Greetings, As I write this, Dixie and I are preparing our belongings for the trip to the National Western Stock Show. The old saying “everything but the kitchen sink” has come into play. Some days I wonder if I don’t need a bigger bus/party van. When we get on the road, it will kinda seem worth it, the anticipation of all the old and new friends that we are about to encounter in our 5 day excursion will be unreal. I have been having some trouble with the food reporting lately but I think I tripped over my food story this month. It all happened this very morning. I had a sale that didn’t start until 2:00 pm and I had landed within 20 minutes from the sale site the night before. I have lots of trouble trying to sleep in most mornings but this one just felt right. The motel that I was staying had closed their breakfast bar by the time I got there and that left me no breakfast. As most of you know, its hard for me to skip a meal, so I went searching and landed in downtown Onawa, Iowa. I had

two choices and me being the rocket scientist I am I decided to see which had the most cars in front. I figure that the locals usually have it figured where the best food is. Obviously, I ate at the one with the most cars. It was Millers Kitchen. Millers Kitchen has to be one of the cleanest, most professional little hometown atmospheres I’ve been in, in awhile. The tables, chairs, and floors were polished to perfection. I’m telling you, you could almost see yourself in the tabletops. Another thing that really impressed me about this place is the space. I hate going into a restaurant that you are nearly sitting on top of the table next to you. Millers Kitchen is quiet, but alive, with laughter, and kids playing, but not annoying you. You can actually hear yourself think. If you hadn’t noticed, I like this place and we aren’t to the food yet. Not often do I write about breakfast but this one deserves it. My apologies to my waitress I did not get her name but again a very professional middle-aged lady. As usual, I can’t just order from the menu like everybody else. I have to make it difficult and the gal made it a very pleasant experience. I ordered what they called a meat omelet then added onion and green pepper. She assured me that they wanted me to order my breakfast the way I wanted it. I’m not sure who put this together but he or she has this ol’ country boy’s heart. I had to take a picture of it to prove what I got. You’ve heard of three egg omelets. Well, I don’t know who was counting eggs but this thing

“Greetings” continued from page 4 had to weight 3 pounds (well maybe not quite but big). Then big chucks of ham, sausage, and bacon and then to top it off, onion pieces that were big enough that you could see and taste them, then chased with peppers that I could see. Lets just say I had no need for dinner that day. What a dining experience. A breakfast to die for, professionalism that was unreal, and the cost was minimal. I’m not finished yet. After paying and picking up a business card, us older generation usually go to the restroom before getting back in the car to finish the trip. Maybe I am sharing too much information, but we have all been in those restrooms where you really hate to touch anything. Well, I have to say that the restrooms at Millers were amazingly clean. Not just that sparkling clean, not just a pleasant looking clean feeling, I do believe you could eat off the floor of this restroom. I was just impressed! This is a “your happy to be in the bathroom” clean. It doesn’t take lots to impress me, but clean everywhere will go a long ways. Millers Kitchen, I will be back. I was just flat impressed. I want to see what a dinner meal would be like at Miller’s. Sales are doing really well and as always, the good ones cost a little more. Most of the time, though, they are worth a little more. Iowa Foundation Heifer Program 2013 Winner Selected Ms. Sydney Black, daughter of Chris and Tara Black, of Ainsworth, Iowa has been chosen as the 2013 recipient of three bred heifers awarded by the Iowa Cattlemen’s Foundation & the Iowa Beef Breeds Council. Initiated in an attempt to help young Iowans begin foundaLeft: Bernie Bolton, Right Sydney Black tion beef herds, this is the third year of the Iowa Foundation Heifer Program. Sydney was chosen from a group of extremely well qualified applicants. She is a 7th grader at Highland Middle School in Riverside, IA. Sydney lives with her 10 year old brother, Isaac, and her parents on her grandparents’ farm near Ainsworth. She is an active member of the Washington County Highlanders 4‐H Club, showing both market and breeding beef projects. Sydney has aspirations of becoming a veterinarian. Her recommendations describe her as an honor roll student with excellent leadership qualities who is willing to accept responsibilities. She is an outgoing, enthusiastic young lady who selected Shorthorns as her breed of choice and is excited to begin her duties as the new owner of three Shorthorn and Shorthorn Plus heifers. Those heifers were purchased from Bern‐A‐Dale Shorthorns (the Bernie Bolton Family of Oakland, IA) by the Iowa Beef Breeds Council and the Iowa Cattlemen’s Foundation. At the end of 5 years, when she graduates from high school, Ms. Black will help further fund the project by contributing $6000. Sydney and her family will be present on Monday night, February 11th, at the IA Beef Expo Annual Kick‐off Party where she will be honored by the Iowa Beef Breeds Council and Iowa Cattlemen’s Foundation as a future seed stock producer. The grand finale of the evening will be the presentation of the winners of the prestigious Purebred Seed Stock Producer of the year and Commercial Seed Stock Producer of the year. The Iowa Beef Expo runs February 10‐17, 2013. The Iowa Beef Expo offers the opportunity for beef producers to make purchases from the wide array of seed stock sales. A number of display pens, as well as equipment and new products in booths are available for perusal and purchase at this year’s expo. The weekends before and after the sales are devoted to the juniors. The weekend prior to the sales is a livestock judging event for both college and high school livestock judging teams. The following weekend hosts the premier IJBBA cattle show of the year. Admission is free to an educational, once‐a‐year event. The potential of the cattle industry today is strong. Beef has always been the preferred protein source. Exports continue to grow around the world. There is something for everyone from the commercial to the purebred breeder. It is an event not to be missed. n

Faris Named Commercial Cattle Producer of the Year AMES, IOWA – Lee Faris, Mount Ayr, is well-known to Iowa cattle producers from his long involvement in leading both the Iowa Cattlemen’s Association, and in many environmental efforts to raise awareness of the value that cow-calf herds bring to Iowa farmland. That experience and willingness to be a spokesman for cattle producers earned him the 2012 Commercial Cattle Producer of the Year award from the Iowa Cattlemen’s Association and the Iowa Beef Breeds Council. He received the award at the 2012 ICA Annual Convention held Dec. 10-12 in

Altoona. Faris began farming in 1972, on 80 acres of highly erodible land. In 1973, he purchased 27 head of 3-year-old bred cows, and the next spring he bought a Simmental bull from a test station. He currently has 200 crossbred Angus-Simmental cows in his commercial breeding herd. Faris has been using performance records for building his commercial herd for 35 years. He first used the records to select bulls, but grew his use of the records to select his Spring heifers, focusing on those with a moderate frame, good disposition, and calving ease. Faris also uses the performance records on cows to cull the herd, too; looking for bad udders, hard calving records, low weaning weights of calves, and bad dispositions to make those decisions. Each year, Lee keeps about 10% of his calf crop for replacement heifers, markets his fall calves –about 20% of his total calf crop -- as weaned calves, and 70% of his calves…those that are spring calves, are marketed as yearling feeders. Lee uses pasture rotation for all his cows, which are on pastures of fescue and brome, with clover frost seeded every other year. He also invested in building water structures across his land for erosion control and to provide water for his cattle. Lee has had several notable achievements, including serving as ICA President, President of the State Soil Conservation Committee, and hosted several pasture and water tours on his farm. He’s an NCBA member, and received an NCBA Environmental Stewardship Award. Wait! Don’t Turn Out Those Old Show Heifers Just Yet!

Old show heifers, just may be the greatest tool with which to teach a youngster how to clip and fit! While doing our McCullough Fitting Clinics, we are often asked how a child can get better at clipping and fitting. At clinics, we can teach the proper techniques of clipping, the reason why you remove the hair and leave the hair in the places we do, but unless they actually get the clippers in their hands and practice, they won’t become great at it. Think of the great athletes. They spend countless hours practicing for an event. Michael Jorden, Shawn Johnson, Peyton Manning, Mia Hamm, Michael Phelps, Charles Barkley, and Brett Favre, to name just a few, did not play their first game or event ever and had never practiced. They spent countless hours practicing to be the best they could be. This is the same with showing, clipping, and fitting cattle. The more you get comfortable with the feel of the clippers in your hand, the comb, and show stick, the better you will be. Another question we get asked is, what age is a good time to start? Well, just like any other sport, the sooner you start the better you will be. Sure there will be some MAJOR screw ups, and that is part of it. This is why the old show cattle need to be kept around to practice on! We even, in the past, have broke 5 or 6 replacement heifers, for Erin and Cody to clip on, so they, and “WE” don’t have to worry, about them messing up on the cattle they are actually showing that year. As for learning how to fit, the more they do it, the better they will get. Our children were able to practice on the show cattle they were showing for the year. They just had to make sure

to oil and wash the glue out afterwards. They would apply an oil such as final Madison, Age 6, Clipping Sassy bloom or revive to the places they glued, in order to keep the hide from getting dried out. At first, the clippers were not used until they had the right idea of what the leg should look like and where the hair needed to come off. Working along side of a great fitter is a perfect way to be able to develop a young person’s skills. This works as long as the fitter will let them work along side of them, and the child will respond to constructive criticism. God has blessed us all with skills that He wants us to use for His Glory. Our job is to look at what we or our children are interested in, and help them become the best they can be. All athletes set goals and focus on developing their skills. I remember back on my 4H years and when starting out a new year, I would set goals on what I wanted to accomplish that year, and what I wanted to see myself get better at. If you do this, then you will be challenging yourself to work harder, and push, to become something better. “24 Do you not know that in a race all the runners run, but only one gets the prize? Dear Mr. Secretary, It has come to my attention, at the very end of last year, the USDA passed a rule to use hot brands as a part of the new U.S. Animal identification policy. I do not know how I missed this happening, but I recently learned of it’s passage from a report in a newspaper in Billings, Montana. Recently, Taylor enjoyed her first airplane flight and there was a lot of talking and preparation! I don’t know if I want to know all the things Tucker “explained” before our flight. As we were ascending into the clouds and Taylor was closely watching out the window, she finally turned to us and said, “I don’t see Santa, Cali or my balloon!” I had to nudge Tuck because he started to laugh. Just to explain, Cali is our cat that passed away and she is in heaven and the balloon would be courtesy of Miss Kennedy Core at the Iowa State Fair. Tuck leaned over and whispered, “When is she gonna let go of losing that balloon at State Fair! Jeez!” Then as we got off the plane Taylor gave new meaning to drama queen telling us she just couldn’t carry her backpack any more. I was proud of Tuck because he took her backpack put it on his shoulder with his own while taking her hand. Then he made me laugh as he leaned ahead of her and said, “Now don’t get used to this because you will have to carry your own bag at school next year.” In the spirit of getting ready for Iowa Beef Expo the kids and I made a trip to Guthrie Center to a little store called Glamified. This store was a fantasyland for Taylor and myself!!! Tucker was a little less than enthused but was a trooper and gave his opinion every once in a while. Glamified will have a booth at the Iowa Beef Expo and will have necklaces, bracelets, rings, hats, purses, headbands, wallets, clothing, etc! Seriously, Taylor and I tried on almost everything and probably drove the girls crazy, but we had a lot of fun!! Thank you to Melinda, Madisyn and Michaela Jorgensen for staying late and letting us play! Find them on Facebook! Lots of upcoming shows and sales, so I’d like to wish everyone lots of luck!
