INTRODUCTION A Snapshot of Haiti Every day, thousands of people travel from their homes in Haiti’s capital, Port-au-Prince, to their factory jobs in an industrial park near the international airport. These women and men who work in Haiti’s garment industry rise early in the morning. Many catch crowded tap taps—the colorful vans and trucks that serve as unofficial public transport in the country. Once at work, they spend hours cutting fabric, sewing, or packing cotton t-shirts and underwear. These are shipped and sold in North American chain retail stores.

Focus on Geography

A tap tap is a type of informal transport. worked to weaken Haitian freedom. For over 200 years, Haitians have had to rely on their own skills and ingenuity for survival. Yet the revolutionary spirit and commitme nt to freedom is still strong in Haiti’s people today.

The daily minimum wage for a worker in this kind of industry is 420 Haitian gourdes ($5.07 U.S. dollars). It isn’t enough to cover full living expenses. But it is a job in a country where regular paid work is hard to find for the average person. Just 13 percent of Haiti’s workforce has steady work. This leaves a lot of people in Haiti working in the informal economy. They sell food or goods on the street, or pick up day jobs. Most of them make $2 a day.

Tucked between these ranges, however, are two regions that contain the most fertile land in the country: the Central Mesa and the Volcanic Axis. When we think of the digestive system, we think of the stomach. The stomach is a muscular organ. It has three main functions. It temporarily stores food, it produces enzymes and hydrochloric acid to break down that food, and it can contract and expand to mix and churn food.

The movement of the stomach muscles are an important step to getting food broken down into particles that the body can absorb. Sometimes our emotions can affect how well our stomach works. For some people, sadness, fear, or excitement can slow down stomach movements. This means it takes longer to digest food. Other emotions, such as anger or aggression can speed up the process.

At rest, the stomach can hold about 7 ounces (207 ml) of acid and other fluids. But when you eat a big meal, it has the ability to hold nearly a half-pound of food at a time. That would be a regular burger, fries, and a drink. It takes roughly four to six hours to digest one meal, so it is necessary for the stomach to be able to hold this much. Just as thinking about, smelling, or tasting food will start your stomach producing digestive juices. The stomach walls produce 57 ounces (2L) of acid and enzymes every day! The mucus lining of the stomach protects it from being eaten away by the acids inside and a new mucus lining forms about every three days.
