The re-emergence of the classic dinner party in today’s culture gives everyone the opportunity to entertain, while also displaying their personal style. However, the thought of planning décor, food, drinks, and ambiance can be overwhelming to those just dipping their toe into the world of entertaining. With a few simple tricks and planning, you can provide your guests with a cozy, elegant get-together that feels effortless.
TABLE SETTING: Whether you’re starting from scratch, or already have a few table staples, you want to gravitate toward neutrals while shopping. Starting with a neutral pallet as a base can give you a blank canvas to create a stunning table-scape all year long. Once you have the basics, you’re able to add pops of color and seasonal flair to keep it fresh and festive, without breaking the bank during every seasonal change. BAR SETUP There are a few options when it comes to curating the bar. Considering you’ve done all the shopping, cooking, and hosting, don’t be hesitant to ask your guests to BYOB. However, if you do decide to stock the bar, one light and dark liquor, and a classic red and white wine option should do. Regardless of the drinks being served,

it’s always important to have the bar set up properly, so you don’t have your guests asking for mixers, ice and garnishes while you’re trying to cook and mingle.
HERE’S WHAT YOU’LL NEED: • • • •
Ice bucket with scoop Mixers: Club Soda, Tonic, cola etc. Garnishes: Limes, Lemons, Oranges, Grapefruit, Olives Rocks and wine glasses
DINNER The options are endless when it comes to the menu selection for a dinner party. The key things to remember are guest preference, and timing. The most important thing to consider when hosting a dinner part y is the comfort of your guests. When inviting them, be sure to ask if they have any food allergies, and if there is anything they absolutely will not eat or do not enjoy. With this simple step, you can rest easy knowing that ever yone will be accommodated. Once you have the food preferences of your guests determined, it’s time to consider a dish that is appropriate for your time frame. I personally like to make things that can be prepared in advance, with a little tending to once dinner is ready to be served. For beginners, I’d say this is the best route for your first go around. This dish can be prepped ahead of time, and requires little fuss.
RECIPE: PARMESAN CRUSTED SNAPPER WITH LEMON CAPER BEURRE BLANC (YIELDS 4 SERVINGS) INGREDEINTS: • • • • •
4 skinless Snapper Filets 2 cups panko breadcrumbs 1 cup Italian blend grated cheese 1 tbs chopped fresh parsley 1 tsp red pepper flakes
• 1 tbs garlic powder • 1/4 cup olive oil • Salt and pepper
METHOD: • Combine breadcrumbs, cheese, herbs and spices. • Place snapper filets on a parchment lined baking sheet and season with salt and pepper. • Brush the tops of the filets with olive oil, and neatly spoon the breadcrumb mixture atop the filets. • Set aside until 20 minutes prior to serving. • Bake at 450° for 10-15 minutes depending on thickness. Broil for the last few minutes if topping isn’t brown.
LEMON CAPER BEURRE BLANC INGREDIENTS: • • • •
2 sticks of unsalted butter cubed ½ cup white wine 1/2 cup lemon juice ¼ cup capers
• 2 cloves minced garlic • Salt to taste
METHOD: • Pour wine, lemon juice, and garlic in a sauce pan on medium heat. Let simmer and reduce until 1-2 tablespoons of liquid remain. • Reduce heat to the lowest setting and whisk in the butter, only 2 cubes at a time, whisking constantly until melted and emulsified. • Once this step is complete, remove from heat and spoon in capers. Season to taste. • This fish can be served with mashed potatoes, jasmine rice, or a simple green vegetable. Bookend the meal with a fresh salad, your favorite dessert, and you’re on your way to becoming a host with the most! School is back in session and with the holidays right around the corner, we could all use a helping hand in some way. While I can’t take your kids to school or help you hang your decorations, I can give you some tips and recommendations on how to choose the best wine for you and your guests! My brother, Rivers Bradford, is a certified Sommelier and works at Wine Bar George in Disney Springs as a bartender. Wine Bar George is led by Master Sommelier George Miliotes, and is the only place in North America to offer 170 different wines by the glass, the bottle and the ounce. It has won numerous awards such as Best Micro Wine List in the World 2019 and Wine Spectator Award of Excellence from 2019-2022. Rivers got started in the hospitality industry as a server and has been a practicing Somm for about 6 years. His love and passion for food and wine comes from our father, who is a collector of wine, and is always enjoying a glass at dinner. Being a certified Sommelier and a bartender, he gets to use his knowledge about wine and food pairings, but also his creativity to help customers choose the right drink. His passion exudes through him while he works, from the way he interacts with customers, to the way he makes cocktails, to his leadership behind the bar with co-workers. It’s easy to tell he cares deeply about his craft and wants to share it with the world. That is why there is no one I trust more to help give us a little advice when it comes to the dining experience.
WHY IS WINE IMPORTANT TO THE DINING EXPERIENCE: The first thing that comes to mind is it can amplify anything you are eating. When you have a wine properly paired with your food, it can entirely change the way you perceive and taste that dish. A good wine pairing should elevate your food experience.”
WHAT IS THE SECRET TO CREATING A PERFECT WINE PAIRING WITH A DISH? “There is no perfect pairing. It all starts in the kitchen and what types of seasonings the chef is using. To me, it is much more important to select a wine that you personally enjoy. However, there is a traditional structure you can follow such as having a wine with more of a tannic structure that is bigger and bolder is flavor profile like a Cabernet to go with your red meats. When it comes to fish and veggies you will want to go lighter bodied like a Sauvignon Blanc or a Pinot Noir.” CONTINUED >

HOW WOULD YOU ENCOURAGE SOMEONE TO TRY SOMETHING NEW AND A LITTLE OUT OF THEIR COMFORT ZONE? “Don’t be afraid to ask questions. Whether you are at your local wine shop or out to eat, ask for the owner or the Sommelier and let us help guide you.”
WHAT ARE THREE WINES THAT EXCITE YOU RIGHT NOW? “I have been loving Nerello Mascalese which is a light grape coming from Sicily. I always love Riesling, it is a wine I always come back to over and over again. Even sparkling Riesling which is something fun, dry, and bubbles are always exciting. And my cheap option would be Beaujolais which is a lighter more medium body red that really goes well with anything, in fact I call it my Thanksgiving wine!” Wine, like your taste buds, is always changing. So, grab a friend, a new bottle of wine (maybe a couple), and let yourself explore. Pair it with some charcuterie or your Thanksgiving meal, even some Halloween candy… you never know what perfect pairing you may discover!

COCKTAILS TO TRY: Wine Bar George’s Seasonal Collins, which changes every season. A Collins usually includes gin, simple syrup, carbonated water, and freshly squeezed lemon. Second is the Paper Plane, which consisted of whiskey, lemon juice, amaro nonino, and aperol.

INGREDIENTS: CRUST: • 2 ½ cups flour • 2 sticks cold butter cubed • 1 tsp salt • ½-¾ cups cold water FILLING: • 1-2 cups cooked shredded chicken (I used a rotisserie chicken) • 2-3 carrots • 2 stalks celery • ½ cups cauliflower • 1 ear of corn • ¼ cups frozen or fresh peas • ½ yellow onion • 6 tbs butter • ¼-½ cups flour • 1 tbs powdered chicken bullion • 1 bay leaf • 1 box low sodium chicken stock • 1 egg beaten
METHOD: CRUST 1. In a large mixing bowl combine flour, salt, and cubed butter. Press the cubes into flat sheets, incorporating them into the flour. 2. Then drizzle in the ice water just until the dough comes together. 3. Pour onto a floured surface and knead until you have a cohesive dough that isn't sticky. Form into a disk, cut in half, wrap both pieces in plastic, and store in the refrigerator for 1 hour. FILLING 1. Chop vegetables in a medium dice, cut the corn off the cob, and measure out peas. 2. Melt butter and sauté onions until translucent. 3. Whisk flour into butter a tablespoon at a time until the butter is completely absorbed, and a thick clumped roux forms. 4. Whisk chicken stock into roux a ½ cup at a time. It will take some time for the chicken stock to thicken and meld so be patient. The end result should be the consistency of a thick clam chowder. 5. Next, stir in bouillon, bay leaf, and all of the veggies. Reduce heat to low, add a lid and allow the veggies to cook for 10-15 minutes until the carrots are softened. 6. Once cooked, remove from heat and allow to cool while you shred your cooked chicken. 7. Roll out crust into thin sheets. Line a pie dish with the bottom crust. 8. Gently fold the chicken into the cooled filling mixture. Pour the filling into the bottom crust. Add the top crust to the dish and trim the edges leaving 1 inch excess. 9. Tuck the excess edge of the crust under into the pan and press down on the edges with a fork, making a crimped seal.

Not only are they known for their exceptional Italian food, but they are also known for their wine collection, which carries over 500 bottles.
Bella Tuscany is Windermere's neighborhood Italian restaurant and just celebrated its tenth anniversary in September. Carlos Sciortino, the owner, originally had several pizzerias throughout the area and landed on Bella Tuscany to hone in on where their real passion was, Italian food. As a result, they put out high-quality food that you'd typically find at only the most prestigious spots in the country. Every dish, from pasta and sauces to dressings and even dough is handcrafted from scratch. The Executive Chef, Driss Aloui Tahiri, has been with Bella Tuscany since the beginning and has always pushed his talent to create beautiful dishes that will tantalize each customer's taste buds. He won't serve a dish unless he has perfected how it looks and tastes. Chef Driss is constantly crafting high-quality dishes and using the freshest locally sourced ingredients whenever possible. Some of their specials include the duck breast, which I consider the best-tasting variation I've ever tried, the Blue Cheese Fiocchi, which is a purse-shaped pasta stuffed with pear and cheese, and the white clam linguine. However, Chef Driss doesn't limit the menu to only "traditional pasta" dishes. He will also have items on the menu such as Chilean Sea Bass, Lobster Ravioli, and even a Sicilian Snapper with Shrimp. Not only are they known for their exceptional Italian food, but they are also known for their wine collection, which carries over 500 bottles. When you want a glass of wine, you can choose from hundreds of bottles of wine at Bella Tuscany. Since all their wine is opened via coravin, each glass will be as good as the first glass poured from that bottle. This attention to the customer's ultimate experience goes back to their goal of ensuring each customer feels like they are the most important person. Whether it be one of the many theme park executives that frequent

the restaurant or the young couple grabbing a pizza together after school, everybody will be given the same "white glove" treatment as the next. This successful strategy has led them even to open up a new location in Ocoee, where Rusteak (see our story on them in the June 2022 issue) was located. This new location will still carry an extensive wine list as well as the same award-winning Italian food found at the original restaurant. Not only do they have wine, they also carry many local Florida beers on tap and a full bar. Bella Tuscany, being the "Neighborhood Restaurant," is huge on community outreach and is consistently working with local schools and organizations to help with charity events and programs. All of this strengthens their relationship with the community and perfectly shows why they are the favorite neighborhood spot for locals. Bella Tuscany has one of the strongest happy hours in Central Florida. Their happy hour is every day from 2 pm-7pm and contains deals such as $6 house wine and $6 cocktails plus much more. If you have the time to stop by at lunchtime or eat at the bar, you have to check out their Duck Wings! These lightly breaded, deep-fried wings are tossed in a teriyaki glaze and are one of the more unique but tasty things you'll find on the menu. You will surely have an impressive experience at Bella Tuscany, whether it be from their massive wine collection, incredible food, or the equally spectacular decor throughout both locations. You will leave feeling like you just had an amazing dinner at a worldclass restaurant, all without leaving your hometown. I like to think of the human body as a beautiful plant with limitless capabilities. I understand this is a super simplistic way of looking at the human body, yet most can relate to a plant and what it takes to thrive. When considering a plant, we understand that what we feed ourselves and the environment surrounding us will determine our capabilities and limitations. Our body is made of chemistry, with its mass comprised of only four elements, oxygen, carbon, hydrogen, and nitrogen, where about 96% of which is water. Therefore, we need to eat in a way that targets our core makeup. I believe this is how we eat to live. Here are my five favorite food picks for healthy living in your daily diet. 1. Leafy greens: kale, lettuce, and spinach All are excellent sources of dietary fiber, which helps maintain heart health and blood sugar levels. They give the body a sense of fullness, adding to weight loss as the appetite is lowered. They are digestion roughage which allows for better digestion and smoother bowel movements. These leafy greens are high in folic acid, which according to the Journal of Physiology, alleviates depression and fatigue. 2. Broccoli High in vitamins C and K, broccoli has iron, potassium, and fiber to feel full quickly. It can be enjoyed both cooked and raw, which is the best for maximum nutrients. Broccoli is high in choline and Vit K and contributes to memory function and focus. Broccoli is higher in protein than most vegetables. 3. Nuts Almonds, cashews, and walnuts are packed with nutrients. Nutrients rich in iron, zinc, calcium, magnesium, and folate are healing machines. They have healthy fats that help regulate LDL and HDL cholesterol levels and blood triglycerides. They are heart friendly with mono-saturated fats to keep the heart healthy and decrease heart disease. The David Geffen School of Medicine at UCLA found that the high antioxidant content and
the alpha-linolenic acid (plant-based omega-3) in walnuts can improve brain function. Yes, I believe we should be eating nuts every day. 4. Berries and fruits Berries are full of antioxidants. They protect your cells from free radicals, the etiology of many chronic health problems like cardiovascular disease, inf lammatory disease, and cancer. I’ve always been taught the brighter the berry, the better the healer. We’re talking about cranberries, strawberries, and my favorite, blueberries. Blueberries are known to fight inf lammation, so if you are headed into or are already into stressful situations, pack in some berries. Did you know that studies show that a chemical called tryptophan in bananas can regulate mood? We know about potassium, vitamin B, and folate but also understand they can help fight depression. 5. Yogurt Your gut is on the front line of your overall health, where 80% of your immune system resides. In our gut, we have a complex microbiome community which is essential to our health. Put simply, the good must outweigh the bad. A probiotic is an ingredient that contains live bacteria. Yogurt is a great probiotic and good gut bacteria. When we have a healthy gut, we have a healthy body. In addition to gut health, Yogurt also contains calcium, vitamin B-2, vitamin B-12, potassium, and magnesium. There are so many wonderful foods that love us back. I couldn’t name them all, but here are some more that deserve mentioning. 1. Salmon - reduces brain fog and increases memory and concentration 2. Beets - increase blood flow 3. Avocado - healthy fats improve brain functions 4. Quinoa - shown to have anti-depressant effects 5. Dark Chocolate – is shown to reduce the stress hormones and is an antioxidant.
