They're found at Pueblo Viejo, on the corner of College and LaPorte in Fort Collins or at the Hwy. 392/I-25 interchange in Windsor. The traditional Mexican decor and music set the tone for authentic south of the border cuisine. Start out with warm chips, spicy salsa and beans. But beware, the chips and dips are bottomless, which could leave little room for your entree if you're not careful. The choice of entrees is almost overwhelming. Trying to decide between burritos, enchiladas, tacos, carnitas and chile rellenos, or house specials like the Steak Mexicano (a sliced tenderloin sautĂŠed with onions, tomatoes and green pepper, covered with Spanish Sauce) has the potential to make your head spin.
