THE STORY OF
MALLING LIVING Rikke Malling is the owner and designer behind MALLING LIVING, but she also has a background as restaurant owner and is educated sommelier. In 2005, she and her husband, Thorsten Schmidt, opened the gourmet restaurant, Malling & Schmidt, which they ran for a decade. In 2007, they expanded and opened their second restaurant, Nordisk Spisehus. Coming from a family of architects, Rikke Malling has always had a great fondness of interior design, and since the opening of the two restaurants, she has styled, designed and produced most of the interior of the restaurants to ensure that the overall expression was exactly like she wanted. It was this drive and passion that led to the foundation of MALLING LIVING in 2016. Today, MALLING LIVING is represented at retailers all over Europe.

ROOT SERIES ABOUT ROOT SERIES Our Root Cup is made in stoneware with interesting contrasting surfaces between the coarseness of the stoneware and the smootheness of the glazed interior. The organic shape fits perfectly in the palm of your hand, and the design, with the grooved bottom, provides the cup with a raw yet elegant look.

WITH CHICKPEAS PINE MAYONNAISE, FRESH HERBS, PICKED SHOOTS AND ROSEHIP

Beetroot ”Tatar” 600 g Beetroot backed at 200c for 1 hour
1.The roots need to be black on the outside and tender inside. 2.Cut the beets in half and peel the insides out. 3.Cut the baked beetroot into the pieces.
Chickpeas pine mayonnaise: 1 clove of garlic minced 15 g of fresh lemon juice 8 g of Dijon mustard 45 ml liquid from 1 can of chickpeas 14 hole chickpeas 120 ml vegetable oil 60 ml pine oil Seasalt and freshly ground black peber
1.Combine garlic, lemon juice, mustard, chickpea liquid, and chickpeas in a tall container just large enough to fit the head of an immersion blender. Blend at high speed until completely smooth. Alternatively, blend in the jar of a standard countertop blender. With the blender running, slowly drizzle in vegetable oil. A smooth, creamy emulsion should form.
Pine Oil 30 g pine 120g rapeseed oil
1. Set the thermo to 80c, and the timer to 6 minutes. Add the needles and oil and set to speed 7, stay with it. Once the needles have broken up, set to speed 10 and 1 minutes.
2. Using a rubber spatula, transfer to a bowl. Whisking constantly, slowly drizzle in vegetable oil. Season to taste with salt and pepper.
2. Drop back to speed 7 for the rest of the timer. Once done, place a large vac-pac bag in an ice bath, pour the oil into the bag, and agitate until cold. Seal the bag and refrigerate overnight, next day pass trough a muslin or J-cloth, gently squeeze the last out after about an hour. You only need a touch for each. Fresh herbs, picked shoots and rosehip: In this version we have used pickled shoots of unripe blackcurrant leaves, ramsons capers, spruce needles, March violets flowers and pickled rosehip leaves. You can use different other kinds of fresh and pickled herbs for this dish. Important is the combination between fresh herb and pickled herb which gives the dish a sour/sweet depth in combination with the richness of the mayonnaise. Plating: 1.Place the chickpeas pine mayonnaise in the middle of the plate. 2.Season the beetroot with salt, peber, and a hint of lemon juice. 3.Cover the chickpeas pine mayonnaise with beetroot. 4.Place the fresh herbs, picked shoots and rosehip on top as seen on the picture. 5.Seson the dish with 6-8 drops of pine olie and serve.
