The opening of MILL & BAKERY AT CENTRAL PIER this March is highly anticipated. After meeting Italian artisan baker and pastry artist, Alessandro Urilli who will head the bakery, I have no doubt this latest establishment will soon become the place everyone will be talking about and making a regular stop at.

4

A first for Melbourne and unlike any other artisan bakery, an onsite flour mill will allow residents and workers to enjoy the freshest array of traditional European artisan breads, mouth-watering pastries and delicious sandwiches and baguettes. Not only gastronomic, but also a visual experience, children and adults alike will be captivated looking through a large two metre window looking into the bakery where Alessandro and his team will be busy at work.

JUST WHAT DOCKLANDS KNEADED – MILL & BAKERY AT CENTRAL PIER INTRODUCING ALESSANDRO URILLI By Lisa Quittner Atlantic Group[v] Managing Director Hatem Saleh and his partner Tony Schiavello, warmly welcomes Italian baker and pastry artist, Alessandro Urilli to head their artisan bakery, Mill & Bakery at Central Pier, a first for Melbourne and Docklands opening this March. Alessandro Urilli is charming and unpretentious and despite a career to date spent at the upper echelon of his craft internationally; Alessandro is gracious and surprisingly modest when it comes to his remarkable talents. Starting his career as a stonemason in London, Alessandro always possessed a gift for artistry and sculpture. At the height of the recession in 1990 he was made redundant. He then approached hotels to offer his services in creating ice and butter sculptures for their dining rooms. It was at this point that Alessandro recognised his desire to combine his passion for food with his gift for art. He obtained a baking technology degree at the Thames Valley University, London but this was merely a formality in what has become an illustrious and passion filled career. “My degree helped to fill a CV for prospective employers, but only hard earned, hands on experience allows you to really succeed in this field. You can’t do a job like this superficially, your passion or lack of passion can easily be seen in your work,” says Alessandro.

Among his achievements, Alessandro constructed a 200 kilo chocolate Easter bunny while working at Harrods in 1994. In 1995 he became the Executive Cake Artist at Mason Blanc French Patisserie et Boloungerie, later accepting a position as Pastry Artist at The Dorchester Hotel in London in 1998. Some years later he returned to his native Italy and opened his own business, Pasticceria Urilli, in Tivoli and supplied artisan cakes and pastries to high profile clients in Tivoli and Rome.

4

Alessandro has now literally made his biggest move yet, by accepting an invitation from Hatem Saleh to relocate his family to Docklands and head the bakery. “I didn’t know a lot about the company initially but I always follow my instincts and right from the beginning I trusted Hatem. As our discussions progressed about taking up this opportunity, I knew this was going to be the right fit for us both,” said Alessandro. What sets Mill & Bakery at Central Pier apart from other artisan bakeries - and is a first for Melbourne – is that the flour used in the breads, pastries and packaged goods will be ground in their onsite flour mill. And if you think you have to see it to believe it then step right up to the 2 metre square window and watch the master at work making dough turn to gold and creating his bespoke menu items from scratch right before your eyes. The Mill & Bakery at Central Pier will open at 7am daily offering an assortment of artisan bread, freshly made patisseries, including butter and chocolate croissants, oven baked and fresh fruit tarts, muffins, bombollini and Alessandro’s special girelli, an Italian escargot, perfect for a sweet start to the day on your way through to the office. A delicious menu of Mediterranean, Greek and Australian inspired sandwiches and baguettes prepared on the finest traditional European artisan breads will ensure lunch has never tasted so fresh. Scones, cookies, slices and sweet loaves will curb that 3pm sugar craving delightfully. In addition to the ready to enjoy bakery goods, Mill & Bakery at Central Pier will sell a range of packaged products including freshly ground flour for customers to use in their own homes that includes one of Alessandro’s recipes on the back of the pack. Plus coming soon will be fun and interactive cooking classes designed

to teach adults and children alike the art of bread and cake making. In a career that has taken him across Europe, Alessandro has created desserts and large scale novelty cakes for the likes of George Michael, Sean Connery, Jon Bon Jovi, Sony, Peugeot and Nikon. Now, adding an extra dimension to special occasions held at Central Pier, brides looking for a wedding cake that will WOW their guests can add their name to the list of Alessandro’s VIP clients with wedding and special occasion cakes personally designed and made to order. Alessandro is proud of his ability to understand the needs of his clients and has consistently provided the extra vision to ensure spectacularly creative results (and he’s never had an unhappy bride). Mill & Bakery at Central Pier will introduce a variety of seasonal goodies and gifts for Easter, Christmas and special occasions, including homemade Pannetone beautifully packaged and presented for your convenience and enjoyment. The range will continue to expand with jams, preserves, nougats and other gourmet delicacies. True to style and reputation across their award winning restaurants, bars, reception venues and catering arm, attention to detail is synonymous with Atlantic Group [v]. Their latest offering in Mill & Bakery at Central Pier will certainly not be an exception. Atlantic Group [v]’s Managing Director, Hatem Saleh, has not only been instrumental in bringing the vision for this important retail facility to life but in also creating an authentic rustic setting for the bakery with a quirk of antiquity to complement Alessandro’s culinary creativity. The interior ambiance is set in hues of purple and mauve with delicate touches of old world charm. Mr Saleh has personally sought out and handpicked furnishings and specialty items to create an authentic

experience for the bakery’s clientele. From vintage rolling pins and bakery utensils, to crystal sugar bowls with silver edging, vintage tiered cake stands, an original serving trolley and cups and saucers reminiscent of what you might find lurking amongst grandma’s fine china - near enough is never good enough - true to Atlantic Group [v]’s inimitable style and key to their continued success. “Mill & Bakery at Central Pier is an essential and exciting addition to the Docklands and will be more than just a convenience, it will be an experience,” Mr Saleh added. The Mill & Bakery at Central Pier will create more excitement and anticipation for your tastebuds than ever experienced in Melbourne before and a one stop bakery serving the people of Docklands - a new establishment they can be proud to call their own. Come and sample some of the mill and bakeries products at the Melbourne Food and Wine Festival Urban Coffee Farm and Brew Bar 1st March – 17th March 2013. Mill & Bakery at Central Pier will be open from 7am – 4pm Monday to Sunday. Eat in or Take Away Shed 9 Central Pier – Docklands Ph: 8623 9693

3008DOCKLANDS

A letter from Docklands Chamber of Commerce President Stephen Clement DCC President Docklands Chamber of Commerce is off to a great start in 2013 with two popular and successful networking events. At the first one in January, aboard the luxurious Quest III super yacht, members were given an overview of Chamber projects and upcoming events in Docklands. As an added bonus, Cirque du Soleil representative, Robert Naumann, outlined how local businesses could take advantage of the show’s residence at NewQuay & revealed how businesses in other places the show had visited had worked closely with the world-renowned circus for mutual advantage. The atmosphere was conducive to networking and many Docklanders enjoyed the hospitality under a glorious Docklands summer sky. On February 19 chamber members came together again – to learn, as well as network at Waterfront Venues in NewQuay. Attendees heard from a panel of experts on the theme “Digital Opportunities for Businesses” and were given tips, tricks and techniques to get more out of the online world for their businesses. Tourism Victoria’s e-marketing manager Michael Hauser gave insights into the success of the Visit Victoria online campaign and pointed out several opportunities for local businesses to get onboard. City of Melbourne representatives also outlined opportunities for digital marketing and business support provided by the City.

Giving the local perspective was Danielle Phyland of Destination Docklands who spoke about the various ways that her organisation markets Docklands online. Based on the audience feedback, as Chamber President, I made a

commitment to bring an in-depth workshop on this topic to businesses in Docklands, in the near future. Chamber Executive member Matt McInnes invited members to join the Chamber LinkedIn group - a members-only forum, where local business people could network & discuss the issues of the day in a private environment. At this event, I also initiated the idea of “Brand Docklands” – a cohesive and distinct identity for our unique precinct and this is something that the Chamber will build on in the coming months. Attendees took advantage of the great hospitality and continued networking around the bar overlooking Victoria Harbour. The next chamber event on Tuesday, 19 March, promises much excitement, as outlined by Melissa Head of the Wonderland Speigeltent at Harbour Town. Ms Head plans to showcase highlights of her upcoming season of entertainment, whilst providing hospitality and a convivial venue for DCC networking!
