DYNAMIC VINES DYNAMIC VINES is an independent natural wines merchant that has built a strong reputation by providing individual wines and service aimed specifically at the on trade.

The Difference - Wines of Character with a sense of place The company concentrates on sourcing wines that reflect their place of birth: the soil, the climate and their people. We believe that wine is made in the vineyard rather than in the winery therefore most of our producers are growing their vines naturally. We feel that biodynamic, biologic and organic agriculture enhance the unique “sense of place” because there are no elements added to the soil, plants and wine to interfere with nature and create a standardized style of wine.

DYNAMIC VINES What is Biodynamic ? It is helpful to think of biodynamics not primarily as an agricultural system, but rather as an altered philosophy or worldview that then impacts on the practice of agriculture in various ways. In other words, to farm biodynamically, first you have to think biodynamically. Biodynamics finds its roots in a series of lectures delivered in 1924 by the Austrian philosopher and scientist Rudolf Steiner. Steiner‟s life mission was to bridge the gap between the material and spiritual worlds using philosophical methods. To this end, he created the “spiritual science” of anthroposophy, which he used as the basis of the Waldorf school system that persists to this day. It was only later on in Steiner‟s life that he turned to agriculture: his eight lectures, entitled “Spiritual Foundations for the Renewal of Agriculture”, were delivered just a year before his death, but they remain the foundation of biodynamic farming. Modern biodynamic practice is built on top of Steiner-inspired theories, but it is important to emphasize that there are a number of growers who practice biodynamics but who would distance themselves from Steiner‟s beliefs and teachings. Key to biodynamics is considering the farm in its entirety as a living system. To this end, biodynamic farms are supposed to be closed, selfsustaining systems. Biodynamics also sees the farm in the context of the wider pattern of lunar and cosmic rhythms. In this holistic view, the soil is seen not simply as a substrate for plant growth, but as an organism in its own right. The idea of using synthetic fertilizers or pesticides is thus an anathema to biodynamic practitioners. Instead, they use a series of special preparations to enhance the life of the soil, which are applied at appropriate times in keeping with the rhythms of nature. Disease is seen not as a problem to be tackled head-on, but rather as a symptom of a deeper trouble within the farm „organism‟: correct the problem in the system and the disease will right itself. As a matter of fact, biodynamics is a supercharged system of organic farming. Where biodynamics differs significantly in practice from organics is in the use of special preparations and the timing of their application - in other ways the techniques employed are quite similar. When talking to various biodynamic winegrowers from around the world, one thing has become clear. While they tend to agree on the big details, each one has developed his own practices to suit his own particular situation. Winegrowers drawn to this philosophy tend to be inventive types, always experimenting and refining their practices to see what works the best. As a result, there are many different flavours and variations around this common theme, and it‟s hard to define biodynamic agriculture in any sort of rigid way. bladder-type pneumatic press, de-stemmer and temperature-controlled stainless steel vats. That was in 1985. The first harvest in 1990 was already very promising. Since 1994, the vineyard has been run following the principles of biodynamic viticulture. In just a few years, Domaine de Souch has acquired a reputation as one of the best in its appellation.

At the age of sixty, Yvonne Hegoburu, manager of Château de Viaud (Lalande de Pomerol), decided to plant vines on 6 hectares of her property in the south west of France at Domaine de Souch in Laroin. She chose a number of the area‟s traditional grape varieties: Petit Manseng, Gros Manseng and Courbu. She started monumental work to renovate the estate. She installed on terraces carved out by bulldozer 13,000 trellis posts made from trees cut down on the estate. She also equipped herself with

Yvonne Hegoburu sees it as an intellectual initiative, almost a vocation. “Here in the South West of France, where the wind from Spain mingles with the fragrances of the ocean, Yvonne Hegoburu does everything within her power to ensure her grapes are happy” (“Vignerons Indépendants” - November 2001). Upon tasting it becomes apparent that both grapes and wines are extremely grateful to her for all the “maternal” care she gives them.

Patrice Lescarret started the adventure in 1993 after having studied viticulture and oenology in the very institutional “Institut d‟oenologie de Bordeaux”. Patrice wanted to express his personality and his vision of wine in the vineyards. That is the reason why he did not try to comply with the standards of the local “appellation contrôlée” and chose to produce mostly “vin de table”. The domaine, which was originally 8 hectares, is now 15. It is planted with indigenous grapes varieties formerly cultivated in the region. There is no “clone” in the vineyards. All the old vines have been grafted there before the war and the new plantations come from a meticulous selection called “selection massale”. In the last ten years, the average yield went from 13 to 35 hl/hectare. All the grapes are harvested and selected by hand. As a logical continuity of the efforts made in the vineyards, the vinification and maturation of the grapes is done without any chemicals products. The fining and filtration are kept to the most simple expression. Some of Patrice‟s wines are totally free of added sulphites. Patrice‟s conclusion is: “we can make organic wine without having long hair and smoking grass! The Domaine was born in 1999 when Matthieu Cosse and Catherine Maisonneuve took over a 5 hectares vineyard planted with Malbec old vines. They produced their first wine, “Les Laquets”, already following the principles of biodynamie. Since the Domaine has grown to approximately 15 hectares. Matthieu and Catherine produce separate “Cuvées” to reflect the identity of the different terroirs Of the estate.

BORDEAUX CHATEAU LE PUY Côtes de Francs

The Amoreau family has been living and working on the unique terroirs of Chateau Le Puy since 1610. Working the vines, preserving the soil and producing quality wines has always been the main motivation of the generations that have worked at Chateau Le Puy over the years . Today Jean-Pierre, Francoise and Pascal run the 25 hectares of the Domaine following biodynamic methods. This gives them the opportunity to make the best of an exceptional terroir. As a matter of fact, Chateau Le Puy lies on the same rock plateau as Pomerol and Saint Emilion, a place known in ancient times as "The Plateau of Wonders" because of the excellence of its wines. Today the 25 hectares are planted with vines that are 50 years old on average with a majority of Merlot (85%), then comes Cabernet Sauvignon (14%) and Carmenère (1%). Special care keeps on all along the wine-making process: neither yeasting nor chaptalisation are used. Jean-Pierre‟s definition of a wine grower: “Being a wine grower is being an artist with method, audacious with reflection, enthusiast with mediation, ardent with patience, stubborn with imagination, thrifty with generosity”.

during the 12th century by Cisterciens Monks and always remained in vine since. Very quickly Nicolas Joly started experimenting the principles of biodynamics inspired by Rudolf Steiner. After years of perseverance, his hard work and convictions started to get the public‟s and experts‟ recognition.

“I was trained to become a banker, but I turned out to be a winegrower” says Nicolas Joly. He started his career in finance, which involved working a lot in the UK and the USA. When he returned to his family‟s estate in the Loire in 1977, in the vineyards of “Coulée De Serrant”, he decided that he wanted to make wines that expressed the “spot” of his terroirs. As a matter of fact, these vineyards take their roots deep into history. The first vines were planted

Today Nicolas Joly, who runs the domaine with his daughter Virginie, has probably become the leading proponent of biodynamic viticulture. He regularly organises seminars for winegrowers, sommeliers and the general public all over the world. Nicolas Joly says: “The vine is one of the few fruit trees strictly linked to the season. The vine is dominated by the earth forces.”

LOIRE VALLEY DOMAINE DE VEILLOUX Cheverny

The Quenioux family started farming land in the family vineyard in 1800. Today Michel Quenioux runs the 25 hectares of the domaine with his son Arnaud and his wife Sylviane. The vineyard is certified organic. The Quenioux family grows different grape varieties: Sauvignon, Menu Pineau, Chenin, Chardonnay, Pinot Noir, Gamay, Cabernet Franc and Côt. Michel explains “We only use sulphur, Bordeaux mixture and plant infusions. We have replaced chemical weed-killing by soil work in order to improve the vines’ rooting systems and microbes life. In order to preserve the expression of the terroir, we make wine without adjunction of yeast and we limit the use of sulfites.” Michel has also created a gravity-flow wine system at the estate that uses less energy and minimizes damage to the wine during the winemaking process.

LOIRE VALLEY JULIEN COURTOIS Soings en Sologne

Julien‟s passion for wine was born when he started learning how to run a vineyard and how to make wine with his father Claude. He created his own vineyard "Le Clos de la Bruyère" in Soings en Sologne in 1998. Julien now runs the 4.5 hectares domaine with his girlfriend Heidi Kuka. It is her who designs the beautiful and unique labels for the wine bottles. Julien and Heidi work with seven different grape varieties. Like his father, Julien‟s objective has always been to make wines from low yields vineyards in order to reach optimal concentration. He works in close relation with natural cycles and waits for perfect maturity to harvest the grapes. Treatments are made using plant-based mixtures (nettle, horsetail, etc.). The whole domaine is harvested by hand.

BURGUNDY CHATEAU DE BERU Chablis

The Béru family has been owning the historical Château de Béru domain for 400 years. All the vines were uprooted during the phylloxera crisis. It was only in 1987 that the Comte Éric de Béru, out of passion for wine, undertook to replant the entire vineyard,. In 2005, after having worked a few years in finance in Paris Athénaïs decided to come back to the family estate to run the domain with her mother Laurence. They have invested considerable means to improve the production quality and give a fresh start to the domain. These tremendous efforts and the choice to adopt organic farming are beginning to bear fruits. The wines of Chateau Beru are sold all over the world, from New York to Tokyo. Athénaïs says “My objective is to make a natural white wine that respects the fundamental values of the soil. I cannot imagine growing vines in any other way”.

ALSACE DOMAINE JOSMEYER Wintzenheim

Domaine Josmeyer is managed by Jean Meyer, Grand son of Aloyse Meyer who founded the winery in 1854. The winery is located in the village of Wintzenheim, just west of Colmar, with an estate extending over 25 hectares of prime vineyard sites. The site is considered as being one of the warmest in Alsace, sometimes referred to as "Petit Senegal". Towards the end of the nineties Christophe Ehrhart, the current Managing Director, decided to turn the vineyards over to fully organic and biodynamic culture. The aim was to achieve the highest possible quality by seeking better harmony between the earth, the sky, the vines and the winemaker. Indefatigable traveller, Christophe is now flying the colours of Josmeyer and biodynamic methods across the world.

SAVOIE & JURA DOMAINE PRIEURÉ SAINT CHRISTOPHE Fréterive

“Atypical”, “aesthete”, “the pope of Mondeuse”, “poet”, “hellion”: these are a few of the epithets used in the press to describe Michel Grisard. He is the troublemaker of the Savoie wine industry. The story began in 1982 when he decided to leave his father‟s vineyard, where he had been working along with his two brothers, in order to “turn Mondeuse into a great wine”. Working out of his old country, he then created the Domaine Prieuré Saint Christophe. Once unappreciated, Mondeuse is a cousin of Syrah and a local variety with a lot of character. It has now become the main red variety in Savoie. In 1985, Michel began reconquering the beautiful Savoie slopes replanted with Altesse. This white wine is fermented, stirred and aged in casks. In 1991, the year of the Albertville Olympic Games, Michel introduced Mondeuse to the best restaurants in Paris.

In 1994, he was won over after a meeting with biodynamic wines and winemakers. After having renewed the image of Mondeuse and brought the Savoie wines to “Haute Cuisine”, Michel is now successfully implementing biodynamic methods in this exceptional terroir.

Since the time of its creation, the domaine has grown to encompass 6 hectares, planted in the Jura‟s unique grape varieties. The whole vineyard is harvested by hand. Evelyne and Pascal do not use any herbicides, chemical fungicides, insecticides, chemical yeasts and new oak barrels. They bottle avoiding the introduction of sulfites and filtration. All these practices allow them to make wines which express the region‟s rich winemaking traditions and unique terroir.

Evelyne and Pascal Clairet were both consulting winemakers before creating “Domaine de la Tournelle” in 1991. This experience in a period when viticulture relied mostly on chemical treatments motivated them to produce their own wine using eco-friendly methods. Right from the start, their project was to make exceptional wines while preserving nature. At the start, the Domaine was less than 1 hectare of vines.

The Domaine is located in the small town of Travaillan, just north west of Gigondas. Here Daniel and Helène have created several “cuvées” of Côtes du Rhône which have rechaed considerable acclaim. Daniel Boulle sees himself as a “Viticulturist” rather than a “Winemaker” and we feel that the agriculture approach, followed by minimal intervention in the winery, is the cornerstone to making great wine.

Domaine Les Aphillanthes is a rising star of the Southern Rhône. Proprietor Daniel Boulle, together with his wife Helène, has been tending his vines for many years. Until recently he was happy to sell his produce to the local cooperative. Fortunately for those of us who appreciate the wines of the Rhône, Daniel Boulle‟s friends rightly saw that his fruit was of superb quality and deserved to be bottled as it stood, rather than absorbed into the wines of the local co-op. Very recently Daniel Boulle has introduced biodynamic practices to the vineyard. Curiously, he was encouraged in this new practice not by contact with other followers of the biodynamic principles, but by a success in treating his own son‟s eczema using natural medical products. In the winery the wine is transported using gravity feed and ferments in concrete vats. It is indeed a philosophy of minimal intervention. The wines are bottled without filtration, which helps to preserve the flavours through to the bottle.

Until 1993 the Domaine de Villeneuve was owned by Madame Veuve Arnaux. In 1993 Philippe du Roy de Blicquy, who was working in the advertising industry in Paris, was looking for a domain somewhere in France. When Domaine de Villeneuve was for sale he bought it together with a friend from Paris: the notary Stanislas Wallut..

Right from the start they had the ambition to make some of the best wines of the “Châteauneuf du Pape” appellation. This was a hard task because the 8.40 hectares vineyards had been neglected over the past years. Very quickly Stanislas started to experiment biodynamic methods. “Here at Domaine de Villeneuve, we believe that the vines need to have a good immune system to be healthy and to produce good quality grapes. It is the plant’s inner energy that creates a barrier to pests and diseases, not medicines that just act on the short term.” As a consequence, no chemical fertilizers and no pesticides are used in the vineyards. Only small amounts of sulphur and copper-based treatments are used.

La Coste is a legendary Provencal Chateau which hadn‟t actually produced anything even slightly interesting for years. It was purchased in 2002 by Paddy McKillen, owner of several of London‟s top hotels, the Connaught among them. He asked Matthieu Cosse, owner of Domaine Cosse-Maisonneuve in Cahors (see page 6), to join him in 2006. Matthieu has given the estate a complete rebirth by implementing biodynamics methods on the 123 hectares of vineyards. This is quite big for a biodynamic estate but Matthieu‟s talent has made it possible. After four years, Matthieu‟s first achievements at Château La Coste are impressive: perfectly balanced wines with working methods that fully respect the land. and the surrounding ecosystems. A vigilant eye is in place to maintain the fertility of the soil and to safeguard the health of the vines. With minimum intervention the wines find their natural expression. In addition to that, a brand new chai, designed by Jean Nouvel, embraces the most up-to-date oenological technology, which makes it possible to optimize the wine-making process for the 3 people who work there.

Henri took over the destiny of the estate previously run by his father in 1986. Right from the start he had the ambition to make the best wine in total respect of nature. As a matter of fact, the soil had been spoiled by chemicals during the 70‟s and the beginning of the 80‟s and there was a lot to do to bring it back to its best potential. of

Located in the north of the Alpilles, the geological diversity of the Domaine was a first natural asset to make some of Provence‟s finest wines. Henry‟s love for Burgundy wines urged him to separate different vineyards based on their climate. That is the reason why he created the following cuvées: “Tuiliere Vieille” in 1986, “Clos Milan” in 1989 and “Mourre de Viret” in 1998.

But it was a meeting with Claude Bourguignon , a famous French microbiologist, that was about to change the Domaine‟s destiny in 1996. Claude Bourguignon immediately spotted the huge potential of the soils of the place. In addition to that, he introduced Henri to biodynamics approaches applied to soil preservation.

Out of the estate‟s 100 hectares, there are 20 ha of vines but also clementines, vegetables, olive trees, sheep… All farmed bio-dynamically since 2000. Jean-Charles strongly believes in Rudolph Steiner‟s concept of a “farm unit”. Being one of the eldest vineyard plantations in Corsica, the estate has been selected to study and experiment the reproduction of ancient vine varieties that are treasures of the Corsican viticulture. The estate grows a delightful range of indigenous varieties: Vermentino, Niellucio, Sciaccarello and Barbarossa. Life on the estate is regulated by the rhythms of sun, moon and planets. The grapes harvested develop in health and harmony. On the magical island of Corsica, known in France as “Île de Beauté” (the Beauty Island”), the Domaine Comte Abbatucci extends over 100 ha of granitic sandy slopes, blending in with the wild but benevolent natural landscape.

LANGUEDOC LES CLOS PERDUS Peyriac de Mer

The estate is run following biodynamic principles in accordance with the lunar calendar. “Our aim is to allow the vines and terroir to fully express their intrinsic nature. Any intervention is of the gentlest form. Hence our organic approach. Much time is spent managing the growth: taking off superfluous buds and shoots in the spring, and later on removing lower leaves, allowing the air to circulate amongst the grapes, minimising the onset of disease.”

Les Clos Perdus was founded in 2003 by Paul Old, former Australian dancer, and Hugo Stewart, former English farmer. They chose the name “Les Clos Perdus” (Hidden Vineyards) to reflect their desire to discover and select parcels of old vines scattered throughout the hillsides. As a matter of fact, many of their small vineyards have been disregarded by larger producers because of their isolation, their low cropping potential and their inability to mechanization.

In Peyriac de Mer, the vines literally face the sea. Hence the name “Mire la Mer” (mirroring the sea) for one of Paul and Hugo‟s Cuvées. This is ideal for Mourvèdre, which likes deep damp clay soil and the moist air off the Mediterranean sea. The vines go down to the waters edge. It is a popular spot for the flamingos, who fly in at sunset… They also have some Carignan on the slopes leading up to the hills. This forms the backbone of their wine. Their best Carignan was planted in 1905 and they also have some Terret vines that were planted in 1902. Most of the winemaking processes is labour intensive, using hand operated equipment in order to manipulate the berries very gently and to make small quantities of high quality wine.

Frédéric and Stéphanie have a completely different background: Frédéric, who did not come from a family working in the wine industry, created is own Domaine “La Marele” in 2000 (see page 23). Right from the start he focused on low yield and high quality wines sold to a few wine amateurs. Stéphanie took over the family Domaine “Mas Nicot” (see page 22) in 2004. Their passion for wine and their desire to learn and innovate permanently led them to the decision of creating a third Domaine: Mas Des Agrunelles. Every year, in their 4 small tanks, they experiment some new cuvées. They keep these wines for their family and friends and the best ones are sold as Mas Des Agrunelles. “Fleur Blanche”, “Barbaste”, “Carino” and “L‟indigene” are the amazing results of these small-scale trials. Wines that reflect the terroir, the personality and the French and Spanish origins of Stéphanie and Frédéric.

LANGUEDOC MAS NICOT Murles

Owned by the Nicot family since 1773, the "Mas de Perry" is located in Murles. In the past, the 300ha of the Domaine were used for wood and sheep breeding. The milk produced was used to make the famous “Roquefort” cheese. It is only at the beginning of the XIXth century that the domaine was planted with vines. The first years were difficult because there is a microclimate in Murles with temperatures sometimes 10 degrees lower than in the surrounding villages. That is the reason why has been uprooted and replanted twice. In 2004, Stéphanie takes over the Domaine and continues the work achieved by her mother Genevieve since 1981. The Domaine is renamed “Mas de Nicot”. Stéphanie decides to highly restrict the production to allow the grapes to ripen before the heavy autumnal rain which often cause real damage to the crop. As a consequence she only produce 8000 bottles per year.

LANGUEDOC DOMAINE LA MARÈLE Argelliers

After many years hoping to get back on the motorbike, it is in the vineyards that Frederic found his new passion. But it is not easy to start “from scratch” in this industry: “people tried to discourage me; never directly, always asking me: are you really sure?”. However thanks to a lot of work and dedication to his new passion, the Domaine la Marèle was born in 2000. At Argelliers the micro-climate is very specific, not ideal to produce quality wine. The difference of temperature between night and day is very high, so the maturation of the fruits is very slow. However, this allows the grapes to slowly come to maturity, better than in any other part of region, and the result is, when the wines are run to produce low yields, an exceptional finesse and elegance as well as purity.

Frederic Porro, once “The Hope of French Motocross” (same generation as Bayle, several time world champion), saw his career end at the age of eighteen after an accident which left him tetraplegic…

Fred‟s philosophy is not to make wine the way everyone else does and to concentrate on a small production of very high quality. At the Domaine nothing is done in a hurry. The harvest is done manually, when Frederic thinks his vines are ready. The grapes are then taken to the cellar in small baskets; there the berries are carefully selected, then the vinification takes place in barrel.

Before producing wine, Robert Creus was an aeronautic scientist. After having travelled a lot, especially in South America, he decided to come back to his home place: The Languedoc. The story of “Terre Inconnue” began in 1996 when he bought his first vineyard, a 2,000m2 plot of old Carignan located on the North-West of Montpellier. Shortly after, he obtained some old Grenache and some Tempranillo, a Spanish traditional grape variety. Robert has since added some more Grenache and an old variant of Syrah called „Serine‟, some of which is found in Hermitage and St Joseph…

Today Robert owns 4 hectares in total.. He runs the Domaine helped by his father. They both share a vision of wine that should be produced in total respect of the land and the ecosystems. Together they create low yield top quality wines. Each vine gives on average 4 to 6 grapes! Each cuvée is made from one grape variety only, which is quite uncommon in the region. But as Robert says: “My wines have a lot of personality because I have a lot of personality as well!” .

LANGUEDOC ROSEMARY Saint-Côme-et-Maruéjols

Rosemary is a wine who's birth is thanks to a long friendship and collaboration between Mark Ratcliffe and Robert Creus of Terre Inconnue (see previous page). Mark, who lives a "double life", as both managing director of a pharmaceutical consulting company in London, and one as passionate wine producer in the Languedoc, bought his vineyard in 2002. The domaine consists of only one vineyard planted with Merlot grapes and located in an isolated hill about 50km to the North-East of Montpellier. In total the vineyard covers an area of 0.7 hectares. The vineyard has gradually been converted to organic (although not certified) production. No wine was produced until 2008 to give both vines and the soil a chance to recover from the systemic pesticides, herbicides and fertilizers that had been used for years before the purchase. The first harvest took place in September 2008 where the grapes were hand-harvested, partially de-stemmed and the cuvaison lasted about four weeks using only natural yeasts and a minimum of sulphur. Once fermentation was complete the wine was placed in 100% old oak barrels from Terre Inconnue for 18 months before bottling in February. No further sulphur was used in the production or bottling of the wine. With no more than 900 bottles, Rosemary 2008 is Mark and Robert's first vintage but already very promising... Mark's philosophy is that: "Wine is made in the vineyard; everything else is ego..."

below the Larzac plateau. The aridity of the place and the stony clay and limestone soil are perfect to produce high quality grapes. The climate is ideal too, with just the right combination of sun, frost, wind and rain to bring the grapes to full maturity in peak condition.

Having worked with two of Europe‟s leading winemakers, Alain Brumont in Madiran and Comte Peraldi in Corsica, Alain bought his first few hectares in the late 1980s and produced his first vintage in 1992. His ambition was to make fine, elegant wines that compete with the best in the world. The Domaine‟s 20 hectares of vineyards are scattered around the wine producing villages of Montpeyroux, Jonquières and Lagamas in the Hérault. The vines grow in the foothills just below

Alain has always focused his production on the respect of the ecosystems. He farms both organically and biodynamically. His work and convictions have paid back because he has been flattered by plaudits from internationally respected wine professionals and journalists whose support has been incredibly encouraging, helping him to go even further in his project.

LANGUEDOC DOMAINE LA TERRASSE D’ELISE St. Jean De Fos

The Domaine of “La Terrasse d‟Elise” was started in 1998 by Xavier Braujou. Xavier is a young winemaker who was trained at the famous “Mas de Daumas Gassac” in Aniane as well as in Alsace. The 10 hectares Domaine is named after his father‟s aunt, Elise, and the top cuvée, from Syrah, is named in her honour. Xavier treats his vines and the wine as naturally as possible, with minimum treatments in the vineyards. No finings, no natural yeasts and very little sulphur are used in the winemaking process. Although most of Xavier‟s vineyard is within the Appellation, all his wines are labelled as “Vin de Pays” or “Vin de Table” in order to allow him to express the character of each grape variety and of each terroir. He is one of the last vignerons to graft his own vines in the vineyard, allowing him to continue a “sélection massale”, choosing the vine stocks from within his own domaine, without any clonal vines.

Xavier has always loved nature. Even as a child, he loved spending hours and hours alone in the nature fishing, hiking or cycling. He started working in the vineyards when he was 12, in the family's estate. He was already very skilled and enjoyed what looked like a boring punishment to his schools friends... When he was 15 Xavier, who preferred spending time in the vineyards than at school, enrolled a "lycée agricole" (vocational school specialised in agriculture). His parents wanted him to have good qualifications to be able to escape the family vineyard in a time of very deep wine crisis in the South of France. But when he was 18, Xavier listened to his own convictions, abandoned school and decided to work 100% of his time in the domaine. Xavier took over the domaine on his own in 1997. He built a cellar (the wine was previously sent to a cooperative) and decided to call the estate "Domaine Grand Lauze". He owns 22 hectares of vineyards that he runs biodynamically: he follows the moon cycles, uses organic fertilizers and plant infusions. Xavier also owns some donkeys that regularly weed the vineyards! The grapes from each different terroir are vinified separately and associated when Xavier thinks they are ready. His aim is to make wines that respect both his environment and his philosophy. The estate is following biodynamic principles in accordance with the lunar calendar. “Our aim is to allow the vines and terroir to fully express their intrinsic nature. Any intervention is of the gentlest form. Hence our organic approach. ROUSSILLON LE CASOT DES MAILLOLES Banyuls

Mailloles” vineyards are on very steep terrain, with small walled terraces and most work is manual. "Casot" is the local name for the vineyard stone shelters that dot the mountain and allowed workers in the past to rest and hide from the weather's hardships (heat, cold or rain). The estate's surface is about 4 hectares. The smallest in the Banyuls Appellation! On the Domaine, most of the work is done by Ghislaine and Alain. They do not use any chemicals. The yields are very low with an average annual production of 5,000 bottles.

Alain Castex was a vigneron in the Corbières region, where he spent 15 years working in different wineries. That's where he met Ghislaine Magnier. She was originally a city dweller (Paris region), until she moved to the south of France and settled in the countryside with her two children. The two of them fell in love with the region and started to look to buy some vineyards. Like most vineyards in Banyuls, the “Casot Des

Ghislaine and Alain run their estate fully organically: hand harvest, short pruning, rare destemming, no fining, and no filtration. They use biological means to fight pests and diseases like hormones trap for maybugs that parasite the vines. Even though Casot de Mailloles has vineyards strictly on the Banyuls Appellation zone, its wines are labelled as "Vin de Table" (table wine). But they made their way into the world of fine wines nonetheless. About 10 years after its foundation, this small Domaine has reached an envied position on the Banyuls wine market with its natural wines.

After a busy life working and living in a big city, Nikolaus and Carolin, both German, decided to start a new life in France. They bought a domaine located 30km north of Perpignan, right by the Mediterranean sea. Their project was clear: "A simple truth, but one so often overlooked in today´s busy world. For agriculture, this truth means that we must farm our land without damaging it; we must create a balance between what we take from the land and what we give to it; we must understand and respect the rules of the earth and the cosmos." The total area of the domaine is 12 hectares, of which 8 are cultivated at present. The vineyards of the terroir are on limestone soil and are all grouped in two plots of land in the midst of natural wild "garrigue"

vegetation. Where they would normally be exposed to undesirable influences such as sprayed chemicals and diseases, in the garrigue, the vineyards are surrounded by almond, fig and olive trees and the aromatic herbs so typical of the area - thyme and rosemary. Nikolaus and Carolin pick their grapes by hand and collect them in small baskets to avoid any damage. Then the harvest goes straight into the cellar for immediate processing. Carolin says: "We continue with this "new-old" approach in our cellar. We use modern wine-making equipment, but only to monitor and if necessary support the natural chemistry of the wine-making cycle. Wherever possible, we let nature take its course. The result is wine that reflects an essential harmony between humans and nature."

In the extreme south of France Bernard Saperas has been producing wines looked for by wine amateurs and experts for years and years. He runs alone the 10 hectares estate located on the steep terraces of Banyuls. There, mechanization is not possible. The architecture of walls made of stones and the drainage channels of water were introduced by the Templars in the 13th century. These terraces are a cultural and natural heritage.

Bernard produces every year on average 20,000 bottles of typical “catalan” wines, in this unique region made of a mix of both French and Spanish culture. His best wines are the “Banyuls”. These are dessert wines made from old vines cultivated in terraces on the slopes of the Catalan Pyrenees. The production process, known in France as “mutage”, is similar to that used to make Port. Alcohol is added to the must to halt fermentation while sugar levels are still high, preserving the natural sugar of the grape. The wines are then matured in oak barrels, or outside in glass bottles exposed to the sun, allowing the wine to maderise. The resulting wine bears a similarity to port but tends to be lower in alcohol (~16% vs. ~20%).

SPAIN OLIVIER RIVIERE Logroño

Olivier‟s dream was to start his own estate in Fitou (South West of France). That did not happen because he did not have enough money to invest. So in 2004 Olivier took a job with an estate in Rioja Alavesa to convert its vines into biodynamic culture. This was not a very good experience, but Olivier decided to stay in Rioja and started looking for vines tended organically, with the goal to buy grapes. He found a grower in the tiny village of Cárdenas and bought and vinified his grapes. He was able to rent a 1.20ha plot from another person, and had his first harvest in 2006.

Olivier Rivière, a native of Cognac, studied oenology in Montagne St-Emilion (Bordeaux region). He worked briefly with Elian Da Ros in Côtes-du-Marmandais, then at Domaine Leroy in Vosne-Romanée. His main interest there was to learn about biodynamic methods. He went on to Domaine de Chassorney in St-Romain to see how unsulfited wines are made, then spent two years managing the now defunct Domaine de la Combe in Pommard.

ITALY San Polino Montalcino, Tuscany

The history of San Polino goes back at least 1,000 years when the gravel road that runs down past the farmhouse constituted the main road that connected the area of the Monte Amiata to Siena. Since then the farmhouse has been rebuilt and many different generations of different families have considered San Polino their home. For much of its life San Polino and its original 40 hectares have supported an extended family of up to 15-20 people and has handed over half of its produce to the local landlords. When Luigi (or Gigi as everyone calls him) Fabbro and Katia Nussbaum bought the house with 5 hectares of land and 400 “olivastra” olive trees in 1992 they had no neighbours, and certainly no neighbouring vineyards. The last inhabitants had moved away at least 20 years ago and the house had been empty since then. All they could hear was sheep bells and the sounds of animal life in the surrounding forests. They immediately planted a small vineyard of Sangiovese. The grapes grew beautifully and easily and the wine, made under the house, was rustic, delicious and full-bodied . The olive oil, nutty and spicy, was another surprise and they have kept their secular olives as an integral part of the farm. They then planted 2.5 hectares of Sangiovese vineyard in 1999, using the traditional four spurred cordon methods. Their farm was certified organic in 1992 and they kept to these principles in viticulture, largely as a consequence of their belief that the environment must be safeguarded and that nature has to be respected.

ITALY Montesecondo Cerbaia Val di Pesa, Tuscany

The Montesecondo farm is located a mile north of the town of Cerbaia, 15 km south of Florence. Starting in September 2004 the farm has undergone a conversion following the biodynamic method of agriculture, excluding any kind of chemical product, fertilizer or pesticide. The land surface is 20 hectares of which 11.5 hectares are vineyards. The soil is calcareous clay and in some points sandy. The grape varieties are Sangiovese, Canaiolo, Colorino, Cabernet Sauvignon and Petit Verdot. The old vineyards are on average 30 years old and were planted with a density of 3300 plants/hectare and yield approximately 30 hl/hectare. The new vineyards were planted with a density of 6250 plants/hectare and yield approximately 40 hl/ha. After a life lived abroad, the Messena family decided to settle in Montesecondo, an old farm located in the original Chianti area that belonged to their ancestors. Firmly convinced of the uniqueness of the terroir and the importance of a viticulture that respects the cépages and the land, their aim was to create wines that reflect their beliefs.

ITALY Fonterenza Montalcino, Tuscany

The Fonterenza farmhouse is the centre of an agricultural estate run by two young sisters, Margherita and Francesca Padovani. The “fonte”, which gives its name to the farmhouse, has long been known to the inhabitants of S.Angelo in Colle as a source of good water. Fonterenza preserves the traces of its past. There have been numerous structural changes over the centuries. Extensions were built and existing rooms were re-structured as families grew in size or extra farm animals were purchased. Margherita and Francesca have restored the farmhouse with a view to preserving its original characteristics of rural simplicity. The Campi Di Fontereza estate began with the purchase of 40 hectares of land, mostly in the Montalcino area, and with the passion of the two sisters for this area and this terroir. Their choice to be organic and their search for quality is a way of working that gives them the possibility to choose their future...

AUSTRIA GUT OGGAU Burgenland

The market town Oggau, located at Lake Neusiedl in the Austrian province Burgenland, is a wine growing village famous for its quality. Its tradition dates back to the early Romans, who first produced red wine in Austria. The vineyard Oggau is now operated by Eduard Tscheppe and Stephanie Tscheppe-Eselböck who have added a modern touch to the vineyard. Thanks to the biodynamic winemaking process and the focus on quality, the Gut Oggau features a tight selection of authentic, typical regional wines. Each of these wines has its own personality and is closely related to the other wine characters. Stephanie says “We regard our wines as being distinctive personalities who form a unique wine family.” That is the reason why Stephanie and Edduard had the original and clever idea to have their cuvées named as fictional characters created by a designer.

CHILE CLOS OUVERT Maule The vineyards they bought are in a valley located a few meters from the Rio Loncomilla and Rio Maule. The total area of the estate is 150 ha of which only about one third is currently in production. Matthieu and Louis-Antoine enjoy the freedom of producing wine in the new world: they experiment lots of different grape varieties, new farming methods to reduce their impacts on the environment, new wine process methods to make top quality wines… They also work a lot in France, taking part in fairs and shows to promote their wines. The wines we can taste today reach amazing quality, but this is only a sample of the quality they can reach in the future. Definitely a Domaine to keep an eye on….
