The Olive Press The Collection of the Olive The olive collection starts by the middle of November not extending beyond the first weeks of February. The way to collect the olive is by throwing down the fruit on blankets placed on the ground of the grove under the trees. This is very important because the only olives that will be processed are the ones falling from the treetop; these do not have any quality parameter altered. Any other type of olive taken to the press will be processed independently and will never mix up in its processing with the so called flying olive (aceituna de vuelo) of excellent quality. Characteristics of the Olives The most common varieties of the area are hojiblanca, picual and cornicabra (or cornezuelo). Hojiblanca and Picual are the varieties that require being collected first to avoid overripening of the fruit and thus preventing the loss of fragrances and flavors, characteristic of the green fruit. The Cornicabra variety at the beginning of the collection is less ripe than the above mentioned giving those oils certain unmistakable organoleptic characteristics: a little spicy and intense fruity, predominating the scents of green plants (intense shrub tomato), herbs recently cut, etc. Our Compromise with the Environment In Aceites Sierra Morena we work in a very respectful way with the environment to develop the whole process of obtaining our oil, from the perspective that the natural surroundings and the sustainable development procure an added value to our activities and thus to the quality of life of our consumes and of the community in general. We are aware of the responsible use of energy. For that reason, before taking the “alperujo” to the treatment plant, the olive pits are taken apart from the pulp with a special separator. Once the pits are dried, they are stored for its subsequent use as generators of electric energy. In addition, even the remainder of the fat-free “alperujo” is usable as an organic fertilizer.
