SOUTHERN, CLEAN CUISINE & SPIRITS By Charlette Beasley

E

veryone knows that we in the South love good food. We have tons of great restaurants to show for it. Renowned Chef Donnie Ferneau knew it and decided to create Good Food by Ferneau in September 2014. Now in the old Argenta Market spot on Main Street, Good Food provides food that is not only ‘good,’ but affordable, clean, and convenient. Ferneau says, “If you look at the new generation, you’ll notice that people don’t cook at home. They eat out all the time. Unlike other restaurants, we’re not filling your body with simple carbohydrates that break down quickly and turn to sugar. We’re filling it foods that will sit in your stomach and digest. You will feel full longer. You’ll stay focused, and your blood sugar won’t spike. We create these foods so your body stays a fat-burning machine rather than spiking. Once your blood sugar spikes, you start storing fat.” And this is the opposite of what many of us really want. The chefs work with a registered dietitian and nutritionist when developing all of their recipes in order to maximize the health benefits of the foods they prepare. To satisfy the increasing need for convenience in today’s society, Good Food places less importance on full-service and more on providing quality prepackaged meals. Customers can come in, grab their food, and go. They also have the option to dine in. Good Food by Ferneau does business with a number of Arkansas businesses. To name a few, Killer Tomato, Crystal Lake Farms, Freckle Face Farms, and Arkansas Natural Produce, all Arkansas businesses, are some of his vendors. When unable to purchase particular ingredients from local businesses, Donnie ensures every purchase is sustainable. Ferneau is committed to providing Arkansans with the healthiest, good food imaginable and helping us learn how to whip up these types of meals ourselves. Good Food’s chefs accomplish this by creating intense flavors with the right mix of ingredients and offering various opportunities to watch as they do. One such opportunity just passed. On April 23, Good Food by Ferneau paired with Rock Town Distillery and Moody Brews to create the ultimate cooking class, and it was a success! Everyone in the class received front-row seats in Donnie Ferneau’s kitchen. They were able to watch as he showcased his extraordinary cooking skills all while schooling

them on infusing spirits from Rock Town Distillery. The beer pairings by Moody Brews also proved to be a great addition to the night. If you missed it, don’t worry! There will be many more cooking classes throughout the year. In fact, Donnie plans to offer a new one once every two to three weeks. All class attendees will learn how to prepare restaurant quality food using three to four step methods that they can take home and duplicate for themselves, family, and friends. Each class will have a different theme. One may cover bourbon and steak, and the next may include seafood. Donnie is always open to suggestions, so don’t hold back! It’s a great day when our local businesses collaborate for the good of local people and the community. The Good Food-Moody’s Brews-Rock Town Distillery trio produces quality products and uses as many local ingredients as they can get their hands on. Rock Town Distillery, founded in 2010 by Phil Brandon, is the first legal distillery of any kind in Arkansas since prohibition. The company uses grains from Arkansas to distill its high-quality spirits. All are tediously distilled from corn, wheat, and rye that are grown within a 125 mile radius from the distillery. Customers are invited to partake in tours of the facility during which they can learn the origins of bourbon, what it takes to make certain types of alcohol, and what makes one alcohol product different from the other. The spiritmaking process will be thoroughly covered. You can taste all of Rock Town’s spirits at the end of the tour if you are 21 and over and ask questions if you have them. Reservations are not necessary, and tours are available seven days a week. Moody Brews was founded by Josiah Moody, a seasoned brewer who previously worked for Vino’s. He left to create his own contract brewery. He creates his own beer recipes but brews and bottles them at other brewing companies. Since starting the company, he has been brewing at a company in Krebs, Oklahoma, Choc Brewing Co. However, recently, he partnered with Damgoode Pies in Little Rock and now does the same there. We applaud him for his efforts to use local resources. Currently, he has two products. One of which is his popular Imperial IPA, Half Seas Over. Demand for it continues to grow, and he continues to meet it month after month. He also created a strong Belgium dark ale that has a slight chocolate flavor with a stronger

chocolate aroma. It is a 10.5% seasonal alcohol beer that he offered during the winter and also received positive feedback. This spring he has been working on a new set of beers that are Belgium Farmhouse ales. He has been working on test batches at the Damgoode brewery, and the public can look forward to tasting them this spring/summer. When the heat picks up this summer, he will be offering 5% alcohol brewed with orange peel and hibiscus flowers. Currently on tap at Damgoode Pies, it is already very popular. In the future, Josiah will abandon his current gypsy brewing style to open his own brewery in Little Rock. We are all looking forward to that day!

Good Food, Rock Town, and Moody’s Brews are all loyal to Central Arkansas. We expect them to collaborate more and more with one another and other locals as time presses on, which means more and more local dollars will continue to remain in the local community. It’s that season again… the season of outdoor grilling, relaxing with friends & family, and of course, crawfish. Every year during this time, there’s an array of crawfish boils around the state. Boudreaux’s Grill & Bar at 9811 Maumelle Boulevard has a boil every Saturday night through June at 5pm with Cajun Mike. Boudreaux’s has been a neighborhood favorite for close to a decade, but was taken over in September of last year by Rick and Ljuba Cunningham. After being in the restaurant business for nearly 40 years and then retiring, this Arkansas couple decided it was time to do it again. “We really missed the restaurant business when we retired, and we really wanted something for our kids to take over,’ said Ljuba. They had been coming to Boudreaux to eat for years. “The food was great, the atmosphere was great, and we just started talking to the owner and one thing lead to another.” The menu has a large variety of dishes that are sure to appeal to everyone. First choose between some standard (yet delicious) “Bar Munchies” appetizers or some classic, cajun starters such as Catfish Beignets or some fried Alligator. We asked the owners what was the best thing on their menu, and they replied, “The Crawfish Étouffée is my favorite, but the food here is always great… we have the best cook around!” The voodoo platter is the top seller. It has blackened catfish, blackened gulf shrimp and grilled, blackened veggies. Other items on the menu include Alligator, Catfish, Crawfish, or Oyster Po Boys, Cajun Jambalaya, Fish Tacos,

Chicken & Sausage Gumbo, and weekly dinner specials. If you still have room for dessert, Boudreaux’s is famous for their homemade Louisiana Bread Pudding. So what sets Boudreaux’s out from other Cajun places around town? “The food is good all over, but our service sets us apart from every other restaurant. Guest service is one of our top priorities,” says Ljuba. “We added a lot of things that most cajun places don’t have such as our cajun Muffaletta Po Boy. We played with all the recipes, and we make everything from scratch… even the cocktail sauce.” Most of the ingredients come right from Louisiana, even the flour and oil. Boudreaux’s purchases top grade alligator and meats and tenderize and marinade most things for at least 24 hours. Long time cook, Roy, makes sure everyone gets a true Cajun experience. Before Boudreaux’s, Rick and Ljuba had always been involved in the pizza business. So it may come as no surprise that Boudreaux’s is expanding. In the adjoining space next door, this neighborhood cajun restaurant will now include Pizza by Boudreaux. While they will offer your standard pizzas for the kids, it will focus on gourmet, unique pizzas such as cajun fajita chicken, boudin meatball pizza, cheeseburger, crawfish pizza, etc. After combining and rearranging the new space, there will be a game room for the kids (and a brand new kids’ menu) and fun for the whole family!

Regardless of whether they do or don’t, the Legends of Arkansas Festival is coming for its third year in a row to downtown Little Rock to spread the word. Legends of Arkansas (LOA) is a non-profit, grassroots organization focused on strengthening the local communities within Arkansas. It was created to promote and showcase the musicians, artists, and independent businesses in Arkansas while celebrating our friends and neighbors for living their dreams. On September 19, 2015, all Arkansans are invited to celebrate with Legends of Arkansas, and when we say “all,” we mean “ALL!” The Legends of Arkansas Festival is for everyone, from children and parents to grandparents and great grandparents. This year, at least 10,000 people are expected to attend, which will be a growth rate of ten times in three years! There will be numerous arts and craft vendors, booths where local sponsors and businesses will present what’s new, bouncy houses, face painting, and much, much more. That’s not all! The festival is free for anyone who wishes to come!. All items for sale will be affordable. Booth rentals are $35 for any Arkansas business who desires to have one, and booths are free for all local artists who can demonstrate their art during the festival. And of course there will be food. Who could possibly go through eleven hours of fun (noon11 p.m.) without a bite to eat? The Little Rock Food Trucks will be on the scene to represent local food. The Waffle Wagon and Katmandu Mo Mo are just a couple of favorites to expect.

Etsy Little Rock will set up different booths for arts and crafts. Recreation Studios, a group of performing artists, will have aerial silks hanging in the amphitheater. They will also do hula-hooping, hoop dancing, juggling, stilt walkers, a fire show, etc. Paul Prader, a French performer, will also be present. Some of his past performances have included lying on a bed of nails, nailing nails into his head, and other quirky tricks. The Little Rock Chamber of Commerce will be in the park as well. The Chamber sponsors a pitch competition, and the finalists will share their pitches with the Legends of Arkansas Festival crowd. And what’s a festival

without yoga? Barefoot Studio will be hosting Yoga on the Hill twice during the day in an effort to encourage healthy living. What treats! To keep the cost of the festival at a minimum, Legends of Arkansas will be holding a fundraising event called Legends in Argenta on May 30 to raise funds for the big festival. All sponsors and those who support these smaller fundraising events held throughout the year help keep such an awesome event FREE for the public. Arkansas Earth Day Foundation sponsors LOA’s sustainability. The festival is a green event, and the organization is committed to leaving the park better than they found it. Throughout the day, various groups will walk through the park picking up trash and finding ways to recycle. Legends of Arkansas cares about the local community and shows it.

Performers will include: Adam Faucett, Barrett Baber, The Wildflowers, Good Foot, Whole Fam Damily, Big Piph, Steven James, Colin vs Adam, Chris DeClerk, Makenzie Jordan, Sarah Cecil, Franko and Frisbee, Chris Long Acoustic, Brian Nahlen, The Federalis, Mothwind, Duckstronaut, The Flux Family-3 bands, and DJ Dripfunk. It’s obvious that the organizers of the festival strove to cover every genre of music they could. From country and bluegrass to rock and hip-hop, everyone is sure to have a wonderful time. Hip-hop fans will have an additional treat in store for them. Big Piph, a local hip-hop artist who travels around the world teaching about music, will begin Hip-Hop Hour with the kids by taking them to the Rev Room for a workshop in which they will learn music theory, history, and stage presence. The icing on the cake will be the kids’ performance of a song they created during the workshop. During a conversation with Legends of Arkansas founder, Susie Cowan, she recalled Hip-Hop Hour during the 2014 festival. “The kids were rapping about... karate and ninja turtles, candy, play dates, and ice cream. I love that! They were rapping about things they were passionate about.” And that’s what it’s all about. Fun. Celebration. Inspiration. In Arkansas. For everyone.

one are the days when building successful teams consisted of Power Points and power naps. Today’s executives are sending their employees to the field! Timberline Adventure Park in Bryant offers a true hands-on learning environment where co-workers learn the importance of teamwork and communication. Each group receives their own referee and plays at least four games during which important lessons are taught that will later be applied in the office. There are also great opportunities for friendly cross-department challenges and corporate outings. Timberline offers Paintball, an all-time favorite, SplatMaster, Airsoft, and Laser Tag.

What’s so unique about Timberline when there are other places in Arkansas that offer similar activities? For one, there are no other facilities within the state that can compete. Owner Michael Foltz revealed that Arkansans would have to go as far as Dallas or Chicago to find anything comparable. Timberline operates from a 60,000 sq. ft. warehouse in which there are lockers and shower room facilities, two paintball fields, a laser tag room, a room for close-quarter combat training, and a room for taekwondo. Not to mention the 46 acres of

wooded area that groups can utilize when they want to play outside. There are also dedicated party rooms to use when the weather does not permit outdoor festivities. There is also a 3,800 sq. ft. office facility in which they handle administrative duties and sell paintball products. Beyond space, Timberline’s sports’ offerings are unique in themselves. Other facilities do not usually offer Paintball and Airsoft in conjunction with one another as they are usually competitive. Timberline broke this barrier and brought them together! In addition to the team building activities, Timberline has a bulk tickets program that companies love taking advantage of. With this program, local businesses can purchase tickets for individual use in bulk quantities. Each one is good for park admission, rental equipment, and ammunition. Most companies resale these through Employee Associations, Clubs, or straight from their HR offices! Tickets can be purchased in groups of 10, 25, and 50 at $20.00 per ticket. With a face value of $35.00 each, this program is a win for all! Throughout the year, Timberline hosts several events. The next one will be in September. It will be an overnight game that will last for 18 hours. Players will start on a Friday at 6 p.m and play until midnight. At this point, there will be a break, and the game will resume around 4 or 5 a.m. Breakfast will be served, and the game will

last until 3:30 Saturday afternoon. All players will earn a patch that serves as a point of pride for their hard work.

Timberline is a family-owned company that was started three years ago by Michael and Mandi Foltz. Michael considers the best part of the business to be the ability to work while spending time with his family. He is able to watch them grow not only as players, but in business as well. They have five children, four boys and one girl, who all play a role in Timberline’s operations. Michael attributes the company’s success to the local community, stating that word of mouth and community support have been outstanding. The Bauxite police keep an eye on the facility, and the Bryant/Benton police departments come out for a game or two every so often. Even the Bauxite Fire Department came out for the company’s third year anniversary. The communities of Central Arkansas strike again-supporting local business and family as much as possible!
