IN THE SPOTLIGHT THIS WEEK

Old-fashioned fun for the Fourth N

ot only is the Denton Kiwanis Club’s 39th annual fireworks show a big celebration of independence, it’s a fundraiser for the Kiwanis Children’s Clinic. The event is free, but donations will be accepted to support the clinic, which offers medical and dental services for low-income children. “We keep it a free event because we feel it’s a huge day for our nation,” said Hank Dickenson, who has organized the event for the last 10 years. About 10,000 people usually fill the University of North Texas’ Fouts Field stadium to watch the 25-minute fireworks show. The gates will open at 5:30 p.m. Monday and the event will kick off with music at 6:30 p.m. This year’s bands are City Folk, George Dunham and the Bird Dogs, and a special guest. A children’s activity area will be set up on half of the field. Coolers and chairs aren’t allowed, but Dickenson encourages people to bring blankets if they want to sit on the field. Concessions will be available. The city of Denton also has activities planned Monday for Independence Day. The day will start with the Liberty Run at North Lakes Recreation Center, followed by the Yankee Doodle Parade at 9 a.m. from the Square to the Civic Center, where there will be live entertainment and children’s activities until noon.

he Jakeys describe themselves with a proper title: a Celtic folk-rock band. It’s accurate, and all well and good. But it doesn’t do the Denton band’s sound justice, somehow. The local nine-piece pub rock ensemble certainly embraces the treble-clef qualities of Celtic folk music. The string work jigs and swaggers. The percussion throbs like a heart on fire. The microphone is passed around a group of artists who aren’t troubled by technique or even a steady pitch. The fiddle work ambles as lazily as the vocal lines. Some of the lyrics are almost eye rollinducing (“Paddy Wagon” doesn’t bother trying to purge off the worst cliches of Irishness. Or the best, depending on your relationship to boozing and brawling). Almost. The Jakeys’ music is messy, and its musicians aren’t about to apologize for that. No worries, though. The melody is there, and you

can find it with an empty shot glass in one fist and a fresh pint in the other. What their self-supplied label doesn’t cover is the bare-knuckle bravado that inhabits every song by the group. It’s worth noting that the Jakeys sound wildest when they sing together. Solos are sweet and somewhat theatrical, but together, rock’s tortured soul shows up with abrasions, chipped teeth and glory. The Jakeys celebrate the band’s album, No Second Spring, at this weekend’s show. The album is as it says: temporal, celebratory and utterly undomesticated. Armadillo Ale Works has been brewing beer in the home garage of Mullins, and Arestis camps out with his cohort in the sweltering room. The two-man team boils, brews, ferments and stores its beers a keg at a time. By Lucinda Breeding | Features Editor The plucky duo isn’t deterred by Texas’ June heat. They just brew early, before the temperature gets unbearable. The Denton entrepreneurs were introduced to beer the old-fashioned way, they said. They went to college at the University of North Texas. The college social scene is lubricated with cheap beer swilled from plastic cups. See ARMADILLO ALE on 10

YELLABELLY BLONDE

QUAKERTOWN STOUT

HEFE-WHAT?! HEFEWEIZEN

Flavor & scent: Grainy, mild yeast taste and light malt flavor. Best served: Well chilled, from 40 to 45 degrees. Drink this ale in a pilsner or pint glass. Note: YellaBelly is best drunk young — don’t let it sit too long. Good with: A cool salad or fruit salad; light fish dishes; or grilled or roasted white-meat chicken.

Flavor & scent: Coffee, chocolate with a whiff of nuttiness. For a palate that likes assertive tastes. Best served: Cellar temperature, which is 55 degrees. Drink this stout in a brandy snifter — it breathes best in the pearshaped glass. Good with: A really rich chocolate cake, or dark meat.

Flavor & scent: Banana and clove, with a citrus kick from being brewed with grapefruit peel and coriander. Best served: Well chilled or chilled, from 45 to 50 degrees. Drink this beer in a weizen glass. Note: Hefeweizen is best drunk young, within two weeks. Good with: A slice of ruby red grapefruit; sea bass; or Cornish hen.

FUIPA IMPERIAL PALE ALE Flavor & scent: Robust malt flavor, with lots of hops. This Indian pale ale is another that boasts citrus flavors. Best served: lightly chilled, at about 50 degrees. Serve this drink in a snifter. Good with: Spicy Thai, or with nothing but a happy grin. Note: It’s the only brew Armadillo puts a warning on. Not for the faint of heart or lightweights.

There is a trial-and-error aspect to brewing. When we’re developing a new beer, we know what we want to end up with, but that doesn’t mean it tastes like you want it to on the first try.” — Yianni Arestis

“Yianni and I started out drinking really crappy beer,” Mullins said. “From there, we both got interested in better beer. My brother bought me a home-brew kit for Christmas. That was it. It turned into a passion.” That was six years ago. His first batch was a red ale that Mullins insists was too “disgusting” to serve to friends. It did put him on a learning curve that hitches chemistry to a demanding palate. Arestis remembers himself as a cheap beer drinker who graduated to Shiner Bock and stayed there for a good long while. “Our mutual friend Stephen is the first beer snob I met,” he said. “And then Bobby and Stephen were always trying new beers. I started trying them, too. That’s when I really started liking beer.” Mullins studied radio, television and film at UNT, but when he graduated, he went to work for St. Arnold Brewing Company in Houston. He worked there for three years before coming back to Denton last May. Mullins said the brewing industry is a friendly one. Brewers share information, techniques and opinions with one another. “I knew when I graduated from UNT that I’d start some kind of business. I just didn’t know what kind,” Arestis said. “The brewing industry is such a good industry — people want to help each other out, and I want to be a part of it.” Mullins agreed. “In the industry, brewers look at it like we all do well if one brewer does well,” he said. The owners have experimented with a lot of brews, but decided to master the four

beers they hope to distribute in local bars, restaurants and stores. Armadillo Ale Works brews YellaBelly Blonde, FUIPA Imperial Pale Ale, Quakertown Stout and Hefe-What?! Hefeweizen. Beers fall under two main categories: ales and lagers. Ales are made using malted barley, warm fermentation and brewer’s yeast. Lagers are made using malted barley and are brewed and stored at room temperature. True to their namesake, Armadillo beers are ales — and the owners plan to keep it that way. That’s not to say they won’t ever try to brew a lager, but their devotion is to ales. When it comes to handcrafting a winning beer, Mullins said perfecting a flavor really lies in having a plan. “Just like cooking anything, you have to know what you want to come up with,” he said. “Like if you want to bake a cake,

you’re not going to throw cayenne in it.” Arestis said brewing beer requires patience and a certain tolerance for failure. “There is a trial-and-error aspect to brewing,” he said. “When we’re developing a new beer, we know what we want to end up with, but that doesn’t mean it tastes like you want it to on the first try. Sometimes, it takes a few batches to get the beer you want.” The beer they want is a variety of American craft brews, which means they use barley malt and don’t add rice or corn, additives that bump up the alcohol percentage without adding flavor. It also means that Mullins and Arestis are conscious of craft beer drinkers. Beer buffs — beer “snobs,” if you will — are also into food, and the Armadillo Ale owners intend to cater to those shoppers with future beers. “Something we definitely

want to do is host beer dinners with local restaurants, and serve our beers with dishes made to go with them. That’s something we’d definitely like to do,” Mullins said. Arestis mentioned something that might make beer lovers cheer: Armadillo ales are brewed for specific seasons. Fall could bring an Armadillo ale to sip while eating pumpkin

pie at Thanksgiving. Neither brewer is driven to turn Armadillo Ale Works into a big business. “Right now, we’re glorified home brewers. We want to stay small and make really good beer,” Arestis said. LUCINDA BREEDING can be reached at 940-5666877. Her e-mail address is cbreeding@dentonrc.com.

or the greater good of brainless summer entertainment, Transformers: Dark of the Moon rewrites history, twisting heroic events into a cheesy playground for the ultimate (that is, until next time) battle between Autobots and Decepticons. That trip to the moon in July 1969? It seems that was simply a ruse to cover up a crashed, out-of-sight spacecraft on the moon’s dark side.
