veryone likes getting love letters, right? Hand-written notes full of things that someone else finds wonderful about you … who wouldn’t want one? Well, this issue—the Best of 2022—is kind of like a love letter to the city of Edina. Throughout these pages, we’re waxing poetic about what makes this community such a special place to live, work and raise families. In a magazine where we’re so laser-focused on local—where every single article has some sort of Edina angle—you could probably argue that every issue is a love letter of sorts. But this one takes things to the next level. After all, we are revealing our reader’s choice winners (page 38)! Speaking of which—I wanted to thank all of you who voted in this year’s readers’ poll. While most of it was the same as years past, we did add a few new categories (Best Pizza, Best Plant-Based Menu, Best OBGYN and Best Jeweler) and switched to a write-in voting process. The results? Well, they speak for themselves! Once you explore the list of winners, be sure to read through the rest of this month’s issue. Of course, I don’t want anything too fussy, and this Roasted Tomato with Burrata appetizer is so, so easy. The roasted tomatoes can be prepped ahead of time, making it super simple to serve—for yourself or guests. If you haven’t tried burrata cheese, give it a try. You won’t be disappointed. ROASTED TOMATOES WITH BURRATA » 1 pint grape or cherry tomatoes » 2 Tbsp. olive oil » 3 cloves garlic, minced » 1/2 tsp. sea salt » 1/4 tsp. pepper » 1 round of burrata cheese (about 3–4 oz.) » fresh basil, chopped, for topping » crostini for serving Directions: Preheat the oven to 400 degrees F. Place tomatoes on a baking sheet, and toss with olive oil, garlic, salt and pepper. Roast in the oven for 15–20 minutes, until they start to burst open. Serve the tomatoes on top of or alongside burrata cheese, garnished with fresh basil. Pile on top of crostini, and enjoy!

The Wave Makes a Splash in Edina’s Senior Center Going to the beach is one of this season’s finest luxuries, and enjoying Minnesota lakes tops my own “Best Way to Spend a Summer Day” list. When I visit one of the coasts—east, west or north— I am fascinated by waves. I love to watch Lake Superior crash against the rocks … or feel the gentle lift and fall as I wade into the ocean … or follow the build of the sea and then its sudden break, spilling on the sand. It’s mesmerizing to watch waves constantly change, grow, splash and disappear, over and over. Guests to the Edina Senior Center don’t have to travel to the coast to appreciate the mesmerizing magic of waves. Thanks to generous donations from Edina seniors and the Edina Community Foundation, David Wight’s glass sculpture, The Wave, is in Edina’s public art collection and is on display in the center’s entryway. Wight, an artist in Bellingham, Washington, is renowned for his wave art. He attended Pilchuck Glass School in Seattle and made glass sculptures for 15 years before he created his first wave, which is now his primary subject. As the titles of his artworks demonstrate, he explores all aspects of this moving water: Crescendo, Tsunami, Water Dance, Neptune, Spring Water Champagne. The Wave features deep cobalt blue and clear glass and captures one moment of a dynamic swell, preserving its ephemerality in the solid and permanent material of glass. Wight’s sculptures begin as molten liquid, but each unique sculpture soon loses its own fluidity to commemorate forever one instant in the spontaneous life of a wave. Portraying the grace and rejuvenation of water, Wight reminds us how rapidly natural immediately, vanishing as quickly as they appear. The Wave at the Edina Senior Center keeps our best beach memories bright and active, all year long.

On the Lincoln Highway Amor Towles’s first novel, Rules of Civility, made the best book lists of 2011. A Gentleman in Moscow did the same in 2016. Five years later, his novel, The Lincoln Highway, was chosen by reviewers, bloggers and librarians as a fan favorite of 2021. After reading it, I understand why. The novel opens on June 12, 1954, with Emmett Watson being released from a boy’s reformatory farm in Salina, Kansas. The warden of the reformatory drives Emmett to his family’s home in Morgen, Nebraska, where he is to be the guardian of his 8-year-old brother Billy following their father’s death. Soon after saying goodbye to the warden, Emmett learns that the family farm is in foreclosure and that two prisoners, Duchess and Woolly, were in the trunk of the warden’s car. Emmett plans to pack up with Billy and leave Nebraska. Billy convinces Emmett that they should move to California—but Duchess and Woolly

The Vibrancy of Giving Edina’s Community Impact Program serves as charitable partner to nonprofits and projects initiating change. By Staci Perry Mergenthal

IN 2003, the Edina Community

Foundation (ECF) formed the Community Impact Program (CIP) to support people who develop ideas, take initiative and positively impact the community. “This has allowed Edina to develop a very diverse and vibrant nonprofit community,” says Dick Crockett, ECF executive director. From arts and sports organizations to neighborhood groups, memorial funds and environmental projects, individuals or groups with ties to Edina bring their ideas to ECF, complete the CIP agreement and, once approved as a partner, they can begin raising money under ECF’s 501(c)(3). “Pick a suburb and you won’t find one that has 75 different nonprofits in them, and by virtue of serving as a charitable partner to enhance those options, we wouldn’t be the community we are today,” Crockett says. While there are so many organizations operating under the CIP, today we’re highlighting three partners, each impacting Edina in different ways.

The Minnesota Wild Blind Hockey and Deaf/Hard of Hearing Hockey were both founded by Antonia (Toni) Gillen. These two organizations provide youth and adult athletes who are blind or hearing-impaired the opportunity to develop confidence, self-esteem, life skills and team spirit through the sport of hockey. The ability to partner with the [ECF] helps us to promote and achieve all three—our donors can feel confident in their support due to the respected reputation of the Foundation and our inclusion on their website has directed interested volunteers to us through increased visibility.” Chowen Park Initiative

The Chowen Park Initiative is an ongoing program that was founded by the Bjornnes family (Norm, Conni, Alexandra and Connor) to honor the memories of Norm’s grandparents, Norman, M.D., and Claire Bjornnes. It provides private financial support to beautify a block in the Chowen Park neighborhood with updated light poles, traffic signs and posts. “When the City of Edina completed its neighborhood designation initiative years ago, the [Chowen Park] neighborhood took on a discrete identity,” Norm Bjornnes Jr. says. “Our family wanted to make a modest, tangible gift to our neighborhood ... The [ECF] had the experience and structure to allow our family to partner with the City of Edina to proceed with the neighborhood improvements.” Edina High School Class of 1971 Reunion Fund

SIXTEEN YEARS AGO,

Dick Crockett, the executive director of the Edina Community Foundation, brought his granddaughter with him to Edina’s Fourth of July Parade. Resting her on top of his shoulders, she waited with anticipation of what was to come. Feeling the deep bass of the drums from a distance and listening to the cheering voices of parade goers, he heard her soft voice say, “Maybe it’s a birthday party.” In fact, it was a birthday party— a birthday party for the country. Bringing generations together, Edina’s Fourth of July Parade is more than just a stroll through the city. It’s a way of bringing people together to strengthen and celebrate the community. “There isn’t a better way to celebrate our community than bringing together 1,000 parade participants and over 10,000 parade observers,” says Patty Dronen, the co-chair of this year’s parade team. “Bringing together the variety of groups that we do—from school and church groups to marching bands to costumed characters to political candidates and sports teams—exemplifies [our] strong commitment to all things Edina.” “The last couple years have proven that no matter what is sent our way, the community can come together to celebrate,” Dronen says. Historically, Edina used to hold a Memorial Day parade rather than an Independence Day parade. Unintentionally established in 1988, the city put on a Fourth of

July parade as a part of the Edina centennial commemoration. Recognizing how amazing the event was, city council members decided to make it a regular holiday event in subsequent years. The first parade was held on Wilson Road—the street connecting the community center to the former Perkins restaurant. And who was in the parade? “It was community groups; kids on bicycles, tricycles and wagons; and it was the community just getting out and having fun,” says Mary Brindle, a member of the parade planning team, who has been involved with the committee since its inception. Today, the parade’s route runs from City Hall all the way to 50th and France. Brindle loves to watch the anticipation grow. Every year, an array of towels, picnic blankets and lawn chairs line the curbs and lawns of the community days before it even starts. “That is the ultimate compliment: that people are so excited that they are going to get out there days before the parade,” Brindle says. Come the big day, Brindle says it is also gratifying to see how many people show up for the event, both on the sidelines and as a part of the show. There are nearly 1,000 participants, between the grand marshals, veterans, community officials, sports teams, organizations and entertainment bands alone. Plus, the entire parade team is made up of volunteers. However, “the people of the sidelines are a reflection of the people in the parade,” Brindle says. “They are the community; they are the cheerleaders.” “We have a mission [at the Edina Community Foundation] of bringing people together to serve, strengthen and celebrate the community, and this parade touches all of those bases,” Crockett says.

Advisory Board of Edina residents and business professionals who serve as a support to our editorial team. It helps to have people who are on the ground in our community and can serve as eyes and ears for notable happenings. With their help, I’m able to find story ideas, make connections with sources and be in-the-know on what’s new and notable in Edina more easily. I wanted to take a moment to introduce each of them—though you may know them already. And, since this is the Best of Edina issue, I asked each of them to share a favorite place, food, activity or event around Edina. Dick Crockett is the executive director at the Edina Community Foundation. After having previously lived in Palo Alto, California, Fargo, North Dakota, and Syracuse, New York, he and his wife “chose” Edina

and moved here in 1999. He has served for most of that time at the Edina Community Foundation. “My favorite place in Edina is Centennial Lakes Park,” says Crockett. “I feel like our community is a special place when I visit there, with its well-used hiking trail around the scenic lake, unique recreational opportunities, perfect location for the annual Torchlight Concert and several sculptures contributed by ECF— Pinecone, the Northwest Airlines Memorial and Reflecting on Friendship.” Erin Zosel owns Sloane’s Beauty Bar and has been a hair stylist for 27 years— though she stepped away from behind the chair and is currently focusing on running Sloane’s at a higher level. She’s also a real estate agent with The Zosel and Coleman Group with Compass. She and her husband have two children. “My favorite place in Edina is the White Oaks neighborhood,” says Zosel.

“We recently moved into this beautiful neighborhood, and we love it. You’re in the heart of the city, so you can walk to all the cool shops and restaurants, but you’re also tucked away privately in the woods. It’s a hidden gem.” Jasmine Brett Stringer is a professional speaker, author, on-air TV personality and lifestyle contributor to WCCOTV, founder of #SharetheMicMN and host of the podcast and lifestyle blog Carpe Diem with Jasmine. She and her husband live in Edina, but they also own a farm in southern Minnesota, and they spend many of their summer weekends gardening. “My all-time favorite place in Edina is my house,” says Stringer. “After all, there’s no place like home. However, my favorite public place in Edina is Arneson Acres Park. I love walking through the gardens in the summer and taking in the beautiful flowers.

Location, Location, Location: Finding the Perfect Oasis The setting of your picnic can make or break the entire experience, especially given the time of day. As I’m writing this, I’ve been the editor of this magazine for just over six months. During this time, I’ve loved getting to know the Edina community better. It’s a unique city—from its concentration of shopping opportunities and its multitude of public green spaces to the kind, bright and involved individuals who live here. As I’ve met more and more Edina residents, one thing that has really struck me is the civic involvement of individuals in this city. And I’m not just talking about the adults. The creativity, innovation and involvement of this city’s young residents is truly remarkable. I really don’t think it’s common for middle and high school students to come up with viable business ideas, volunteer for the love of a cause and not just for a line item on a college application, write and perform music or poetry at public events, and take so much of their lives offline. The teens in this community are really something special. With this in mind, I want to use the rest of my Editor’s Picks article exploring just a few of the people, places and programs that make Edina such a special community. These are, of course, just a few examples of the wonderful things happening here. I hope it helps remind you of what a truly exceptional community you live in.

Twelve-year-old Edina resident Ava Mehta loves animals and spending time at the Golden Valley Animal Humane Society. But since she’s too young to volunteer (you have to be 16), she decided to find a different way to support this organization that cares for and connects animals with loving homes. In late 2021, after seeing newspapers on a list of physical needs for the Golden Valley Animal Humane Society, Ava started Paper for Pets. “Since I’m too young to volunteer … I decided to help it another way,” Ava says, noting that she wanted to help the humane society but also get others involved. “I was like, ‘What can people

you.’” She opened her Notes app and had Ava write up a message, which Mehta then posted in the Buy Nothing Edina, Edina Moms Group and Edina Cares Facebook groups. From there, people started reaching out to Mehta who were interested in donating their old newspapers. So, every couple of days Mehta would give Ava her phone so that she could personally respond to each message herself. Ava, who’s involved in Scouts BSA, is currently working on expanding Paper for Pets into a project her whole troop can participate in. She also uses her passion for animals, and this project in particular, as a talking point in the pageants she participates in. (Last year, she was awarded the title of Miss Minnesota PreTeen, which allowed her to compete in the 2021 International Junior Miss pageant.)

do that’s not really a big deal, doesn’t really cost them any money and is easy?’ So, I decided to make Paper for Pets, where we just need a paper bag and your [clean] newspapers,” she says. Every Saturday, she and her mother, Feroza Mehta, drive all over Edina on their “reverse paper route,” picking up newspapers from residents who have signed up to participate. Ava then brings them to the shelter, where they use the newspapers for bedding and in areas where animals are being potty-trained. The whole route takes about four hours every week. To date, Ava has collected 168 bags full of newspapers. And how did they get the word out about Paper for Pets? Her mom put it out on Facebook. “[Ava] doesn’t have her own Facebook account,” Mehta says. “And I told her, ‘If you want to make this your own thing, it has to be coming from

While all of this was Ava’s idea, it grew from a value of volunteerism that Mehta instilled in Ava and her brother from a young age. “Growing up, my parents, always ingrained in us that it’s really important to give back to your community,” Mehta says. “And with both my kids, I really tried to get them to find a cause that they like and to try and take that passion and put it back into the community any way that they can by using their talents and/or their time.” If you’re interested in donating your old newspapers to Paper for Pets, reach out to Ava and Mehta by emailing paperforpets@gmail.com. Places: Arneson Acres Park

I first discovered Arneson Acres Park when working in Edina in my mid-20s. A co-worker had mentioned it was a nice, nearby spot to eat lunch away from the office. So, in my first couple of weeks on the job, I made my way over to the park. I was not expecting what I discovered: a charming English garden-like park, complete with a stone fountain and hedgerows to boot. And then there were the flowers—so many flowers! Flowers of all kinds, from lilacs and peonies (my personal favorites) to stalky purple salvia, cheerful coneflowers, regal lilies and flowering trees galore. And that’s only a fraction of them. This 13.2-acre park with its 28 gardens was donated to the city of Edina in the late 1970s by Morton and Katherine Arneson. The couple’s stipulation in donating the property was that the city build a greenhouse on the property. Today, the Edina Garden Council uses the greenhouse to grow the annuals and perennials that are planted in Edina’s parks and more than 100 public spaces (and sold at its annual spring plant sale). Arneson Acres is also home to the Edina Historical Society and the Edina Museum.

In 2021, the Edina Chamber of Commerce launched a new program: Edina Shark Tank. Inspired by ABC’s show Shark Tank, the idea was to give high school students the opportunity to develop a business plan, pitch their idea to local business owners and investors, and vie for the opportunity to win a cash prize to put toward their business idea. What was a small event in 2021 with three student submissions grew substantially in 2022 through working more closely with Edina High School business teacher Will Aguero on promoting the opportunity to students. This year, over 30 students participated, with individuals and groups submitting a total of 17 presentations full of creativity an innovation. It was more than was expected— so much so that the chamber had to put together a special review committee made up of members from the chamber’s board of directors to narrow down to the top five projects.

investors with venture capital experience served as the “sharks,” who listened to the live presentations, asked the students questions and deliberated together before announcing the winners. The winning presentation was a group of three students who pitched a college consulting firm called Polus Consulting. Their idea is to help high school students across the country in their college application process. “Using our website that centralizes all services into one platform, applicants can access current students and alumni of any national university they’re applying to,” the group wrote in their pitch. “Creating a platform that streamlines their access to current students and alumni of the universities allows applicants to receive mock-interview practice, essay editing help, information about the university and more resources.” By winning the Edina Shark Tank competition, the group was awarded $1,000 to help make their business concept a reality. Loberg says her favorite part of the day was seeing the students who participated making meaningful connections and seeing

“The process, the buy-in from the students [and] the product of their effort was all super elevated this year, and we were really pleased with how much engagement that we had,” says Shelly Loberg, vice president of the Edina Chamber of Commerce. Participating students had to develop business pitch presentations, which they submitted to the review committee that decided on the top five proposals. The finalists then had two weeks to refine their pitches and get ready for the live Shark Tank event. This year, each student or group was given a business mentor—someone in the community whose own professional expertise aligned with the topic of the business proposal. During those two weeks, the mentors gave students critical feedback to help refine their presentations. “I think that was really meaningful not only for the kids, but I think our membership, our Chamber members, and any other business community members that participate in that found it really rewarding,” Loberg says. And then the pitch day came, which took place on April 20 this year. Three local

scrumptious summer meal. And arguably the best place to prepare this summer meal is on the grill. What is debatable is the grill itself— some people are diehard charcoal grill lovers, while others prefer a gas grill or even a smoker. You can also debate the best meat to grill, the best side to accompany it, the best company with which to enjoy your barbecue, the best beverage pairing … the options are endless. And what about the actual meat preparation? Is a steak finished medium-rare better than a steak grilled medium or well done? Who better to decide than Thomas Aldrich, a meat monger and assistant manager at France 44 Cheese Shop. Fun fact: A meat monger is a person who finishes, sells and talks about meats. The term fleshmonger, which preceded the term meat monger, dates back to the 11th century. A butcher, by comparison, is someone who processes animals (prepares animals to be sold as meat). But back to the topic at hand: Is there a best grill? “It’s a question of time and flavor,” Aldrich says. “Grilling on charcoal gives meat a burnt-charcoal, rich flavor. I love it, but my mom hates it. Cooking on charcoal does take longer. There’s also the time involved in preheating.” Aldrich notes that, where a gas grill might sacrifice flavor, its advantages are time and convenience. “Cooking on a gas grill is like using a stove and an oven,” he says. “You don’t have complete direct control, but it’s close. You can set one side of your grill low and the other side high. This allows you to [cook] something at low temperature and then sear it on high.” He uses a two-inch-thick rib eye as an example. “You’re going to want to start cooler and bake it slow and then finish with a high-temperature sear,” he says.

So, for a grilling novice, is there an easy place to start? What meat provides a guaranteed good outcome? “I tell people to start with what they’re comfortable with,” Aldrich says. When pressed, he’ll settle on brats and burgers. “Brats are a good place to start because oftentimes they’re already cooked,” he says. “You can see how searing works, and you don’t have to worry about serving something undercooked. When asked for grilling hacks, Aldrich’s number one tip is to have and use a meat thermometer. “What you want is

a really good instant-read thermometer, something like the ThermoWorks ThermoPop thermometer we sell in the store,” he says. “You’ll get a reading in three to four seconds.” The USDA-recommended cooking temperature for ground meats, including beef, veal, lamb and pork, is 160 degrees F. For whole cuts of beef, veal and lamb, the safe temperature is 145 degrees F, and the same goes for pork. (However, it’s worth noting that if you prefer a medium-rare cut of steak or burger, you’ll be cooking it in the 130– 140 degrees F range.) The safe cooking temperature for all poultry products is 165 degrees F. This brings us to another Aldrich tip: Give it a rest. “If you take meat off the grill and immediately cut into it, you’ll end up with pieces of meat, [a] pool of juice and one big mess,” Aldrich says. “If you let it rest, those juices will stay in the meat.” Aldrich’s rest-time recommendation is to let finished meat rest for about half its cooking time, meaning that skirt or flank steak that took eight minutes to grill should rest first for about four minutes before taking a knife to it. “Thicker cuts require longer rest times,” he says. As Aldrich mentioned earlier, he also recommends grilling with two temperature zones if your grill allows it. If the grill has two settings, Aldrich says he would set one side at eight or nine and the other at one, two or as low as it goes. He uses this tactic when making an athome Juicy Lucy. “If you sear it aggressively for four minutes per side, you’ll end up with a nice crust,” he says. “Because this might not melt the cheese, you’ll

want to put it on low heat for another two minutes. By taking it off the high heat, you’re not burning the outside.” The same concept can be used with steak. Lastly, there’s that idiom that says you get what you pay for. Aldrich wholeheartedly agrees, especially when it comes to purchasing cuts of pork or chicken. “In my opinion, the biggest difference is with pork,” he says. “Farm-raised pork has more flavor and

more marble. Fat is flavor.” In chicken, the main difference is in how the chicken is cooled. “If you want to up your chicken game, look for chicken labeled ‘air-cooled,’” Aldrich says. “It’s better than water-cooled.” He says this is because air-cooled chicken retains more natural moisture and flavor, whereas chicken that water cooled is put in a water bath, and this washes off and removes some of the natural flavoring.

A tough-as-nails steak came off the grill and was plated next to a blackened hamburger. What the heck happened? Aldrich would say the griller committed the ultimate of grilling blunders. “Not wearing a watch or not having access to a clock when you’re grilling is one of the biggest mistakes you can make,” he says. “Lose track of time and you’re going to end up with a nuked piece of meat.” He prefers a watch to a cell phone, as grilling can be a messy endeavor. “You’re not going to reach into your pocket with greasy hands,” he says. And what about when you’re pulling a cut of meat out of the freezer for a grill-out? Grilling mistake number two is throwing frozen meat right onto the grill. Aldrich recommends fully thawing the meat first, in all cases but one. “The only thing I would ever put from frozen onto the grill is a burger patty,” he says. Because of how thin burger patties are, they thaw as they cook and can cook evenly. For anything else, he recommends taking your meat out of the freezer a few days ahead of time and putting it in the fridge to naturally thaw. But if you didn’t plan ahead, you’re not totally out of luck. You can put your meat into a sealed Ziplock bag and immerse the bag in a bath of cold water. (Cold, not hot. Otherwise, you’re essentially starting a very slow sous vide cooking process, Aldrich says.) He recommends a cold water bath over thawing meat in the microwave, since microwaves can start cooking your meat as it thaws. Whichever thawing method you choose, he also recommends leaving your meat out for 10–20 minutes before putting it on the grill to allow it to come to room temperature. I’m definitely a hobbyist [photographer], but I love taking pictures, particularly of my kids and pets. I love to capture them happy and playing, being silly and creative and brave.” The picture can’t help but take anyone back to childhood fun and adventure. “In this picture, my little guy had mastered climbing atop the monkey bars and was so proud of himself,” Peterson says. “His wild curls were particularly wild—a product of no haircuts during COVID19. He was happy being a regular kid, and it was wonderful to see.”
