PERHAPS YOU’VE AVOIDED RESTAURANTS AND SOCIAL INTERACTIONS FOR LO, THESE MANY MONTHS. “Social” is a concept you’ve almost forgotten and the only “mingling” you’re doing is mint leaves with bourbon. Now, Doug spent years standing beside, and learning
from, Michelin masters. He learned to “knock off” some of their five-star dishes and re-make them with an HM sensi-
bility. For instance, he transformed Le Bernardin’s delicate slips of fish into a heartier, more “approachable” special for his own menu. His excellent tuna tartare is inspired by Alfred Portale of Gotham. His steak au poivre is re-imagined from the tables of Raul’s in SoNo, and a bacon board with waffles stems from David Burke’s clothesline bacon. Actually, this “last” part is the whole point: luxuriating in the cozy neighborliness of a home-away-from-home in which the meal options are better and more diverse than the options in your freezer. You don’t have to do the dishes, shake the drinks, or throw more logs into the strategically placed fireplaces. And enjoy the fact you weren’t the one opening a restaurant during a pandemic. THOUGHTS ON DESIGN:
ABSENCE OF COLOR I came across this photo recently of a porch I did in a home in Easton. The homeowner has had a fascinating life. A Kenyan-born Brit, she spent years traveling with her late husband, an archaeologist, living in Cyprus, the Sultanate of Oman, Egypt. I was struck by the way the angle of the chairs echoes the rock path outside. An envelope of white. Pale cement floor. Black wrought iron. Rich woods. Backdrop: nature. The pieces in the room, they are alive, conversing! The plaid of the chairs,
linear curve of the camel stools, cedar legs of the driftwood table reaching out. Just the faintest rose of the pear. There is such beauty in simplicity.

INGREDIENTS + Quality chocolate: Any variety, semi-sweet, milk, or dark + Cocoa mix: The better the quality, the better your hot chocolate +Marshmallows – Mini marshmallows work great, but feel free to get creative! +A Silicone Hot Chocolate Bomb Mold Perfect Valentine's gift!

DIRECTIONS 1. Microwave chocolate in 15-second increments

2. With a spoon, evenly cover the interior of the mold with chocolate. Chill for several minutes. 3. Remove and examine molds, applying more chocolate where needed: thin edges (if the edges are thin the spheres will break), holes, or thin spaces. If the mold is visible through the chocolate, re-layer the whole mold. 4. Chill again for 5 minutes, then carefully remove half-spheres from the mold. 5. Heat a small pan over low heat. Take one sphere and briefly touch the edge of the sphere against the surface of the pan to make a smooth edge (this happens quickly). 6. Add 2 teaspoons of hot cocoa mix and any other add-ins you’d like. 7. Take another half-sphere and quickly melt the edge on the pan. Press the filled half-sphere and the half you just melted together carefully but firmly. Line the edges up as well as you can to minimize the appearance of the seam. 8. Decorate the top as desired!
