have you summer ready? Commitment and consistency are two of the most important factors when it comes to achieving life changing results at Embody Fitness. Embody’s transformation programmes are all completely holistic and customised to every person to maximise their outcomes. We undertake a very detailed analysis on our clients at the start of any programme so that we can build the most effective and advanced programme for every individual. all performed throughout your two or three month programme. We also want to establish and monitor healthy lifestyle habits to ensure you are on track to reaching your target which we can do through our Embody App. With the launch of our new personalised Embody Meal Plans consistency has never been easier. Should we be prioritising sleep as part of this process? Sleep should be prioritised regardless. Sleep is our time to recharge, reset and regenerate. There is no such thing as over training, only under recovery. Without sleep, the foundations for everything become disturbed and our metabolism can be negatively affected, the ability to recover between training sessions will be compromised and our hormonal levels will fluctuate greatly. To positively set our circadian rhythm – which is our natural internal body clock – we need to aim to get around 7-8 hours good quality sleep each night and try to get to sleep as close to 10pm as possible. Our bedtime routine is crucial when optimising sleep. Switch off blue light (phone, tv etc) 20-30 minutes before bed and do not consume caffeine any later than 8 hours before scheduled sleep time. Supplements including magnesium, zinc and ashwagandha can be great additional tools to help suppress the nervous system in the evening and prepare the body for optimal rest. What is your take on doubling up on workouts in a day – does it work? Personally, I train 2-3

hours a day from 5.30am every morning and then I also do three strength sessions a week at Embody Fitness with one of our sports performance coaches and I take ice baths at Embody around three times a week for recovery. This is a relatively high volume of training a week but it is required to be able to compete at Ironman events which are long and races requiring a high level of endurance fitness. On the other hand, training twice a day for someone that is a complete beginner or hasn’t been training consistently for months isn’t the best of strategies. Let’s take an average client of Embody for example who lives a fairly sedentary lifestyle and doesn’t do any exercise but wants to get in better shape, lose body fat, and have more energy. If that sounds like you, you’re going to see incredible results just from strength training three days a week and being more active throughout the day. Over time you could start introducing more cardio on your non-training days but you’d never have to do

more than one workout in a day to achieve those goals. I say this from experience and seeing thousands of clients who have been able to transform their bodies with our Embody Fitness transformation programmes. How important is hydration? Adequate hydration is crucial and often overlooked because of how simple the advice of “drink more water” might seem. But if you remember that our bodies are made up of 60% water then you’ll appreciate just how vital it is to be hydrated. From regulating our body temperature, lubricating our joints, and improving physical performance, mood, and cognitive function the benefits are countless. What’s the biggest roadblock in getting summer ready in a short timeframe? A lack of commitment and not having the right plan which will lead to results are often two of the biggest roadblocks to achieving results. This is why our clients at Embody Fitness do achieve amazing results… they are definitely committed when they sign up to us and we ensure they are achieving the best personalised programme for them that ensures they see the actual changes in their body on a weekly basis. Do you work out on vacation and what would you suggest if you a) have a gym and b) you can only use your own body weight? Holidays are important to unwind and relax and recharge so I tend to take a lot off my training schedule during this time. However daily exercise is important to me for both physical and mental wellbeing so even if I take a walk, go for a slow jog or do some deep stretching then this is still important to me. If I am on holiday somewhere quite remote or in the Swiss mountains where I spend a lot of my time in the summer I will do a lot of hiking, cycling and swimming and a few body weight “full body” workouts. You can always incorporate the use of bands or suspension cables like a trx if you needed more variety in your exercise selection. However, I will always look to maintain my three strength sessions a week as this is a ritual for me and helps me maintain my strength and muscle mass on top of all the cardio training I do. This is The Summer Escape Issue – where will you be escaping to this summer? I spend two months in the summer in one of my favourite places in the world, Crans Montana in the Swiss Alps. I feel like I am in heaven when I am there with my family and I enjoy the outdoor lifestyle and fresh clean air in some of the most beautiful nature the world has to offer.

Talk us through your morning routine. First thing I do in the morning is dry brushing as it has so many benefits such as detoxifying the skin, increasing blood circulation and it just lifts you and your whole body up. Then I brush my teeth and wipe off my night skin care with rose water before applying SPF. After that, I make myself spearmint tea as it has so many benefits such as balancing hormones and improving gut health. Once I’ve had my tea, I head to my 7am workout which is usually cycling or CrossFit. Finally, once I’ve finished with my workout, I head home, shower and start the day with

a skin care routine which consists of a good Vitamin C serum and cream like the Sunday Riley CEO Serum and Afterglow cream. How does your evening routine differ? I always double cleanse to remove the buildup on the skin from the day and stubborn makeup. I follow this with a good antiageing serum and ceramides rich cream that allows me to massage the skin with my gua sha for about five minutes. I also always end the day by massaging my scalp to help promote hair growth and then I use a good root serum. I recommend the scalp serum from Vegamour. As for body

care I use a rich balm all over my body. What are your favourite skin care products? Currently, my go to morning products are CEO Serum by Sunday Riley, Strength Trainer Peptide Boost Moisturizer by Ole Henriksen and Banana Bright Eye Cream by Ole Henriksen. How do you choose your evening fragrance? It really depends on the outfit whether it’s daring, cute, or modest. The more daring I want to feel the more I go towards smoky scents, whereas if I want to feel cute, I go towards gourmand scents.

Talk us through your haircare routine. Scalp massage at least once a day followed by a

root oil mask before every wash. I use Fable and Maine, then after the wash, I apply the Vegamour root serum. I use Dyson for styling as it causes less damage on the hair than other styling products.

What was the last beauty product you bought? I bought a self-tanning mist by Isle of Paradise which you can find at Sephora and the Anastasia Beverly Hills Brow Powder Duo.

Sustainability is an important factor at this resort – what practices have been implemented? We take sustainability seriously, implementing various practices to protect the environment. One notable initiative is our coral propagation project, where over 6,000 coral fragments from 15 different species have been rescued and transplanted onto coral pyramids, restoring reef habitats and creating new colonies. Guests can participate in the “Adopt A Coral” programme to contribute to this restoration effort. The resort also addresses plastic waste by operating an innovative water bottling plant that purifies seawater using reverse osmosis technology. This eliminates the need for plastic water bottles, as purified water is bottled in reusable glass containers. The resort’s lush island is adorned with diverse plant life, and fallen branches are repurposed for boat building. Our unique outdoor gym is constructed from recycled materials, embodying both sustainability and innovation. With the removal of disposable plastic straws and stirrers, the resort actively reduces its landfill waste. HŌSEKI BY CHEF SUGIYAMA

H seki offers a unique Omakase experience with just nine seats – was this the plan from the outset? Yes, it was always the plan to have just nine seats. The reason behind this was to ensure we could tailor the exchange between the Chef and the guest, all while serving other guests at the same time. Nine seats allowed Chef to do so and serve guests with a spirit of wa, meaning harmony, without jeopardising any of the aspects that make for a perfect Omakase. Think of Omakase as chef inviting you to his home – everything is up to him. This once in a lifetime encounter needs to be perfect and as Chef Sugiyama and his staff put their hearts and souls into the service, limiting seating capacity ensures that the Chef does so.

The restaurant has been awarded one Michelin star by The Michelin Guide for two consecutive years since 2022 and the 26th best restaurants on the World’s 50 Best Restaurants, Middle East & North Africa 2023. How does it feel to accomplish this title? I think that achieving this title is a proof of Chef Sugiyama’s gratitude to his guests, to Bulgari Resort Dubai, to his staff, suppliers, and Japanese producers who have been involved in the project since its inception. With or without this title, Sugiyama’s passion for cooking remains the same. Never satisfied with things as they are, H seki constantly tinkers, always searching through trial and error for a better version of itself. The fresh prime ingredients are imported directly from Japan. How does this further add to the quality of the food? Sugiyama goes to great lengths to ensure that everything at H seki is made in Japan, from the fish, vegetables and salt to the tableware. Fresh products are flown in from Japan several times a week – it’s just like visit-

ing Tokyo’s Toyosu Market. Since Dubai is five hours behind Japan, when the restaurant closes at midnight, it’s 5AM in Japan. That’s just when the market is taking a breather. Dubai’s location is perfect. All the producers are personal contacts from his years working in Japan, people who work with him because they know and trust him. When the carefully selected ingredients are gathered from all over Japan, they are loaded onto containers headed for H seki. Chef Sugiyama wants his guests to have a piece of Japan, the moment they walk into the restaurant.

Chef Sugiyama is a sixth-generation sushi master. Talk us through his career and background. Chef Sugiyama is the son of a sushi chef, owner of a long-established restaurant founded in 1865. His paternal and maternal grandparents all owned sushi restaurants. Yet as a young boy, he did not see himself continuing that family tradition. Both parents worked from morning to evening, and even on days off they always answered the phone if it rang. Not for a single day could work and home life be separated. Seeing at first hand the grind-

ing hardship of running one’s own business, Sugiyama simply didn’t see becoming a sushi chef as an option. One day, Sugiyama had the opportunity to serve a customer a dish he’d prepared himself. When he saw the customer smile upon tasting his cooking, Sugiyama knew that this was what he wanted to do. Seeing the moment when a customer smiles on eating his food is the true thrill of counter service. It wasn’t long before Sugiyama reconnected with sushi. Later, after working at a series of sushi shops in Tokyo, Sugiyama had the good fortune of beginning his apprenticeship at Sushi Kanesaka. Then in 2017, when Bulgari Resort Dubai opened, Sugiyama was presented with an enthusiastic offer and set off for Dubai. What’s next for H skei by Chef Sugiyama? While the path to sushi might look very simple, it is a very complicated and difficult one. Chef Sugiyama considers that he’s still on the way to the best version of H seki. He aims to do better and work harder every day in order to provide a unique experience to his guests.

IL RISTORANTE-NIKO ROMITO

The restaurant echoes the elegant design of the original Bulgari Hotel Milano – what are the design elements that corelate to its original design? The design elements of Il Ristorante-Niko Romito’s are a celebration of Italian heritage. The décor is designed in a purely Italian – Roman Baroque – style. The restaurant showcases framed iconic Bulgari archive photographs and brand heritage images that recall over 130 years of Roman jewellery history. It is an intimate space centered around one ethos: the integration of Italian soul, coupled with

Bulgari’s superior approach to luxury. You will find the same at Bulgari Hotel Milano’s Il Ristorante. For instance, the oval-shaped Bulgari Bar is found at both outposts and was inspired by the famous Fontana Della Barcaccia, just a stone’s throw away from Bulgari’s Roman boutique. It doesn’t get more Italian than that. The menu celebrates the rich heritage of history. What are the key standout dishes? The key standout dishes are definitely some that represent the most historical dishes in Italian heritage. I would probably recommend starting with an Antipasto all’italiana, which offers a variety of Italian regional specialties, an interesting gastronomic tour from the North to the South of the country. Then I would go for one of our homemade pasta, like the Spaghetti e pomodoro, a modern interpretation of the classic pasta with a hard preparation behind it. It’s a dish that takes inspiration from Reale, Chef Niko’s three-starred restaurant in Abruzzo. Finally, I would recommend either a Cotoletta, to try our version of this very well know Italian classic. To end the dinner, the tiramisu or one of the seasonal creations like the buffalo stracciatella cheese ice cream, balsamic vinegar and wild blackberries. Many of the top-quality ingredients are flown in from Italy. How does this add to the experience? We try to always use Italian ingredients and when importing them is not possible we work with the finest local producers and choose the best products the country can offer. We always look for the best raw materials and treat them with the utmost respect. We really want our guests to experience a piece of Italy and while we strive to work with more local products, there are certain ingredients that just cannot be replaced yet. Dubai is very set up regarding the import of outstanding quality products, given the fact that the city is positioned close to Europe and the rest of the world. It’s really all about bringing Italian excellence to Dubai and we do that with all of the strong research that goes into every dish. The simple dishes add a series of complex transformation techniques – tell us more. Il Ristorante-Niko Romito is a beautiful international project designed for the Bulgari Hotel worldwide. A lot of what Chef Niko does is embodying a code of Italian cooking that starts from the classics and is reinterpreted in a contemporary manner, expressing the cultural importance, elegance and essence. Seasonality plays a big role in the conception of the menu, and of course the elements of each season are present in the menus at Il Ristorante-Niko Romito. New dishes are introduced to the menu each month, keeping in perfect harmony with the Italian seasons and linked to Italian traditions from the North to the South. Additionally, we don’t conceive a dish stating we want to do a dish of Mozzarella and Tomato, for example. We start working on giving the identity to the main ingredient we want to focus on. In this case, let’s work with the Mozzarella. Ingredients can be so versatile depending on the temperature, its environment, by a treatment. Once we understand the best way to bring this ingredient to life, we try to play around it. What’s next for Il Ristorante-Niko Romito? We will continue to provide excellence of food and service. We are now recognised in the MI-

CHELIN Guide for a second time in a row, being one of the very few to have received this remarkable recognition of two stars. We will of course continue to strive to provide the best Italian experience there is and express the cultural importance of Italian cuisine. Our menu is a declaration of love to Italy and we will continue to express it through all our reinterpretations.
