Retrospective 4

The cafe or coffee shop as a phenomenon originated in the East. In the old Persia they could be found as early as in the 1500s. In Europe it is said that the first ones appeared in the 1600s. It was in Italy, England, Germany and Austria the first ones could be found and it was the merchants who brought the coffee tradition to Europe. Not until the 1700s did the cafes arrive in Sweden. Sundbergs Cafe at Jarntorget in Stockholm is said to be the oldest

in the city, established in 1758 and in today’s location since 1793. In Sweden today we often say: “Let’s go fika” when we need a break. By that people mean that they are ready for some relaxation from their tasks and to have a cup of coffee together with friends, colleagues and acquaintances. Along with the coffee, it is common to have a cinnamon roll, cookie or a piece of chocolate. This coffee break has become an integral part of Swedish culture.

Franska Caféet 6

NK is the best department store in the city! Everything a tourist or a Stockholmer could possibly want can be found here. After some serious shopping, you’re likely in need of somewhere to sit for a bit, and Franska Caféet on level 3 is the perfect place. I grew up in Stockholm, and this is the café that’s always been here. It’s best to sit with a view of the atrium and all the levels of the store, but it’s smart to come at

the right time so that you can find a good seat. The café is incredibly popular! My favorite dish is the café’s Croque Monsieur, preferably with a glass of white wine or a French beer. But they also have delicious salads, tasty coffee and incredible baked goods. If you’re in the mood for a sweet, try the NK mint; the recipe is from 1902. The staff is knowledgeable and service-oriented. You are guaranteed to feel welcome here!

Under Kastanjen is located in the heart of Gamla Stan, a bit outside of the popular tourist streets. With two bakeries, one of which is adapted for those with gluten and lactose allergies, there is always a freshly made treat to be found. At

8:00 a.m., the doors open up for breakfast with freshly baked bread. Lunch is served daily from 11:00 a.m. Downstairs there is a nice wine bar. An Ă la carte menu is available from 5:00 p.m.

Sturekatten 16

Sturekatten is a patisserie located at Riddargatan 4, close to Östermalmstorg and Stureplan in Stockholm. This charming premises is built in the 1700’s and consists of three floors, the bakery is on the ground floor and a café lies on the floors above. There is an outdoor terrace in the courtyard in the summer as well. The environment and décor has a lot of personal character as it was once

a private home. Anna Skog and her sister Hildegard moved into this building in 1941 and started the bakery. Most of the furniture at Sturekatten today belonged to the sisters. The furniture consists of different styles, including the Karl Johan and rococo styles. Charming details such crocheted tablecloths and old paintings create an atmosphere of a bourgeois home from the early 1900’s.

Konditori Ritorno 20

Both residents of and visitors to Vasastan have enjoyed Konditori Ritorno since it originally opened in the nineteen thirties. Its current look came in 1959, when it also received the name Ritorno, italian for ”coming back”. Most of the interiors from that time is still in use, well kept however patinated., for instance the table-size jukeboxes and the large painting of

Stockholm in the back room, with its special illumination made up of small lights placed inside trams and buildings. The name Ritorno signifies the place perfectly, once you’ve visited you will always come back, to enjoy the beautiful pastries and the carefully prepared dishes. Ritorno’s own bakery is located just around the corner at Dalagatan 41.

Semlor 22

INGREDIENTS: 6 tbsp butter 1 cup milk 1 packet dry yeast or 50g of fresh yeast 1 pinch salt 3 tbsp sugar 3 cups wheat flour 1 tsp cardamom 2 eggs, beaten (one for brushing)

ALMOND PASTE: 4 oz or 3/4 cups almonds or 3/4 cups almond meal (you can get this at Trade Joes) 1/2 cup milk 1/2 sugar

DIRECTIONS: Melt the butter in a saucepan, pour in the milk and warm until lukewarm (99° F). Pour the yeast FILLING: in a bowl (Crumble the yeast if 10 oz. almond paste (recipe below) using fresh yeast) and stir in a 1/2 cup milk (only if you little of the warm butter-milk mixare using almond paste ture until the yeast is completely that is store brought) dissolved. Add the rest of the 1 1/2 cup whipping cream butter/milk mixture, 1 egg, salt, confection sugar sugar, cardamom and most of the


flour (save some for kneading). Work the dough. It should loosen from the edges of the bowl. Allow the dough to rise under a towel/cloth for 40 minutes. Sprinkle flour on the counter and place the dough there and kneed a few minutes, especially any air pockets. Roll the dough into one big roll. Divide into 16-20 pieces. Make each piece into a round ball and put them on a baking sheet with parchment paper and let them rise for additional 30 minutes. Preheat the oven to 440° F. Brush the buns with the beaten egg and bake them for about 10 minutes in the middle of the oven or until golden brown. Let them cool on an oven rack under a towel/cloth. Once cooled cut off the very top of each bun. Take out part of the insides and put it in a bowl.

If you have not store bought the almost paste this is a good time to make it. Warm the milk and then pour the milk, the almonds/almond meal, sugar, and the insides of the roll into a food processor until a nice smooth paste. The warm milk will melt the sugar. If you have store bought the almost paste then crumble it into a food processor, mix it with the insides of the rolls, and add the milk to a rather smooth paste. Put this filling back into the buns. Whip the cream and put a large dollop in every bun. Put the tops back on and sift some confectioners’ sugar over the buns. Eat as is or server them in a bowl with warm milk.syrup. They can be found in every bakery, corner shop and petrol station — they are unavoidable.

Do you want to explore Djurgården, or simply enjoy a moment in the sun overlooking Strandvägen? You’ve come to the right place. Just next to Djurgårdsbron lies the Djurgården Sjöcafé, one of the city’s many outdoor cafés which also rents out equipment for excursions around the island. Since 2013 it has a visitor center,

‘Visit Djurgården’, where you can initiate and plan a full day of activities. Anyone who wants to explore Djurgården and the rest of the city, can rent a bike, kayak, canoe or pedal boat to get around during the summer. The equipment rental is open from April to September, and the visitor’s center has all the information needed for your city tour.

Porcelain Factory 30

Gustavsberg Porcelain is beloved by Swedes and we have had our coffee out of the cups from this factory since the 1800s. The best known dinnerware have names such as: Spisa Ribb, Berså, Blå Blom, Mon Ami and Asiatic Pheasants. Gustavsberg manufactured porcelain dinnerware and art goods are purely made out of bone china and stoneware. Ingegerd Råman, Signe Persson Melin, Stig Lindberg and Margareta Hennix are some of the artists behind the design.

Hushålls Porslins Fabriken (HPF) which has been in continuous operation since 1825 (the very first manufacturing took place in 1827), came under new management and ownership by some of the employees in 1996, seventh in a succession of owners. This factory which is Sweden’s only porcelain manufacturer, stamps its porcelain with the well-known anchor, year of production as well as “Made in Gustavsberg Sweden”. Enjoy a cup of “fika” like Swedes from a true classic cup from Gustavsberg.
