CONFERENCE DINING MENU

Your conference admission includes continental breakfast and lunch on Friday and Saturday. Limited tickets are available to purchase Thursday and Friday supper. Menu items are subject to change. Have dietary restrictions? All ingredients will be listed for our friends who are gluten-free, vegan, or have food allergies.

Continental Breakfast

Hard boiled eggs, whole fruit, granola, dairy and soy yogurt, hot oatmeal with toppings, assorted juices, tea, cofee, and water

Break Food

Whole fruit from Co-op Partners and People’s Food Co-op, Blue Farm corn chips, salsa, corn relish, Organic Valley cheeses, Westby Co-op cheese curds, mini Clif bars, assorted beverages

Thursday Lunch

Almond crusted salmon florentine, roasted yukon potatoes, peas, carrots, and green beans, caesar salad Dessert: Cheesecake bars Vegan: Tofu with red curry coconut sauce, roasted yukon potatoes, peas, beans and carrots

Thursday Supper: Limited tickets available for $30 Galbi Jjim, white rice, kimchi, snowpea pods, carrots, broccoli, and peppers Vegan: Dubu Jorim (Korean braised tofu) with kimchi and rice

Friday Supper: Limited boxed suppers available for $21 Roasted pork shoulder or butt with thyme pan gravy and red wine reduction, honey glazed carrots, yukon mashed potatoes, beet salad with bleu cheese, red onion, pecans, and honey dijon dressing Vegan: Roasted beets, butternut squash, quinoa, cranberries, maple syrup, and mixed greens

Saturday Lunch

Swedish meatballs, egg noodles, green salad, roasted zucchini, carrots, onion, and cauliflower Dessert: Raspberry or strawberry crisp Vegan: Roasted cauliflower steak with butternut squash puree and wild rice
