Food for Thought

October is our Food and Beverage issue and these are 2 of some of my favorite things to do.  I love trying out all our local establishments and Windsor truly has so many amazing options to pick from.  Recently we did a fun giveaway on our Instagram page and guess what? Windsor has over 20 amazing patios to eat and drink on....so fantastic!  I think that some people are quick to go out of Windsor when they are headed out to eat and drink, but the truth is that Windsor has so much to offer.  Everything from American, Italian, Creole, Thai, Breweries, Chinese, Mexican, and BBQ to reserving a spot at the Bottled Olive for their many cooking classes that are available throughout the year.   Also, If you are looking for a private room to have a meeting or specialty event, just to name a few...Cacciatore, Coffeehouse29, The Mill Tavern, and there are many more.

I encourage you to get out and take the family or plan a date to one of our unique spots right here in Windsor and before you do, thumb through all our pages to see some of the people and things that make Windsor so amazing!

I’ve been a community banker in Windsor for 22 years; 12 of those years have been with Windsor State Bank. DELECTABLE FAIR FROM YOUR LOCAL FAVORITES

Grilled Avocado From the Bottled Olive of Windsor

INGREDIENTS

• 2 whole ripe avocados

• 1 tablespoon freshly squeezed lime juice, more as needed

• 1 tablespoon  Caramelized Garlic Olive Oil*, more for the grill

• 1/2 teaspoon Citrus Lime Sea Salt*

DIRECTIONS

1. Prepare a medium-high (400 F to 425 F) indirect gas or charcoal grill fire.

2. Slice the avocados in half lengthwise. Remove the pit, peel and immediately cover the flesh with fresh lime juice.

3. Brush olive oil onto the surface of each avocado and sprinkle with salt.

4. Oil the grates and place the avocados cut side down over indirect heat on the grill

5. Grill with the lid open for 2-3 minutes per side until the avocado becomes slightly tender when gently squeezed with tongs.

6. Remove from the grill. Serve with more lime juice and salt, if desired.

INGREDIENTS

• 4oz Charlie Joe Original Chai Concentrate (sold at CH29)

• 4oz Oatly Oat Milk

• Cinnamon Powder (for garnish)

DIRECTIONS

1. Mix the CJC concentrate with oat milk and microwave for 60-90 seconds. Even better, warm the concentrate and milk in a saucepan and bring to a boil twice.

INGREDIENTS

• 2 lemon slices

• 3 mint leaves

• 3/4 oz simple syrup

• 1.5oz Tullamore D.E.W Irish Whiskey

DIRECTIONS

1. Muddle lemon and mint with a splash of water on the rocks in a glass. Add simple syrup, whiskey, and ice and stir. Top with a splash of water.

The saying “Be the rising tide that lifts all boats” seems to fit the small business tribe of Windsor impeccably. Rallying with one another and supporting each other through the hard times and the good has become the norm for this community. They have learned that success is not just about them, but about lifting those around them up and reaching their goals together, as a team. When you look at the partnerships and friendships that can develop because of this mentality, you see bonds form that can help weather any storm. This kind of mentality, one of connection and empowerment not only encourages growth, but it breeds a space for amazing things to blossom out of that foundation and supports the well-being of our communities.

A few relationships that have become a pillar of this example include run.Windsor, Peculier Ales, and Gourmet Grub. All three businesses have a unique story, heart, and background that make them exceptional all on their own, but together they have created a support system that they continue to weave other businesses, charities, and events into.

Peculier is a hub in the downtown community, where people may enter as a stranger, but always leave with a new friend or connection. They opened their doors in

August of 2020 during what most people considered a difficult time, but they have thrived because of the community surrounding them, the people working for them, and the support they have given back in return. Gourmet Grub (whom many of you know from their insanely delicious dishes from Peculier and their previous Greeley location) are becoming more and more involved within the community and are associated with multiple upcoming projects.

Chef Justin Brown brings his extensive experience and delectable plates into the Peculier atmosphere, offering up a whole new meaning to food truck fare. Mandy Mullen of run.Windsor has always tried to include a stop at a local establishment or a collaboration in all her races or group runs, to support business owners and to help connect others within the community. With a downtown location right by the lake, Peculier and Gourmet Grub have become a central part of that tradition. “Runners love a place to hang out, to socialize, to drink beer, and for us, it was like we just became friends and family with the Peculier team and loved showing up here to socialize and bringing our families in for dinner and beer, or whatever it was, and it just grew from there,” shares Mandy.

Their most recent collaboration for the Weld Your Mettle race, however, is something special. This race, created in October of 2020 as a nod to surviving hardships in life, is aimed at celebrating the strength, grit, and determination it takes to get through the tough times and to persevere even when the odds are difficult. That is where the name originated from, “Weld (for Weld County) your Mettle.” When the team from run.Windsor and Peculier sat down to discuss the race, they decided to create a special beer for the race and its attendees, including a label featuring the runners.

Wanting everyone to thrive and come together as a collective has changed the way Windsor small businesses interact with not only their customer base but with one another as well. Having a local family you can count on is real, and not only has it strengthened the community and boosted its morale, it has provided an infrastructure that helps the entire town flourish.

Amanda Hiller has always been a goal oriented individual. She achieved great success during her career in the corporate world. Like so many others in 2020, she found herself in search of a new chapter to write. Taking the knowledge she gained in corporate America, she would then pursue a passion and apply that to her own business.

Growing up with a passion for cooking, Amanda found cooking a peaceful way to reduce stress and nourish her body with healthy home cooked meals. Her favorite foods to cook are Italian and French. She enjoys being able to zone out and focus on the recipe and the creation.

As a resident of Windsor, Amanda had been a fan of The Bottled Olive since its inception. She fell in love with the oils and vinegars and how much it elevated her dishes and fueled her passion for cooking. When she learned that The Bottled Olive was looking to sell, she began to ask herself what she wanted to do and be and what she was most drawn to. Taking a cue from her mentor she decided to stay true to herself and follow her passion to “make life meaningful." In June of 2020, Amanda became the owner of The Bottled Olive in Windsor. Her favorite part of owning the store is the interaction with the clients. She

loves to share her joy of elevated cooking through the oils, vinegars, spices, and pastas available in the store. Helping someone discover a new recipe, flavor, or way to spice up their dishes and supporting others helps fill her cup. Sharing enthusiasm over a recipe or experience creates new connections within the Windsor area community.

The store has over 52 flavors of oils and vinegars that clients can use in a variety of ways and dishes. They are known for the incredible gift baskets that cover any occasion and their demonstration style cooking classes that highlight the best recipes featuring their products.

This new chapter brings forth a different kind of success for Amanda, one where she can help people, engage them and make good relationships along the way. Her goal, along with her team, is to make sure that every person that shops at her store leaves with the feeling that their day is a little better, brighter, and more flavorful.

When not working in her store, you will find Amanda supporting other local Windsor businesses through shopping locally and serving and volunteering for numerous non-profits throughout the community.

A STORY OF STRENGTH THROUGH GIVING

JWILL PINK VILLAGE

Sometimes we find our calling and our purpose hidden inside our hardest moments, and in some cases, the smallest gestures carry the most weight on our journeys. Unbeknownst to Jen Willard, one small gift during her biggest battle would shift the course of her direction forever, teaching her that there is always a village supporting you.

At 41 years old, Jen was diagnosed with stage 2 Breast Cancer. Her diagnosis came on the afternoon of Christmas Eve in 2015 and less than two months later she had a double mastectomy with immediate reconstruction. Fortunately, her treatment plan did not include chemo or radiation but due to complications from her initial surgery, she ended up with four more surgeries. As she was getting discharged from Littleton Adventist Hospital from her mastectomy, the nurse handed her a heart shaped pillow, which she didn’t think much of at the time. Due to her complications, she would end up at Rose Medical weekly for the next six weeks with her plastic surgeon and during that time, her little

heart shaped pillow became a God send. The pillow had a strap that attached it to the seatbelt in the car, to provide comfort during car rides to and from the hospital. The pillow may look simple, but to Jen, each pillow represented a life and a story like hers and she knew each recipient would fight a battle of their own.

As she faced speed bumps in her recovery, she kept thinking of all the people that had been so good to her and her family and how she could pay it forward and give back to the community that supported her when she needed it most. She kept coming back to the pillow, as this small gift had made an everlasting impression on her heart. A stranger volunteering their time to put something so small together for her during such a scary and uncertain time in her own life.

As a girl growing up, one of Jen’s biggest inspirations was her great grandmother Grace. “She inspired me because she was just always a helper in her community, whether that was in our church or volunteering at our local nursing home, she just was always known as a helper, and it was just such an inspiration to me. She always had a smile and a kind word and that meant a lot because she always gave her time” stated Jen. Because of this, she observed that the power of a stranger’s kindness and time can cause a ripple effect that makes a difference in the lives of so many others.

Determined to return the kindness that was shown to her in her storm and pay it forward, Jen organized a sort of “gratitude project” if you will. Her goal was to make and donate 75 of the heart pillows that were given to her to her local hospital, AdventHealth Avista, where she received her first mammogram. So, on August 3rd of 2017, Jen launched JWill Pink Village (also her 18-month cancer free anniversary) and set out to organize donations, volunteers, and coordinate this project so they could reach her goal and deliver the 75 handmade pillows by October. Blessed with the love and kindness of her friends, family, co-workers, and neighbors Jen was not only able to reach her goal but to double that amount and donate 150 pillows to the hospital by October

for Breast Cancer Awareness month. Each pillow was cut, sewn, stuffed and hand sewn closed by volunteers and Jen hand wrote all 150 survivor tags for the pillows. She knew that each pillow would be given to either a thriver, or a survivor in their battle against breast cancer, and she understood the weight that those small gestures carry in the lives of those that would need them.

Once Jen exceeded her goal, she found that there were so many volunteers stepping forward to help in various ways that she felt a pull to drive this gift of giving forward. There are numerous groups of volunteers throughout the state that gather and donate their time to assembling each and every pillow. One of those volunteer groups is right in our own backyard at 55

Two of the volunteers Kathy Berlingeri and Babette Basiliere help organize the gatherings at the Windsor chapter, meeting bi-monthly to assemble pillows.  JWILL has evolved and is now a 501c3 nonprofit and in 2019, they developed a patent design for their pillows, along with a trademark for their logo and name. To date, they have gifted over 6200 pillows across 40  different states, including Puerto Rico and Australia. Every pillow represents a life in the breast cancer community, either newly diagnosed, having a mastectomy, or currently in chemo/radiation treatment. Each pillow includes a handwritten tag that is only written by a breast cancer survivor or a thriver, that they enlist help in order to accomplish this particular task. These special pillows are distributed specifically through hospitals that do mastectomy surgeries. The goal for each hospital is to gift at

least one year's worth of pillows to support the number of mastectomies that hospital performs in a year. The pillows are not for sale; however, the organization does ask for donations to help them keep blessing more in need.

JWILL has changed the lives of countless men and women,  helping them heal both inside and out. For Jen, the opportunity to give back to the community and be able to provide comfort to those fighting their toughest battle is a blessing and she often finds that her kindness tank is overfilling on a regular basis thanks to the pink village community. Since her recovery, Jen chooses to look at life differently, being more present, seeing the beauty in all the small things surrounding her, taking chances,  and valuing the time she has with the people that mean the most to her. She gives because she knows how much a person’s kindness can alter another’s story, and that kindness is something we can all give more of.

Betta Gumbo’s Smoked Bris ket

Smoked Brisket Recipe

ingredients

• 1 whole beef brisket (10-12 pounds)

• 1/4 cup kosher salt

• 1/4 cup black pepper (coarsely ground)

• 1/4 cup paprika

• 2 tablespoons brown sugar

• 1 tablespoon garlic powder

• 1 tablespoon onion powder

• 1 tablespoon cayenne pepper (adjust for spiciness)

• Wood chips (hickory, oak, or mesquite) for smoking

1. Trim the Brisket:

• Remove excess fat from the brisket, leaving about 1/4 inch layer.

• Trim any tough or uneven parts to create a uniform thickness.

2. Prepare the Rub:

•  In a bowl, mix kosher salt, black pepper, paprika, brown sugar, garlic powder, onion powder, and cayenne pepper to create the dry rub.

3. Apply the Rub:

• Coat the brisket generously with the dry rub, pressing it onto all sides.

• Wrap the seasoned brisket in plastic wrap and refrigerate for at least 8 hours, or overnight, to allow the flavors to penetrate.

4. Prepare the Smoker:

• Preheat your smoker to 225°F (107°C).

• Soak wood chips in water for about 30 minutes, then drain.

5. Smoking Process:

• Place the soaked wood chips in the smoker’s wood chip box or directly onto the coals.

• Place the brisket on the smoker grates, fat side up.

• Close the smoker and maintain a consistent temperature of 225°F (107°C).

• Smoke the brisket for about 1.5 to 2 hours per pound, or until it reaches an internal temperature of 195203°F (91-95°C).

6. Resting and Slicing:

• Once the brisket reaches the desired internal temperature, carefully remove it from the smoker.

• Wrap the brisket in foil or butcher paper and let it rest for about 1 to 2 hours. This allows the juices to redistribute, resulting in a tender brisket.

• After resting, slice the brisket against the grain to ensure tenderness.

7. Serving:

• Serve the smoked brisket slices with your favorite barbecue sauce, pickles, onions, and bread.

• Enjoy your delicious smoked brisket!

Note: Smoking times can vary based on factors like smoker type, weather conditions, and brisket size. It’s important to use a meat thermometer to accurately monitor the internal temperature and achieve the desired level of doneness.
