Sonoma County, in particular, has enjoyed excellent recent chardonnay vintages, as has the Willamette Valley in Oregon. Some people like drier, crisp, more austere chardonnay wines with little or no oak. For Thanksgiving, I prefer oaky chardonnays, which tend to be fuller, even buttery, and have more peach, apricot and vanilla flavors. A few notable producers in the $15-$40 range include A to Z, Beringer, Crossbarn, Evening Land, Hess Select, La Crema, MacCrostie, Raeburn, Mer Soleil and SonomaLoeb, along with many others. My favorite American reds for Thanksgiving are pinot noir, zinfandel and syrah. Why not cabernet sauvignon? Cabernet sauvignon wines are often disappointing matches for roast turkey and stuffing. Cabernet sauvignon can be exceptional wine, but it can be too tannic and overpowering for turkey. [Okay… What does “too tannic” mean? Tannic refers to the mouth dryness and puckering caused by an astringent chemical compound in wine called tannins. You may have experienced these sensations when drinking red wines. Tannins abound in bold, powerful red wines like cabernet sauvignon, French Bordeaux and Spanish rioja, especially when they’re young. They’re in the grape skins used for making all red wines as well as the wooden barrels used for aging. They help give red wine structure and provide preservatives which help some red wines age for many years and, when properly stored, hopefully improve. As these wines age, tannins become “softer” and less apparent as they change
