Hello, Friends! I hope this first newsletter is finding you all well. As many of you know, Nathan and I have been busy perfecting recipes, hosting tastings, working on websites and social networking, and creating a video series. We have lofty plans for 2013 are so thankful to have such excited and inspiring people in our lives to back up our big ideas. Read on to see what we’re doing this month!

MOCKINGBIRDBAKERYtv Starting the first week of January, Nathan and I began airing a weekly cooking show on YouTube that teaches viewers how to make gluten-free, low-glycemic, and mostly vegan foods. We both enjoy cooking and videography and decided that our own channel would be a fun way to incorporate those things further into our lives and get the word out on what Mockingbird Bakery is all about - delicious and healthy food! Every Monday (if we can get on schedule!) a new episode will go up and an online complementary recipe book will be published on Issuu. By subscribing to our channel on YouTube you will be notified when there are new episodes and you will help us keep this project going.

recipes in-the-works I am constantly challenged with the feat of creating the perfect brownie and the perfect chocolate chip cookie. There are so many aspects to consider when baking these two classic treats like, “How much chocolate is too much chocolate?” or “Should the cookies be soft and chewy or thin and crispy?” or “How gooey can a brownie get?” In Episode 3 we shared the recipe for one version of our chocolate chip cookies. I have to say though that the recipe we shared, though we love it, is not the official Mockingbird Bakery Chocolate Chip Cookie. I’m hoping this month will be THE month to finally choose the winning recipe and to decide which brownie will take home the prize as well. (I’m routing for the Vegan Buckwheat Brownie!) The chocolate treats that are not in question are the Vegan Chocolate Cake Balls and the Chocolate Cake with Ganache. The cake balls have been the hit of the month and rightly so! They’re rich and delicious but not so big that they’ll overwhelm. On a more savory note, pizza crusts will be coming your way! Nathan is a seasoned pizza maker, after tossing dough at three pizza joints across the country, and is the ideal partner to have in the quest for crust. Be looking for a sturdy cornmeal crust and a so-thin garbanzo crust in the next month or so.

BACKGROUND + OTHER WAYS TO KEEP UP For those of you who may not have heard, Nathan and I relocated to St. Louis, MO, this past summer after living in Santa Cruz, CA, for a year. We’re both originally from the Midwest but being back is a whole new experience. The cities we used to live in have changed and so have we! We’ve now been completely gluten-free and low-glycemic for one year, are now dairy-free, and are always thinking about what we should (and shouldn’t) be putting into our bodies. This doesn’t mean we don’t enjoy ourselves or our food though! Mockingbird Bakery was born out of a love for creating recipes and sharing treats with friends. The more challenges we come up with for making these treats, the more fun we have! Mockingbird’s products have many influences - our own favorites and family dishes, international cuisine, local and seasonal goods, and, as you may have guessed, nutrition research. But one of the biggest influences has been memories of savored times over food. Nothing beats good food and good company! Let’s keep swapping dishes and conversation in 2013!
