Our Environment & Sustainability course helps shape the hospitality of tomorrow by teaching businesses how to reduce their environmental impact and regenerate the natural world and food system. You’ll leave equipped to critically evaluate and reduce the carbon footprint of your business, and fuelled with inspiration from innovators in the field to make a meaningful difference.

This course is suitable for professionals at every level, and the methods and practices taught have been applied in all areas of hospitality, including various sizes and styles of restaurants, bars, cafes, hotels, canteens, and more.

To date, over 400 individuals from more than 70 countries have dedicated their time, financial resources, and efforts to attend this course, highlighting its global appeal and the hospitality industry's desire to action on sustainability.

COURSE OVERVIEW MAD Academy is unique in thoughtfully addressing topics of environmental sustainability with an understanding of the learning tendencies and working styles of hospitality professionals. Providing new

understanding of ingredients and craft, participants tackle challenging projects and exercises that provide 
 new perspectives on their role and the potential of the hospitality industry.

The week begins by defining relevant core topics and building on a foundation of knowledg Sustainability & responsibility – what does It all mean Climate and the Food system in the 21st century - what happened and what can we (hospitality) do Implementing circularity, best practices to reduce waste in food and beverage businesse Demystifying carbon measurement and reporting

Before take participants rehearse changes and gain tools to Calculate, compare, and improve the carbon footprint of menu items and beverage Involve and collaborate on change with stakeholders including staff, suppliers and service provider Confidently navigate how your sustainability efforts influences your guest Address sustainability proactively. Achieve certification and implement ESG goals at strategic, operational and practical level Discover the value in food waste and how to repurpose byproducts via fermentation and other techniques

Vital to learning is incredible food and each day features breakfast, lunch, and snacks from some of Copenhagen's great bakeries, restaurants and suppliers including: Alice, Apotek 57, Birthesminde, Coffee Collective, Friis-Holm, Gasoline Grill, Hija de Sanchez, JAH Izakaya, Juno the Bakery, Seks, Slurp, Søtofte Jordbrug and many more.

34,000 Danish kroner (ex. Danish VAT). The fee includes instruction, course materials, ground transport in Copenhagen, and all meals during program hours. Please contact us for details on reclaiming Danish VAT If you are paying as a business.

Our scholarships are intended to ensure that hospitality professionals whose employers can’t support their enrolment and who lack personal resources still have a path to a MAD Academy education. Scholarships are awarded based on financial need and an applicant’s demonstrated potential as a change-maker in the hospitality industry.
