Lympstone Manor is the realisation of my dream, an outstanding country house Hotel for the 21st Century. I wanted to create something that would encapsulate my imagination, unashamedly luxurious and beautiful. Our location overlooking the Exe estuary is simply breathtaking. Every day that I arrive here, in all seasons and weather, I feel inspired and energised by the outstanding beauty of this special place.

Lympstone Manor is an historic Grade II listed Georgian manor house that has been creatively and comprehensively transformed into a contemporary country house hotel for the 21st century.

There are 21 utterly luxurious guestrooms and suites, each named after a bird of the estuary, and six Shepherd Huts each named after our woodland creatures. Each namesake inspires the interior design of the room. There are 28 acres of gardens and parkland with 11 acres of vineyard extending down to the Exe foreshore, acclaimed modern cuisine by Michael Caines MBE, and a world-class wine cellar.

Our rooms and suites offer a wholly individual setting for your break away. Each room and suite are named after a bird of the estuary and individually designed and inspired by each namesake. Designed to be ‘a home away from home’ with complimentary gin trays, GHD hair straighteners, Nespresso machines and even a guest pantry for an afternoon treat.

Nestled in the woodland overlooking the Lympstone Manor vineyard our Shepherd Huts offer apartment-style living space, intimate, cosy, and comfortable, where secluded privacy and nature meet in unrefined luxury.

A woodland wonder that offers total escapism. Each Shepherd Hut is unique and luxurious and named after our resident woodland creatures and their habitats.

Immerse yourself in the beauty of this tranquil spot interrupted only by the occasional rumbling of the local train.

The dining experience at Lympstone Manor is simply exquisite with discreet, friendly and professional service across three dining rooms overlooking the Exe estuary. Each dining room is named after the views of the landscape across the water; Powderham, Mamhead and Berry Head.

Each dining room is adorned with unique décor of marble floors or hand painted wall paper and individual chandeliers, serving exceptional Michelin starred cuisine by Michael Caines and his team with perfectly paired wines from a world-class cellar.

Enjoy canapés and apéritifs on the terrace or in lounge and bar overlooking the vineyard and the Exe Estuary, before taking your seats for a gastronomic experience. Return once again for after dinner drinks and petit fours.

Exquisite, refined cuisine by Michelin starred Michael Caines MBE, Chef-Owner. His unique style is influenced by the region’s outstanding larder of ingredients, creating dishes that reflect both seasonal and local produce and transform into a timeless and eclectic modern cuisine.

Serving a variety of menus from both the Sea and the Land, allowing guests to fully explore Michael’s cuisine and repertoire through both an à la carte and tasting menus and a lunch time set menu.

The perfect place for any celebration, for a truly gastronomic experience choose from one of our two tasting menus inspired by the land and sea with Sommelier selected wine flights to match.

PROVENANCE AND SUSTAINABILITY

Each ingredient and product is carefully sourced with its provenance, quality of ingredient and sustainability in mind. Michael hand-picks each supplier many of whom he has forged longstanding relationships with over the years, through a respect of their artisanal techniques of master butchery, cheese making or their understanding of the sea and its bounty.

Michael’s team in the kitchen use a variety of cooking methods to limited food waste, and ensuring we take a carcass balance approach. Fish stocks are protected through sustainable fishing techniques and using lesser-known fish throughout the sea inspired menus. Our land is honoured through indigenous breeds and varieties to Devon, protecting bio-diversity and the heritage of our land.

The enjoyment and appreciation of fine wine is integral to the Lympstone Manor experience. Our cellar has over 600 bins representing some of the finest wine estates in the world, while our stateof-the-art dispense system allows for 24 exceptional wines by the glass and matching wine flights.

Situated in the ideal South West position, the vineyard has 17,500 vines across 11 acres, comprising of the classical varietals of Champagne –Pinot Noir, Meunier and Chardonnay to make a selection of English sparkling wines that began with our 2020 Classic Cuvée alongside a growing collection of still wines which include the award winning 2020 Triassic Pinot Noir, Isabeau Rosé and a barrel-aged Chardonnay.

THE POOL HOUSE RESTAURANT & BAR

Our second restaurant offers both indoor and outdoor casual and informal dining.

The menu has been crafted by Michael and his team, featuring a range of delicious dishes made from locally sourced ingredients, including the freshest locally landed fish and shellfish, grass-fed meats, and just-picked vegetables for our vegetarian options. Grab a bite around the pool or relax in the restaurant and watch as the sun sets across the estuary and the green hills of Haldon and beyond.

FROM WELLNESS TO ADVENTURE

Whether you’re looking to swim some laps or soak up the sun on a lounger, the pool area is the perfect spot to unwind. The heated pool means that you can enjoy a refreshing swim no matter the weather, and the Pool House Restaurant and Bar means that you don’t even have to leave the pool area to grab a bite to eat or a refreshing cocktail. Yoga on the lawn allows you to connect with nature or for those looking for something a little more active, there is a tennis court and croquet lawn for those family competitions or friendly matches. THE BEAUTY AND MAJESTY OF THE LANDSCAPE IS ALL AROUND

Lympstone Manor stands in a commanding position overlooking the Exe estuary with extensive views down the Devon coast. As a designated ‘Site of Special Scientific Interest’ it is a unique and complex habitat supporting a number of wintering and migratory water birds. In summer, the estuary is a playground for sailors and kite surfers. During winter, it belongs to one of the richest and most varied bird populations found anywhere in the country.

Enjoy walks around our beautiful 28-acre grounds, explore parts of the South West Coastal Path and discover the Jurassic Coast; England’s first natural World Heritage Site. A short distance from Lympstone is the historic city of Exeter and to the west lies Dartmoor, with its bare rugged heaths and granite tors. In addition, those seeking action can partake in a number of activities on our doorstep. Watersports, horse riding and golf are all easily accessible.

In the Winter, the boats are put away and the estuary belongs once again to one of the richest and most varied populations of birds found anywhere in the country.
