Ten years ago, Cameron Sours and his wife, Barbara, plunged into the pool business when they opened Peaceful Pool and Spa in Southampton. It’s safe to say they have been making a splash ever since. Peaceful Pool and Spa is a full-service company that sells above- and in-ground pools, saunas, and hot tubs. They have a full retail store in addition to servicing pools, and they do free water testing. Cameron, who is vice-president of the company, had worked in the pool distribution business for 16 years when he was looking to do something different, so he and Barbara decided to start a business together. Cameron’s experience in the pool business made starting Peaceful Pool and Spa a natural next step after the couple saw the need for a business that sold and serviced pools in Southampton. “We offer quality products, we stand by our word, and we’re very happy to be in this community. Peaceful Pool and Spa has been embraced by the community because we offer fair prices, quality products, superior customer service and we try to keep things simple and straight forward for our customers,” Cameron said. “It’s satisfying to build or fix something that someone enjoys,” he added. “Without my wife, we wouldn’t be where we are at,” Cameron said. Although she doesn’t work in the store, and has another full-time job, Barbara Sour is the president of Peaceful Pool and Spa and handles all the marketing and merchandising for the business. With so many people staying at home during the COVID-19 pandemic, Peaceful Pool and Spa saw an uptick in pool sales as consumers looked for alternatives to stay safe and still make memories with their families and friends. From the country-side of Corozal, Carmen and Ismael Santiago have been infusing Westfield with Puerto Rican flare and flavor for over twenty years. Located at 34 Franklin St, Santiago’s Family Restaurant is a family-owned and operated business (with the help of friends) and features dishes filled with love, history, and culture. You can smell the food from around the corner and, when the music is performed live by the family, it looks like the lights inside dance to the sound of salsa. “We use food to bring people together in an intimate and ambient spot,” says Manager and son, Marcos. The menu features appetizers like empanadillas (fried turnovers) and papa de relleno (meat-stuffed potato balls) as well as mofongo, which is made from green banana, plantains, and can be crowned with various toppings. You’ll find entrees such as ensalada de camarones, which is a Caribbean salad with fresh, citrusy shrimp and a popular favorite like pernil, or slow roasted pork, encased in a garlic-encrusted, crispy skin. “One misconception people have is that Puerto Rican food is spicy,” reassures Marcos. Although the Santiagos have created their own highly-coveted pique - or hot sauce - and do turn the heat up in the kitchen, it is the customers who choose how hot (or not) to have their meal. Here visitors can mingle with a mix of patrons ranging from lifelong residents to college students to foreigners from other lands. The Santiago Family Restaurant is a celebration where Westfield meets Caribbean-Latino culture and is here to stay.

THE MAPLE LEAF PUB WHERE CREATIVITY AND CUSTOMERS COME TOGETHER

Holly and Colin Neylon had a vision for The Maple Leaf Pub when they purchased the restaurant in December of 2020. Although the couple had no previous restaurant experience, they loved the location and the building, which dates back to the 1800s. The Neylons saw an opportunity to transform what had previously been primarily a college bar, into a family restaurant. “We had a vision of what it could be,” Holly said. While the pub still maintains a steady bar business, the addition of more food offerings, and an updated kitchen, new floors and an updated bar top were also part of the pub’s transformation.

The couple also expanded The Maple Leaf’s outdoor dining capacity with the addition of a new outdoor patio, where they feature live music — the schedule is on their website. The pub’s existing deck, which can be booked for private parties, is enclosed and heated during colder months. The Neylons retained some of the pub’s staff, including promoting a kitchen staff, and they brought in a manager from another area restaurant to help them get their operation up and running. While the expanded menu includes many new offerings, Holly said it still offers customer favorites, such as Quesadillas, one of the restaurant’s best-selling items. Holly said customers are enjoying the transformation and sharing their suggestions for menu items. “Some of our regulars have asked for specific wines and we’ve brought them in. We have monthly cocktail specials that staff and customers like to help create. They can explore their creativity there,” she added. Customer suggestions often end up as weekly specials. For example, the smoked lime chipotle wings offered as a recent special were suggested by a regular customer. “I like trying different specials, too, Holly said, because they are a lot of fun.” Creativity is a key component of keeping the Maple Leaf Pub a family restaurant that everyone can enjoy. “We never stop moving, never stop thinking of things to do. We’re always trying to brainstorm on what we can do to make ourselves better,” Holly said. “We’re thinking one day of building an outdoor bar on the patio. It’s a rumor, we’ll say now, but we are considering it.”

Yet, many people are opting out of the cow’s milk world often due to allergy, intolerance, weight concerns, animal welfare, greenhouse gasses, or the taste. You are not alone; from 20122017 demand for non-dairy alternatives shot up 61%. There are many non-dairy products available from milks, yogurt, butter, ice cream, cheese, and cream. In 2020, the milk alternative business was a $19.66 billion market. Each person has unique food preferences based upon taste, texture, appearance, mouth-feel, smell, ability to use in food preparation or health concerns. Determining if you “like” a food is complex and completely subjective. When faced with the task of substituting non-dairy foods for animal dairy, remember to be open to the experience. Allow yourself to encounter a new type of food, keeping in mind that dairy-free alternatives may seem like the dairy-full version but each will be different from the original. Read labels carefully for nutritional value. Many plant-based alternatives are low in protein, iron, and vitamin D, but you can still choose your alternative and get missing nutrients from other food sources during your day. Speaking subjectively these are the products I have found that work well for me for eating, cooking, baking, and life. This list was specifically designed for dairy-free alternatives. Anything labeled vegan will be dairy free, but that doesn’t guarantee other health concerns (e.g: gluten-free). Keep in mind that trying new foods is a process. You may have several failed attempts along the way. However, with effort, you will find just the right creamer for your coffee, cream cheese for your bagel, and butter for your toast. Northampton is often one of my favorite places at which to dine and have a cocktail. I love being surrounded by the rich history and the welcoming atmosphere of the town. Originally built in 1897, The Tunnel Bar was used as a place where travelers would board trains at Union Station. Now, the bar is famously known for their martini creations. It even has its original stone and brickwork!

As a food blogger, I travel to many restaurants and bars and enjoy a variety of food and drink experiences. However, nothing beats the relaxed vibe and amazing cocktails (especially the martinis) at the Tunnel Bar. It is the ideal place to get together with friends or celebrate an occasion. In the picture to the right, I am holding one of my preferred drinks, the Blackberry Goddess. I love sipping on this beverage due to it’s spectacular taste!

In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

Football Apple Hand Pies Apple Hand Pies are a perfect hand-held dessert that tastes like fall Ingredients • 21 ounces apple pie filling, store bought or homemade below (you won’t need it all) • 1 tablespoon cinnamon • 2 package pie crusts (4 crusts), I use Pillsbury • 1 egg • 1 teaspoon milk • Store-bought icing in a tube for laces (optional) Instructions 1. Preheat oven to 425°F. 2. Chop apple pie filling into small pieces and mix with cinnamon. Beat the egg with milk until combined. 3. Roll out the pie dough to ⅛-inch thick and cut the dough into12 football shapes. 4. Add 1 ½ tablespoons apple pie filling to 6 of the footballs. 5. Brush egg wash around the edges and top with remaining 6 football shapes. Use a fork to crimp the edges firmly together. Make two slits on the top of the pie. 6. Brush with the remaining egg wash and bake for 12 minutes. 7. After cooled, pipe on laces with icing if using. Notes • Hand pies can be baked in an air fryer for 8-10 minutes at 350°F. • Any flavor of pie filling may be substituted.
