Chocolate Torte with Egg Liqueur (aka Advocaat) Serves 8-10
Ingredients
120g butter 120 caster sugar 8 eggs, separated 300g ground almond 1 ½ tsp baking powder 3 tbsp brandy
100g good quality 70% dark chocolate (chopped) 100g good quality 70% dark chocolate (shaved) 300g thickened cream (whipped) Egg liqueur or Advocaat
Method 1
Preheat oven to 160 degree Celsius. Grease a 20cm spring form and cover all sides, including base, with baking paper.

Beat egg whites until stiff and keep it in the fridge for later.

Beat butter and caster sugar with an electric beater until pale and fluffy. Beat in egg yolks, one at a time, until just combined. Add brandy, baking powder, almond meal and chopped dark chocolate. With a wide spatula, stir ingredients to combine.
4 Next, fold
in the egg whites you have earlier prepared, gently, into the mixture. Be careful not to over mix it.

Pour into prepared spring form pan, place in oven and bake on the middle rack for 50-55 minutes. The cake is cooked, when pierced with a skewer, it comes out clean.
6 Let
the cake cool completely.

Stiffen the thickened cream with an electric beater. Use a wide steel spatula and spread it around the side of the cake and the top. Then pour some egg liqueur over the top, just enough to cover the top of the cake.

Press shaved dark chocolate to the sides with the steel spatula. I like to sprinkle some on the top around the rim of the cake s well.
