4th of July Recipes As featured on KGAN CBS2 June 27th, 2011 Kara Behlke, Marion Hy-Vee Dietitian Tomato and Avocado Salad Serves 8 All you need: 2 ripe tomatoes, coarsely chopped 1 cucumber, coarsely chopped 1â „3 whole avocado, chopped 20 Hy-Vee large ripe olives, coarsely chopped 3 fresh basil leaves, chopped 1 1/2 tbsp Grand Selections balsamic vinegar 1 tbsp Grand Selections olive oil Freshly ground Hy-Vee sea salt and freshly cracked Hy-Vee black pepper, to taste All you do: 1. For salad, in a large bowl, combine tomatoes, cucumber, avocado, olives and basil. 2. For vinaigrette, in a small bowl, whisk together vinegar and olive oil. 3. Evenly divide salad among 8 salad plates. Drizzle with vinaigrette. Season individual servings to taste with sea salt and black pepper. Nutrition Facts per serving: 60 calories, 5 g fat, 0 g saturated fat, 0 g trans fat, 0 mgcholesterol, 100 mg sodium, 4 g carbohydrates, 1 g fiber, 2 g sugar, 1 g protein. Caprese Kabobs Yield 16. All You Need: 2 pt Tomatoes Cherry 1 cup Basil, Fresh 8 oz Mozzarella Cheese Part-skim 3 tbsp Olive Oil 3 tbsp Balsamic Vinegar 1/2 tsp Coarse Kosher Salt 1/2 T. Cracked Black Pepper All You Do: You will also need bamboo forks - or square toothpicks. Cut the mozzarella into small slices/squares. Cut the tomatoes in half. Place a piece of the mozzarella and a nice leaf of basil in the middle of each tomato then pierce with one of the bamboo sticks. Whisk together oil, vinegar, salt and pepper and drizzle over completed mini kabobs. Enjoy!


Revolutionary Berries All You Need: 12 ounces white chocolate chips Strawberries Blue sugar or edible glitter All You Do: 1. Melt 12 ounces of white chocolate chips in a microwave according to the package directions (make sure the container and the berries are dry; even a little moisture will alter the texture of the candy). 2. One at a time, dip strawberries into the chocolate and then into blue sugar or edible glitter. 3. Set them to harden on waxed paper. 4. Makes 35 to 45 decorated berries. Banana Split With a Twist All You Need: Bananas Watermelon balls Whipped cream Berries Chopped nuts (optional) Granola (optional) All You Do: 1. Cut bananas in half lengthwise and place the halves on plates. 2. Top with watermelon balls formed with an ice-cream scoop. 3. Add dollops of whipped cream, then sprinkle on berries and chopped nuts or granola. Nation's B-day Nachos All You Need: 1 bag blue corn tortilla chips Cooking spray Aluminum foil Monterey Jack cheese, shredded Salsa Sour cream All You Do: 1. Place blue corn tortilla chips on a foil-covered baking sheet coated with cooking spray. 2. Sprinkle the chips with shredded Monterey Jack, then bake at 350째 for 5 to 7 minutes. 3. Top the nachos with salsa and sour cream


Tropical Broccoli Salad Serves 4. All you need: 4 cups chopped broccoli florets 1 cup diced fresh pineapple 1 cup diced fresh mango ½ cup mandarin oranges ¼ cup finely chopped red onion 1 (6 oz) container fat-free vanilla yogurt 1 tsp Hy-Vee apple cider vinegar Hy-Vee salt and Hy-Vee pepper, to taste Cashew pieces, optional Toasted Hy-Vee coconut, optional All you do: 1. In a medium bowl mix broccoli, pineapple, mango and red onion. 2. Stir yogurt and vinegar together and pour over the salad. Stir to coat. 3. Season with salt and pepper and sprinkle with toasted coconut if desired. .

Strawberry-Lemon-Blueberry Fruit Salad Serves 6 (1/2 cup each). All you need: 2 cups halved strawberries 1 cup fresh blueberries 1 (6 oz) container Hy-Vee light lemon yogurt ½ tsp fresh lemon zest All you do: In a medium bowl, combine strawberries, blueberries, yogurt and lemon zest. Chill before serving. Nutrition Facts: 45 calories, 0g fat, 0g saturated fat, 0g trans fat, 0mg cholesterol, 20mg sodium, 11g carbohydrate, 2g fiber, 9g sugar, 2g protein. Daily Values: 0% vitamin A, 50% vitamin C, 6% calcium, 2% iron.


Mojo Beef Kabobs Serves 4 All You Need: 1 pound boneless beef top sirloin steak, cut 1 inch thick 1 teaspoon coarse grind black pepper 1 large lime, cut into 8 wedges 1 small red onion, cut into 8 thin wedges 1 container grape or cherry tomatoes (about 10 ounces) Assortment of fresh veggies cut into wedges Mojo Sauce: 1/4 cup fresh orange juice 1/4 cup fresh lime juice 3 tablespoons finely chopped fresh oregano 3 tablespoons olive oil 2 tablespoons finely chopped fresh parsley 1 teaspoon ground cumin 1 teaspoon minced garlic 3/4 teaspoon salt All You Do: 1. Whisk Mojo Sauce ingredients in small bowl. Set aside. Cut beef steak into 1-1/4 inch pieces; season with pepper. Alternately thread beef with lime, onion and veggies evenly onto four 12-inch metal skewers. Thread tomatoes evenly onto four 12-inch metal skewers. 2. Place kabobs on grid over medium, ash-covered coals. Grill tomato kabobs, uncovered, about 2 to 4 minutes or until slightly softened, turning occasionally. Grill beef kabobs, uncovered, about 8 to 10 minutes for medium-rare to medium doneness, turning occasionally. 5.Serve kabobs drizzled with sauce.
