AN APPEALING DESTINATION!

Our Town Centre has recently witnessed the emergence of a trendy and vibrant destination known as Peach Place, which opens up into a courtyard from Rose Street in the centre of Town. This revitalised area has quickly become a hub for residents and visitors alike, offering a unique blend of history, culture, shopping, dining, and entertainment. Firstly, at the start of Rose Street (No 6) we have Chef Angelo’s Ruchetta Italian Trattoria, for fabulous family dining, which has been has been at the heart of Wokingham for many many years, serving authentic Itailan food; in fact his fresh ingredients, home made pasta and his recipe for Spicy King Prawns is legendry. Further on we have the lively Grasshopper Bar, for live music and irresistable cocktails served up by Jacob and his team. Over the road, is Anthony Blay menswear, owned by Jayne, who has been offering high end menswear for retail and hire for many years, and the shop has recently had a full reburbishment further enhancing the beautification of the area.

The Indian Spice Trail - An Ancient Trade Network

The Indian Spice Trail refers to the historical trade routes and networks that facilitated the exchange of spices and other valuable commodities between the Indian subcontinent and the rest of the world. This ancient trade network played a crucial role in shaping the global economy and cultural interactions, as well as contributing to the exploration and colonisation of various regions.

India has been renowned for its rich and diverse array of spices for centuries. These aromatic and flavorful substances, such as pepper, cinnamon, cardamom, cloves, and nutmeg, were highly sought after in different parts of the world for their medicinal properties, as food flavorings, and for their ability to preserve and enhance the taste of perishable goods. The demand for these spices drove the establishment of trade routes and led to the creation of the Indian Spice Trail.

Its origins can be traced back to around 3000 BCE when Indian traders began exporting spices to the Middle East and Mesopotamia. Over time, the trade routes expanded and became more elaborate, connecting India with various regions including

the Mediterranean, East Asia, Africa, and Europe. One of the most significant trade routes of the Indian Spice Trail was the maritime route that linked the ports of the Indian subcontinent with the Persian Gulf, the Red Sea, and the Mediterranean. Indian spices were carried by Arab, Persian, and Chinese traders, who sailed across the Arabian Sea and the Indian Ocean, navigating through various ports and coastal cities along the way. Some of the prominent ports involved in this trade network were Calicut (Kozhikode), Cochin (Kochi), Quilon (Kollam), and Goa.

The land-based routes of the Indian Spice Trail were equally important. These routes primarily connected India with Central Asia, Persia, and Europe. One of the notable land routes was the Silk Road, which connected the Indian subcontinent with China, Central Asia, and the Mediterranean. Traders would transport spices through caravans across the rugged terrains of the Himalayas, deserts, and mountains, passing through significant trading hubs like Samarkand and Kashgar. The Indian Spice Trail had a profound impact on the economies and societies of the regions it touched. It fueled the growth of Indian coastal cities, which prospered as major trading centers and cultural melting pots. The influx of foreign merchants and explorers contributed to the exchange of knowledge, ideas, and technologies. It also played a pivotal role in shaping the history of exploration and colonisation. European powers, such as the Portuguese, Dutch, French, and British, sought to establish their dominance in the spice trade, leading to the age of exploration and eventually colonisation of parts of India and Southeast Asia.

The Indian Spice Trail also had significant cultural implications. The introduction of Indian spices and flavors into various cuisines around the world transformed culinary practices and led to the development of new dishes and flavors.

Have Fun This Halloween

Halloween, as we know it today, is a holiday celebrated annually on the night of October 31st. It has evolved over the centuries, drawing from various cultural and historical influences to become the festive and spooky occasion it is today. The history of Halloween can be traced back to ancient Celtic, Roman, and Christian traditions, and its transformation into a modern celebration is a fascinating journey.

The origins of Halloween can be traced back to the Celtic festival of Samhain, which was celebrated by the Celts in what is now Ireland, the United Kingdom, and northern France. Samhain marked the end of the harvest season and the beginning of winter, a time of darkness and uncertainty. It was believed that on the night of October 31st, the boundary between the living and the dead was blurred, and spirits could return to Earth.

To ward off these spirits, the Celts lit bonfires and wore costumes made from animal heads and skins. They also left food offerings to appease the spirits. This practice of dressing up and leaving out offerings would later become a hallmark of Halloween.

When the Romans conquered Celtic lands in the first century AD, they merged their own festivals with Samhain. One such Roman festival was Feralia, which honored the dead in late October. Another was Pomona, a celebration of the Roman goddess of fruit and trees. From Pomona, we get the tradition of bobbing for apples, a popular Halloween game.

Christianity also played a significant role in the evolution of Halloween. In the 7th century AD, Pope Boniface IV declared November 1st as All Saints’ Day, a day to honor saints and martyrs. This holiday was later moved to November 2nd and became known as All Souls’ Day, a day to

During the Middle Ages, Halloween traditions continued to evolve. The practice of “souling” emerged, where poor people would go door to door, offering prayers for the deceased in exchange for food. This eventually evolved into the modern practice of trick-ortreating, where children dress up in costumes and go door to door for candy.

In the 19th century, Halloween made its way to North America through Irish and Scottish immigrants, who brought their traditions with them. In the United States, Halloween began to take on a more communal and neighborly character. By the late 1800s, it had become a holiday known for parties, games, and trickor-treating.

The 20th century saw Halloween becoming increasingly commercialised, with the sale of costumes, decorations, and candy becoming big business. Halloween parades and community events became common, and horror movies became a staple of the holiday season.

Today, Halloween is celebrated in many countries around the world, although the customs and traditions may vary. It is a time for dressing up in costumes, carving pumpkins into jack-o’-lanterns, and decorating homes with spooky decorations.

While Halloween has its roots in ancient pagan and Christian traditions, it has evolved into a modern celebration that combines elements of folklore, superstition, and pop culture. It continues to be a time for people of all ages to have fun, embrace their creativity, and, of course, enjoy a few treats along the way. ‘Village Life in Finchampstead’ in our previous (September) issue was so popular that we had another wander around the outskirts of our wonderful Town recently, starting at Easthampstead Park and discovering just how much there is to experience in and around our stunning Countryside, only a few minutes drive out of Town.

In the last few years so much has impacted our attitudes to care, and especially who delivers it. Firstly, we were ordered to ‘stay home’ during the pandemic and to socialise only with family, and latterly it’s been the increasing cost of living which has had us all reconsidering how we spend.

All of which has meant that many people have opted to delay decisions regarding caring for elderly relations, believing that they can save money by continuing to provide care themselves. But is putting off decisions about care the right thing to do? And what is the impact?

Eighteen months ago, we were still recovering from the pandemic, people had been furloughed, or had switched to homeworking, and had assumed the roles as carers, believing they could still manage their care commitments alongside flexible working. However, with companies demanding a return to the office, and for people to spend more time travelling the balance is tipping, and fitting in care duties around occasional home-working just isn’t working.

Unfortunately, care isn’t something you can easily fit in between zoom calls, care needs to be planned

and reliable with a set schedule. Often a daily routine is time critical, for example, medicines need to be taken at specific times. Similarly, mealtimes, both preparing food and eating, which can’t be rushed.

By the time most people realise things aren’t working the damage to relationships has already been done.

In any stressful environment relationships become strained. It’s inevitable that frustrations emerge when you are doing your best to fit care in around your own commitments, particularly when your

In almost all cases families do not have the required skills for care and are simply mudding through. HOW ELSE CAN I...?

Life throws many challenges at us on a daily basis. On one hand, there are the actual roadblocks which stop us in our tracks and cause us to divert our route. We may get a bit annoyed and flustered at the prospect of being late for something, but we usually find a way around without too much bother. On the other hand, there are the more metaphorical roadblocks in our family lives, social circles and work situations, where the solution may seem a longer, more complicated game.

In these instances, we often self-sabotage and just decide we can’t cope; it’s all too much. I have lived with total sight loss since birth and have run my own business since 2012, so I am no stranger to roadblocks, whether literally stuck in the middle of the road with my guide dog in the rain, or working on a creative solution to a business challenge. The good news is that, whatever the obstacle we are facing, there is a trusty technique (taught to me by my mentors at Heart Centred Business), which reprogrammes our brains to view the bigger challenges in the same way as those pesky

roadworks. The trick is to teach our brains to stop saying, “I can’t” and start saying, “how else can I”. This is known as the hula-hoop or Circle of Excellence and comes from neurolinguistic programming (NLP, a therapeutic way of teaching positive beliefs and behaviours, developed in the 1970s by Richard Bandler and John Grinder).

Here’s how you use a pretend hula-hoop to solve problems:

1. Stand in a space with an imaginary circle or hula-hoop in front of you and enough space around you to walk around the circle. For added fun, visualise the size, colour and texture of your personal hula-hoop. Mine is a large, bright yellow inflatable ring, like kids play with in the swimming pool. What’s yours like?

2. Focus your attention on a problem which you encounter frequently. Feel the emotions: irritation, anxiety, overwhelm etc.

3. Step into the circle and ask yourself, “how else can I get there”. Don’t try to come up with solutions, just ask the question.

4. Step backwards out of the circle.

5. Repeat this twice more, not trying to solve the problem, just programming your brain to look for solutions.

6. Take a step to one side, so you are standing at a different point around the circle. Repeat 3 times for a different problem: feel the emotion, step in, “how else can I get there”, step back out.

7. Repeat for different problems around different points of the circle as desired. Start with three most pressing problems at a time.

This may sound weird and whacky, but it actually works. My husband and I wanted to go to the BBC proms in London on the day of a train strike. My husband simply told me that we couldn’t go. However, I was determined to go, so started asking my colleagues about other routes into London. It turns out that the Royal Albert Hall is quite an easy drive from Bracknell, so that’s what we did and the prom was well worth the journey.

The point is that I had programmed my brain not to give up, so I didn’t and, yes, it’s OK to ask for help too!

Autumn Harvest

4 tbsp tomato paste, 6 cups kale, de-veined & torn into bite size pieces, 1 tbsp balsamic vinegar

Method:

Roast the vegetables & garlic

In the meantime, saute onion& garlic in a large pot

Add lentils, spices, tomatoes & soup stock & simmer

Puree half of the roasted vegetables with balsamic & remaining ingredients

Combine the puree & remaining roasted veggies into the pot

Stir in the kale, simmer for 1 minute and serve!

Pumpkin Bread

This amazing pumpkin bread is naturally sweetened with honey or maple syrup, and made with whole wheat flour, it’s so moist and fluffy!

Ingredients:

⅓ cup melted coconut oil or olive oil

½ cup honey or maple syrup

2 eggs

1 cup pumpkin purée

¼ cup milk of choice or water

1 ½ teaspoons pumpkin spice blend (or ½ teaspoon cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, and ¼ teaspoon allspice or cloves)

1 teaspoon baking soda (NOT baking powder)

1 teaspoon vanilla extract

½ teaspoon salt

1 ¾ cups white whole wheat flour or regular whole wheat flour

To give it your own twist, totally optional: ½ cup mix-ins like chopped walnuts or pecans, chocolate chips, raisins, chopped dried fruit. Pinch of ground cinnamon, for sprinkling on top

Method:

Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius) and grease a 9×5-inch loaf pan. In a large bowl, beat the oil and honey together together with a whisk. Add the eggs and whisk until blended.

Add the pumpkin purée, milk, pumpkin spice, baking soda, vanilla and salt, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined. Some lumps are ok! If you’re adding any additional mix-ins, gently fold them in now. Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon. If you’d like a pretty swirled effect, run the tip of a knife across the batter in a zig-zag pattern.

Bake for 1 hour, or until a toothpick inserted into the center comes out clean. Let the bread cool in the loaf pan for 10 minutes, then carefully transfer the bread to a cooling rack to cool for 20 minutes before slicing.

As Bond navigated through Puglia’s labyrinthine alleys and along its dramatic coastline, the region’s rich history and architectural wonders added depth to the film’s narrative. Puglia’s enchanting fusion of natural beauty and cultural heritage seamlessly intertwined with the world of espionage, leaving an indelible mark on the cinematic portrayal of James Bond’s thrilling adventures. Perhaps we should do as Italians do in Puglia, which is affectionately known as Italy’s “heel,”as it has become a cherished holiday haven for Italians. The whimsical trulli of Alberobello and Baroque beauty of Lecce attract culture enthusiasts, while the robust wine country and olive groves captivate epicureans.

Puglia’s charming villages, like Polignano a Mare, offer romantic escapes, and its vibrant festivals showcase local traditions. Italians flock here for relaxed vacations, savoring regional cuisine and basking in the Mediterranean ambiance. Giant King Prawns

The food in Puglia is some of the most diverse in the country, and for this reason it has become one of the biggest food destinations in Italy. The ideal weather conditions make Puglia one of the country’s biggest producers of fruits and vegetables, olive oil, wheat and seafood, in particular King Prawns.

A popular dish on the menu at Ruchetta is Chef Angelo’s Giant King Prawns - butterflied and pan-fried with chilli, garlic and butter. Here is how to make them at home.

Ingredients:

1 head garlic, cloves peeled

3 large sweet chillies, seeds removed

1 birdseye chilli, seeds removed

100 ml extra virgin olive oil

Salt and freshly ground black pepper

16 king green prawns

1 cup flat leaf parsley, finely chopped

Zest (finely grated) and juice of 1 lemon

Method:

In a small roasting dish place garlic, chillies and olive oil and cook until the garlic is very tender and the chillies have blackened, approx. 15 – 20 minutes. Remove from oven, cool completely and then blitz in a food processor.

To butterfly the prawns, use a serrated knife to slice through the back of the prawns from the head to tail. Remove the vein and open the prawns to lay flat.

Preheat the grillpan, then place the garlic, chilli and oil mixture into a bowl and add parsley and a pinch of salt and pepper. Toss to combine. Brush prawns with chilli mix and cook flesh-side down for 1-2 minutes until red and lightly charred. Turn and continue cooking until cooked through. Remove from heat and sprinkle with lemon zest. Squeeze over lemon juice and serve immediately. Chef Angelo’s tip - They go really well with parsley sauce!

Toffee Apple Crumble Cheesecake

Imagine a creamy cheesecake, topped with toffee apples and a sprinkle of crisp apple crumble –this is the ultimate autumnal apple recipe. Creamy mascarpone, oozy toffee sauce, caramelised apple slices and brown sugar crumble come together in a decadent dessert that’s perfect for a family feast or dinner with friends.

Ingredients:

For the Filling: 4 leaves gelatine, 250 ml double cream, 360 g cream cheese, 150 g mascarpone, 100g icing sugar, 1 tsp vanilla bean paste

For the Crumble: 25 g flour, 25 g brown sugar, 15 g butter

For the Toffee Sauce: 100 g caster sugar, 100 ml double cream

For the

Caramelised Apples: 25 g butter, 1 tbsp sugar, 2 bramley apples, cored and sliced

For the Base:

200 g ginger snaps, 100 g butter

Method:

Line the base of a 20cm springform cake tin with greaseproof paper. Blitz the ginger snaps in a food processor until they are fine crumbs. Melt the butter and add to the crumbs, stirring well until fully coated. Transfer to the cake tin and press down with the back of a spoon until you have an even layer. Chill in the fridge.

Soak the gelatine leaves for 2-3 minutes in cold water until soft. Heat the cream to boiling point, then remove from the heat. Squeeze the excess water from the gelatine, then add to the cream, stirring until they dissolve. Set aside to cool.

Put cream cheese, mascarpone, icing sugar and vanilla bean paste into a food processor and add the cooled cream. Process until smooth. Transfer the mixture to the tin and smooth until level. Chill in the fridge for a minimum of 4 hours, preferably overnight. Meanwhile, preheat the oven to 200°C/fan 180°C/gas mark 6. Mix together the flour and sugar in a bowl. Add the butter and rub into the flour and sugar until it resembles coarse breadcrumbs. Spread across a lined baking sheet and bake in the oven for 12-15 minutes, or until golden brown. Leave to cool.

Put the sugar in a heavy bottomed saucepan with 50ml water. Heat over a medium heat and bring to the boil, stirring until the sugar has dissolved. Leave to simmer, without stirring, until the sugar reaches a rich golden caramel colour. Add the cream and reduce the heat. Continue to cook for a further 2-3 minutes. Remove from the heat and set aside to cool completely.

Put butter and sugar in a pan and heat over a low to medium heat until foamy. Add apples slices and cook for 6-8 minutes or until soft and sticky, but still holding their shape. Set aside until required.

When set, remove from tin and base and sit on a cake stand or serving plate. Pour the caramel over so it covers the top and starts to drizzle down the sides. Decorate with the apple slices, then sprinkle over the crumble. Serve.

Not too sweet, packed with fresh apple chunks and easy for the kids to make.

Ingredients:

(approx. 6 muffins)

125g self-raising flour

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

50g brown caster sugar

65g milk (any type)

1 medium/large egg

2 tablespoons sunflower oil

1 teaspoon caramel flavouring

100g apple, diced

Method:

l Heat the oven to 180C/160C fan/gas 4

l Sieve the self-raising flour, baking powder and cinnamon into a large bowl and add caster sugar

l In a separate bowl, mix the egg, milk, sunflower oil and caramel flavouring

l Pour the wet ingredients into the dry ingredients and mix thoroughly, do not over mix

l Stir in the chopped apples

l Divide the mixture between 6 muffin cases

l Bake for 20-25 mins, until baked through and golden brown

l Transfer to a wire rack and leave to cool

l Keep up to three days in an airtight container

Topping for 6 muffins (optional)

50g icing sugar, 1/2 teaspoon caramel flavouring, 1/2-1 teaspoon(s) water, Sprinkles or fudge pieces etc.

l Sieve the icing sugar into a small bowl

l Add the caramel flavouring and 1/2 teaspoon of water and mix

l Add a few more drops of water until you have a thick mix, not too runny

l Spoon the icing on top of the cooled muffins and add sprinkles/toppings of your choice
