Rasgulla Recipe Rasgulla is one of the most loved pan-Indian sweets. Though Wikipedia credits Odisha as its place of origin, it is familiarly known as the Bengali sweet. : 1 litre(creamy) : 3 tablespoons (Fresh) : 2 cups : 5 cups : ½ teaspoon : 1 teaspoon


1. Boil the milk in a pan with medium flame. Once it starts foaming, simmer the flame. 2. Now add the fresh lemon juice and gradually stir the mixture till the milk curdles. To maintain the softness, you can add one or two ice cubes at this stage and mix well. 3. Now, you could see the whey (serum or the watery part of the milk) separated from the curd after the flame is turned off. 4. Meanwhile, take a pressure cooker and pour 5 cups of water. Now, add sugar to the water and boil it till the sugar completely dissolves. Also, add the cardamom powder in the mixture. 5. Use a plain fabric (muslin) cloth and a metal strainer to obtain the soft panneer separately. 6. Now comes the vital part of the recipe, wrap the cloth with the panneer and immerse it in cold water to extract the water out of panneer and get rid of the sourness of lemon. 7. Add the flour to make firm smooth balls in circular or whatever shape you wish your Rasgullas to be. Make sure the balls don’t have any crack. 8. Remember the point 4, where you have a boiled water mixture. Drop the balls gently into this mixture, close the lid of the pressure cooker and allow it to pressure cook for 10 minutes under low flame or till you hear the first whistle. 9. Open the lid of the pressure cooker and the Rasgullas should be floating on the top. Now, transfer the Rasgullas into a bowl and serve your family and friends the mouthwateringly delicious Rasgullas.
