Italian Farro Salad with Vegetables and Pesto By Jane Baxter, from Riverford Farm Cook Book – serves 4 Farro wheat is traditionally used in salads in Tuscany. If you can’t get hold of farro, short or medium grain brown rice will also work. Ingredients: 100g farro, soaked overnight in cold water sea salt and freshly ground black pepper 1 tbsp extra virgin olive oil 150g potatoes, cut into 1cm cubes 100g green beans, sliced into 1cm pieces 100g courgettes, cut into small pieces 10 cherry tomatoes, quartered 2 tsp pesto

There’s lots going on at Rustington Manor these days, starting with a brand new business networking group, meeting on the first Thursday of every month at 7am. Enjoy an inspiring talk by a different speaker each month, a delicious cooked breakfast and a chance to follow up those networking contacts. Cook the farro in 500ml boiling water for 10 minutes (if you haven’t pre-soaked the farro, it will take 30-40 minutes). Drain, season, toss in the olive oil and leave to cool. Cook the potatoes in boiling water for 10 minutes and the green beans and courgettes for 4 minutes. Drain, season and allow to cool. Mix with the farro, tomatoes and pesto. Check the seasoning and serve.
