Description Turmeric is the dried root of the plant Curcuma longa. Noted for its bright yellow color, the root is related to and similar in size to ginger. Turmeric's flavor resembles a combination of ginger and pepper. Origins India (Alleppey turmeric) is the primary exporter. Alleppey turmeric is highly regarded for its deep yellow to orangeyellow color. TANDOORI CHICKEN Serves 4 1 whole Chicken 1/2 cup of plain yogurt 4 large cloves of garlic, crushed 1 teaspoon salt 1 teaspoon ground turmeric 1 teaspoon Omani mixed spice 1/2 teaspoon ground ginger 1/2 teaspoon cardamom 1 finely chopped (small) hot pepper 4 Tablespoons chopped fresh coriander 1. Skin the Chicken. Wash it, cut it into 8 pieces, and drain it. In a bowl, mix the Chicken with all of the other ingredients except for the fresh chopped coriander. Marinate in the refrigerator for at least 2–3 hours. 2. Put a heavy sauce pan with a good lid on the stove. Add a few Tablespoons of oil to the pan and turn on the heat. Place the Chicken in the pan with the bony side down. Sprinkle the fresh coriander over the Chicken. Cover with the lid. Lower the heat to the minimum level and allow to cook for 50–60 minutes or until the Chicken is tender. You may serve the Chicken as it is, or brown it under a broiler for a few minutes before serving.


Basmati Pilaf Serves 2 2 cups brown basmati rice 1 tsp. olive oil 1 large shallot, minced 2/3 cup thinly sliced scallions 1/2 cup shredded carrots 4 cups boiling vegetable stock 1/2 tsp. ground turmeric 1/4 tsp. sea salt 1/3 cup cashew pieces 1/4 cup crystallized ginger 1. Rinse rice thoroughly in a wire mesh colander using cold running water for at least 2 minutes. Set aside. 2. Heat oil for 30 seconds in a saucepan over medium heat, and add shallot, scallions, carrots and rice. SautĂŠ for 3 minutes, stirring constantly. Add stock, turmeric and salt. Bring to a boil, and stir in cashews. Reduce heat to low, cover and cook without stirring for 40 minutes, or until liquid is absorbed and rice is tender. Add ginger, and toss gently. Remove from heat, and serve immediately.


cumin potatoes Serves 4 1 lb new potatoes (1/4 inch thick pieces) 1 tbsp olive oil 1 tbsp cumin seed 1 tsp ground turmeric 1 tsp curry powder 1 tsp sea salt (coarse) 1/2 tsp black pepper (ground) 1 1/2 tbsps fresh corriander (chopped) 1. Place whole potatoes into a saucepan with water to cover. Bring to a boil, and cook until just tender. Drain, and cut potatoes into quarters. Set aside to keep warm. 2. Heat oil in a large saute pan over medium-high heat. Saute the cumin, turmeric, and curry powder for 1 minute. Add potatoes, and saute until toasted. Toss potatoes with sea salt, pepper and fresh corriander and serve hot.


ALOO TIKKIS Serves 2 2 Cups potatoes 4 Fresh green chili 1 tsp Cumin powder t sp Turmeric powder 1 Cup green peas 3 tbsp Coriander leaves 1 tbsp Oil Red pepper 2 tbsp lime juice 1 tsp Garam masala powder 1. Boil, peel and mash the potatoes. Mix the red pepper, garam masala, lemon juice and salt into the mashed potatoes. Knead this mixture and make balls. 2. Boil green peas. Prepare the filling out of boiled peas, turmeric powder, coriander leaves, garam masala, and salt. 3. Flatten the potato balls with the help of palm. Put one tbsp filling on it. Cover it with another potato ball and press it to make a patty. 4. Fry these patties in heated griddle using oil.


mutton curry Serves 4 500g Lamb meat (cut into 1-inch cubes) 1 Medium Onion (chopped) 1/4 Cup Plain Yogurt 1 inch finely chopped Fresh Ginger 3 Crushed Garlic Cloves 1 1/2 tsp Coriander Powder 1 1/2 tsp Cumin Powder 1 tsp Chilli Powder 1 tspTurmeric Powder 1. Heat 1/2 tsp vegetable oil in a frying pan. Add onion and heat over medium flame. Stir well until it becomes soft. 2. Add lamb meat, coriander, cumin, chili powder and turmeric. Mix them well. Add little yogurt. Cook over high heat, stirring the meat until all the yogurt is absorbed. Pour little yogurt again, stir and make it dry. 3. Add chopped ginger and garlic. Add enough water to cover the meat and boil. Cover and heat on low flame until the meat is cooked. 4. Remove the lid and cook the stew over high heat to evaporate excess liquid. Add enough salt and serve.

PROBLEMS & REMEDIES Anemia Everyday take a dose of 1 tsp of turmeric juice mixed with honey. Asthma Boil 1 cup of milk with 1 tsp of turmeric powder. Drink warm. Burns Mix 1 tsp of turmeric with 1 tsp of aloe gel and apply to burnt area. Conjunctivitis Mix 1 tbsp of crushed, raw turmeric in 1/3 cup of water. Boil and sieve. 2–3 drops of this mixture may be used in each eye up to 3 times per day. Complexion Apply a paste of turmeric on the skin before bed, and wash off after a few minutes. In the morning, remove any remaining yellow tinge with a paste of chickpea flour (besan) and oil. Dental problems Mix 1 tsp of turmeric with 1/2 tsp of salt. Add mustard oil to make a paste. Rub the teeth and gums with this paste twice daily.


Diabetes 1/2 – 1 tsp of turmeric should be taken 3 times a day. Diarrhea Take 1/2 tsp of turmeric powder or juice in water, 3 times per day. Pain Mix 1 tsp of turmeric and 2 tsp of ginger with water to make a paste. Spread over a cloth, place on the affected area and bandage. Add 1 tsp of turmeric to 1 cup of warm milk and drink before bed. Ears, Eyes, Nose and Mouth Turmeric dust, with alum 1:20, is blown into the ear to treat chronic otorrhea. Mix a pinch of Turmeric with organic ghee and apply it to the mucus lining of nose to stop the sniffles. It also stops nosebleeds, helps to clear the sinuses, restore a more acute sense of smell, and helps to purify the mind and brain. Turmeric helps to maintain the shape and integrity of our eyes. A Turmeric/water decoction, 1:20, is used to treat conjunctivitis and eye disease in general. Soak a cloth in the decoction and then cover the eye with it. This helps to relieve the pain as well.


Turmeric for Stomach and Intestines Turmeric treats the whole Gastro - Intestinal system. In general turmeric is used for: - Weak stomachs - Poor digestion - Dyspepsia - To normalize metabolism - To help digest protein - To increase the bio-availability of food and the ability of the stomach to withstand digestive acids. Turmeric is a great carminative, able to calm an upset digestive system by getting rid of gas and distention. Carminatives also tend to increase absorption and nurture the intestinal flora. Taking Turmeric will work fine to balance an upset digestion. Just take a small spoonful of Turmeric and stir it in a cup of yogurt right after lunch. Remedy for ‘piles’ is to directly apply a mixture of mustard oil, turmeric, and onion juice. To stop rectal bleeding take a 2 or 3 tablespoons of Turmeric every half hour until the bleeding stops, usually in an hour.
