Welcome… TO OUR VERY LATEST ISSUE OF SIMPLY SOUTH HAMS Not many shopping days until Christmas… Looking back on the spring and summer months, I am delighted to say that Marchand Petit have thoroughly enjoyed supporting events in the community from 3 Creeks endurance sailing and trail running, local agricultural shows, coastal regattas, golf charity days for Devon Air Ambulance and the Army Benevolent Fund. We’re proud to continue to be an active part of this thriving community in South Devon. As this glorious summer draws to a close, the next Facebook headlines are likely to be “Not many shopping days until Christmas”! Without wanting to wish anyone’s life away, it is worth noting that, as previously mentioned, the legal process of completing an agreed sale can now average in the region of three to four months. Therefore, anyone wishing to be in a new home for Christmas 2018 will have to be getting the process started fairly soon. Consequently, it is worth making your intentions known to us as soon as possible in order to be ready to sell to those movers who traditionally start looking for their next property on returning from their holidays and the children’s return to school in September. The market, despite persistent and considerable political and economic uncertainty, is remaining reasonably firm due to a combination of a lack of stock and, as yet, a lack of competition for cash due to relatively low interest rates. Statistics are now showing that people are not moving as frequently as in the past. For that reason, it is imperative that you instruct an agent that understands the local market and the value of good service. Acclaimed Devon chef Chris Sherville launches new cookery school and private dining space in Dartington

A

brand-new cookery school experience is set to launch in Dartington in September, with courses and private dining delivered by esteemed chef, Chris Sherville. The school is to be launched from his own home, having transformed a floor into a state-of-the-art professional kitchen and an atmospheric private dining room. The new facilities provide the perfect setting to learn new skills and top cookery tips from the expert, while gaining confidence in a relaxed, sociable environment. Courses will take place around a large, purpose-built chef ’s table in the kitchen, enabling intimate groups of six students to observe the theatre of the kitchen, while getting hands on themselves. At the heart of the kitchen is an impressive Smeg oven and the adjoining dining room has been stylishly fitted out with an array of smoking hats lined up on the wall. Aimed at groups of

friends, families, corporate groups and hen parties, this is a good way to get together and learn a new skill. The courses will start at £125.00 for a day’s cooking experience and include dinner with wine for the student and a partner or friend. Commenting on the new venture, Chris says: “Nurturing those you love and impressing friends with delicious home-cooked food is a real pleasure, so it’s been a lifelong dream of mine to share my passion and cooking experiences through my own cookery school. With food being at the heart of the home, I couldn’t think of a more apt venue than launching this venture from within my own home.” Chris is renowned for his unique style of flavoursome, creative cuisine influenced by his upbringing in Hong Kong and Malaysia, and further travels in India, Thailand, Greece, Spain and America. He trained at the



prestigious Leith’s Cookery School and has spent decades honing his craft. In keeping with the strong food ethics upheld in his career, Chris will showcase the very best produce from the South West including fish, meat and vegetables from farms local to Dartington wherever possible, working with produce from small family run businesses, day boat fishermen and a range of smallholders. Informative, fun and engaging, the courses vary from easy exotic recipes perfect for rushed weekdays, to leisurely showstoppers for weekends and special occasions. Throughout the day, Chris will answer every day cooking quandaries – what to feed the family for dinner, how to cook on a budget, how to rustle up a last-minute meal to wow guests when they swing by at a moment’s notice, and cooking with alternatives for those with allergies. Together with the tuition, budding cooks will be kept well fed and watered throughout the day with refreshments, lunch and drinks. Partners are then encouraged to join them for dinner and a taxi or designated driver is advised! Guests will be able to take away the recipes needed to re-create the dishes at home. The space and options on offer are perfect for groups of friends and will work particularly well for hen parties searching for a venue where they can combine a fun and luxurious cooking element with a massage and/or beauty treatment as there are three adjoining treatment rooms. Hens can learn to cook lobster, scallops, fillet of beef, make cocktails and take advantage of two on-site masseuse and a visiting beautician, followed a sumptuous dinner and transport home. The venue can accommodate additional numbers for hen parties, transport can be arranged and with enough notice, accommodation can be booked. The entire space can be hired for a special occasion dinner or lunch with bespoke menus and wine list; a Chef ’s Table in the heart of Dartington, where guests can relax in privacy, chat with the chefs as they enjoy a drink and canapés, before sitting down to eat in the private dining room.

The King of the Sea, Dover sole is such a treat, expensive but well worth it for its delicate taste. Do not try and cook too many at once or they will overcook. A lovely fish with a classic treatment.

Dover Sole with Lemon Butter Serves 2 Cook time 6-8 minutes 2 Dover soles, heads on or off and both sides skinned (see tip) 20–25g (¾–1oz) butter, softened Salt and freshly ground black pepper

For the lemon butter: 50g (2oz) butter, softened 1 tbsp chopped parsley Juice of 1 lemon, plus extra to serve

Prepare ahead:

The lemon butter can be mixed up to a week ahead and kept in the fridge.

1. Lay the fish on a board. Trim the fins using a sharp pair of scissors (see tip), then season well with salt and pepper and spread one side with half the softened butter. 2. To make the lemon butter, add the butter, parsley and lemon juice to a bowl. Season well with salt and pepper and mix together until combined.

3. Heat a large griddle or frying pan until hot. Fry one of the fish on the buttered side over a medium-high heat for about 1–2 minutes until sealed and lightly golden. Spread the remaining butter on top and sprinkle with salt and pepper, then carefully flip over using a fish slice. Fry for a further 2 minutes and transfer to a serving dish or baking tray and keep warm. Repeat for the second Dover sole. With a very large frying pan you will be able to cook both side by side. 4. Heat the lemon butter in the hot pan until just melted and then pour over both fish. Squeeze over more lemon to serve.

5. Either present the fish as they are or carefully cut the top two fillets from the bone and gently remove to serve.

Mary’s Classic Tips l

Ask your fishmonger to skin the soles for you. To do it yourself, lay the fish with the brown skin on top. Make a sharp incision across the skin just above the tail and start to ease the skin off with a knife. Once it is loose enough to hold, pull the skin off in one piece, using a tea towel to help you grip. Flip the fish over and remove the underbelly skin in the same way. Make sure you trim the fins for a more professional finish, otherwise they stick to the pan and become mixed in the lemon butter.

Local contractors appointed for conversion of former hotel into luxury living accommodation R

ed Earth Developments announces the appointment of Devon Contractors as the main contractor for the conversion of the former River Yealm Hotel, Newton Ferrers, South Hams into luxury accommodation. Red Earth gained planning permission in 2017 for this high design-led project of six spacious lateral apartments, plus an additional eight contemporary dwellings and a single striking house, all overlooking one of the loveliest rivers along the South Hams coastline. The site includes a woodland which, following years of neglect, will be managed with a replanting programme spanning over 20 years.
