Food Is Love ONE WESTMINSTER FAMILY USES THEIR EXTENDED TIME AT HOME TO GO ON A CULINARY ADVENTURE
ARTICLE BY CHERYL SCHUBERTH Love is in the air. In my house, that often means incredible aromas are pouring from the kitchen. We aren’t classically trained chefs, but appreciate good food from scratch. It’s amazing how those wafting smells can bring back memories of first dates, family holidays or a favorite restaurant. We encounter various smells everyday but few are tied to memories and good vibes quite like food. In March 2020, as the world went on pause, my family and I embarked on a culinary adventure. Each week we created a menu from a different region of the world and we all chipped in to make an amazing dinner together. We started with what was familiar, spaghetti and meatballs, and expanded to farther reaches of the globe in Argentina, West Africa and India.

We were all a little surprised by how well (most) of the meals turned out but the real memories are in the missteps, the conversations, and the messes. And those all come flooding back when we catch an olfactory reminder of one of those incredible evenings together. That time in the kitchen gave us lessons having nothing to do with food. Lessons about me letting go of my former career and learning to hand over control. About my teenage boys working in concert to serve up a delectable meal. About just being present and enjoying the family time together. The dinners were so impactful on me that I wrote a book about it. During the holidays in 2014, I was faced with one of the biggest scares I have ever encountered. My 31-year-old husband Cody developed a common virus. At the time, he was working two jobs and studying for his Ph.D. in atmospheric sciences, while helping me raise our two-year-old son Jaren. I was nine months pregnant and due to deliver on Christmas Day. Needless to say, rest was a novelty. The virus started to get better, but suddenly he started to feel sick again. He was losing his breath when he would walk up the stairs, and his heart started to beat rapidly at random times. On December 3, 2014, Cody decided to take himself to the emergency room. He called me from the emergency room at 2 a.m. and let me know the doctors felt he may be having a heart attack. I bundled up my son, placed him in his car seat, and headed to the hospital. After a more thorough exam, the doctors discovered he actually was not having a heart attack, but he was going into congestive heart failure, a condition in which fluid builds up around the heart and causes it to pump inefficiently. We were both in shock. I called my parents, and they flew out from Florida to watch our son, Jaren. For the next two weeks, I watched my husband decline to near death. On December 7, he was taken by Flight for Life to the Cardiac ICU at University of Colorado Hospital with a machine helping to pump his heart. Jaren said, “Mommy, God will save daddy”. This gave me hope, and I realized hope was my son’s superpower. I remember seeing my husband lying in his bed nearly colorless, still trying to be kind and funny, and thinking, “My children cannot grow up without their dad. I have to do something about this.” Every night when I would go home, my son would greet me by saying “mommy, it’s time to pray for daddy”. I called all of our friends and family from all over the country.

Several friends and family flew in to be by Cody’s side and support me, and those who could not prayed for us daily. I spent each day at the hospital from 5 a.m. until midnight. Every morning I would walk in the door, Cody would have a huge smile on his face and say, “Now I have hope. I am fighting to stay alive for you and our family.” Twenty-one days later, Cody was miraculously healed from acute viral myocarditis. He not only survived, but avoided organ transplants after suffering from end-organ failure for days. It was truly a Christmas miracle. Seven days later, our baby girl was born. Cody was able to be in the hospital room with me. We decided to name our little girl Isla Hope. In the midst of the struggle, we had hope. I truly believe hope is our super power, and a smile can inspire hope. I love seeing children excited to come to my dental office: that’s why we strive to create a joyful, fun, safe environment for kids and their families. Seeing kids love their smiles and helping them build strong self-esteem is a huge goal for me. If as dentist I can help children feel confident in their smiles, then they can go out and inspire hope for others as well. When a local jewelry retailer gets voted one of “America’s Coolest Jewelry Stores” it makes you stop and take notice. The creative energy behind every custom diamond piece from Thollot & Co. points to the love story of its owners, Joy and Troy Thollot, who we’d like to introduce you to here. Based in Thornton, Colorado, the Thollot Diamonds journey started in Illinois during the fall of 1987. At the ripe, young age of 18, Troy had spent his summer as a lifeguard on the outskirts of Chicago. With winter fast approaching, though, he needed a job that didn’t involve being outside in his bathing suit. Near the pool where he worked there happened to be a lovely, upscale mall. Venturing to the mall in hopes of finding an indoor job that would allow him to work and go to college, he picked up applications to various retail establishments. While on his job-hunting mission through the mall, a jewelry store, or rather the pretty girl working in the jewelry store, caught his eye. Troy interviewed with the owner and also with the young woman who captured his attention. He found out her name was Joy, and she was the jeweler of the store. Troy was hired by the jewelry store for such prestigious duties as taking out the trash and cleaning up the bench. At this time, Troy was going to college part-time but within a year, he was also learning the bench. During that time Troy fell in love with the jewelry business . . . and also with that pretty jeweler. Soon, Troy and Joy were married. With a shared love for the jewelry business, Troy and Joy went to the Gemological Institute of America (GIA) and became GIA Graduate Gemologists. The pair then decided to move around a bit to get the feel for the business, gaining experience in high- to low-end jewelry stores and everything in between.

The couple lived and worked in Charlotte, North Carolina for about a year and a half. After that, they moved to Cincinnati and lived there for about two years. During this time of seeing the country and experiencing all aspects of the jewelry business, they would take vacations to Colorado. The mountains and all the activities that came with them had always appealed to the couple. In 1993, Troy and Joy made the bold decision to start a trade shop in Golden, Colorado. Two years later they relocated the business from Golden to downtown Denver. Once there, the couple ran a successful wholesale trade shop servicing several Denver-area retail jewelry stores. After about five years, Troy decided it was time to open their own store. Drawing on all their contacts from GIA, the places they’d lived before, and the wholesale trade

shop business, they were able to realize that dream. They joined the Independent Jewelers Organization in 2004. In 2012, Thollot Diamonds was accepted as one of the 2% of global jewelry stores to attain prestigious ranking of American Gem Society Retail Firm. In 2013, Troy and Joy bought their own free-standing building (formerly Washington Mutual Bank) and moved their retail store to Thornton where they serve the community by offering exquisite Thollot custom designs, as well as name brand jewelry and watches. In 2019, the showroom was expanded and remodeled to have the current “Colorado Casual” vibe--now including a Coloradostyle bar. A casting stage where custom jewelry clients can “pour their heart into it” was also added, allowing clients to work with Thollot master jewelers to melt and pour melted gold into their own one-of-a-kind
custom jewelry design. In 2020, Thollot & Co. had the honor of being named one of America’s Top Two Coolest Stores by InStore Magazine, gaining a coveted national recognition and realizing a lifelong-dream of theirs. In addition to running a successful jewelry store, Troy and Joy have three beautiful daughters: Jordan (a labor and delivery nurse), Danielle (living and breathing the business world with a Masters in Business administration) and Morgan, who has chosen to carry on the Thollot Legacy, becoming a jeweler and diamond setter in preparation for a “second generation” chapter to be added to this story. When there is a correction (a drop of 10% or more), people generally stay on the sidelines or sell their stocks, fearing the market may collapse and stay lower—there have been over 100 corrections, usually about one per year, and they have all ended with a full recovery. Some of these corrections turn into bear markets, a drop of 20% or more, and all have ended with a full recovery. On the other end of the spectrum, many are worried about investing when the market is at an all-time high. This is actually completely normal and happens about once every 19 days—in other words, all the time! We aren’t surprised when a Hershey’s bar, box of cereal or ticket to Disney World costs more, but somehow are shocked when the market hits an all-time high. “It’s an exciting time—we can do more for our clients today than at any point in our history. In many ways, it feels like we are For those with a 401(k), Mallouk says to do everything you can to contribute. “Some 401(k) plans have an employer match, meaning for every dollar you put into the 401(k), the company will match—it usually applies to the first 3%. It’s a guaranteed 100% rate of return, and there is just nothing else you can do that is going to be as good as that. If you have the ability to contribute the max, do that as well, but for sure take advantage of the match.” When faced with the choice to either invest or pay off debts first, Mallouk says to start with focusing on the interest rate. “All debts aren’t created equal—if you have credit card debt where you are paying 10% or more in interest, then paying off the debt before doing anything else other than a 401(k) match is the way to go. If your only debt is a home mortgage at 2-4% or so, then investing over a long period of time is very likely to yield you a far better outcome than making extra debt payments.” When planning an estate, it’s crucial to have a healthcare and financial power of attorney and a will or trust. “A healthcare power of attorney names someone to make healthcare decisions for you in the event you can’t make them for yourself. A financial power of attorney names someone to make financial decisions for you if you can’t for yourself. Lastly a will or a trust both name who will handle things for you in the event of your death, and who will oversee and inherit your assets. A trust tends to make more sense for wealthier individuals as it can bypass the probate court system, which keeps things private, allows for a faster transfer of assets after death, and because it skips the court system, settling the estate is much less expensive.” When looking for a financial advisor, find the right one by asking the right questions. “Most don’t realize that the vast majority of financial advisors don’t have to act in the client’s best interests. A minority of financial advisors are fiduciaries and operate under laws that share similarities with doctors and lawyers, meaning they do have to act in their client’s best interests. First, ask your advisor if they are registered as a broker or are dually registered. If they say yes to either, that means that part or all of the time, they don’t have to act in your

just at the starting line.”
best interests. There are thousands of advisors that will act in your best interest, so take the time to find one. Second, ask your advisor if their parent company, or the ownership of their parent company, own investment vehicles. If the answer is yes, don’t be surprised if some of those investment vehicles find their way into your portfolio. Essentially you may find yourself paying an advisor to then put you in a fund where the company collects another fee. There is no need to accept this conflict. Find a fiduciary that is not dually registered and that does not own their own investment products. At that point, you at least have someone that is incented to act on your behalf all the time. From there, look for education, credentials and experience with people like you.” As for the future, it’s never looked brighter at Creative Planning. “It’s an exciting time—we can do more for our clients today than at any point in our history.
