Adversity came to town – COVID-19, and has made it essential that we convert our outdoor areas for additional capacity due to restrictions imposed. Using your outdoor space to create patio-style dining can be a great way to expand your services and get customers coming back to your restaurant. While outdoor seating has its considerations, not the least of which is weather, they can be overcome with some planning and creativity. Al fresco tables will help you recapture some or all of your lost dine-in capacity.

There is no doubt that outdoor dining adds value to your operation and can boost revenue by increasing your seating capacity, with the potential to become a long-lasting flagship service. From the onset, be sure to check with your local jurisdictions to understand the rules and guidelines in your area, ensuring you are working within the regulations. Early planning and preparation is key to being among the first to open – and stay open throughout the seasons – making your outdoor tables the most sought-after seats in your area!

For restaurant owners, the question of how to increase traffic in today's environment is a big one. In addition to offering dine-in service, curbside and take out, extending your footprint is critical given current restrictions on capacity. A great option is to consider what is right outside your door. Eating outside (aka “dining al fresco”) is one of the simplest experiences you can create. With some key strategies, it’s possible to create a comfortable patio setting that diners will enjoy all year long – with or without cooperation from Mother Nature.

Strategize the space you have available. If you own your restaurant property and it includes a private patio or other under-utilized space, there are great options for expanding to include outdoor seating. Consider a side lot or back courtyard for additional seating as well. Do you have a rooftop, backyard-style area, or garden where fresh ingredients are grown daily? These are perfect areas to offer additional seating. Sidewalk seating is a great option, but in many cases requires a permit. Tent/Canopy seating can be a great alternative the approval process to put up a tent can be faster than building additional patio space. TIP: Consider the street and foot traffic before opting for a sidewalk expansion. All it takes is a passer by with a cigar or a vehicle with heavy exhaust to impact a fine dining experience.

Understand your local ordinances and guidelines. Determine if you will need any permits and confirm your local regulations before setting up a dining space on the sidewalk adjacent to your restaurant. For example, you may need a sidewalk dining facility permit, especially if you serve alcohol. (Note, many cities are waving the permit given the current COVID environment.) Outdoor food preparation, cooking, or expanding your bar may also require a permit. TIP: Many state agencies have faster licensing for outdoor capacity – they are expediting the process.


Here are some ways cities are adapting to aid their local businesses in their reopening efforts, while keeping customers 6 feet apart: • Expediting or waiving outdoor dining permits and sidewalk licensing fees. • Allowing businesses to convert parking lots, full sidewalks, and even streets into dining spaces so tables can be spaced 6 feet apart. • Closing streets to vehicle traffic so pedestrians have more walking space away from outdoor dining patios. • Relaxing liquor laws and allowing for alcohol to be served and consumed beyond a business’ property line. • Allowing for tents and canopies to be set up in parking lots and over sidewalk spaces.

• Allowing for barriers to be added to separate diners from pedestrians.


Design an outdoor dining layout. To get started, consider everything you want to include before you begin buying furniture or other equipment. Here are a few key questions to ask… • Will the space be used strictly for dining? • Will it be an interactive space? • Will you transform it to include a cozy lounge with firepit and couches? • Will you have live entertainment?

TIP: Adding atmospheric elements to your patio area reduces the amount of people you can seat. However, a smaller seating section also creates exclusivity. This can build demand and excite guests looking to enjoy the outdoors.

Consider the ambiance. When designing your outdoor space don’t leave out the ambiance. You may consider adding a firepit or outdoor fireplace – just a little something to enhance your customers’ experience, drawing them back again and again. Lighting is also very important. Hanging string lights or other lighting such as candles, lanterns, and torches adds a warm glow. If space allows, features such as a fountain or even something as simple as pots of flowers are a nice touch. The idea is to get creative with your space, making it unique and fun for your customers, a place that feels like home.

Prepare for all seasons and weather conditions. Nowhere is immune to inclement weather. Consider these tips to prepare and maintain your patio for weather that may not be conducive to outdoor dining: • Wipe down tables and chairs right after a rainstorm. • Install patio heaters for chilly summer nights or to extend your outdoor dining season into cooler weather months. • Offer plenty of shade by using umbrellas, awnings or deck covers. • Utilize fans along the roof lines to circulate airflow and keep your customers cool. • Implement an evacuation plan in case of dangerous or extreme weather.



Protect against unwanted pests. Just like weather, pests are inevitable. It’s important to give careful consideration to prevent, prepare, and react quickly to avoid dangerous or unsanitary situations. Bugs are attracted to sugars and sweets, which can make your outdoor bar a key target for these pests. These steps will help to you manage uninvited “guests”: • Stay diligent with your cleaning routine when it comes to spilled drinks or food. • Store fresh fruit in containers with secure lids and keep juices covered when possible. • Utilize proper bug zappers or sprays to rid your patio of bees, wasps, mosquitoes, and flies. • Clear away food as quickly as possible, as critters are attracted to the smell of food. • Sweep the floors often. • If pests become a problem, call a professional control company to discuss your options.

Safety and sanitation is still required. While COVID-19 is still a threat, here are some ways you can keep your customers and staff safe while they are dining in your outdoor and patio areas: • Position tables 6 feet apart. • Have clear walkways to the restroom and throughout the restaurant to allow for social distancing. • Provide your staff with PPE supplies. • Stock up on Sysco supplies to keep your space clean and staff protected. • Use contactless or disposable menus. • Require guests to wear their masks while walking around the restaurant. • Sanitize tables and chairs between each guest seating. TIP: Always refer to the CDC guidelines and your local Restaurant Association guidelines for current safety procedures and standards.

Plan sufficient staffing and efficient workflow. While capacity may be limited, adding more seating creates more work for your staff. Consider hiring additional help, such as local college students, as a backup option for busy weekends, holidays, and seasons. Your staff, operational flow, and technology depend on the decisions you make and a key to your success. Here are several considerations:

Workload distribution Determine how you will assign your staff, both inside and outside.

Menu ordering Determine the menu ordering options best suited for your operation and customers – including contactless solutions such as QR codes for online viewing, tablet BYOD (bring-your-own-device) for online ordering, or have table side waiters wearing masks.

Wait times Consider putting a time limit on your outdoor dining area, such as 1½ hrs, to minimize wait times and maximize seating capacity.

Takeout window Most likely your menu items are prepared inside and by creating a takeout window, you can expedite orders quickly and conveniently for your servers. Receiving a tray of food at a window may be more convenient and will cut down on traffic through the entrance door.





As customers are eager to get back to your restaurant, your outdoor dining may be a hot commodity as guests feel safer eating outdoors. With limited capacity permitted inside, you may need to utilize a 3rd party reservation system or implement your own reservation process to coordinate your seating areas. Here are few options for 3rd party reservation systems:

Outfitting an outdoor dining area requires the right products and equipment. People are more relaxed in an outdoor setting and picking the perfect furniture for their comfort matters. Waterproof and easy to move or stack is recommended, but above all, outdoor restaurant furniture needs to be both functional and comfortable. Consider seating configurations that allow for limited group dining as well as flexibility for different occasions or special events. Coordinating your outdoor style with your interior will provide a seamless transition for your guests and encourage them to dine al fresco!

For the unforeseen future, we will need to continue to exercise social distancing of at least 6’ between us in all environments. Most restaurants are operating at or below 50% to maintain the required social distancing guidelines. Be sure to check your local guidelines, depending on where you are located there may be different restrictions.
