T’was The NighT Before ChrisTmas

T’was the night before Christmas when all through the house not a creature was stirring, not even a mouse. The stockings were hung by the chimney with care, in hopes that Saint Nicholas soon would be there. The children were nestled all snug in their beds, while visions of sugarplumbs danced in their heads, and momma in her kerchief and I in my cap had just settled down for a long winter’s nap. When out on the lawn there arose such a clatter, I sprang from my bed to see what was the matter. Away to the window I flew like a flash, tore open the shutters and threw up the sash. The moon on the breast of the new-fallen snow gave a luster of midday to objects below, when what to my wondering eyes should appear, but a miniature sleigh, and eight tiny reindeers; With a little old driver, so lively and quick, I knew in a moment it must be St. Nick. More rapid than eagles his coursers they came, and he whistled, and shouted, and called them by name: “Now, Dasher! Now, Dancer! Now, Prancer, and Vixen! On, Comet! On Cupid! On, Donner and Blitzen! To the top of the porch, to the top of the wall! Now, dash away, dash away, dash away all!”

As I drew in my head, and was turning around, down the chimney St. Nicholas came with a bound. He was dressed all in fur, from his head to his foot, and his clothes were all tarnished with ashes and soot; a bundle of toys he had flung on his back, and he looked like a peddlar just opening his pack. His eyes how they twinkled! his dimples how merry! His cheeks were like roses, his nose like a cherry. His droll little mouth was drawn up like a bow, and the beard on his chin was as white as the snow. The stump of a pipe he held tight in his teeth,and the smoke, it encircled his head like a wreath. He had a broad face and a little round belly that shook, when he laughed, like a bowl full of jelly. He was chubby and plump, a right jolly old elf. And I laughed when I saw him, in spite of myself. A wink of his eye, and a twist of his head, soon gave me to know I had nothing to dread; he spoke not a word, but went straight to his work. And filled all the stockings; then turned with a jerk, and laying his finger aside of his nose. And giving a nod, up the chimney he rose. He sprang to his

Sims) Working your way through: When you’ve lost a loved one, the holiday season can be a painful reminder of the terrible loss you are feeling—instead of bringing warmth, love, and excitement. There are steps you can take, however, to help give the holidays a new meaning. The holidays can become a time of peace and reflection, a time to cherish the gift your loved one has been—and continues to be—in the life of your family. Here are a few ideas that ma help you begin the journey.

Be patient and realistic: Remember that you are grieving. Be kind and gentle with yourself, and realistic about what you expect. Leave the word ought out of the holiday season this year.

Listen to your heart and acknowledge your limits: Remember that it is O.K. to say no. You do not have to accept every invitation or fulfill every responsibility that comes your way this holiday season. Take care of yourself physically. Grieving is hard on the body and is a great source of stress.

Take heart: Right now, you may feel like the scattered pieces of a broken puzzle. Honor that feeling, but also take comfort in knowing that the pieces of the puzzle can be reshuffled, rearranged, and pieced together to form a new picture.

The origins of “The 12 Days of Christmas” Christmas carols can be heard far and wide from Thanksgiving weekend through Christmas Day. “The 12 Days of Christmas” is one of the most recognizable carols, and for good reason, as the popular song can trace its history back several centuries.

Researchers have traced the earliest printed version of the poem on which the song is based all the way back to 1780. That’s three years before the signing of the Treaty of Paris, which officially ended the American Revolutionary War. The song has long been suspected to have been a way for Catholics in Britain to teach their children the catechism, as the 1700s was a controversial period for Catholicism in the country. However, no documentary evidence exists in support of that theory, and many historians feel it is inaccurate. Others indicate that, while 1780 is likely the first time the poem was printed, the poem is likely much older than that, with origins potentially in France or Scotland. What is known is that the version many people recognize today, namely in song form, can be traced to the early twentieth century, when English singer and composer Frederic Austin first popularized the melody for the song. Austin performed that version of the song beginning in 1905, and it was first published in 1909.

7 ways to organize and store holiday decorations Christmas decor earlier than any other province, with these residents taking out decorations 4.3 weeks ahead of Christmas Day on average. With so many avid holiday decorators, individuals will need to find ways to organize and store their seasonal items. Holiday decor comes in many different sizes — from the smallest tree ornaments to illuminated statues for the yard or inflatable items. Figuring out a storage plan can take a little effort. These seven tips can help. 1. Purchase clear, similarly sized storage bins and shelving racks, hanging them where you plan to keep the decorations. Most people prefer an out-ofthe-way spot, such as in the garage, attic or basement. Label each bin by holiday and put the bins in chronological order to make finding items more convenient. Uniform bin sizes make it easier to stack and store.

Decorating a home for holidays is quite popular. A survey from the National Retail Federation found that 53 percent of respondents said they were planning to decorate their home or yard for Halloween in 2023. Lombardo Homes polled 1,000 Americans in 2021 and 94 percent said they celebrate Christmas in at least some way, and 84 percent said they decorate. Festive facts about the often misunderstood fruitcake Certain sights and sounds are ingrained in the holiday season, from twinkling lights to carols piping over retailers’ sound systems. Amid the shelves of holiday wares and delicacies, fruitcake makes its annual appearance. Fruitcake, sometimes referred to as plum cake or Christmas cake, can be prepared in various ways. However, a dense bundt-type cake dotted with dried, candied fruit and often soaked in rum or brandy has become the standard. Loathed or loved, seldom anything in between, fruitcake is typically mocked as the ultimate regift. But just like Charlie Brown’s scant Christmas tree, which was initially mocked, it’s time to see fruitcake in a new light. Consider these fruitcake fun facts. • The texture of fruitcake can vary from cake-like to more of a sweet bread like brioche. Italians dig into panettone, Germans delight with stollen and Jamaicans serve black cake. • The first fruitcakes weren’t eaten. According to historians, fruitcakes were initially made by ancient Egyptians, who tucked the desserts into the tombs with their dead so a sweet treat could be enjoyed in the afterlife. • Fruitcake gained popularity as military rations, as everyone from Roman soldiers to Crusaders found fruitcake provided a diverse array of nutrients and an energy boost in battle. Fruitcake also stores well, which can be beneficial for military personnel in battle. • Fruitcake seemingly is indestructible. While it likely cannot last forever, Tastemade says if a fruitcake is kept in an airtight container and stored in a dark, cool place, it could be reheated years after being baked. Starch crystals and dried fruit in the cake will release stored water when warmed, rehydrating the cake. • Historical accounts indicate Romans were among the first people to eat fruitcake, which they might have enjoyed as early as 100 A.D. A version called “satura” was made by mixing stale bread with pine nuts, pomegranate seeds, raisins, and then soaking it in a barley mash and an alcoholic beverage brewed from honey. Queen Victoria, Princess Diana and Prince William served fruitcake at their receptions. • The Smithsonian Air and Space Museum in Washington, D.C. has a fruitcake on display. The neoncolored, dry and overly sweet fruit that many bakers use is the problem with poor cakes. But proper ingredients like brandy, glace cherries, apricots, figs, and dates can make for a delicious fruitcake. • The average fruitcake weighs between two and three pounds. However, the heaviest fruitcake on record, according to “The Guinness Book of World Records,” came in at 9,596 pounds. Despite the hefty weight of this cake, it’s only around 92 to 160 calories per serving. Regardless of its unfavorable reputation, fruitcake remains an unwavering holiday tradition. The website Serious Eats reports that more than two million fruitcakes are sold each year.

GRANDMA GOT RUN OVER BY A REINDEER Grandma got run over by a reindeer. Walking home from our house Christmas eve. You can say there’s no such thing as Santa, but as for me and grandpa we believe. She’d been drinking too much eggnog, and we begged her not to go. But she forgot her medication, and she staggered out the door into the snow. When we found her Christmas morning, at the scene of the attack, she had hoof-prints on her forehead, and incriminating Claus marks on her back. Now we’re all so proud of grandpa, he’s been taking this so well. See him in there watching football, drinking root beer and playing cards with Cousin Mel. It’s not Christmas without grandma, All the family’s dressed in black and we just can’t help but wonder: should we open up her gifts, or send them back? Send them back!! Now the goose is on the table and the pudding made of fig and the blue and silver candles that would just have matched the hair on grandma’s wig. I’ve warned all my friends and neighbours better watch out for yourselves, they should never give a license to a man who drives a sleigh and plays with elves.

SAUCE: 1 can (14 ounces) whole-berry cranberry sauce 3/4 cup ketchup 1/2 cup beef broth 3 tablespoons brown sugar 3 tablespoons finely chopped onion 2 teaspoons cider vinegar

Cover with waxed paper; microwave on high until cooked through, 2-3 minutes. Drain on paper towels. Repeat twice with remaining meatballs. In a 2-qt. microwave-safe dish, mix sauce ingredients. INGREDIENTS 4 tubes small refrigerated flaky biscuits (5 count) 1/4 cup stone-ground mustard 1/2 cup butter, softened 1/4 cup chopped green onions 1/2 cup stone-ground mustard 1/4 cup mayonnaise 1/4 cup honey 10 thick slices deli ham, quartered 10 slices Swiss cheese, quartered 2-1/2 cups shredded romaine 20 pitted ripe olives, drained and patted dry 20 pimiento-stuffed olives, drained & patted dry 40 frilled toothpicks DIRECTIONS Preheat oven to 400°. Cut biscuits in half to make half-circles; place 2 in. apart on ungreased baking sheets. Spread mustard over tops. Bake until golden brown, 8-10 minutes. Cool completely on wire racks. Mix butter and green onions. In another bowl, mix mustard, mayonnaise and honey. Split each biscuit into two layers. Spread biscuit bottoms with butter mixture; top with ham, cheese, romaine and biscuit tops. Spoon mustard mixture over tops. Thread one olive onto each toothpick; insert into stacks. Serve immediately.

APPLE WALNUT STUFFED PORK ROAST

5 tablespoons butter 1 apple - peeled, cored, and chopped 1 small onion, chopped 1 celery stalk, diced 1/2 cup chopped walnuts 1 cup unsweetened applesauce

1 1/2 cups water 5 cups coarse dry breadcrumbs 1/2 teaspoon ground cinnamon 1/2 teaspoon kosher salt 1/4 teaspoon ground cloves 1/4 teaspoon ground nutmeg 1/4 teaspoon ground ginger Kosher salt and fresh ground pepper to taste 1 (3 pound) boneless rolled pork loin roast Preheat oven to 325 degrees F (165 degrees C). Melt the butter in a medium saucepan over medium heat. Stir in the apple, onion, celery, and walnuts, and cook 5 minutes, until vegetables are tender. Mix in the applesauce, water, and breadcrumbs. Cook and stir until the breadcrumbs have absorbed the liquid. Season with cinnamon, kosher salt, cloves, nutmeg, and ginger. Unroll the pork roast, and place in a baking dish. Season with salt and pepper to taste. Spoon the stuffing mixture over the roast. Arrange any excess stuffing around the roast. Roll the roast so that the fatty side is on top, and tie with kitchen twine. Bake 45 to 50 minutes in the preheated oven, to an internal temperature of 145 degrees F (63 degrees C).

Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern. Cover and bake 1-3/4 to 2-1/4 hours or until a thermometer reads 130°. Meanwhile, place remaining ingredients in a food processor; process until blended. Remove ham from oven. Increase oven setting to 425°. Spread apricot mixture over ham.

Bake ham, uncovered, 15-20 minutes longer or until a thermometer reads 140°. If desired, increase oven setting to broil; broil 2-4 minutes or until golden brown.

CHRISTMAS CARBONARA

You can use spaghetti or penne for this simple supper dish. Mushrooms aren’t traditional in a carbonara, but we love them here. INGREDIENTS 400 g pasta 150 g mushrooms

1 clove of garlic 1 tablespoon olive oil 50 g Parmesan cheese, plus extra to serve 3 sprigs of fresh flat-leaf parsley 6 fresh chives 2 large egg yolks 100 g sour cream 80 g cooked ham DIRECTIONS Cook the pasta in a large pan of boiling salted water, according to the packet instructions. Slice the mushrooms, peel and finely chop the garlic, then add to a frying pan over a medium heat with the oil. Sauté for 5 minutes until softened. Add ham (or bacon). Drain the pasta, saving a cupful of the cooking water, then add it to the pan. Beat in the egg yolks and sour cream and season well with black pepper. Add this to the pasta and stir until noodles are coated. Finely grate the Parmesan (if using) into a bowl, then finely chop and add the parsley leaves and chives. Add to the pasta mix and add some cooking water to loosen it up if needs be. Serve with an extra grating of Parmesan, if you like.

LEFTOVER TURKEY POT PIE INGREDIENTS 2 cups frozen peas & carrots 2 cups frozen green beans 1 cup sliced celery 2/3 cup butter 2/3 cup chopped onion 2/3 cup all-purpose flour 1 teaspoon salt 1 tsp ground black pepper 1/2 teaspoon celery seed 1/2 teaspoon onion powder 1/2 teaspoon Italian seasoning 1 3/4 cups chicken broth 1 1/3 cups milk 4 cups cubed cooked turkey meat 4 (9 inch) unbaked pie crusts DIRECTIONS Preheat an oven to 425 degrees F (220 degrees C). Place the peas and carrots, green beans, and celery into a saucepan; cover with water, bring to a boil, and simmer over medium-low heat until the celery is tender, about 8 minutes. Drain the vegetables in a colander set in the sink, and set aside.

Melt the butter in a saucepan over medium heat, and cook the onion until translucent, about 5 minutes. Stir in 2/3 cup of flour, salt, black pepper, celery seed, onion powder, and Italian seasoning; slowly whisk in the chicken broth and milk until the mixture comes to a simmer and thickens. Remove from heat; stir the cooked vegetables and turkey meat into the filling until well combined. Fit 2 pie crusts into the bottom of 2 9-inch pie dishes. Spoon half the filling into each pie crust, then top each pie with another crust. Pinch and roll the top and bottom crusts together at the edge of each pie to seal, and cut several small slits into the top of the pies with a sharp knife to release steam. Bake in the preheated oven until the crusts are golden brown and the filling is bubbly, 30 to 35 minutes. If the crusts are browning too quickly, cover the pies with aluminum foil after about 15 minutes. Cool for 10 minutes before serving.

ROQUEFORT PEAR SALAD This is the best salad ever eaten and. It is tangy from the blue cheese, fruity from the pears, and crunchy from the caramelized pecans. The mustard vinaigrette pulls it all together. 1 head leaf lettuce, torn into bite-size pieces 3 pears - peeled, cored and chopped 5 ounces Roquefort cheese, crumbled 1 avocado - peeled, pitted, and diced 1/2 cup thinly sliced green onions 1/4 cup white sugar 1/2 cup pecans 1/3 cup olive oil 3 tablespoons red wine vinegar 1 1/2 teaspoons white sugar 1 1/2 teaspoons prepared mustard 1 clove garlic, chopped 1/2 tsp salt fresh ground black pepper to taste

For the dressing, blend oil, vinegar, 1 1/2 teaspoons sugar, mustard, chopped garlic, salt, and pepper. In a large serving bowl, layer lettuce, pears, blue cheese, avocado, and green onions. Pour dressing over salad, sprinkle with pecans, and serve.

PRETTY DUCHESS POTATOES INGREDIENTS 2 pounds russet potatoes, peeled and quartered 3 egg yolks 3 tablespoons fat-free milk 2 tablespoons butter 1 teaspoon salt 1/4 teaspoon pepper 1/8 teaspoon ground nutmeg 1 egg, lightly beaten DIRECTIONS Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer 15-20 minutes or until tender. Drain. Over very low heat, stir potatoes 1-2 minutes or until steam has evaporated. Remove from heat. Preheat oven to 400°. Press through a potato ricer or strainer into a large bowl. Stir in the egg yolks, milk, butter, salt, pepper and nutmeg. Using a pastry bag or heavy-duty resealable plastic bag and a large star tip, pipe potatoes into six mounds on a parchment paper-lined baking sheet. Brush with beaten egg. Bake 20-25 minutes or until golden brown.

EGGNOG PIE INGREDIENTS 1 tablespoon unflavored gelatin 1/4 cup cold water 1/3 cup sugar 2 tablespoons cornstarch 1/4 teaspoon salt 2 cups eggnog 1 teaspoon vanilla extract 1 teaspoon rum extract 1 cup heavy whipping cream, whipped 1 pastry shell (9 inches), baked Ground cinnamon, optional DIRECTIONS In a small bowl, sprinkle gelatin over water; let stand 1 minute. In a saucepan, combine the sugar, cornstarch and salt. Stir in eggnog until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in gelatin until dissolved. Remove from the heat; cool to room temperature.

APPLE AND CARROT CHRISTMAS PUDDING This is just like traditional Christmas pudding, but with less fat. The house smells great all day long. It’s wonderful served with rum or cranberry sauce. For variations, try lemon or chocolate sauce. You can also line the mold with pecan halves or cranberries before filling. Be creative and add Christmas decorations to the plate before serving. The sky is the limit. INGREDIENTS 4 carrots, peeled and grated 2 apples - peeled, cored, and grated 1 cup raisins (optional) 1 cup fine bread crumbs 1 1/2 cups all-purpose flour 2 teaspoons baking powder 2 teaspoons ground cinnamon 1 teaspoon baking soda 1 teaspoon salt 1 teaspoon ground nutmeg 1 teaspoon ground allspice 2/3 cup butter 1/2 cup white sugar

Combine the carrots, apples, raisins, and bread crumbs in a bowl. Sift together the flour, baking powder, cinnamon, baking soda, salt, nutmeg, and allspice in a separate small bowl. Cream together the butter, sugar, and eggs in a separate large bowl; stir in the flour mixture. Add the carrot mixture and mix well. Transfer mixture to a lightly-greased, 2-qt mold. Place a steamer rack in the bottom of a large, deep pot. Set the filled mold on top of the steamer rack. Pour enough water into the bottom of the pot to cover the bottom 2/3 of the mold. Bring to a boil over medium heat. Reduce heat to low; cover. Simmer for 2 hours 45 minutes, adding water occasionally to maintain the water level. Remove from water and allow to cool 10 minutes before turning out of mold onto a plate.

THREE-CHIP ENGLISH TOFFEE

INGREDIENTS 1/2 teaspoon plus 2 cups butter, divided 2 cups sugar 1 cup slivered almonds 1 cup milk chocolate chips 1 cup chopped walnuts

1/2 cup semisweet chocolate chips 1/2 cup white baking chips 1-1/2 teaspoons shortening DIRECTIONS Butter a 15x10x1-in. pan with 1/2 teaspoon butter. In a heavy saucepan over medium-low heat, bring sugar and remaining butter to a boil, stirring constantly. Cover and cook for 2-3 minutes. Uncover; add almonds. Cook and stir with a clean spoon until a candy thermometer reads 300° (hard-crack stage) and mixture is golden brown. Pour into prepared pan (do not scrape sides of saucepan). Surface will be buttery. Cool for 1-2 minutes. Sprinkle with milk chocolate chips. Let stand for 1-2 minutes; spread chocolate over the top. Sprinkle with walnuts; press down gently with the back of a spoon. Chill for 10 minutes. In a microwave, melt semisweet chips; stir until smooth. Drizzle over walnuts. Refrigerate for 10 minutes. Melt vanilla chips and shortening; stir until smooth. Drizzle over walnuts. Cover and refrigerate for 1-2 hours. Break into pieces.

PRETZEL TURTLES®

Soft cut-out sugar cookie that I have used for years. I sprinkle with colored sugar before baking or you could also try icing them when cool. 3/4 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon salt 1 cup margarine, softened 1 1/2 cups white sugar 2 eggs 2 teaspoons vanilla extract Sift flour, baking powder, and salt together, set aside. In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually blend in the sifted ingredients until fully absorbed. Cover dough, and chill for 2 hours. Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets. On a clean floured surface, roll out small portions of chilled dough to 1/4 inch thickness. Cut out shapes using cookie cutters. Bake 6 to 8 minutes in the preheated oven, or until edges are barely brown. Remove from cookie sheets to cool on wire racks.

Quick and easy Turtles® candies! Mini pretzels, caramel covered chocolate candies, and pecans make up this delicious treat. 20 small mini pretzels 20 chocolate covered caramel candies 20 pecan halves Preheat oven to 300 degrees F (150 degrees C). Arrange the pretzels in a single layer on a parchment lined cookie sheet. Place one chocolate covered caramel candy on each pretzel. Bake for 4 minutes. While the candy is warm, press a pecan half onto each candy covered pretzel. Cool completely before storing in an airtight container. Decorate if desired

KIDS CRAFT 3D Noodle Christmas Trees Make some fun 3D pasta christmas trees with your kids this Christmas! Just roll a piece of cardboard into a cone then hot glue it together. Put a strip of hot glue around the bottom and quickly stick the noodles on! Once you’re done spray paint it or have the kids paint each noodle. Add some glitter and a bow-tie noodle for the “star!”
