Una mia passione, io testardo che grido; riabilitiamo l’aceto! Lo diedero a Cristo, per confortarlo sulla Croce. Plinio disse, il risultato finale della fermentazione dell’uva non è il vino è l’Aceto!
Quindi, non con altro ma con le migliori uve del Collio, fermentate intere in piccoli tini, affinché fin da subito cominci un’acidificazione spontanea che per l’autunno a venire mi darà un fantastico aceto. Un affinamento di qualche anno in botticelle di rovere per unire alla potenza una vellutata armonia. Per finire senza solforosa, senza filtrazioni o manomissioni in bottiglia. Qui può aspettare ancora, il tempo gli è amico. Non un semplice condimento ma un indispensabile alleato per chi ama stare a tavola. E le foto dell’amico Maurizio Frullani?
