Jasmin specialises in making country style jams, chutneys, sauces, preserves, jellies, fruit cakes ... and just as many more yummy foods which she sells at local food markets and in the best supermarkets (including SPAR Molong). After the pandemic shutdown Jasmin is reprogramming her popular and fun food making sessions (served with coffee, music, fun, tasting and complying with social distancing rules). Nancy’s delicious apple pies by Rozzi The secret is out! Nancy Green makes ‘the best’ apple pies in her warm homely country kitchen. Those of us who are on the receiving end of Nancy’s gesture wait for the cold winter months when this lovely lady, helped by daughter Lynda, fires up her wood stove, mixes and rolls her magic ingredients on the kitchen table, and peels seasonal apples ready for the pot. An act of kindness, goodwill, love? Whatever the reason we love to see Nancy walking through our workplace doors with one of her freshly wood-fired oven baked ... mouth watering apple pies. This week the Express invites readers to enjoy Nancy’s recipe for her secret pie pastry. The secret family recipe may now be out ... but do our hands weave the same ‘magic’ as Nancy’s? Nancy Green’s Apple Pie (makes one family size)
Filling *6 large granny smith apples (or 8 small) *1/3 cup caster sugar *250mls hot water Pastry *2 eggs *75grams butter (not margarine) at room temperature roughly chopped *1/2 cup caster sugar * 2 cups self raising flour *1/2 teaspoon vanilla essence *1/3 cup milk *3 teaspoons vanilla sugar *1 teaspoon cinnamon Peel , core and slice the apples, place in pot with caster sugar dissolved with hot water, bring to the boil, then lower heat to a simmer, cook until apples are just

tender, remove from stove, set aside and let cool. Preheat oven to 180 degrees, grease base and sides of pie tin, line base with baking paper. In a food processor (or with beaters) cream butter and sugar until fluffy, add flour and eggs, mix until it forms a ball consistency, if too thick add enough milk until the dough is workable. Roll out onto floured board, cut 1/3rd for the top of pie, set aside. Line tin base and sides with pastry, bake in oven until lightly golden brown. Fill with cooled apples, place set aside pastry on top, brush with milk, sprinkle with vanilla sugar and cinnamon, put a slit into top of pie (to allow steam to escape) bake further in oven until top of pie is golden brown.

4 June 2020, Molong NSW The Spanish EPC contractor GRS has signed its fourth contract in Australia, following the agreement reached with AMP Energy, for the Molong Solar Farm under an Engineering, Procurement and Construction (EPC) arrangement. Located in the region of Molong, New South Wales, the facility will have 39 MW of peak power, whose production will avoid the emission of 53,585 tons of CO2 into the atmosphere, equivalent to the consumption generated by 10,507 vehicles. With this new project, GRS has already contracted 364 MW throughout the country, consolidating its position as one of the leading EPC contractor in the Australian market. In addition, Molong Solar Farm will cover an area of approximately 80 hectares, on which 89,088 photovoltaic modules will be installed to produce enough energy to meet the electricity demand of 10,981 homes. The project will be connected to the grid by the end of 2020.
