St. Mary’s National Junior Honor Society Students Help Pastoral Minister St. Mary’s Parish, Westfield, coordinated a Spring 2021 Socially Distant Health Fair. The #ByMySide 31-Day Activity Challenge took place during the month of May 2021 and encouraged participants to walk, run, bike ride or even snuggle a pet cat as activities during that time. Participants were part of a virtual movement of animal lovers supporting health and happiness together, while raising critical funds to support the animals and programs at Dakin. DOPAFIT-PARKINSON’S MOVEMENT CENTER PARTNERS WITH FLYLUGU In 2009, Rick Burkhart’s flying career came to an end after he was diagnosed with Parkinson’s.

I spent over a decade in wholesale distribution,” this Montgomery resident said, explaining that his early career focused on business-to-business sales and, eventually, management. For McKellick, that foundation honed two extremely valuable skills: working with people and getting deals done. He’s on the Board of Directors for the Hampden County Bar Association and Northampton’s Cutchins Program for Children and Families. He serves on Montgomery’s Zoning Board of Appeals. He’s been active with business networking groups, and he’s first vice president on the board for the Greater Westfield Chamber of Commerce.

Whether a charity or a for-profit startup, “It takes a lot to start a business. It’s brave. It’s bold. Everybody else says no and these business owners say, ‘Yes I can.’ These entrepreneurs who are risking everything, they make our economy. Anything I can do to help them grow that business, and to grow the community through that business, is fantastic,” McKellick said.

Pointing out the multiple new businesses – despite COVID - on Westfield Street, McKellick said, “When the peaks and valleys of our national economy start bumping, if we have a strong local economy we can help [preserve] value.”

FRIED CHICKEN SANDWICH WITH JALAPEÑO SLAW INGREDIENTS (SANDWICH) 1 cup all-purpose flour 1/2 teaspoon ground paprika 1/2 teaspoon garlic powder Cayenne pepper, to taste

CHANGE UP THE FLAVOR BY CREATING DIFFERENT SLAWS. YOU CAN DO THIS BY ADDING DIFFERENT SEASONING AND HERBS TO THE MAYO.

Boneless, skinless chicken breasts Vegetable oil (as needed) Sesame seed bun Pickles

DIRECTIONS 1. Mix the flour, paprika, garlic powder and cayenne pepper together in a shallow bowl.

2. Fill your skillet with oil to about 1-inch deep and heat to 350 degrees.

3. Coat your chicken breasts in the flour and seasoning mixture, then carefully place them into the heated oil.

4. Cook until golden brown with an internal temperature of 165 degrees.

5. Lightly toast your sesame seed bun, then top with pickles, fried chicken breast and slaw to taste.

FOR THE SLAW Combine mayo, hot sauce, garlic and dill pickle juice with shredded red cabbage, pickled onions and candied jalapeños.

CARNE ASADA STREET TACOS WITH AVOCADO RELISH

INGREDIENTS (TACOS) 1/2 red onion, coarsely chopped 3 cloves garlic, peeled

MARINATE THE STEAK IN THE REFRIGERATOR FOR UP TO 24 HOURS FOR EXTRA FLAVOR.

2 tablespoons adobo sauce 2 tablespoons olive oil 2 teaspoons cumin 2 teaspoons dried oregano Salt and pepper, to taste Choice of steak Fresh flour or corn tortillas Lime, optional

DIRECTIONS 1. Blend the red onion, garlic, adobo sauce, olive oil and seasoning in a food processor or blender, adding water as needed until smooth.

2. Marinate the steak in the mixture for at least 30 minutes prior to grilling.

3. Heat 2 tablespoons of oil in a large grill pan and add the steak, cooking to desired doneness. Let rest in a foil tent for 10 minutes then chop into small pieces and assemble tacos as desired.

FOR THE RELISH Chop and combine avocado, fresh jalapeño, cilantro, onion, lime juice and salt to taste. Top with queso fresco and pepitas as desired.
