Can Indian Food Equal Fine Dining?

Indian cuisine has a rich and diverse heritage. India has a long-standing tradition of fine dining. The history of royal cuisine in India can be traced back to ancient times when emperors were known for their extravagant lifestyles and their love for indulgent feasts. The royal kitchens or “rasoighars” were run by expert chefs who created culinary masterpieces with elaborate presentation and garnishing fit for royalty.

The influence is still very prevalent. This was not just in the royal households, but the age-old concept of serving food in a ‘thali’ (a compartmentalised plate) placed on a ‘chauki’ (low table) was a tradition in common households then and is still followed today. The arrangement of various dishes in a thali, along with the attention to presentation, reflects our appreciation for culinary artistry. Indian cooking has always embraced sustainability. Earthen pots (matkas) were (and still are) commonly used for cooking and serving. These vessels not only preserve flavours but are also environmentally friendly. Interestingly, many countries are now adopting similar practices due to their eco-friendliness.
While it’s true that the British popularised the term ‘curry,’ it’s essential to recognise that this label does not fully capture the depth and sophistication of Indian food. In India, each dish has its distinct name, and we don’t refer to all our dishes as ‘curry.’ From royal biryanis, kebabs, dosas to our street food, the culinary landscape is incredibly varied.



From regional specialities to intricate delicacies, the culinary heritage is a vast tapestry of flavours. This provides an expansive playground in the domain of fine dining. Beyond the well-known dishes, there is a treasure trove of culinary gems in India that are waiting to be discovered.




There are many renowned Indian chefs who have revolutionised and elevated Indian food to new heights. Indian cuisine is so wide that creativity and innovation in this space has no bounds and there’s always room for pushing the boundaries of taste and presentation. It is here that you find inspiration—a canvas where you play with spices, textures, and ingredients to create art on a plate.
Indian cooking has now become a delightful fusion of tradition and modernity, where the kitchen becomes a studio, chef the artist and every plate a masterpiece.
Indian food isn’t limited to fine dining establishments; it’s also comfort food for billions!
