On Feb. 14, 1912, Arizona became the 48th state of the U.S. The weather there is extremely dry with record temperatures at 106 degrees on average in the month of July. In January, on the other hand, it's not uncommon to see a cold front of 8 degrees. Temperatures that wild are as incredible as some of the food that is created there. People have feuded for decades in attempts of finding the original location of the chimichanga birthplace. Legends state it was at a restaurant in Arizona called "Macayo’s Mexican Kitchen." Supposedly a woman by the name of Monica Flin accidentally knocked a burrito into the deep fryer and said "Chimichanga" in an attempt of not cursing. Regardless of who came up with it, I sure do appreciate it!

Let it simmer on low for 10 minutes. Spoon into the tortillas and wrap tightly. Fasten with a wooden toothpick. And deep fry at 350 degrees, until golden brown. Serve with lettuce, cheese and tomatoes. ARIZONA RANCH STYLED BEANS 2 Pounds dry pinto beans, soaked overnight and rinsed well 1 teaspoon of salt 2 large onions, diced 3 cloves of garlic, diced 1/2 teaspoon of black pepper 1/2 teaspoon of cumin 1 can of taco sauce 1 can of roasted green chiles 1 large can of tomatoes, diced 1 teaspoon of butter or margarine Cilantro, chopped for serving In the bottom of a pot, sauté the garlic, salt, pepper, onions and the chiles. Cook on low to medium heat, until browned. Add the remaining ingredients
and fill with water. Cook for 2 hours, until soft and tender. Serve with fresh cilantro.

CHICKEN TORTILLA SOUP 1 Pound of boneless, skinless chicken breasts, chopped 1 large can of whole tomatoes, mashed 1 can enchilada sauce 10 Ounces 1 can of green chile peppers 4 cloves garlic, minced 2 1/2 Cups of chicken broth 1 can black beans, drained and rinsed 1 onion, chopped 1 teaspoon of cumin 1 teaspoon of chili powder 1 teaspoon of salt 1/2 teaspoon of black pepper 1 can of yellow corn 1 can of white shoe peg corn 1 teaspoon of dried cilantro or 1 Tablespoon of fresh cilantro Tortilla chips, for serving Mix the first 15 ingredients together in a crockpot and cook on low for 6 - 8 hours or 4
RIO RICO CHILI 2 Tablespoons of vegetable oil 3 cloves of garlic, chopped 3 onions, chopped 2 green bell peppers, chopped 3 Pounds of beef, ground 1 teaspoon of cumin 1 teaspoon of oregano 3 Tablespoons of chili powder 10 tomatoes, peeled and chopped 2 jalapeno peppers, chopped 1 can of beer 1 Cup of water In the bottom of a Dutch oven pot, sauté the onions bell peppers and seasonings. Once browned and the meat is fully cooked, pour in the beer. Add in the remaining ingredients and simmer for 2 hours. Stir often, while cooking and once done cover tightly with a heavy lid and let the chili rest for 1 hour, before eating.

The Leeds Arts Council is asking the community for help in meeting the costs for repairs to its building on
