The cooler season is the perfect time to explore the rolling hills of Chiang Rai Story and Photos by Dave Stamboulis Most folks don’t think of spending their holidays being cold nor driving tortuous mountain roads, or even worse, having to wake up at 5am during their only long yearly vacation, yet if one wants to get off the beaten track and see a truly gorgeous part of Thailand, certainly one that few foreigners ever get too, let alone a lot of locals, then a sojourn along the country’s northernmost border provides plenty of thrills. My partner and I purposefully avoided the crowds of Samui and Phuket, and instead spent our New Year meandering the back roads to the northeast of Chiang Rai, searching for the famed “talay mor” or sea of mist, that engulfs the hanging mountain valleys every year throughout the cool season.

We headed first to Phu Chi Fah, which means “mountain pointing to the sky,” an appropriate nickname given that the high point of the 1628 metre peak sticks out like a finger pointing upwards to the heavens. The road to get up to this divine spot is not kind, hitting 20% grades and higher in spots, potholed, rutted, and filled with extreme z switchbacks. It’s well worth the effort to get here though, as the mountain overlooks Laos, the Mekong River valleys, and views of endless jungle clad peaks jutting up in the distance. During the latter part of the cool season here, Thai sakura cherry blossom trees come into bloom, turning the mountaintop area into a field of pink. During the winter months, the temperatures plummet to around five degrees at

night, and it occasionally even frosts. The enterprising Hmong and other ethnic hill tribe groups that inhabit this area do a brisk business serving up hot tea and coffee and selling scarves, hats, gloves, and sweaters to those who have come unprepared. The big attraction here is the sunrise, made all the more magnificent by the entire valley below being filled with a dense sea of mist. The fog is caused by cold air draining down the mountain slopes, which reduces the air temperature in the valley to condensation point. Lugging our heavy tripods and camera equipment up with scores of other hardy travellers who had spent the night camping just below the peak, we were treated to shades of blue, pink, and then orange, as the dawn passed and the sun spread its first rays, lighting up the fog below and pointed peak above, and mak-

ing the pre-dawn start all the more worthwhile. From Phu Chi Fah, we drove eastwards, hugging the border, the terrain continuing to look far more like Laos than Thailand; precipitous, rural, little developed, home to mainly indigenous ethnic groups, and certainly nary a 7-11, Tesco, or even a Ha Dao 5 star grilled chicken cart to be found. The wild roads continued curved and steeped, following skyline ridges and then plunging into remote valleys, only to climb back up again ten minutes later. Chiang Rai Province turns to Phrae, which shortly thereafter becomes Nan Province, which remains one of Thailand’s best kept secrets today, a rugged mountain area with some of the country’s more preserved for-

ests, few population centers, and home to several magnificent national parks. The best of these outdoor attractions is the Doi Phu Kha National Park, named after the just shy of 2,000 metres Phu Kha peak, part of the Luang Prabang Range, highest in the surroundings. The park is mainly noted for its chompoo phu kha (Bretschneidera sinesis), an extremely rare and endangered 10-20 metres tall tree that displays bunches of florescent pink flowers when it blossoms in February and March. Due to habitat loss, the trees are only found in Thailand in this spot, along with a handful of areas in Taiwan and Vietnam. The park also offers some hiking trails, a three-day ascent of one of the country’s more difficult to get to peaks (Phu Wae), waterfalls, some great camping, and once again, a splendid sea of mist, seen from the Doi Phu Kha viewpoint, just off the winding skyline ridge road that snakes through the park. Despite the once again ridiculously early hour, we were not alone on Doi Phu Kha, Several other sunrise and nature worship-

pers had straggled up in the wee hours to visit this magical spot. It may be a long way from Bangkok, but these northern natural wonder locales are gaining in popularity. Carrying a tent up here, one doesn’t need to make reservations, nor is excessive planning required (other than having a map and knowing how to use it). This being Thailand, all the national parks have cafeterias serving decent food, and vendors do set up shop right off of most of the peaks. The talay mor is something that everyone ought to see, at least once. Lit up by the morning colours, it is indeed magical, and truly looks like a vast sea, with everything above it appearing to hover, suspended in the air. Enchanted, we set our compass southwest, and started the drive towards Huay Nam Daeng, another national park near Chiang Mai, also noted for its spectacular morning mists and views of the mighty Chiang Dao peak. For visitors, the TOT’s Unseen Thailand moniker applies best up north here, off the traditional beaten path.

The Bangkok Invaders crew made their name during their residency at the wildly successful Bed Supperclub. Since then, they’ve travelled the world and even collaborated with Snoop Dogg. Their next project, though, will be their new Invaders Academy, which opens this month. “A lot of people have been asking us to do something like this and we want to pass the craft to a lot of the young kids who are interested in DJing,” explains DJay Buddah, one of Bangkok In-vaders’ headliners. “We’ve done everything, so we want to give something back.

Here, you get to chill out more, have a drink and hang out with your friends.“

“Hip hop has been in Bangkok for maybe 20 years but a lot of these kids don’t know about any-thing before Eminem and Snoop Dogg. So we’ll definitely have to give them some homework and teach them a little bit about how hip hop DJing started so they can keep that essence.”

MANGO NIGHTS Sounds of the Future Could Bangkok be an international electronic music hub on the scale of say Berlin or Detroit? The people at Yaak Records, a seven-year-old label certainly think so, showcasing some of the city’s finest electronic acts in a compilation named The Future Sound of Bangkok. The album features an eclectic mix of some of the grandfathers and newcomers of the Krungthep electronic beat scene. Highlights among the newcomers include Cut the Crab and DCNXTR who have been seen playing around Bangkok over the past year while veterans such as Space360 and even former Futon auteur Gene Kasidit make an appearance. One of the highlights, however, is a tight electronic disco number called Stimulation Overdrive from Bangkok nu-disco mainstays Gramaphone Children. Making their mark Panic Station are one of the most exciting actS emerging in Bangkok’s live music scene Ask Bangkok’s rock punditry to name the best bands on the underground circuit and the names Sangsom Massacre and Degaruda often come up. But, of late, a third name has been added to that list and with the release of a new EP this month, there are new stars arriving in town. Four-piece band Panic Station releases Planet Terra at the Skytrain Jazz Club in Soi Rangnam on February 6. Formed in 2012, the band consists of Londoners Tommy Panic on lead vox and lead guitar and Ben Coombe on rhythm guitar, vocals, Finn Kimmo Hakala on drums and local lad Glen ‘Gook’ Vicious (bass). Talking with Mango Metro, Panic cites a long list of influences including the Libertines, Babyshambles, The Clash, Oasis, Neil Young, Pearl Jam, Crosby, Stills & Nash. To our ears, the EP is most redolent of late 80s indie darlings House of Love. And Panic Station seems more than a band to him, but almost an act of redemption. Alluding to a past characterised by personal issues – “I

quit life virtually and nearly literally” – he says a chance meeting with Coombes saw him pick up a guitar for the first time in 10 years. “Despite having never really sung a song in my life apart from a super fast blast of the Ramones I Believe In Miracles with defunct band MPVL, I was thrust into lead vocals and lead guitar duties,” he says. “I am by no means the finished article as are Panic Station, he and they are constantly improving and improvising.” “Ben saved my life and gave it meaning and shape. Thank you for allowing a man a second chance.”And Planet Terra is far from a throwaway title, but a concept that came to him while reflecting no less on the state of world affairs. “I was in Lisbon over the Christmas period thinking about the conquistadors and how the Portuguese through will, determination but also through dark arts and sleight of hand in some cases, forced their ideals and culture far and wide, for example to such places as Goa and

South America,” he says. “They named North America and the close environs ‘Terra Nova’. This is the new Mordern World but now we have extremist Muslims finding and making their own new world in some ways reminiscent of Christian holy wars. “The American and British Governments are equally as bad, just in slightly more subtle ways. So Planet Terra is a statement that our world is terrifying at the present time. We live in a cocoon of fear and and told what to enjoy, when and how. It truly sickens me. History repeats quite often, doesn’t it?” Explaining how the EP came about, Panic says: “All the songs, though written by Ben and me, are essentially a full band collaboration. “Kim and Glen help out structurally wise and have great suggestions to make the songs fit


MANGO NIGHTS right. Without them, they’d be half the songs they are now. We work mostly democratically, there is no ‘main man’ though of course when it comes to it, I make most of the decisions being the lead singer and lead guitarist and riff writer.” And Panic admits that playing live can be somewhat of a struggle in a place such as Bangkok. “I try and engage with the crowd as much as possible, walk into the crowd, croon to them, scream at them, sometimes I despair,” he says. “Bangkok is full of people whose tastes are very select and they tend to be hard crowds to please – covers seem to go down well everywhere, though. “We put on a very well thought-out, energetic show and we give everything, we try to please and I think we do, just some people should simply not go to bars… sadly, these people tend to be from my old neck of the woods, ‘Sarf Lundun’ drunk lads and lasses who get shirty and obnoxious.” And as befits someone who didn’t pick up a guitar for 10 years, Panic admits that at the start, playing live was somewhat of a personal struggle. “Especially at the beginning when we were starting out I used to get frozen by stage fright,” he says. “I’m naturally a shy and unsociable moody bastard but I put on a good act I like to think nowadays. Of course, it comes from practise and learning from watching some of the masters on the circuit. “With regards to equipment, we don’t fuck about. To be bold, the best bands and best guitarists don’t have to use a lot of effects and

pedals. If you have great tone, a unique style and touch and feel, a few pedals occasionally is enough.

and get a decent deal for bands whilst making it a good deal for the venues and the customers to see live music.

“Last year we got frustrated watching bands take 25 minutes setting up their fucking pedal boards, and then another 15 mins to pack it all up and after all that all you hear is delay… from 20 flipping pedals! Bands should be more respectful about the other bands and the crowd and hurry the fuck up!”

“Punters in Bangkok are basically mostly spoilt rotten. They get to see four bands in a bar playing original songs drinking cheap beer for no entrance fee! I don’t see that as fair for the bands at all, especially when they ask you to lug your amp, PA, mics etc halfway across town coz they are too keeneow to sort it themselves.

And if you wonder where Panic gets his opinionated nature from then ask no more: “Before I came to Thailand, I was an Executive with HM UK Government in Communications.

Sukhumvit Soi 31 is one of Bangkok’s most rapidly emerging dining strips and this latest arrival, Harvest, will only add to the area’s growing appeal. There’s a modern Mediterranean menu on offer, borrowing bits and pits from all over the place while still keeping the concept fairly straightforward. It’s not the kind of dish you encounter very regularly in Bangkok – it’s perhaps too hearty and more likely to appear in parts of the UK – but it’s also a welcome sign that the brother-and-sister team behind Harvest are happy to march to the beat of their open drum.

Other highlights include the chargrilled octopus with warm fennel and chorizo, where spicy chorizo adds some real zing to the more understated flavor of the octopus. Also, make sure you try the grilled Iberico pork secreto, which is one of the signature dishes. The neck cuts are served medium rare, seasoned with apple and paprika, delivering some lip-smacking complexity. The ricotta gnocchi with pheasant ragu is also delicious, tender pheasant coming apart on the plate and the homemade pasta making this dish the ideal high-end comfort food. The interior is also one of this place’s main selling points – suitably rustic, with plenty of light wood and exposed brick. Harvest does enough things right to stick around for the long haul.

Firehouse Bangkok’s appetite for gourmet burgers has expanded at a dizzying pace in recent years – and Firehouse on Sukhumvit Soi has a claim to be considered as one of the pioneers. Initially relying on expats with a craving for a serious burger, Firehouse has now seen its clientele change to include a greater proportion of locals, in line with the growing demand for beef among Asian diners. Firehouse has also balanced its menu with some other tastes of Americana favourites, like Tex-Mex tacos, quesadillas and club sandwiches. But the burgers remain the star of the show – the signature

item that keep loyal customers returning. Where Firehouse excels is in tweaking the burger formula just enough to keep things interested without getting carried away with novelty ingredients. For example, the Bacon Blue Burger comes with bacon, grilled red onions and mayo but is also topped with a zingy blue cheese sauce. It’s a well-judged substitution that adds a distinct, powerful bite but doesn’t take the focus off the meaty goodness of the patty. Another Firehouse highlight is the Champion Chili Burger, which comes smothered in Firehouse’s famous chilli. These

burgers are all literally a handful – you know it’s a proper burger when the chilli dribbles onto your fingers. There are some other interesting side dishes on the Firehouse menu – try the deep-fried pickles, for example – but the commitment to quality burgers has served them well. Even as the rest of the city looks likes catching up, Firehouse remains one of the originals and one of the best.

L’Atelier de Joël Robuchon

Bangkok’s dining scene has changed rapidly in recent years and the arrival of L’Atelier de Joël Robuchon may be another watershed moment. Superstar French chef Joël Robuchon has more Michelin stars to his name than any other chef and, as with all L’Atelier out-lets, this new arrival in Bangkok makes an immediate impression; a super-slick, ultra modern foyer unfolding to the main dining and open kitchen. Diners sit at a bar stretching the entire length of the venue. Only a narrow walkway, where the waiters and sommeliers work, separates them from the open kitchen. Decked out in L’Atelier’s trademark black-and-red colour scheme, it’s laid out like a stage, spotlights trained relentlessly on the food. Perhaps the best way to get a sense of Robuchon’s distinctive modern French cuisine is by set-tling in for the degustation menu (B5000 for five courses, B7500 for seven courses; wine pair-ings B3000 or B4000 depending).

Proceedings start with a chilled green kale veloute with spicy tomato jelly, setting the tone: mas-tery of flavours combined with the cutting-edge presentation. That’s followed by salmon tartar with imperial caviar, the salmon’s rich but also delicate flavour offset beautifully by saltiness. This dish is also about mouth feel, the buttery salmon complemented by the texture of the cavi-ar.

Seared scallops with kumquat condiments follow – velvety on the tongue at first with a sweet citrus aftertaste that never overshadows the all-important tang of seafood. But it’s the glazed egg, black truffle, golden rice with shaved Parmesan that delivers the first knockout. It’s not easy to pinpoint the exquisite effect of good truffles – richly aromatic with earthy notes, when used well, they can heighten other flavours in the same mouthful while also delivering a delicious punch of their own. And so it is here, with this deceptively elegant combination. Next, it’s hot chicken curcuma jelly over goose foie gras and seasonal vegetables. In many modern restaurants, the trend is to serve foie gras spiked with a citrus offset. This plate, though, seems like a nod to more traditional French combinations: rich, creamy and undeniably satisfy-ing. This brings us to the stand-out offering: roasted lobster, baby spinach and black pepper sauce. Given the mild flavour of lobster, it is a risk to serve it with something as powerful as black pep-per – if that is allowed to dominate, it’s a badly balanced dish and, frankly, a waste of some very good lobster. The key to the success of this dish, then, is the inclusion of lobster stock, as opposed to beef stock, in the sauce, creating a connection between the first taste of the lobster and the sauce that succeeds in heightening it. It’s exceptional.

Greg Lange Greg Lange is uniquely well-placed to appraise the bigger picture of Bangkok’s restaurant industry – he started Subway in Thailand and then built Sunrise Tacos into a successful franchise. Basically, he has sinks or swims according to his ability to identify trends and capitalise on them. “I’m always trying to get into an area where there’s a need,” Lange explains. “When we started Subway, there was nothing like it here. Mexican food and Sunrise Tacos followed by default – it was a niche that we could get into.” Since opening the first Sunrise Tacos store about eight years ago, Lange has watched the profile of his customers change dramatically. Initially, his clientele were almost exclusive expats, but now Thais have apparently discovered the joys of tacos washed down with a few Margaritas. “I don’t think the Thai market was ready – it’s like when Pizza Hut opened in the 1960s, the Thais weren’t ready for that,” he says. “But when they see foreigners eating something, they’ll try it. That was the same for Subway – it was primarily foreigners but the Thais eventually embraced it. They like to try to new things but it takes a little bit of time.” Lange took a circuitous route into the restaurant business – which, in August last year, culminated with the opening of Margarita Storm on Sukhumvit. It was through his business services and brokerage firm Sunbelt Asia that his interest in Subway franchises was first ignited. And he admits it has been a steep learning curve. “Traditionally everyone thinks they can do restaurants – they think ‘I can cook’,” he says. “But there’s a huge difference between cooking at home and being able to deliver something when 100 covers come in. Food is just one part of the overall equation. Sometimes chefs who open places don’t do so well because they think it’s only about the food.

“I can look back and think ‘we had that really wrong’ but you learn by your mistakes. We decided to make our tortilla chips fresh – and people appreciate that. There are things we’ve been able to improve on – we can now import American cheese and Wagyu beef from Australia.” He has also had to adapt to a changing environment – namely, the skyrocketing land prices along Sukhumvit.

“Sukhumvit is becoming a lot like New York City, the economics of it,” he says. “Everything is going to be high rises. The days of open-air gardens or one little shophouse are falling by the wayside. It’s not economically feasible. “The reality is that Bangkok is a major city, like Tokyo or Hong Kong, and when you look at those places, you don’t see many little shophouses and Bangkok is catching up, especially along Sukhumvit. It just goes back to economics.”

chest, persisting for over one minute. If you also experience an excruciating ache in your jaw or your shoulder, especially the left side, then you can be almost certain you are facing cardiac problems. Some patients may not experience chest tightening; they may instead suffer from exhaustion and if there is also intense perspiration then the artery is probably obstructed.” Dr Chaianan further explains that various factors contribute to acute myocardial infarction, such as diabetes, hypertension and hyperlipidemia. These ailments are known to lead to AMI and such patients are advised to undergo regular heart check-ups. Evidence also shows that smoking and severe snoring with obstructive sleep apnea that deprives patients of oxygen will also damage the arteries and raise the chances of a blood clot blockage. Aside from patients who have already suffered a heart attack, or are known to be in danger from the above risks, there are others whose arteries are persistently narrow but the blood supply is not cut off entirely. “This category of patient will have conditions present only when their hearts are going through intense labor such as an exertion strong enough to substantially increase heart workload, or who have influenza or high fever. An effective treatment for these patients is to control the risk factors and to use prescription medications. If the condition is more severe, angioplasty may be required. If too many arteries have narrowed, bypass surgery may be necessary.

Chaianan says.

“What we need to accept is that when cardiac muscles are no longer healthy and your heart is weakened, your fitness will never be the same. If you want your heart to recover and return at least part way to its healthier self, then early treatment is needed. Do not be afraid to see a doctor and do make sure you find the specialist.

“If patients are aware of their anomalies and come immediately for treatment, we can quickly open the artery and save more of the heart muscle. These patients will be free of the risk from cardiomegaly (enlarging of the heart), and chronic heart failure, allowing them to return to their previous lifestyle or even better if they have a long history of coronary artery disease.”
