The setting at Château Mon Désir is highly romantic with its sandy driveway, thick stonewalls and historical surroundings. Built in 2009, during the refurbishment of the hotel, on the replica of a typical colonial style mansion, it was named after the splendid country house ‘Mon Désir’ of Pierre Adolphe Wiehe, a merchant of Port-Louis who bought the whole Balaclava area in the 19th century.

Allée sablée, murs en pierre volcaniques et son cadre historique, font du Château Mon Désir un des hauts lieux du romantisme. Construit en 2009, lors de la rénovation de l’hôtel, sur la réplique d’une maison coloniale, il a été nommé d’après la splendide maison de campagne ‘Mon Désir’ de Pierre Adolphe Wiehe, un riche marchand de Port-Louis propriétaire de toute la région de Balaclava au 19ème siècle.

Its large terrace and veranda are overlooking the ‘Historical Ruins of Balaclava’ an old flourmill and distillery dating from the 18th century, and the Citron river. Its atmosphere and surroundings are simply magical.

Relish on a fine dining cuisine with specialities of France and the Indian Ocean carefully prepared by the renowned Mauritian Chef Rakesh Munoruth. The restaurant has been officially recognised as a Champagne sabrage cellar and also hosts a choice of world-class wines in its elegant wine cellar.

Rakesh Munoruth has been working since more than two decades at the 5-star Maritim Resort & Spa Mauritius to reach the rank of Chef of the gourmet restaurant Château Mon Désir. This enthusiast has gained, throughout the years, an extensive experience starting from Kitchen Steward to Commis Chef, Chef de Partie, Sous Chef and finally Chef. His passion, motivation and will to learn have allowed him to reach this level. He had the chance to follow many trainings at the hotel and in Germany in various hotels of the Maritim Hotels group under the guidance of prestigious Chefs as well as in Mauritius with the 3-Star Michelin Chef, Harald Wohlfahrt, the 1-Star Michelin Chef Lutz Niemann, the 1-Star Italian Michelin Chefs Marcello Trentini and Paolo Cappuccio and the French Chefs Frank Mischler and Christian Rougier, both ‘Maître Cuisinier de France’.

Rakesh Munoruth travaille à l’hôtel depuis plus de 20 ans. Au cours des années, il a acquis une vaste expérience en cuisine en tant que Commis de Cuisine, Chef de Partie, Sous-Chef, puis Chef. 2 filets of red mullet 4 sea scallops Olive oil Salt & pepper

2 filets de rouget-barbet 4 noix de St Jacques Huile d’olive Sel & poivre du moulin

Pan-fry the red mullet and scallops with some olive oil. Bake in the oven at 180 º during 1 min. Season with salt and pepper.

Poêler le filet de rouget-barbet et les noix de St Jacques avec de l’huile d’olive. Cuire au four à 180o pendant 1 min. Ensuite saler et poivrer.

FRICASSEE OF SEASONAL VEGETABLES FLAVOURED WITH CUMIN

FRICASSÉE DE LÉGUMES DE SAISON RELEVÉE AU CUMIN

INGREDIENTS:

1 onion / tomato 1 clove of garlic 1 small eggplant 1/2 zucchini 100 g. of pumpkin

2 tbsp of olive oil 1 tsp of cumin powder 1 tbsp of chopped parsley Salt & freshly ground pepper 1 twig of thyme

1 filet d’huile d’olive 1 c.à.c de poudre de cumin 1 c.à.c de persil haché Sel & poivre du moulin 1 branche de thym

Wash and cut the vegetables mentioned in small cubes. Sauté the onion, the garlic and the vegetables in a pan with a little bit of olive oil. Add the cumin, the thyme and the chopped parsley. Season with salt and pepper.

Laver et couper les légumes mentionnés en petits cubes. Faites revenir l’oignon, l’ail et les légumes dans une casserole avec un peu d’huile d’olive. Ajouter le cumin, le thym et le persil haché. Assaisonner avec du sel et du poivre.

WATERCRESS PUREE

PURÉE DE CRESSON

INGREDIENTS:

INGRÉDIENTS:

1 small potato 20 g. of unsalted butter 20 ml of fresh cream

1 bunch of watercress Salt & pepper

1 petite pomme de terre 20 g. de beurre doux 20 ml de crème fraîche

1 botte de cresson. Sel & poivre du moulin

Cut the stems of watercress and wash carefully the leaves with clear water with some lemon or white vinegar in it. Press delicately. Peel, wash, and cook the potato, cut roughly into pieces, and put into simmering water. Drain and crush the potato with a potato masher. Add the butter and the cream. Mix slightly with a spatula to incorporate the butter and the cream and season it over low heat to smooth the mashed potato. Cut the watercress leaves and make them sweat with some butter. Cook very shortly! Mix immediately the watercress and the potato puree. Rectify the seasoning if needed.

Couper les queues de cresson et lavez soigneusement les feuilles avec de l’eau claire légèrement citronnée ou vinaigrée. Essorer délicatement. Eplucher, laver, et cuire la pomme de terre coupée en gros quartiers à l’eau frémissante salée. Egoutter et écraser la pomme de terre avec un presse purée. Ajouter le beurre et la crème. Travailler à la spatule pour incorporer le beurre et la crème et assaisonner. Travailler la purée à la spatule sur un feu très doux pour la lisser. Couper les feuilles de cresson et faites les suer avec du beurre. La cuisson est très rapide. Mélanger immédiatement le cresson et la purée de pomme de terre. Rectifier l’assaisonnement si besoin

The ‘Kneipp Walk’ is a reflexology and hydrotherapy path which symbolises most of the beginning of rituals at Maritim Tropical Flower Spa. It can also be tried during your visit at the spa. Composed by rounded stones submerged in the water, which gradually decrease in size, guests wander barefoot through the walk whilst the stones lean on the foot pressure points which are connected to our various organs. It was inspired by a German Catholic Priest, Sebastien Kneipp, who was one of the founders of the naturopathic medicine movement which has led to cures (therapies) and naturopathy (care by plants). Bearing his name (KneippKur), this reflexology path is ideal to stimulate the circulation and for those who suffer from varicose veins and leg cramps.

But there is more! What if you could actually swim in the Indian Ocean with your horse while absolutely enjoying the fantastic surroundings? Isn’t it equine paradise to which you have the key? If you like horses, you simply must come to meet Jean-Francois Elladoo at the Maritim Equestrian Centre. He hosts 10 well-trained thoroughbred horses and pony that will be delighted to be taking you on a ride.

PORTRAIT DE JEAN-FRANÇOIS ELLADOO (Responsable du centre équestre)

This is a story of three generations of groom boys – JeanFrançois’s grand-father and his father both worked as groom boys at the Champs de Mars race track for more than 25 years. Following his father’s and grand-father’s steps, Jean-François made his childhood dream come true by starting to work as a groom boy at the age of 21, which rapidly flourished into a passionate career. He started at the Mauritius Turf Club, then after 9 years moved to Domaine Les Pailles as Assistant Manager Stables and monitor while managing a poney club at the same time. He worked there for 11 years. Jean-François worked in countries, namely Reunion Island and Botswana where he passed his exams ‘Galop 1 – 6’ and attended the ‘Fédération Equestre Internationale’ (FEI) Course for Coaches - Level 1 according to FEI Coaching System respectively. He then came to Mauritius and started working for the famous Ramjin stables as monitor and jockey and at Domaine de L’Etoile as Stables Manager. He then went to South Africa to buy 7 horses for the Domaine, where he worked until 2010. In 2011, he joined the Maritim team as Senior Supervisor. He won a lot of competitions organised by the FEI also at international levels in countries such as Reunion, Madagascar, India, South Africa and Bostwana. He was a member of the jury of the ’Federation Equestre’ and is still an active member of this federation.

Jean-François Elladoo baigne dans l’univers des chevaux depuis son plus jeune âge. Aujourd’hui responsable du magnifique centre équestre du Maritim Resort & Spa Mauritius. Il aime partager sa passion et la relation très particulière qu’il entretient avec ses protégés. Jean-François est un palefrenier de troisième génération et a toujours été proche des chevaux depuis tout petit. Son grand-père et son père étaient euxmêmes palefreniers, et lui ont transmis leur amour pour ces animaux extraordinaires. Comment expliquer autrement la relation quasiment fusionnelle qu’il entretient avec les pensionnaires dont il s’occupe aux écuries du Maritim Resort & Spa Mauritius. Jean-François a travaillé notamment au sein de la Fédération équestre de l’île Maurice, au Domaine les Pailles, pour des écuries locales notamment au Domaine de l’Étoile mais aussi en Afrique du Sud et au Botswana, contribuant toujours à faire le bonheur de chaque cheval qu’il a croisé sur sa route. Cette précieuse expérience est un atout formidable non seulement pour les chevaux du Maritim, mais aussi pour les nombreuses personnes qui viennent monter chaque jour ces animaux majestueux. Depuis 2011, Jean-Francois a rejoint l’équipe du Maritim en tant que superviseur principal.

Historical Ruins of Balaclava

The site of the ‘Ruins of Balaclava’ is one of the historical places where major events were played in defining the History of Mauritius. It was the scene of the succession of different settlers and one of the first industrial plants, which subsequently made Turtle Bay a strategic point of the island. It is a place steeped in history - wild flora wraps the ruins in gorgeous shades of green. The Citron river borders the site, water runs through with natural footpaths inviting the visitor to even further exploration. At a time, the region was known as the Bay of Turtles, but over the years, as its vast turtle population disappeared and ammunition multiplied, the name was changed to one more topical. Around 1740, an arsenal was built – today known as the ‘Historical Ruins of Balaclava’ - as well as an iron foundry and a powder mill. In order to provide water to the workshops, a dam was built on the Citron river in 1743, and still exists today. In a twist of tragic irony, the arsenal exploded in 1774, causing victims and destroying the buildings, except the saw mill and the flourmill.

C’est un lieu chargé d’histoire, les plantes tropicales enveloppent les ruines de touches de vert flamboyant. Avec la rivière Citron bordant le site, l’eau s’écoule à travers le paysage et des sentiers naturels invitent les visiteurs à l’exploration. Il fut un temps ou la région était connue sous le nom de Baie aux Tortues. Mais après la disparition des tortues locales ainsi que la multiplication des réserves de munitions, l’endroit reçu un nom plus approprié. Vers 1740, un arsenal naval fut construit aujourd’hui les ‘Ruines Historiques de Balaclava’ - ainsi qu’une fonderie et un moulin à poudre. Afin de fournir de l’eau aux ateliers, une digue fût construite sur la rivière Citron en 1743. Elle existe encore aujourd’hui. L’ironie tragique voulut que l’arsenal explosât en 1774, causant plusieurs victimes et détruisant les bâtiments à l’exception de la scierie et du moulin à blé. La propriété fut rachetée à deux reprises avant la relance du moulin. Actionné par deux grandes roues, il pouvait produire alors jusqu’à 4500 livres de farine par jour, et les entrepôts adjacents contenir jusqu’à 10000 sacs de blé.

The estate was bought over by two successive owners, before the flourmill’s activity was restored. Operated by two big wheels, it was producing up to 4500 pounds of flour per day and the adjacent warehouses could contain up to 10,000 bags of wheat. The property also ran the most modern rum distillery on the island and six limekilns. The activity of Turtle Bay gradually decreased at the end of the 19th century until the opening of the hotel in 1990. The well preserved ruins of the old flour mill, the distillery and the dam were declared National Monuments and are now part of the historical heritage of Mauritius.

La propriété possédait également la distillerie de rhum la plus moderne de l’île ainsi que de six fours à chaux. L’activité à la Baie aux Tortues diminua progressivement à la fin du 19ème siècle, avant de reprendre vie avec l’ouverture de l’hôtel en 1990. Les ruines bien conservées de l’ancien moulin, la distillerie et le barrage ont été déclarés monuments nationaux et font désormais partie du patrimoine Mauricien.

When Barbara demonstrates the creation of glass beads, it is hard to tell she is partly an autodidact and had only a very short training. Her works, handcrafted with the upmost precision, painstaking each and every detail, simply convince us that she has been doing this thing her entire life. « Practices change the whole thing », say the couple in harmony. It is during a business trip that Jean Claude discovered the famous Glass of Murano known all over the world for its unusual coloration and specific embellishment, making glassworks in Venice so popular. « It was during an exhibition in Paris that I discovered that working glass was much more than only churches stained-glass

windows. This instantly caught my attention. » That technique, developed by the artisans and glass masters of Island Murano, north of Venice in Italy, fascinates Jean Claude. New Grove Rum

AUTHENTIC TASTE, TRUE EMOTIONS...

Being a pioneer in distillation in Mauritius and the largest producer of the island with 7 million liters per year and an area of 16,500 hectares, Grays is at the source of the New Grove rum. The latter comes from a rich heritage that dates to the time of Mahé de Labourdonnais and the construction of the first sugar estate on the island in 1739, to which the first distillery is affiliated in 1752 on the Domaine de la Villebague. In 1806 was born Pierre Charles Harel, who will work actively in the distillation of rum, endorsing his progress into the legislation. Today, it is his descendants, owners of la Villebague, who produce New Grove rum from a family recipe handed down from generation to generation. The old rums are aged in Limousin oak barrels, mostly new, as well as in cognac casks. The process runs for at least 3 years of ripening for brown rums and up to 25 years for old rums. They come from most careful assemblage and are 100% natural, with no additives or aging agents.
