Superfoods for Health Quinoa is perhaps our favorite grain. As one of the easiest and quickest grains to cook, it is definitely the grain of choice for the 30-Minute Vegan. There are several varieties available including white, red, and even black. High in protein and other nutrients such as lysine, which is good for heart health, it has a delicate nutty flavor. Add cooked quinoa as a side dish to many of the recipes in this book to create a thirty-minute meal. You can start cooking the quinoa before you begin preparation of another dish and within twenty minutes, you will have a nutritious side dish.
